Valentine is a season of reds and pinks.

This Paneer Pista Roll is so apt for the season. The mild sweetness and the softness of the paneer wrapped around crunchy delicious finely chopped pistachios and cashewnuts are a real treat.

The nuts not only give this beautifully pink dessert a crunch but also lifts the nutritional value of the sweet.  A delicate looking treat specially for your loved ones this season, which is both effortless and time saving.  It gets ready in a jiffy.

The gorgeous looking pink colour comes from the beetroot juice, which we all know is so healthy.  And you don’t need much just a few drops will do the magic.

Paneer, is popular for its protein content and the nuts give us the boost of minerals like magnesium, iron, calcium etc.

Although, it looks fancy I assure you it can be easily made with all ingredients commonly found in your homes. So, celebrate this month of love with this stunning pink rolls with tiny specs of pistachios.

This valentine go ahead and pour your love into making these delightful paneer rolls instead of the regular store bought gifts.  It will make the gifting experience so much more special.

Paneer Pista Rolls

Ingredients :

300 gms malai paneer (grated)
 2 tbsp condensed milk

½ cup milk powder (150 g)

¼  tsp green cardamom Powder

2 tsp desi ghee

3 – 4 drops of beetroot juice extract

For stuffing:

3 tbsp finely chopped pistachios and cashwenuts

Method:

In a pan melt desi ghee and the malai paneer

ash the paneer with the spatula and cook for 2-3 minutes. Keep the flame low to medium

The paneer will release some fats

Add 2 tbsp  condensed milk and half quanity of milk powder to the panee ix well and cook it further for a couple of minutes

Once the mixture releases the pan and comes together remove from heat

when the mixture is still hot, add the remaining milk powder and the beetroot juice for colour

mix till well incorporated.  (but do not overmix, else the paneer will release its fats)

The mixture will turn soft dough like Thinly spread the mixture on a silver foil and place the chopped pistachios and cashewnuts in the center of the fla ened paneer in a straight line

Roll the foil tightly into a log

Keep the log in the refrigerator for 30 minutes or so

Once chilled cut the paneer roll into discs

Arrange onto a plate and serve
