Hey, Lucky beggar! I am Vera and I had been EVS volunteer for 12 months in Estonia. I was living in tiny city – Tapa and working with disabled people in the nearest neighborhood.

my favorite game calls – «Save money»

Together with the polish girl we were trying to survive there the whole year between 2015 and 2016. It was amazing trouble time and I am sure that will miss it, but I have a lot of memorials and this cooking booklet one of them.

I’d like healthy food

I’ve never cooked to according to recipes

I always like to cook, however, before EVS I had no possibility to do it. Before EVS I was typical white-collar, who is too busy of working and prefer to eat in café. Nevertheless, here in the small Estonian town I found out that have enough time for preparing dinner and posting these recipes in my blog. Thanks for the coordination organization EstYes we putting everything together and create this booklet. The process of cooking was funny and sometimes looked like a quest. All kitchen equipment that we had: a pan, a pot, two knifes and a grader. We boiled water for tea and for pasta into the same small pot, we could not cook more than for a day because fridge also was very compact. And dishes were limited edition, but we happily survive and I know that next volunteers have everything for their needs!)

Heat water&milk until it reaches boiling point. Pour the jelly with semolina . Mix well and pour into a dish . Allow to cool and move to the fridge. Within 2-3 hours you can feast on.

Kefir is poured into a glass, add the mixture of cereals and a favorite jam, dried fruit or fresh fruits.


Carrot and apple pancakes

Mix flavor, salt, sugar, milk, oil and the egg. Add a small amount of vinegar to baking soda and put it to the pancake batter. Use big grader for the apple and small one for the carrot and add to the batter also. Fry pancakes on the pan with oil.

Cheesy spinach pancakes

Blend flavor, salt, milk, oil and 2 eggs and water. Cover by a lid and stay into the fridge for 1-2 hours. Boiled the spinach, squeeze and blend it. Grated cheese. Mix half of the cheese with the spinach, cottage cheese, add salt, pepper, nutmeg. Mix everything with the dough. Fry on the pan with oil.

Steam or boil the broccoli until quite tender (about 5 minutes). Blend a little the broccoli (it should look like the mashed potato). Place egg in a bowl and use a fork to lightly beat the egg. Add the salt, pepper, kefir, flour and cheese (use a grater for cheese) and mix until combined. The Batter may seems a little thick but it will loosen up when you add the broccoli because when you squish it, it will release some liquid. Add the broccoli and mix to evenly disperse throughout the Batter. Heat one tablespoon of oil in a fry pan over medium heat. Cook each side for 2 to 3 minutes until golden brown. Repeat with remaining batter. Serve with the source cream

1. I also add most of the broccoli stems into these fritters. For the thicker part, I recommend peeling it with a potato peeler as I find the skin can be quite tough. Then roughly chop them into a medium size dice so they cook in the same time as the florets. 2. This recipe also works great with cauliflower.


Zucchini fritters Blend kefir with salt, sugar, soda+vinegar. Blend an egg and mix with the grated zucchini. Mix together. Fry fritters with the addition of oil. Serve with the source cream, cheese, jam. Add favorite fruits, nuts, honey.

Cheesy pancakes Mix flavor, salt, water, oil, the blended garlic, boiled rice, eggs. and grated cheese. Add small amount of vinegar to baking soda and put into the pancake batter. Fry pancakes on a pan with oil.

Poached egg Make sure your eggs are really fresh. Add a small dash of vinegar to a pan of steadily simmering water. Crack eggs individually into a ramekin or cup. Create a gentle whirlpool in the water to help the egg white wrap around the yolk. Slowly tip the egg into the water, white first. Leave to cook for three minutes. Remove with a slotted spoon, cutting off and wispy edges using the edge of the spoon. Drain onto kitchen paper or use napkins.

Semolina pancakes Warm a pan with oil. In bowl mix well (a fork works) semolina, eggs, water, honey, baking soda and cinnamon in bowl. It will be pretty liquid. Don't fear, semolina thickens as it cooks.

Boil the pasta according to pack instructions. Boil broccoli about 5 minutes. The chicken breast chop into rubes and fry about 10 minutes on the pan with oil, salt, pepper and vegeta. Add the broccoli, flavor and cream and simmer about 2 minutes. After add pasta, mix well and serve.

D. Couscous In boiling water (a mug), add salt, 3 tablespoons of oil and couscous . Cook 4-5 minutes, stirring occasionally, until slightly browned. The onion, the carrot and the paprika cut into strips. On a heated pan send carrots, the paprika, the onion, salt, black pepper and fry for 5 minutes . Add boiled couscous to vegetables. Peel carrots and potatoes, cut into pieces. Cut the paprika into 8 pieces. In a bowl, mix all vegetables with spices and oil. Into a preheated 200 degree oven put vegetables. Cook about 20 minutes. Use cottage cheese as a sauce for vegetables.

Grate layers the zucchini, onion and carrot. Pure whisked eggs with salt, pepper, milk and grated cheese on the top. Bake in preheated to 180 degrees for 25 minutes.

Al dente mix Boil the broccoli and cauliflower in salted water about 4 minutes. Slice the carrot and the paprika. Drain boiled vegetables; mix everything with oil and spices.

Cut tops from peppers discard seeds and membranes. Grated the zucchini, the carrot and the cucumber. The onion and the garlic chop into super-small size. In the bowl, mix dry rice, the zucchini and the carrot, add salt and spices. Put stuffed peppers (upright) into water on cooker, covered with a lid and cook about 15-17 minutes. Making the sauce: Mix source cream, the cucumber, the garlic and spices.

Tuna pilaf Boil the rice according to pack instructions. Add the canned tuna and tomato pasta. Stir well and cook about 1 minute.

Chicken pilaf Boil the rice according to pack instructions. Slice the chicken, the garlic, the onion, carrot and the paprika. Fry chicken with salt and oil. Into other pan fry vegetables with salt, pepper and oil. Add fried vegetables to rice and cook about 3 minutes on weak heat.

Delicious Ways To Eat Eggs

Omelet Fry vegetables with oil in the pot. Blend eggs with spices. Add blended eggs to vegetables. Stir well. After 2 minutes add cheese and cover with a lid. Cook a minute – stir well. Turn off the cooker and wait a minute before serve.

Which eggs are shaken one by one with salt and pepper and put on a hot pan with oil (It will look like egg pancakes). Flip when it’s browned on one side - flip, after put a small slice of cheese, add vegetables and turn, holding a spatula. Wait for a moment and put it on the plate. Repeat it with the rest of products.

Blend the eggs, sour cream and milk (3 minutes). Add the grated zucchini, cheese and onion. Mix well. Put into the baking dish and bake into a preheated 180degree oven about 20 minutes. If your baking dish isn't made from silicone, use oil or baking paper.

Prepare gelatin according the pack instruction. Boil the prune and the dried apricot with sugar into 450 ml of water. Cook about 30 minutes. After that mix fruits in syrup with ready gelatin. Stay in a cold place for a while.

Cut the apples in two halves, and core them. Preheat oven to 190°C. Bake for about 35 minutes, until apples are tender. While the apple halves are baking, prepare the filling: mix cottage cheese, sour cream and raisins. Spice with cinnamon. Add stevia (if desired).

Boil water, put semolina and salt. Cook about 2 minutes add cinnamon and syrup. If syrup isn’t sweet put a little sugar.

Preheat the oven to 180degree. Get a bowl and mash the bananas until they’re mushy. Add the cup of oats and any of the optional ingredients (you can use nuts, chocolate, dry fruits). Stir until everything is nicely mixed. Put baking paper on the baking tray or grease the baking tray with butter or oil. To make the cookie shape just grab a spoon and scoop a decent amount from the mixture onto the baking tray. It’s super quick and easy. Bake about 15 minutes.

Cottage cheese casserole

Mix the yeast, salt, sugar and 200 gr flour. Heat milk to 40-degree and pour it into a previously obtained mixture. Stir a little by hands. In a separate bowl break the eggs and a little whisk it. Add the egg to the dough, leaving about 1 tablespoon of whisked eggs for the grease rolls. Melt oil and put to dough. Add 250 gr of flour on dough's top. The dough should be elastic and not stick to hands. If necessary, add more flour until the dough is well formed into a neat ball. Form a ball of dough, sifted through a sieve a little flour on the top. Cover with a towel and leave in a warm place for an hour. The dough should rise during this time by 2 times. Begin to shape it a little bun. Mix all ingredients. Chop banana on the smallest grater. Put on the baked bowl and bake about 25 minutes in a preheated 180-degree oven. Turn off the over but stay dish inside for 5-7 minutes more.
