From 1 8 3 4 to th e 1 90 0s, t he plante r c la ss had a near monop oly o n fert i le land i n the c o lonies, and the ex -slaves fo u n d i t n e ar i m po ssib le to acq uire any, even in t h e l a r g e r c o lo ni e s such as in Jamaica and G u y a na. I NSTRU C TIONS • Combine all the ingredients into a glass and then fill with crushed ice. • Swizzle with a bar spoon until frost forms; the ice will settle as you do this so therefore add more ice to fill. Garnish with a lime and serve.

• 1/2 lb. of boneless salt cod fish • 1/2 cup of tomatoes • 1/2 of chopped onion • 1/3 cup of chopped sweet pepper • Ground black pepper (to taste) • 2 tbsp of olive oil • 1/2 of a scotch bonnet pepper • 1/2 of a lime

INSTRU CTIONS

• Boil fish in a saucepan with water for 10-15 minutes and then drain. • Taste fish to check salt content; if salty repeat above step. • Shred fish with fingers. • Heat olive oil in a skillet and then add onions, followed by the fish,sweet pepper and scotch bonnet pepper. • Add tomato, mix well and cook until tomato is soft. • Add ground black pepper. Squeeze half of lime to mixture. • Serve with, bake or any other bread.
