ITALIAN-STYLE ANTIPASTI PLATE

Italian-Style Antipasti Plate ◦Ingredients
2 x 150g mozzarella balls, torn in half
1 red chili, deeded and finely chopped
20 slices quality prosciutto/bresaola/salami
Artichoke in olive oil, 280g, drained. Oil reserved
290g of sundried tomatoes in olive oils, drained. Oil reserved
290g balsamic sundried olive peppers in oil, drained
3 tablespoons mixed olives
1 handful cherry tomatoes, halved
Parmesan, for shaving
20g fresh basil, leaves picked
1 loaf ciabatta bread, sliced
1 clove of garlic, chopped in half
Italian-Style Antipasti Plate ◦Method 1. Spread the mozzarella on a large plate. Sprinkle with the chili. Place the cured meats and vegetables in tiny heaps on the remainder of the plate. Sprinkle some Parmesan on top of the meat. 2. Place most of the basil leaves in either a pestle and mortar or Flavour Shaker. Add a pinch of salt to make a paste. Add a few tablespoons from the jars to make basil-flavored olive oil. Stir to combine and spread it on the mozzarella and vegetables. Drizzle with some olive oil. 3. Toast the ciabatta, then rub it lightly with the garlic. Drizzle with some of the reserved oil. Finally, add the basil leaves to the mixture and mix everything.
