“Trentasette” Balsamic Vinegar Condiment This product has a particular harmony attributed to its high percentage of cooked grape must. The reduced grape must gives it a thick body and a lower acidity than a regular balsamic vinegar. It is a pure product with no additives. The Truth About Truffle Oil Did you know that there is no actual truffle in truffle oil? If pieces of truffle appear inside the bottle, know that it does not add anything aside from visual pleasure and the ability to list ‘truffle’ as an ingredient on the label. There is no way to squeeze a truffle to make truffle oil, as you would press olives to make olive oil. Truffle oil is made in one of two ways: as a ‘nature identical’ oil, or as a byproduct of petroleum. Petroleum-based products can bear an overpowering, unnatural aroma, and will even burn your throat upon tasting. A ‘nature identical’ oil is made by obtaining flavor molecules from fruits/vegetables that exist naturally in nature, such as carrots, apple or potato, that combined make up the flavor aroma of a truffle. One way to find out the type of oil you have is The Heat Test. Truffle oil that is not ‘nature identical’ will break down under heat. So, dab a little bit of truffle oil on your hand. Smell it, and take strong note of the aroma. Now, rub your finger on the patch of oil to heat it up for about 10 seconds. Smell the oil again. A ‘nature identical’ oil will have the same aroma after creating heat. An unnatural, petroleum-based oil will not and the oil will have noticea- 8 bly lost its aroma.

The various Italian names attributed to this truffle are due to its color, the period in which it ripens and the habitat in which it is found. What Are Truffles? Truffles are the fruit body of a subterranean mushroom. They grow only in symbiosis relation with the root of certain trees. The tree provides sugars to the truffle, which it cannot make itself because it does not carry chlorophyll, while the truffle transfers dissociated mineral salts to the tree because the tree is unable to assimilate them itself. Truffle availability depends on season and conditions. See the descriptions to the right for information on the different truffles and their availability.
The fruity body can vary in size from that of a hazelnut to an orange. The skin is black, sometimes with dark red or rust colored patches. D.O.P. EXTRA VIRGIN OLIVE OIL “Planeta” D.O.P. Val di Mazara The Planeta Extra Virgin Olive Oil D.O.P Val di Mazara distinguishes itself from all other olive oils. The thousand year old trees from which the olives grow add to the beautiful and rustic nature of this olive oil. Through a mix of tradition and modern technology, Planeta carefully crafts its prized oil to perfection with such care that only 14 liters are produced from 100 kg of olives compared to normally up to 22 liters for other oils. Varieties used are 50% Nocellara di Belice, 30% Biancolilla and 20% Cerasuola olives, all from the groves of the Planeta estate. Also available in Monocultivar from pitted Biancolilla or from pitted Nocellara del Belice. Each of the monocultivar with particular and amazing qualities and tasting notes.
The Planeta grove extends for 98 hectares in the Caparrina district in Menfi (AG). Planeta’s decision to dedicate this land to olives was not random. It was in order to safeguard the landscape and its nature, to make the most of the land and to create employment. The harvest takes place in early October. The olives are picked manually and processed within a few hours at the press situated in the center of the olive grove to ensure the best tasting results. Planeta’s continuous research into quality has allowed them to win some of the principal prizes in the sector, in a short time becoming one of the benchmarks of quality for extra virgin olive oil.

This traditional sauce is the most famous in the world and is for sure the one preferred by all Bolognese families. Tomato Sauce with Onion & Prosciutto This is a sauce made with tomatoes from our region and a selection of Emilia ham. 1934: their grandfathers, Amerigo and Agnese, opened the doors of the Trattoria. They are in the Samoggia Valley, on the Bolognese Appennines between Bologna and Modena, a territory source of curiosity and inspiration. While Amerigo was out and about selecting the raw materials for a simple yet tasty cuisine for more than fifty years, Agnese was cooking in the kitchen. She was first helped by her daughters, Marisa and Giuliana, then by his grandson Alberto who has since evolved the Trattoria’s philosophy and traditions and who now continues to run it. The Trattoria, awarded by customers and gastronomic guides, has always been a reference point and a source of inspiration for the Dispensa. Now, as was the case all those years ago, farmers, wine-growers, woodsmen, animal farmers, mushroom pickers and truffle hunters are the people with whom they work. Tomato Sauce with Onion & Suasage This is a sauce prepared with the local tomato puree “passata” and characterized by a balance between acidity and sweetness. THE BEGINNING OF ALTHEA Althea was set up in 1932 by a well-known Parma family: the Bertozzi's. The company's recollections are that during a site-visit for the purchase of a existing canning factory for the new company, Carlo Bertozzi picked a wild flower, which an expert in botany would have recognised as the "Althea officinalis". A flower as a guarantee of authenticity and excellence: the two cornerstones of the new company's philosophy. Althea was set up when the Bertozzi brothers sensed "that the mentality of the consumer, though still tied to the traditional cooking methods, was nonetheless actually attracted towards new ones". The winning idea in Althea's success was their aim that the company should represent "Italian Cooking" and therefore not only be a producer of tomato paste, where the market was already saturated, but a producer of more refined, ready-to-use products. 36

PANFORTE Panforte is a dense, sweet cake from Siena dating back to the Crusades. Soldiers were gone for weeks and months at a time, relying and surviving only on these nutritious cakes full of nuts and honey. These cakes were so delicious that they have since been produced as a mouth-watering treat perfect as a daily dessert or as a special, elegant gift. Panforte is made from all-natural, healthy ingredients such as dried fruit, honey and nuts. Many variations of the original recipe have been established, although debates continue on which type is the tastiest! They are easily paired with a dessert wine or with a sharp cheese, but are now being incorporated in a multitude of dishes, from meat such as filet, to bacon-wrapped chicken. We also recommend eating them on their own!
