In the United States we have an option for a variety of different foods. However, some of these foods say they are “Italian” or “Chinese” when they are not actually authentic. These dishes do not bring out the cultural meaning behind them. They are Americanized and their value is lost. Here some Authentic foods of certain cultures and what they consist of. By Maddie Rhinehart and Jane Ratliff

Tiramisuu

Italian:

Italian food is full of simplicity. One uses basic cooking techniques and the freshest ingredients to bring out all of the natural flavors. Everyone knows the basic popular Italian foods like pizza and pasta, but what you may not know is the different versions of each. For pizza, there are crusts that are thick and resembles a flat bread or a thinner crust. Pizza has a variety of toppings such as different types of cheeses, meats or vegetables. Pasta is either short or long and plain or stuffed. Each shape of pasta is matched with a different sauce. Risotto and minestrone are also typical Italian dishes. Tiramisu is the most famous dessert.

Shrimp Tempura

Thai:

Thai serving platters are always decorated with a variety of carved vegetables and fruits into flowers to enhance the beauty of their dishes. Rice is the main dietary staple, either white rice or sticky rice, and it is eaten at almost every meal. Most main dishes use seafood, pork, chicken or beef, however vegetarian dishes are also very popular. They use a unique combination of seasoning to bring out all of the different flavorings in a dish. Soups are eaten with most meals to balance out the hot flavors of the main meal. Some common flavorings: fish sauce, dried shrimp paste, lemongrass and the spices coriander, basil, garlic, ginger, cumin, cardamom and cinnamon. Coconut and other tropical fruits are popular for desserts.

Japanese:

Japanese cuisine isn’t as known over here in the U.S. These meals are served with rice, miso soup, pickled vegetables and fish or meat. While rice is very common for every meal, many people serve noodles with lighter dishes. Some popular japanese dishes are sukiyaki, sushi, tempura, sashimi, yakitori, tonkatsu, soba and udon.

Chinese:

Authentic chinese food contains pig meat or the meat of non-ruminating animals or fierce animals with their blood. Most of the staple food is made of flour rather than rice. China is known for pickling their vegetables and adding them to their dishes. They pickle in brine or vinegar, sun-drying and curing. Sweeteners are important in their meals to balance out the savory. The typical sweetener is honey or sugar. Roast mutton is a typical chinese dish served with oil tea, home-brewed rice wine, sticky rice cakes or rice wraps.

Korean:

Shrimp and Avocada Tostadas

In Korea, food and medicine serve the same purpose. If someone is sick, they will make them a hearty meal and they believe that that will heal them. Noodles are the staple food for Koreans as rice is for chinese and japanese. Kimchi, rice cake and porridge are popular sides. They have basic seasonings to enhance their Korean foods, red pepper, green onion, soy sauce, bean paste, garlic, ginger, sesame, mustard, vinegar and wine.

“My favorite thing about Korean food is that it has a really unique taste.” Olivia Manaligod ‘18 Mexican:

Mexican food is very popular in the United States, however we don’t get to have real mexican food. Corn is found in almost every meal, usually in the form of a tortilla. Tortillas are the basis of a typical dish in Mexico and the most common dishes in coastal areas is seafood. They use chilies enhanced with herbs and spices to get the maximum flavor out of their dishes and sometimes combined with beans or other peppers. Some popular fruits and vegetables are tomatoes, tomatillos, squash, sweet potatoes, avocados, mangos, pineapples and papayas. Here, chicken and pork are more common than beef. The dishes you will most likely see in Mexico are chilaquiles, pozole, tacos al pastor, tostadas, chiles en nogada or elote.

French:

France is known as the largest cheese consumers in the world. They eat cheese, bread and wine with almost every meal, with wine being the most important part of a meal. A classical french dish is rich and filling and chefs take a good amount of time to make their food look appealing. Most of their classical dishes are made with a complicated preparation and with heavy sauces. Onion soup, chocolate souffle, ratatouille, flamiche, duck confit, apple pie and boeuf bourguignon (stew made of beef braised in red wine and beef broth, seasoned with garlic, onions and mushrooms). Oddly enough, many people drink their hot beverages from bowls and dip bread in it.

Indian:

India food reflects a perfect blend of different cultures and ages. Samosas is a fried or baked entree containing an exquisite filling of spiced potatoes, onions, peas, lentils, macaroni, noodles and minced meat. Kulfi is a traditional Indian ice cream made with reduced full fat milk. This ice cream is known for its flavor from saffron and sometimes even cardamom. Indian food is best known for its spiciness.

“Tandoori Chicken [is my favorite] because it has a lot of flavor and I love chicken, it’s made of chicken and lots of spices. Other foods that are good are butter chicken samosas!” Khushi Kapoor ‘18 Check out our website ediblemasaja.blogspot.com for all of the recipes of the food pictured here.

FOOD MYTH VS FACT

Myth: To minimize fat and calories from chicken, remove the skin before cooking it.

Fact:

Grilling, roasting, baking, broiling or roasting poultry with the skin intact preserves its natural juices. You can minimize your calories by removing the skin before you serve it.

Myth: Dark bread is always better than white.

Fact:

The darker the bread doesn’t necessarily mean it’s made with whole grains. Look for the words “whole grain” on the package.

Myth: Eating celery burns more calories than you take in.

Fact: It’s a myth that celery has “negative” calories. Myth: Brown eggs are more nutritious than white ones.

Fact:

The color of the shell indicates the color of the feathers of the bird it came from. White hens lay white eggs and red hens lay brown eggs. The nutrition is the same.

Myth: All salads are healthy.

Fact:

Myth: Frozen and canned fruits and vegetables are less nutritious than fresh ones

Most salads are healthy until you put on all of that dressing like ranch, bacon, fried chicken and even some cheeses.

Myth: The fewer carbs, the healthier you are.

Fact:

Food processors quick-freeze fresh-picked produce; this preserves much of its vitamins and minerals. Fresh fruits and vegetables are only more nutritious if they are eaten as soon as they are picked.
