CUPID CHOCOLATE MOUSSE

Per 50g serving : 120 calories

Come February and there is Love in the air. On those special days, we keep looking for ways to make an impression. It could be either buying the best possible gifts or treating our loved ones with lip-smacking dishes.

Talking of food, chocolate seems to be quite a favourite when it comes to expressing love. So, let’s whip up a soft and luscious chocolate mousse which I am sure will win hearts, because it always does, doesn’t it ?!

This is an extremely simple and yet healthy CHOCOLATE MOUSSE which can be whipped in a jiffy. The aim is to not toil away in the kitchen but to spend maximum quality time with our loved ones. This recipe will help you achieve just that.

Tip : Dark chocolate. The better the quality of dark chocolate, the more luxurious your mousse will taste.

I like to use a 70% to 75% dark chocolate bar. If you want the mousse sweeter you can choose Milk Chocolate instead.

Ingredients :
  • 100g good-quality dairy-free dark chocolate (70 to 80%), chopped 200 g soaked cashewnuts

  • 2 soft Medjool dates

  • 50g pure maple syrup

  • 1 teaspoon vanilla extract

  • A pinch of salt

  • For decoration :Sliced strawberries

Method :

1. Soak the cashewnuts in warm water for half hour.

2. Meanwhile, cover the dates with freshly boiled water. Soak for 15 minutes, then drain and remove the pits.

3. Melt chocolate in the microwave: Chop chocolate into small pieces and heat in the microwave on high power in 30-second intervals, stirring after each round.

1.You could even melt the chocolate in the double boiler. 4. In a food processor or high-powered blender, add the cashew nuts with about 3 tablespoons of water. If needed add more water to get a thick paste.

2. Add the dates, maple syrup, 1 tsp vanilla extract, and a pinch of salt. Blend really well until the dates are fully pulverized, scraping down the sides as you go.

3. Now add the melted, cooled chocolate and blend until completely smooth and creamy, scraping down the sides as you go.

4. Divide amongst 6 to 8 small dessert glasses and chill for at least 1 hour to set.

5. Serve the mousse with slice of strawberry.
