the Easton Irregular is...

The holiday season is upon us yet again. My feelings this year are the same as years prior, people are a scattered mess anymore. I’m surprised the local ERs aren’t filled with more people tripping and falling from constantly checking an app on their phones. People complain about a big divide among us, but I often spy hypocritical behavior coming from these same people. It’s time to cast aside our egos and just be love. If we could all love each other for who we are, perhaps, just perhaps, there would be no reason to fight each other. No lengthy Facebook comment threads of people being downright cruel to each other. My heart breaks for the world as it stands now. If you bash someone’s opinion because it doesn’t align with yours, then, no, you do not have the right to say you believe everybody is entitled to their own opinion - and you see this aaaall the time. We need to love each other and work together to create a better tomorrow. Go forth and treat your fellow man kindly, cherish your family and friends, and try to enjoy what should to be one the most magical times of the year. There are tons of fun, festive holiday events throughout Easton and the greater Lehigh Valley to enjoy this year. Lots of great ways to keep your dollar local as well at all the wonderful restaurants and shops. Thank you to all of the amazing businesses in downtown Easton as well as the greater Lehigh Valley who have advertised in the Easton Christmas Book this year and in years past! I couldn’t do it without you. Next year will be the Easton Christmas Book’s 40th year! Our regular format of the Easton Irregular will celebrate 10 years under my reign this February, but it has been in circulation for over 20 years. Thanks to all who support us and help us to keep going and growing. Many thanks to our readers and to our dedicated staff of contributors; and especially to our Retail Ad Manager, Colin K. To help focus its visitors on these and other questions swirling around the subject of photography as art, the Allentown Art Museum is presenting a wide-ranging series of exhibitions as part of their Year of Photography, starting this fall. Opening on January 28, 2018, the Museum’s winter/spring special exhibition, Women of Vision: On Assignment with National Geographic Photographers, will showcase the powerful and impactful visual stories told by a new generation of women photojournalists. From the savannahs of Botswana to the war-torn streets; from the beaches of the Jersey Shore to the Mongolian steppe and rainforests, these 11 women have traveled the world as explorers, capturing compelling stories of our planet and its people. Women of Vision continues through April 8. For a look back at iconic sports photographs that have thrilled sports fans while impacting our popular culture, Who Shot Sports: A Photographic History from 1843 to the Present is must-see viewing. Organized by the Brooklyn Museum with guest curator Gail Buckland, who also created the exhibition Who Shot Rock that, well, rocked the Art Museum back in 2012, Who Shot Sports highlights sport photographers and their place in the history of photography. Running May 6-July 29, 2018, see how the finest sports photographers, their skills honed from years of practice, are capable of capturing a fleeting moment and making it memorable. Featuring more than two hundred photographs chosen for their aesthetic, cultural, and historical significance, the exhibition includes images of many different sports from nations around the globe. Finally, opening in July 2018 and rounding out the Museum’s Year of Photography is The Soviet Lens: Photography by Dmitri Baltermants and Mark Markov-Grinberg. From the repressive Stalin years to the relative openness of the 1960s, The Soviet Lens highlights a common theme: a photographers’ ability to craft images that define national identity. IRREGULAR BOOKSHELF

WITH CAROLE J. HEFFLEY AND SOMETIMES JIM HICKS ****GOD NEVER BLINKS: 50 Lessons for Life’s Little Detours by Regina Brett, Grand Central Publishing, NYC ©2011, 239 pgs., paperback. Back when this book was new, it was on the New York Times Bestseller List for weeks. The 4.7 star rating on Amazon.com is loaded with comments such as “Self-help book at its best”, “Perfect read for any of life’s bumps”, and “Fresh wisdom”. Many reviewers reported that they purchased multiple copies as gifts for friends going through rough times or because they found this book an inspiring read. Truthfully, it was my Sunday School class that selected this book as a weekly guide for our meetings. God Never Blinks is a loosely Biblebased book; it is unfailingly uplifting and optimistic without being “preachy”. Each weekly (or daily, if you wish) “lesson” is a short 2-3 page essay on one of life’s problems and how it was resolved, sometimes by someone’s personal experience. I did not find every story completely on target; in fact, one lesson, “Don’t Take Yourself So Seriously. No one else does”, missed the point of the subject. Nevertheless, it was a pleasant and delightful read. A previous “lesson”, “Life Is Too Short to Waste Time Hating Anyone” was right on point and generated healing and spirited conversation among our group members. But, reading ahead of class, it is Lesson #29 “What Other People Think of You is None of Your Business”, dealing with bullies and hurt feelings, and Lesson 38, “Read the Psalms” and about finding the wisdom therein, that I found the most well written. God Never Blinks is a perfect book for those recovering from any life “bumps” as each story is so short and easy to read that it places no stress on the reader yet offers positive encouragement and support in whatever situation may be the cause of distress or disappointment. As a Christmas gift, it would be superb for an uplift way after Christmas Day is past. Easton Book Clubs take note: It’s time to re-discover this sweet book! **SARAH’S CHOICE by Wanda Brunstetter, Barbour Publishing, USA ©2010, 288 pgs., paperback This book is part of the “Brides of the Lehigh Canal” series and is listed as “Book Three”, apparently the last in the series. I would place Sarah’s Choice as historical fiction but the backdrop of the canal era is merely a vehicle for the fictional story, not truly an integral part of the novel. The author, Wanda Brunstetter, is a familiar name in the Amish romance genre. Reviewing several of her books previously in the Easton Irregular, I could report on Sarah’s Choice without ever reading the book! This author’s writing is so predictable, in fact one reviewer complained that all her characters in her many books are the same only with different names. Sarah’s Choice, though not dealing with an Amish theme, is a sweet read as are all of Ms. Brunstetter’s books. I found this book interest-

ing primarily because of the place names used such as Walnutport and Easton, both of which figure prominently in the story. Our heroine, Sarah, is fed up with life in Walnutport along the Lehigh Canal in the 1800s. She is a widow with three young children. Our hero, Elias Brooks, leaves his work at an Easton newspaper to operate his own canal boat, his inheritance from his grandfather. In addition to the fact that Sarah wants nothing to do with anyone connected to canal work, Elias also has the problem of an ugly large red birthmark on his face. Will they get together? Sure. Will they ultimately find ever-lasting love? Of course. In spite of the predictability of this kindly story, Sarah’s Choice is a satisfying and relaxing read. In the Author’s Note at the end of the book, Hugh Moore Park is given publicity encouraging readers to visit the Easton canal boat ride as well as the restored locktender’s house in Walnutport. Reviews for Sarah’s Choice on Amazon.com give the book an unbelievable 4.5-star rating, way, way over its literary value. And yet, the charming gentle story is so very appealing. *****WHO’S MY TUMMY MOMMY? by Susan Silverman as published in Reader’s Digest Nov., 2017, pg. 102 We have a new addition to our North Carolina family, a beautiful adopted baby boy. The parents have chosen to tell him that he is very special because they picked him to be their son and so they are collecting a few books on being adopted from a child’s point of view. This article in November’s Reader’s Digest caught my eye. In it, Ms. Silverman recounts the adoption of her young son, Adar, from an African country several years ago. Even at a young age, Adar is already wondering where his “tummy mommy” might be. The short article is, of course, heartwarming as well as wise. It is taken from Ms. Silverman’s 2016 book Casting Lots: Creating a Family in a Beautiful Broken World. Casting Lots has been reviewed as “a deeply personal mix of memoir, Torah, and advocacy for international adoption. Anyone with children will appreciate and relate to the challenges, ideals and frustrations of parenting that Silverman describes in hilarious detail”. (The book has earned a 4.3-star rating.) In her current Reader’s Digest article, Ms. Silverman draws parallels to the Shel Silverstein book The Missing Piece (© 2006) which, she writes, is Adar’s favorite book. In The Missing Piece, a circle with a cut out pie-shaped piece travels the world searching for its missing part. With the missing wedge, the circle finds the going slow, while along the way discovering the joys that are part of its journey. The circle also finds at the end, that when its piece is found, it allows the circle to travel much faster thus missing out on all the lovely parts of the world it discovered in its slower journey limping along. The wisdom held within Shel Silverstein’s writing shines through in this small book and story for children…and adults. For Christmas giving, both Ms. Silverman’s article and Shel Silverstein’s The Missing Piece will be gifted to our new mother.

Few community ensembles survive and continue to produce exceptional music for 50 years, Kelly notes, but this group has always enjoyed a close-knit culture, becoming a second family for many. Indeed, members gather every Friday evening (and the occasional Saturday morning) for intensive rehearsal that is punctuated by hard work, laughter, and the intermittent life update. Kenneth Brown

“I’m constantly challenging myself with new and more complex things.” -Kenneth Browne by Lauren Kindle

Kenneth Browne is a painter living in Allentown, PA. His body of work includes portraits, narrative interior scenes, and, more recently, landscapes. The paintings are characterized by lush, thick brushwork and a generous application of paint. The surfaces of the paintings seem to delight in the physicality of the paint itself, the luxurious, glistening texture of the oil paint. Beneath repeated lighthearted images, such as candy, flowers, clouds, and theatrical motifs, there is a dark emotional undertone in Browne’s work. Much of it carries a feeling of foreboding, or suggests a melancholy or sinister sexual narrative. In fact, Browne deliberately tries to create a narrative in his Interior Situations series, a sequence of paintings depicting a man and a woman interacting in an apartment building. The paintings are insinuating and mysterious, and since they lack overt explanation, the viewer is forced to create his or her own storyline. Browne created this series during his time at the Pratt Institute in NYC, where he received his MFA. After graduate school, Browne lived in NYC for a decade. A childhood friend from art camp was already living in New York and performing as a cabaret singer: “Broadway Brassy”. She encouraged Browne to come to performances, and that’s when he met other performers and fell in love with the burlesque scene. He would go to shows two or three times a week. He was fascinated by everything: the personalities, the theater sets, the costumes, and all the amazing things the performers were doing on and off stage. Driven by this new inspiration, Browne began a series of portraits of different performers. Looking at these portraits, one gets the feeling of being backstage, a glimpse of the human beings beneath the costumes. Browne’s confident brushwork reveals real people with imperfections, quirks, and private sorrows and hopes. And yet, at the same time, these paintings celebrate “Clouds 8”, 5”x7”, oil on board the playful, sexy spirit of the burlesque world. In 2015, Browne and his family moved to Allentown to be near family, and also near his job at Kutztown University, where he works as an information/data specialist for Admissions. Browne and his wife have two young daughters, ages 2 and 4, and fatherhood has created a big change in his life as an artist. New constraints on his time have made it difficult to have a studio practice. These days, he wakes up around 3:30 or 4 am to work in his studio, before getting his kids ready for the day and going to work. “I can start the day doing something I love,” Browne says, “and then be with my kids and family the rest of the day.” Sometimes he also paints late at night. In some ways, having children has forced him to be more efficient and better with his time management. His two children have a little section of their own in his studio to do coloring and crafts. Artist Profile More recently, Browne has been working on a series of landscapes. When he first moved Pennsylvania from the big city, he was taken aback by how big the sky was. He found himself frequently looking out at open spaces during his commute to and from Kutztown University, and other places in the Lehigh Valley. Thirty-one years ago a group of architects and investors had the vision of taking a dilapidated, abandoned house and making it into one of Easton’s finest treasures. Last year The Lafayette Inn celebrated that vision with a thirty year celebration of graceful service to the community. Situated on college hill, the elegant mansion was built as an investment property by Elizabeth Wagoner Leary in 1895. The first known tenant was George Elder, superintendent of Ingersoll Iron Works. Through the early part of the twentieth century the building changed hands many times, serving as a family home and later as apartments. In 1958 it was purchased by the Lafayette College fraternity Pi Lambda Phi. When the fraternity disbanded the once grand home was left vacant and deteriorating. Enter those visionaries in 1986. John Cappellano purchased the building and, with the help of Paul Felder at The Architectural Studio of Easton and others, restored the blighted-eyesore to its former glory. And then some! On December 19, 1986, The Lafayette Inn opened its doors to its first paying guests. Today the inn’s eighteen antique-filled guest rooms and suites offer the most distinguished accommodations in Easton. The magnificently appointed parlor and outdoor spaces are also available for corporate meetings and social gatherings. THIRD STREET ALLIANCE FOR WOMEN & CHILDREN. Helping people from all walks of life can’t be done in a silo; there have to be partnerships made with others that will help all parties achieve more each day. That is what Third Street Alliance does within its programs, shared spaces, resources and staff. This past year, TSA was part of the Coordinated Entry System, a pilot program started by the Lehigh Valley Regional Homeless Advisory Board. Along with the Lehigh Conference of Churches in Bethlehem and Allentown and 2-1-1, the toll free phone line, we were able to address households and individuals experiencing or at imminent risk of homelessness in order to provide referral to available housing, emergency shelter beds and other resources. We have also collaborated with Valley Youth House and Rapid Re-Housing, which helped TSA shelter residents afford to move into stable housing and Turning Point of the Lehigh Valley, which provides counseling services to women coming out of domestic abuse situations at TSA. Our childcare program, The Learning Center, is accredited through NACYE and holds a PA Keystone STAR Four rating. Teaching kids from infants to school aged in a safe environment, we make certain the students are learning and thriving. We offer K-Readiness and Pre-K Counts programs, which prepare students to enter Kindergarten. The Learning Center also partners with organizations like St. Luke’s University Hospital to provide services, such as vision screenings, to catch any issues before students enter the school system. Nursing students from Moravian College come in to teach students the importance of sleep and they teach the adult day care seniors the importance of maintaining a healthy diet. Sharing the Caring adult day care provides a safe and engaging space for those with Alzheimer’s, dementia and other disabilities to keep active and be social. Through Montessori methods in aging adults, our senior clients are busy with activities through the day including cooking and baking, art projects, indoor gardening, dancing, guest entertainers and so much more. Classes and volunteers from Lafayette College spend time weekly with the seniors, engaging in games and projects. Christmas City Follies XVIII runs November 30 - December 22 at Touchstone’s home theatre at 321 E. Fourth St. in Southside Bethlehem. HOLIDAY DECOR WITH MINI-GARDENS article and photos by Maureen Melick Miniature gardens are all the rage. You’ll see them in local nurseries, at farmers’ markets, on Pinterest and in magazines. This past fall I created several mini-gardens to display at an event and later gave them away as party favors. I had a few left over that I’ve changed from a fall decor to a Christmas or winter decor. Why not make some for your own home? Planting your mini-garden Will your mini-garden go outside or will it always be an indoor decoration? For indoor gardens use a Cactus Soil mix in any pot or dish, with or without drain holes. Cactus soil mixes are formulated to be fast draining and have some slow release fertilizer in them. A little cactus fertilizer each time you water will keep your plants healthy. If your mini-garden is going to spend part of its time outdoors, use a good purchased container soil like Pro-mix. I use a large terracotta bulb pot with drainage holes. You don’t want to use garden soil, or anything that says Miracle-Gro, or any moisture control products. These are great for your summer annuals, but not for these small planters. Using a pot with a drainage hole makes it easier to keep the right moisture level and avoid the beginner’s tendency to overwater. Use a bit of screening to cover the drain hole. You want the water to come out, not the soil. I used to fill the bottom with gravel, but this makes the whole planter pretty heavy, and with a good soil mix it’s not necessary. Fill the pot about ¾ of the way up with soil, and add in your plants. Top them with some more soil. Top the soil with small gravel. The gravel should cover all the soil not just for decoration, but because it protects the crown of the plant and helps retain moisture.

Care of your mini-garden I keep my cacti and succulents in a breezeway that stays below 50 degrees. You can showcase your collection in your warm rooms for the holiday week, but then move them back to a cooler room. The warm dry air from winter heating causes lots of stress on plants, especially cacti and succulents that are dormant in winter and like it a little cool. During this time I only water them once a month. Keep an eye out for telltale signs of mealy bugs. They are your biggest enemy and show up when the plant is stressed. If you find white cottony parts on your garden, you can treat the garden, or toss it. Wash the whole pot, discard the soil, and wash your figurines too. For the outdoor planters, find a place that’s not too exposed to the elements, such as a covered porch. You don’t want the pot to freeze so hard that it cracks. After the holidays you can bring the pot into an unheated garage where it will freeze but not so hard. If there is a warm spell and the soil feels like it’s starting to thaw then water it. Bring it back outside in late March. If you don’t have a garage, push it against the warmest, south-facing wall of your home. I hope you try some of the mini-garden ideas I have shared. Now the decorating part begins… It’s all about the accessories Accessories turn your garden into a holiday scene with interesting vignettes. You can find tiny accessories for your mini-gardens at any of the craft stores and some nurseries. You can find tiny battery operated lights at Target or most hobby shops. The holiday fairies pictured here are from A.C. Moore. Wooden doll furniture works really well in indoor gardens. For an outdoor garden, use plastic resin furniture. Many of the books I’ve read talk about scale when creating a miniature garden, and your garden will look better if the various ornaments are in realistic scale. You can use bulb ornaments from your own collection as long as they aren’t fabric. Fabric ornaments should be used only temporarily, and only indoors. Some ornaments look like glass ornaments but they are unbreakable and hold up to outdoor weather conditions. Almost any kind of miniature ornament or toy will work. I have a cute snowman and Santa by Playmobil and some miniature brass camels that I put in one of my terrariums each year. You might have some small items that would really enhance your mini-garden. Get creative! How about a few pieces from your nativity scene? For a non-denominational display go for snowmen, snowflakes, stars, lights, sledding, skating, cardinals, polar bears, and anything glittery. I found a cute site myfairygardens.com with lots of ideas. Once you’ve gathered your accessories, play around with arrangements until you have a delightful display of plants and ornaments.

Irregular Eats Local on local… This month, Lori Crosson, owner of Forks Cleaners, gives us her take on a local eatery. BACON GOURMET A celebration for my first-born son’s 21st birthday was spent at an incredible new restaurant on the outskirts of Easton. A few miles south on Route 611 nestled along the Delaware River is Bacon Gourmet. Set in a beautiful historic building that was home to the Black Horse Inn back in the 1700s is this new treasure. The building has been renovated to add a wall of windows with a breathtaking view of the river from nearly every table and the bar. The lighting and atmosphere were perfect for our crew and there was plenty of space between tables, which is a huge plus in my eyes. It is very appealing when you can spread out and enjoy all your guests at a bigger party like that where the noise of other groups doesn’t hinder your conversations. The bar was expansive and stocked full of high-end liquors and local special brews which probably spoiled my son’s first legal-age experience. His eyes widened as the server explained and described all of the different choices of beverages including some bacon themed drinks. The staff was very attentive and the manager checked on us many times to make sure we were taken care off. The menu is filled with flavor. I couldn’t resist the deep fried bacon with in-house homemade bbq sauce. In fact, it was hard not to over-order with all of the unusual and tasty sounding items to choose from on the appetizer section. The grilled flat bread pizzas, the fresh made soups and salads with bacon, bacon, and more bacon used in different ways left us planning our second trip down the Delaware so we could tastetest round two. The eight of us tried quite a few dishes: Pork belly kabobs with sweet and smoky sauce, fresh mussels with crumbled bacon and white wine sauce, and their house bacon bleu chips with balsamic glaze were some of the few treats we

started out with. The portions left us concerned for having room for the main course! All were shared with plenty for everyone. Intriguing selections we had to save for next time were mini calzones with bacon, pork belly, pancetta ricotta and mozzarella, bacon cheddar ale soup and Hawga-licious flatbread pizza. My husband the critic had the BG chicken Milanese and he loved it. Bacon Gourmet has it all too - fresh seafood, Italian meals, pulled pork - there is something for everyone. We were offered a recited desert menu, since they are fresh homemade, the selection changes from day to day. They have karaoke night, happy hours, and live entertainment events on the weekends; you can find the schedule on their website and Facebook. The staff was so inviting it was the cherry on our bacon sundae and it made a repeat visit a must! Bacon Gourmet is located at 831 S. Delaware Drive (Rt. 611 S) in Easton, PA (610-900-4389). 2017 Easton Christmas Book 1001 THAI (1001 Northampton St, Easton, 610-252-1001, 1001thai. com) has been serving authentic and unique Thai food since opening its doors in 2016. Using family recipes as well as those gathered from a career in other restaurants, executive chef Pheraphat Phromsorn creates food to be enjoyed with all of your senses. The intimate, 30-seat restaurant allows diners to experience the cuisine at its finest. Menu highlights include roasted duck Thai basil, pumpkin curry, Thai chicken wings marinated in the restaurant’s own special spicy sauce, a house-made sweet-and-sour sauce for dipping, and of course noodle dishes like pad Thai. Whatever level of heat you prefer, the staff will aim to match your preference, even pointing out a dish that might better suit your particular tastes. The menu has lots of meatless options, including seitan and mock duck, and the kitchen is happy to make any dish vegan friendly as well. Desserts include sweet sticky rice, and crème brûlée. Reservations are encouraged if you’re eating in, and the restaurant is BYOB. Dining hours are Tuesday through Friday 11:00 AM to 3:00 PM and again 5:00 to 9:00 PM, Saturday and Sunday from 3:00 to 9:00 PM. Most dishes are also available for takeout, with slightly varied hours: Tuesday through Friday from 11:00 AM to 8:30 PM, and Saturdays and Sundays from 3:00-8:30 PM. ANGELO’S RESTAURANT, 14 N 4th St. (610-252-6956), IS Easton’s downtown diner, serving breakfast and lunch daily. “Food is life” according to owner Kosta Karaminas. He loves all kinds of cuisine but is most fond of Middle Eastern food. His wife was raised among a vast array of cuisines in Montreal and if you make her poutine, it better be correct! The customers influence the menu at Angelo’s. Angelo’s has been open since 1976, and his parents kept it going by giving customers exactly what they wanted... Good food at affordable prices. He’s trying to do the same and follow in their footsteps! If you bring in a recipe that interests Kosta, he’ll serve it as a special; if the customers enjoy, it stays. A man is nothing without family.... Yes, it’s actually quite the family affair at Angelo’s. You can still find Kosta’s father Angelo, talking and joking around with customers, his mother Maria in the kitchen with him on a daily basis, and his wife Kelly runs the front of house on the weekends while their 8 year old son, little Angelo, tries to help out where he can, but it’s one year old George who supervises them all! Kosta was raised in the business but tried to distance himself from it for years, though he always seemed to find himself back in the kitchen. After a major life change in 2013, that all changed.... “I went from cooking at home for fun to cooking at the restaurant for a living. I don’t regret my decision one bit and I haven’t looked back ever since!” In terms of food preparation, the more spices you use, the more you take away from the star attraction of a dish - Kosta prefers salt, pepper and oregano, especially when it comes to meats. He loves a really good shepherd’s pie, though not on the menu, it is served as a special during the colder months. He won’t give up the recipe but if you love red wine, you will love it Customers have said it reminds them of their childhood and their own mother’s cooking! Kosta met and cooked for Hal Holbrook last year and recently met celebrity chef Bobby Flay as well as a presidential candidate running as an independent. Kosta remarks, “I also cook for the famous Colin a few times a week. The man really loves my oatmeal!!!!” Check out Angelo’s Restaurant on Facebook. ANTONIO’S PIZZERIA & RESTAURANT, 114 S. 3rd St. (610253-9977), offers the best of both worlds in downtown Easton – a quick slice and soda or a sit-down Italian meal. If you have time to dine, there is plentiful seating in the side dining room where you can enjoy the best Italian food around. Antonio’s Pizzeria is family owned and operated. Owner Pat Crisci attended culinary school, but it was his family who inspired him to cook... “My grandmother was an amazing cook and I miss her food very much,” he remarks.

In 1908, Mr. Jim Makris began selling hot dogs in Easton. He used a pushcart. In 1910, Mr. Jim Makris came to Union Square at the old Penn Railroad Passenger Station, which stood where the gas station is. He used a pushcart until he built his first stand. By the late 1940s he had built a modern cup stand a short distance behind the bridge shanty. In 1966, the cup was destroyed and Jim’s Doggie Stand moved into Union Square after his nearby cup-type stand was damaged beyond repair by a runaway pickup truck driven by a 16-year-old youth from Easton. Baines and Radio & T.V. had moved to Warren St. in P’burg and Jim moved his business into this location immediately. It continued to thrive as usual. In 1990, it permanently closed down. Jim Makris died in 1983 at the age of 97. Mr. John Apostolopoulos and Mr. Frank Bounoutas whom worked for Makris opened up their own business shortly after in the 25th Street Shopping Center in Easton. Though they are not affiliated with this business, it is still a special treat to have Jimmy’s Doggie Stand along the river. It opened in 2008 to continue the tradition of selling hot dogs here at this location with many local favorites. It is family owned and operated by Mr. Nick Malatos. POP’S KITCHEN & TAP ROOM is located right off Route 78 at 480 Industrial Drive, Easton, PA (610-559-1962). Pop’s Kitchen and Taproom is a story of a father and his sons. After many years in construction they had the opportunity to venture out and start Pop’s. “Well, we weren’t always called Pop’s ... we were ‘Interstate Market’.” Doesn’t exactly sound like a place for a burger and a beer, does it? While they’ve always served great sandwiches and breakfast, the full menu and ability to serve beer came later. More than 21 years in, Pop’s went through an expansion for more kitchen and seating, added an extensive selection of craft beer, underwent a much-needed name change and built a bar with a dozen taps. Pop is no longer with us and is missed greatly by all who knew him. So every day they do our best to honor him and make him proud. Chef Reynaldo prides himself on preparing his food quickly and ex-

peditiously, which pleases his large takeout clientele. No wonder he named the restaurant Taqueria because it means fast food service. The other part of the restaurant’s name – La Plaza – refers to a kiosk and garden area such as the picture on the front of his menu. The Sincronizada, a type of quesadilla, intrigued me. It is made with a double layer of flour tortilla stuffed with mozzarella cheese, ham, tomato, avocado, lettuce and onion. The Gorditas, made with corn, lettuce, mozzarella cheese and choice of beef, pork or chicken are great as well as are the chicken burritos. Other choices from the menu include tortas, tamales, tostadas and tacos. Chef Reynaldo’s signature dish is Tacos Especiales. Many of Reynaldo’s recipes are from his Guadalaharan mother. His family has a food business in Reading, PA and they inspired him to go into the restaurant business. He frequently attends classes on

TC is a graduate of Northampton Community College’s cooking program, with much experience in area restaurants. The tradition of great Italian food and atmosphere is alive in this quaint establishment. A stone wall still partitions the restaurant from the restrooms. Green vinyl booths, soft neon lighting in the dining room, paintings, shutters and delicate lace curtains at the windows, the stone floor, and the bar, partially visible through wooden slots. Terry’s Italian Restaurant focuses on fresh, homemade quality. A common theme of the menu is the availability of house-made foods. Salads of leafy greens with finely shredded carrot, tomato, and cucumber and choice of house-made dressing such as lemon vinaigrette and bread accompanied by butter and a tasty basil-infused olive oil accompany every entrée. Then select your entrée from the extensive menu of scrumptious meals that Terry’s has to offer. The ravioli entrée offers a choice of meat, cheese, spinach or a variety of the three. Nesquehoning Street in Easton’s South Side for 14 years. The owners got into the restaurant business from working at one in Orlando, Florida at Disney World. Tommy brought his same successful pizza recipes to Sole Mio. The bruschetta pizza, consisting of thin crust square pizza topped with fresh diced tomatoes, garlic, onions, olive oil and Italian herbs, is very popular among their patrons. Their signature dish is the chicken francese, which is chicken slices dipped in egg batter, then sautéed in butter and lemon. Let me tell you, it’s a winner! Sole Mio’s menu has a wide array of Italian and American dishes to satisfy your appetite. They have signature sandwiches, one being the chicken BLT, and their scrumptious calabrese – grilled chicken, fresh mozzarella, roasted peppers and balsamic dressing. You can BYOB, and don’t forget to leave room for dessert. The tiramisu is very tasty and I suggest you try the dark side of the moon – a rich fudge cake soaked with coffee liquor, filled with chocolate mousse, iced with whipped dark chocolate ganache and topped with a chocolate crescent moon. Every meal is cooked to perfection, and they use only the healthiest and freshest ingredients.
