The Chronology of Fashion Spring 2011 The Chronology of Fashion focuses on those points when a style of suit or dress, hat or handbag, cut of hair or cloth—or indeed entire look—came to pinpoint its moment in time or radiate out to express its entire era. Proceeding with strict chronology, each spread takes a distinct fashion item, be it a high heel or a low skirt, and displays it in contemporary images.

Tango dress, Doucet, 1914
The tango from South America became a huge craze that had a major effect on fashion – Paquin opened a branch in Buenos Aires. The tango dress, often of yellow or orange satin, was lighter and looser with a central slit in the skirt. The dance moves eventually caused hemlines to rise and dresses were worn over trousers, with a transparent over-bodice. Tango slippers were fastened with ribbons that crossed from toe to ankle.

The exotic shackle
Already known as the maverick of fashion, Paul Poiret’s hobble skirt caused an outcry in 1911. Skirts had been narrowing since the turn of the century, but Poiret’s interpretation of the trend was sensational. The line of these dresses seemed dramatically unstructured after the curves of the Gibson Girl. The draped silhouette fell from a soft bustline and narrowed severely between the knees and ankles, which restricted the wearer to geisha-like minute steps. This was very in tune with the notions of the Orient that interested Poiret, with the woman as an exotic and glamorous courtesan.

The introduction of the tight skirt was at odds with women becoming more active – the Suffragette protests were at their height, but the fashionable woman could only take a step of a couple of inches. The effect of encasement was heightened by the collar and long, tight kid gloves that were worn under close-fitting sleeves. Skirts started to be designed with splits, concealed pleating and artful draping for ease of movement.

The hobble skirt was the subject of much public debate, from gentle satirisation to papal condemnation. Cartoonists found much humour to be derived from the new fashion, particularly when worn with the huge hats and high, stiff collars which were even more exaggerated than Edwardian styles. The style was also seen as erotic, with women rendered helpless by their clothing.
Haute couture was one business that was not dominated by men. As well as Worth, Poiret and Jacques Doucet, there was room for the Callot Sœurs, Madeleine Cheruit, Jeanne Lanvin and Madame Paquin. Lucile was the originator of the first fashion shows using live models in her salons, although as this photograph shows, her designs were just as limiting to female emancipation as those of Poiret.

The racecourse: catwalk of the day, 1912
As the haunt of the fashionable elite, couturiers sent their mannequins to the Paris racecourses to show their latest creations. This outfit pairs the narrow skirt with a pannier, or polonaise, overskirt that echoes the style of the 1870s when skirts also narrowed dramatically. Brimless hats, decorated with a plume, and dainty shoes with high louis heels were also the height of style.

By the time Audrey Hepburn starred as Holly Golightly in Breakfast at Tiffany’s in 1961, the LBD was well-established, but Givenchy made the style fresher and younger, and in doing so created an iconic fashion moment. Hepburn’s elfin looks and slight figure contrasted directly with the smouldering sexuality of Anita Ekberg in her gravity-defying black dress in Fellini’s La Dolce Vita of the preceding year and predicted a time to come.

Even leisure time in the 1950s had rigid social codes and timetabling and it was the rise of the cocktail party, particularly when it became a part of suburban life, that made the LBD such an indispensable item. In contrast to the full-skirted crisp cottons or tailored wool of daywear, a little black dress in satin and tulle allowed a woman to express the inner femme fatale.
Dropping out of architectural studies to pursue a career in fashion, Balmain provided an alternative to the Corolle silhouette of the New Look, with his long, bell-shaped skirts and pulled-in waists. A designer for the International Set, he was known for styles that were both elegant and fun as seen in this design, which plays on the ballerina-style mode of the era.
Madame Grès, who before the war had designed couture under the name Alix, was already known for her classically sculptural styles. Her pleated evening gowns are reminiscent of Greek statues, but in turning her hand to a little black dress in the fifties, she used her favourite jersey to accentuate womanly curves in this wrap style, which pre-dates another classic wardrobe staple. The simple chic of the little black dress works well as the perfect backdrop to accessories, particularly for the feature hats worn for cocktail hour. Vogue had called the dress, ‘a uniform for all women of taste’ in the twenties, but what had become apparent by the fifties was that the LBD had developed a persona of its own – one of sexy, uncompromising glamour.

The gardens at the Château de Versailles in France are the epitome of French style and derive directly from Italian Renaissance gardens. Adapted to suit the flatter terrain, the grand design is characterised by great expanses of still water and surface pattern. Parterres are placed close to the house to be viewed from above, long avenues radiate out from the house towards perimeter bosquets (shrubberies), intersected by walks. Impressive fountains, sculpture and balustrading abound. Out of the grandiose French style, smaller Dutch gardens developed in the 17th century featuring hedges, topiary, statuary and, of course, canals and tulips.

The French developed and refined the style of bedding known as the parterre. The most elaborate, parterres de broderie, are positioned closest to the house, with simpler designs at a greater distance. These complex arabesque patterns derived from the heavily embroidered clothes of the period. Flowing intricate designs are bordered in low-growing box with flowers and foliage plants grown in the beds. Some compartments are filled with raked coloured materials such as coal dust or sand.

Purpose
Although you will find towers of varied designs, the tendency is for them to be more architecturally correct and less fanciful than a lot of garden structures. They strike a sombre note, adding an air of gravitas to a scene. Some, especially in public spaces, may commemorate a person or event.

Imposing and substantial structures, like Sand/gravel towers, often pre-date their surrounding garden, such as the one at Sissinghurst, which is Elizabethan.

Belvederes and towers are among the most conspicuous buildings found in gardens. The word belvedere is Italian for ‘beautiful to see’ and refers to a high structure, often a tower, affording spectacular views. Known as watch towers or prospect towers, many originally served a defensive function and were later commandeered for pleasurable purposes. However, others have been built just to impress, and dominate a landscape visually for great distances. The intention is that such buildings should be looked at, as well as looked from, serving as eye-catchers or focal points.

Towers may be Classical, gothic, round, square, pointed or castellated in design. They vary in height considerably and are often positioned on high ground, further accentuating their importance. The higher the tower, the more affluent its owner.

Clock tower
Location
As its name suggests, a clock tower is a tower with at least one clock face set within its structure. Many have four, one on each façade, thus enabling the time to be seen at a distance from multiple viewpoints.
Clock towers are more common in public parks than private gardens, although small clock towers can be incorporated into other functional garden buildings such as gatehouses or stable blocks. 183

The Earth has a total circumference of 40,000km (24,900 miles) and a diameter of 12,732km (7,911 miles). At its heart is an inner core, essentially a ball of solid metal, mostly iron and nickel, around which is the outer core, comprising molten metals. Surrounding this is a thick layer, about 2,200km (1,370 miles) in depth, of dense silicate minerals that form the mantle. Floating on top of the mantle is the thin, hardened and brittle layer of the crust. The crust and the rigid part of the upper mantle, to which it is fused, form the lithosphere, the rocky base of the landscapes covering the planet’s surface.

The Earth’s cool, blue, water-dominated surface belies its fiery interior. The temperature of the inner core is thought be around 4,700ºC (8,500°F). The heat rises through the outer core of liquid metal to the mantle, where temperatures can reach 3,500ºC (6,330°F).

The heat generated in the Earth’s core rises up through the rocks of the mantle, creating rising currents of heat. These currents cool as they move towards the top of the mantle and then fall back down again, driving the movement of the plates on the Earth’s crust.
The discovery of the Mid-Atlantic Ridge, a volcanic mid-oceean ridge about 1,000km (620 miles) wide by 2,500km (1,550 miles) high where new oceanic crust is created, provided evidence to support the theory that the crust was continuously growing and moving.

Fossils present a rare, tangible glimpse of how a landscape and the life that inhabited it were once so different. Although it is not easy to see fossils – the remains or traces of ancient plants and animals are rarely preserved – they can be found in sedimentary layers of rock that have been recently exposed by wind or water erosion, particularly in cliff faces. Such rock layers may once have formed the floors of rivers, lakes or oceans where the remains of underwater creatures, such as molluscs, kinds of plate: continental plates (or sial, were buried.

The minerals in the sediment gradually replace the molecules of the shell with their own molecules, thus preserving the shell. Eventually, the layers of rock are uplifted and then exposed by erosion to reveal the fossil.
Other fossil forms
There are many other forms of fossilisation, such as being frozen in ice, preserved in airless and waterless conditions in a desert, or trapped in amber, but you are unlikely to find such fossils walking in the landscape.

Marine organisms can be buried to form limestone or crushed in sand to form sandstone. Fossil fuels are produced when plants are buried and, in certain conditions, they eventually form coal, oil and gas. This character certainly has a wicked devilish look about him—it must be the eyebrows. There is only one color of towel that works for this model—and that’s red. In fact, you should use the brightest red you can find. If you really want to get creative, try carving two cloven hooves from dark-colored bars of soap and place them at the ends of the legs.

■ Begin by assembling the main section of the building, Empire 1.
■ Begin by constructing the main body of the building, Chrysler 1.
■ Assemble Empire 2. When dry, attach to Empire 1.
■ While this dries, assemble Chrysler 2–4, which make up the distinctive art deco tower—they will nestle inside each other like Russian dolls. Glue the outermost piece, Chrysler 4, to the top of Chrysler 1, by applying a thin bead of glue along Chrysler 4’s bottom edge and positioning it in place along the outermost glue guidelines.
■ To build a more detailed version, where the spaces between the cables are cut out, begin here (if not, begin with the next paragraph). Using a sharp craft knife, and a metal straight-edge (to steady the blade) cut out the pieces between the cables on Brooklyn 3 and 4. .
■ This building consists of only one piece. First attach the sides, then the bottom and finally the top. The roof’s large rectangles are glued to their corresponding tabs, but the smaller sections are simply folded over and adhered with just the slightest touch of glue.
■ Begin with the body of Liberty herself, Liberty 1. To give her greater dimension, slightly curve out the piece lengthwise by rolling it gently over a dowel or round pencil. A subtle curve is all that is needed. Make sure to fold and glue her left hand in place on the tablet she’s holding.
■ Begin by folding the façade, Met 1, as indicated on the template. Don’t overlook the dashed valley fold.
■ Assemble the distinctive piers of the bridge, Brooklyn 1 and 2. Glue the rectangular tabs to those with the diagonal corners.
■ Admire Philip Johnson’s postmodern masterpiece!
■ Slightly round out pieces Liberty 2 and 3. Glue the pieces one on top of the other to give her toga dimension. Don’t forget to fold and glue the small triangular section on Liberty 2.
Empire State Building
■ Build the base, Empire 3, making sure to leave the bottom flap open for now. ■ Build the spire, Empire 4, by gluing the two pieces spine to spine. Fold the two sections in half, then use a toothpick to apply a thin line of glue along the spine of one piece. With the two pieces folded closed, glue one to the spine of the other. Let dry. ■ Attach the main section to the base. Glue bottom flap closed. ■ With a tiny line of glue along the base of the spire (Empire 4), position it gently onto the top of Empire 2. ■ While up on the spire, keep an eye out for King Kong, Fay Wray and the biplanes.

■ Follow suit with Chrysler 3 and 2. ■ The pinnacle comprises two pieces glued spine to spine, Chrysler 5. Simply fold the two pieces in half, then use a toothpick to apply a thin bead of glue along the spine of one piece. With the two pieces folded closed, glue one to the spine of the other. When dry, put a drop of glue on the bottom and slide it into the nest of pieces already in place. ■ Assemble Chrysler 6. Glue Chrysler 1 to 6. ■ Assemble the base of the building (Chrysler 7), but leave the bottom flap open for the time being. This will allow you to reach in with a finger or two when gluing Chrysler 6 to the base. When all the pieces are in place, glue the bottom flap closed and take the elevator to the top for a stunning view of mid-Manhattan.
■ Glue Brooklyn 1 and 2 to the inside of Brooklyn 3, the first of the two spans. Align the tops of the piers with the top edge of the spans. ■ Glue the roadway into place. Begin with Brooklyn 5. Fold down the tabs and glue to the inside of Brooklyn 3. Be sure to line up the bottom of the tab with the bottom of the span. Repeat with Brooklyn 6 and 7. ■ Attach Brooklyn 4 to the rest of the structure by gluing the two piers to its inside. At this point the roadway is attached only on one side of the bridge. Push the unglued side down and slightly below the bridge, to easily apply glue to the remaining tabs. Push the section back up into the bridge, lining them up as before with the bottom of the span. ■ You may now travel from Manhattan to Brooklyn and back again!

■ Attach Met 1 to the bulk of the building, Met 2. Fold and glue the four columns, Met 3, together. Set aside and let dry. ■ Attach the roof, Met 4, to the building, ensuring that you glue the gray tab at the front of the roof to the back of the crenellated façade.
■ Construct the base, Liberty 4. Observe the dashed line that indicates a valley fold! Mark, score and fold as indicated in the general instructions.
■ Attach the columns to the front of the building. Fold and glue the stairs, Met 5, to the building. Attach the completed building to the base, Met 6.
■ Apply a thin bead of glue to the bottom of Liberty 1 and gently place on the base. Hold for a count of twenty so that the glue sets.
■ When visiting the Met, be sure to look for Michelangelo’s The Study for the Libyan Sibyl, one of the finest drawings to be held in a museum in America.
■ Place a tiny dot of glue on either side of the torch and attach Liberty 5 over the flame. ■ From the observation decks in either Liberty’s crown or torch, take in the spectacular view of Lower Manhattan.

Kidwelly Castle was an imposing statement of Norman power. Built in the 12th century, it was developed, altered, and added to during three centuries of Anglo-Welsh conflict—a chronicle in stone of the evolving medieval fortress. The original ringwork castle was one of a series built by the Normans to secure their southern Welsh conquests. In the mid-13th century, the de Chaworth family constructed a square inner ward with four round corner towers and portcullis gates to the north and south, thus transforming Kidwelly into a concentric castle, with an inner and outer ring of defenses. In the early 14th century, the present outer defenses were constructed. The semi-circular outer wall was heightened and strengthened to form a stone curtain wall with a wall walk and a series of semi-circular towers. Before the arrival of gunpowder in the late fifteenth century, permanent fortifications were the dominant means of both controlling and defending territory. During the medieval period, tried and tested defensive features, from drawbridges to ditches, were imitated and adapted for use in a variety of fortified structures, including castles, walls, towns, cities, monasteries, and harbors.
A square inner bailey is defended by four round towers, which overlook a semi-circular curtain wall on the landward side, with the massive gatehouse next to the river. The river prevents this being a truly concentric plan. However, a jutting tower, as well as the river itself, protects the riverside walls, and the final plan is very strong. As with all concentric castles, Kidwelly’s strength lies not in its keep but in its walls, which are set with strongly fortified gatehouses and with towers at regular intervals around their circumference.
A strong stone wall is built around the outside of the keep. Between the keep and the wall is the enclosed area known as the bailey.

The bartizan is a small turret or look-out projecting from a wall and supported by corbels.

Interior rooms often have wooden staircases, while walls and towers have stone stairs. The newel stair, in which a spiral stair revolves around a central column, is common.

The castle’s entrance is its weakest point, so priority is given to building a strong gatehouse. Often this is the first part of the castle to be rebuilt in stone. Placing the gatehouse near a moat or keep gives it added protection.
Battlements
Defenders raise the far end of the drawbridge by hauling on ropes or chains.
Arrow loops
Arrow loops allow defenders to fire bows from cover. Rare before 1190, they begin as a simple vertical slot, less than two inches wide at the outside, and average between 3 and 12 feet in length. In the late 12th century, a splayed foot is introduced, which widens the defenders’ field of fire.
Battlements, or crenellations, are a classic defensive feature of medieval fortified walls. An embrasure, or crenel, is an opening in the wall used to provide a firing point. The intervening merlons provide cover for defenders.

The term “Theocracy” was invented by Josephus (AD 38–100) specifically to describe the ancient Hebrew constitution based on the concept that God’s laws were handed to Moses carved on tablets of stone. While its literal meaning, “rule of God,” seems easy to grasp, the blend of the secular and the sacred would need a book the size of the Bible to discuss its implications. Complex variations of Theocracy have punctuated history, and the consequences of a belief that the ruler is divine can perhaps best be appreciated by considering how two theocracies can happily co-exist.

In medieval Europe, and until the time of Cromwell in England, the “divine right of kings” held sway; it was thought that kings derived their right to rule from God alone, and were therefore answerable only to God. Ancient Chinese emperors ruled under the Mandate of Heaven, which could be withdrawn if an emperor proved too despotic and transferred to a more deserving candidate.

He believed that there was “inherent conflict between philosophic truth and the political order.” The answer was not to educate the proletariat out of their ignorance, because if they started thinking for themselves, they would be impossible to control. Strauss’s solution, followed by his disciples, was not only to deceive the masses by hide the true facts—about Weapons of Mass Destruction, for example— but to believe that such deception occupied the high moral ground.

When Communism fell and Flower Power waned, Neo-conservatism had no more natural enemies, and so turned to the rest of the world and began “exporting democracy.” This drive manifested itself as a particularly aggressive foreign policy, even more so after the terrorist attacks on the World Trade Center in September 2001. Irving Kristol, considered the father of Neoconservatism, was an avid Trotskyite in his youth, and he and his contemporaries brought the romantic revolutionary intensity of their early ideals to the materially successful but politically moribund Capitalist system to produce a kind of mythic imperative common to all schemes of world domination. Kristol felt that there was no point in being a world power, as the USA was, if you were not going to forge an empire in your own image. Inconvenient truths or facts should not get in the way, so a hierarchy of truths was developed, to be used depending on whom you were dealing wth. Following the ideas of political philosopher Leo Strauss, Neoconservatism holds that noble lies and myths are a more efficient way of keeping society stable and controlling the people.

Whenever a pair of incompatible beliefs or decisions collide in our minds it provokes a kind of mental discomfort known as “cognitive dissonance.” 3-MINUTE ANALYSIS
It’s not just us humans who experience cognitive dissonance, monkeys do, too. Louisa Egan and colleagues at Yale University showed this in a 2007 study in which they offered capuchin monkeys the choice between pairs of differently colored, yet equally appealing candy. After turning down a given color in one pair, a monkey made subsequent choices that showed it had devalued that rejected color in its mind, thereby justifying the earlier arbitrary preference.
or say another, what happens psychologically? In the absence of any external justification for the anomalous behavior, the contradiction is resolved by altering your original belief. The American psychologist Leon Festinger showed this with James Carlsmith in a classic study in 1959, known as “the boring task.” Having performed an hour-long monotonous task involving pegs on a board, students were paid either one dollar or twenty dollars to convince another person that the task was fun and interesting. Afterward, the students were asked by a researcher what they really thought of the boring task: those paid just one dollar said that they had found the task enjoyable whereas the students paid twenty dollars said that it was in truth terribly dull. Festinger’s interpretation was that the students’ belief that the task was dull clashed with the fact that they’d just told someone else it was fun, thus causing uncomfortable “cognitive dissonance.” For the students who had been paid twenty dollars, this contradiction was easily resolved—they’d been paid a fair sum and that’s why they’d lied. For the students who had been paid just one dollar, however, the contradiction was more easily resolved by altering their original belief.

Mental illness involves self-defeating habits of thinking that distort how we make sense of the world. Cognitive therapy allows us to detect these patterns and use alternatives. 3-MINUTE ANALYSIS
In his early work, Beck had an unfortunate tendency to refer to more “rational” ways of thinking, rather than more helpful ways, and this has come under criticism, as “rationality” is a logical ideal that we don’t need to be mentally healthy. Furthermore, the style of cognitive therapy doesn’t suit everyone and so it is important to find a type of therapy that suits a person’s personal preferences.
Aaron Beck trained as a Freudian psychoanalyst but began asking the one question that has come to define cognitive therapy, “What’s the evidence for that?” Before Beck, psychotherapy was more philosophy than science, with innovations being based on personal insight and the influence of “big thinkers.” Beck’s innovation was to develop cognitive therapy on the basis of scientific studies that tested out common assumptions. This “testing out” approach is also recommended to patients as the treatment is based on the idea—and, in fact, the evidence—that mental illness involves biases in how we perceive, act, and think about the world—some of which can be seen in the thoughts that pass through our minds and some of which we might not be aware of. For example, someone with depression might tend to interpret everyday disappointments as a sign that they are “worthless” while someone with a fear of embarrassing themselves in public might avoid social gatherings and so never learn that their worry is unrealistic. A cognitive therapist will work with the client to identify where their thinking and behavior prevents them from getting better and will help develop strategies to overcome these problems, each of which is tested to see if it helps.

Hinduism is polymorphic monotheism. The gods express different aspects of divine reality, a cosmic spirit that exists inside and outside the individual.
Śiva embodies power, Viṣṣu righteousness, and Devī, the goddess, the sweet or ferocious energy of mother or lover. Each manifests different forms, marries other deities, raises divine families, uniting different traditions and creating new matrices of devotion. A Hindu worships one, other, or many gods depending on family upbringing, community, or personal
continually reincarnated, lifetime after lifetime. Our fate is determined by karma, the moral worth of our previous actions. The spiritual goal is to put an end to rebirth and be united with God. This is achieved through the path of knowledge (via study, yoga, meditation, and ascetic practice, one experiences the identity of one’s own soul with the cosmic spirit) and the path of devotion, praising and worshipping God. Worldly activities—the pursuit of wealth, power, love, and pleasure—must be performed in harmony with dharma, the natural law of the universe. Dharma has divided society into castes, rigidly categorizing families in terms of power, purity, prestige, and occupation. Those living outside caste, the so-called “untouchable” people, endure a kind of religious apartheid. The Brahmins are the priestly caste. Their scriptures, the Vedas, are some 4,000 years old and define orthodoxy. Hinduism is the meeting of this big tradition with many other local little traditions through adaption and absorption. Mythically, this process is expressed as big gods manifesting as little gods, or marrying goddesses. Hinduism is thus a loose assemblage of communities and sects—of various practices and traditions—like a large, extended family.

The Buddha’s first sermon taught four truths: suffering, the origin of suffering, the end of suffering (nirvana), and the path to the end of suffering.
3-MINUTE THEOLOGY
Buddhist meditation consists of two combined disciplines: concentration and insight. By concentrating on an object, such as the breath, the mind withdraws from sensory experience and thoughts, developing states of calm and joy, gradually eradicating neurotic emotional tendencies. Insight is the inculcated “seeing” of the impermanent flow of phenomena, in which the ego—apparently, so real—cannot be found. This eradicates a mistaken
holy man who stepped outside the mainstream Indian religion of the Brahmin priests. He dispensed with rituals and speculation about God, teaching an intensely pragmatic path of mental cultivation, whose goal was the end of suffering. Suffering, he said, is the inevitable result of the way in which the individual instinctively shores up the ego by grasping at what is pleasant and reacting against what is unpleasant. Realistically, pain is unavoidable and, more subtly, because things are always changing, so too is the difficulty of experiencing pleasant states slipping away. By fully appreciating the impermanent flow of experience—and the fact that everyone dies— one develops a dispassionate attitude, which is ultimately rooted in the discovery that the ego is itself an insubstantial fiction and that who we really are is beyond all thoughts of the “I”. In this life, nirvana, the goal, is literally the “blowing out” of these compulsive tendencies— the three fires of greed, hatred, and delusion— denoting the complete turning around of a person from neurotic egoism to a state of blissful peace and the selfless freedom to be naturally loving toward others. At death, nirvana is the end of all rebirth.

The map shows how the two word-forms for “tea” were dispersed along three distinct trade routes. The origins of language, and the cultural relation to trade, are beautifully clear in this example. The word for tea is pronounced differently in each of China’s main teaexporting centers, making it possible to trace the progress of word-forms around the world from three sources.
The Basque language is currently spoken by about 1 million people (about one-third of the Basque population) as a first or second language. The Basque country has been continuously occupied since paleolithic times. Genetically, Basques are quite different from their Iberian and French neighbors. Speakers of Basque used to be located over a much larger region in northern Spain, but the area where the language is spoken has been shrinking over the past 2,000 years under pressure first from Latin, and later from French and Spanish. Basque is a language isolate and cannot be shown to be related to any other language spoken in the world. Its grammatical structure and vocabulary are entirely different from neighboring languages, and it is likely that it is a survivor from a time before the Indo-European languages spread throughout Europe. All traces have disappeared of any languages related to Basque that might have been spoken before the arrival of Celtic, Romance, and Germanic languages in what is now Spain and France.

There are two common words for tea that occur in the world’s languages: a form like English “tea” and a form like Russian “chai.” Both come from China, but they originate in different parts of the country where different types of Chinese are spoken. Minnan Chinese, spoken in Fujian province and Taiwan, has “te”, while others such as Cantonese and Mandarin have “cha.” Dutch traders, who were the original European tea merchants, had their main contacts with the city of Amoy (now Xiamen) in Fujian province and so borrowed “thee” as their word for tea. It was this word that then spread to most European languages, including English, French, and German. The tea trade in Europe was controlled by the Portuguese in the 16th century. Their trade was based in southern China where Cantonese is spoken, and so the Portuguese term is “cha.” Tea was also exported from China via an overland route into central Asia and eastern Euope so languages in this region have a word like “chai”, as in Russian and Turkish.

Cacao Fudge
This is a great quick and easy recipe if you don’t have access to a power blender or are making this when you’re travelling. If I’m in a warm climate then I let the sun melt the cacao butter for me as I prepare the other ingredients. I’m sure that sunshine- charged raw chocolate is the finest chocolate in the world!
If you like soft fudge-like chocolate then you’ll love this! It melts in the mouth and is really easy to make. I like making Cacao-fudge as gifts for the wonderful people that cross my path. After I’ve popped the chocolates out of the mould I put several pieces in a recycled paper box, lined with grease-proof paper. The perfect raw chocolate gift!

EQUIPMENT • Stainless steel hand whisk • Medium sized glass mixing bowl • Silicon chocolate mould • Freezer or cool bag with ice packs if your away from a kitchen INGREDIENTS NEEDED • 60g raw cacao butter • 2 dessert spoons of raw almond butter • 3 dessert spoons raw cacao powder • 1 dessert spoon lucuma powder • 80g yacon syrup ?? (JF - double check amount) • 10 drops vanilla oil
1. Chop and melt the raw cacao butter in a bainmarie or in your dehydrator. Or place in the direct rays of the sun, until fully melted. 2. Add the other ingredients to the glass mixing bowl on top of the melted cacao butter. 3. Use your hand whisk to gently stir your ingredients lovingly together – no need to do any crazy fast whisking! 4. Spoon the runny chocolate into your silicon chocolate mould and set in the freezer or a very cool place until the chocolate has firmly set. This recipe makes a silicon chocolate mould amount of chocolate

INGREDIENTS • 250g Cacao Paste, melted • 75g Cacao Butter • 2 dessert spoons Lecithin graduals • 180g Premium Raw Agave Nectar • 8 - 10 drops premium quality, organic Vanilla Oil • Pinch Himalayan Pink Rose Rock Salt
1. Add all the ingredients for the cacao fudge to your power blender and blend thoroughly on full speed until smooth. 2. Spoon the ingredients steadily into a silicon chocolate mould, which ever colour / shape / size you fancy. If you’re in a rush, just spoon the mixture into a BPA free plastic container. 3. Freeze for 1-2 hours, or until your chocolates are nice and firm throughout. 4. Pop them out of the moulds, or if you’ve used a container, turn out the chocolate and then using a very sharp knife, carefully slice the chocolate into cubes. 5. Enjoy with a loved one, or anyone in fact!
Jessica’s top tip Try adding a few drops of premium quality, organic orange oil instead of vanilla oil for an authentic chocolate orange taste.

The Castor Aralia is a large deciduous tree of broadly columnar to rounded habit, producing its small but profuse flowers in summer. The bark and stout shoots are often armed with sharp spines. It is the only species in the genus. In its native regions the leaves are eaten as salad and the bark is used for its medicinal properties. Trees with deeply lobed leaves are sometimes called var. maximowiczii.
Metapanax davidii is a small evergreen tree, sometimes shrubby, flowering in summer. Although this species has been cultivated for more than 100 years it has had a long history of name changes and has been placed in seven different genera, at one time listed with a group of related species mainly from New Zealand. The currently accepted genus contains only two species.
SIMILAR SPECIES The Castor Aralia differs from maples (Acer), (Acer Acer), some of which have similarly shaped leaves, and from the sweetgums (Liquidambar)) in the spiny shoots, and in the very different flowers and fruits.
SIMILAR SPECIES The only other species in the genus, M. delavayi also from China and Vietnam, is shrubby and has the leaves distinctly cut into as many as five leaflets.

CHICAGO The leaves of the Chian Turpentine Tree are pinnate, strongly aromatic, and up to 7 in (18 cm) long and 41⁄2 in (12 cm) across. The leaves of the Castor Aralia are up to 10 in (25 cm) or more long and across, borne on a long petiole to 20 in (50 cm). They are alternate on long shoots but in clusters on short shoots, and dark green above, turning yellow or reddish in fall. The 5–7 lobes are triangular with a toothed margin, ending in a taper-pointed tip. The depth of lobing is very variable, and while most leaves have lobes that reach from one-third to two-thirds of the way to the base, some are cut almost to the base.

The leaves of Metapanax davidii very variable in shape and up to 8 in (20 cm) long and 2 across. They are leathery in texture and glossy dark green above, with 3 veins from the base; they can be simple and oblong to ovate, divided into 3 lobes or, more rarely, with 3 separate leaflets.
The Chian Turpentine Tree is a widely distributed, deciduous tree of spreading habit, flowering in spring. It is related to and hybridizes with the pistachio nut (Pistacia vera) for which it is used as an understock for grafting. All parts of the tree are aromatic and a turpentine can be obtained from the trunk. The bark is cut in June with an axe and the syrupy turpentine oozes from the trunk and is collected. This was particularly common on the island of Chios in the Aegean, which gives the tree its common name. An oil has been made from the young green fruits, which are collected in late summer and can be used to make cakes or as a substitute for butter. Plants that lack a terminal leaflet have been called P. palaestina, but intermediates occur.

The Chinese Sumach is a deciduous spreading tree of loose, open habit, producing its showy large panicles of small white flowers in late summer. It is used as an ornamental tree, popular for its large flower clusters and fall color. This species has frequently, and incorrectly, been called Rhus javanica. SIMILAR SPECIES The Chinese Sumach is distinct from most species in the genus because of its distinctly winged rachis. The North American Shining Sumach (R. copallinum)) also has this, but has more numerous leaflets and is shrubby.
SIMILAR SPECIES The Chian Terpentine Tree is sometimes confused with the Mastic tree (P. ( lentiscus), which is evergreen, usually a shrub, and has fewer leaflets. Hybrids between the two species are inter mediate. The more similar P. atlantica, atlantica from North Africa and western Asia, has a narrowly winged rachis.

The leaves of the Chinese Sumach are pinnate with a winged rachis, and are up to 18 in (45 cm) long and 8 in (20 cm) across, borne on hairy shoots. Bright green above, paler or bluish green and hairy beneath, they turn yellow, orange, and red in fall. Each leaf comprises up to 13 ovate, toothed leaflets, which increase in size toward the end of the leaf.

he Ko Shamo is a type of small Japanese game fowl bred to thrive in close quarters. It’s a true bantam breed, noted for its unique split wings. The breed is also remarkably tall for its bantam size, and this height lends it a striking appearance. The breed’s characteristic stance underscores its aggressive, strong temperament and it is known for its confident manner.
Related Breeds The Ko Shamo was developed in Japan and shares its genetic heritage with several other Japanese breeds such as the Nanking Shamo, the Malay and the Yokohama.

Features The Ko Shamo’s unusual profile is not easily confused. It has a tall, upright posture, and sparse, hard feathers. Its towering profile makes the neck appear especially long, and the muscular, lean body and breast are held perpendicular, rather than paralleln to the ground, ending in a small ‘prawn-like’ tail. The head is strong and high and the feathers short and hard.
The word shamo means ‘fighter’ in Japanese and reflects this bird’s Japanese heritage. Ko Shamos were developed in Japan, most likely from stock imported from Thailand in the 16th or 17th century. It reached Europe in the 1970s. Whilst uncommon, it is now kept by fanciers in Asia, Europe and North America.

Bred mostly for show, the Ko Shamo is too small to provide much meat, and hens lay only briefly; when they do, the white eggs are small and unremarkable. Suitable as pets, the breed does well in limited spaces, provided that multiple males are not housed in proximity, as males tend to fight with abandon.

enowned for its looks and personality, the Silkie is a suave breed that carries itself with a lively, stylish posture. The fowl’s gentle, trusting nature and trainability makes it a popular pet breed. Despite its diminutive size, the Silkie is categorised as a large fowl light breed, and so is exhibited in large rather than bantam classes.
Related Breeds The Silkie descended from Asian stock, but its family tree is unknown.

Origin & Distribution
Features The Silkie’s characteristic features are its silky, fur-like feathers and its puffy, hat-like crest. The breed features a broad body and short legs, mostly obscured by profuse plumage. The tail is short and tattered looking. All Silkies have the distinctive crest and some also exhibit a similarly puffed beard beneath their beak. The British Poultry Standards lists five colour types: partridge, black, blue, gold and white (seen here).
Though known to hail from Asia, whether the Silkie originated from China, India or Japan remains in doubt. What is certain is that it is an old breed – legend holds that Marco Polo described observing Silkies during his Asian travels in the 13th century. Today the breed is raised by fanciers throughout Europe, North America and Australia. Asia

Often kept as pets, the Silkie is purely an ornamental breed. Silkie hens lay tinted or cream-coloured eggs and are so prized for their broody nature that they are sometimes used as foster mothers or crossed with other large breeds to increase the broodiness of these other types.

ONE Place a tissue box on a low, stable surface. Pull a tissue halfway out of it, and practice by saying “Take it! Achoo!” while showing it to your dog. When she’s happy to pull a tissue from the box (and this is probably the hardest part of the trick, so practice patiently until she’s got it out), back off a step or two and repeat “Take it! Achoo!” Your dog will take the cue to collect the tissue.
Caught a Cold
T
his is a great trick to show off when you have company. Cued by a loud, theatrical sneeze, your
dog will run off to collect you a tissue from the box handily situated on a low surface nearby and run back to you with it firmly held in her mouth. True, it’s likely to be a bit damp and squishy by the time it’s “handed” to you, but no matter, this is so cute that it always wins a big round of applause. Practice it until she gets it perfect every time before you show off to your friends. Learn the trick stage by stage; it’s quite complex, so be prepared
TWo She’ll probably walk through the cones happily, but she may not immediately grasp the turn around each cone to make the complete figure-eight. Hold your hand/treat quite low and guide her clearly as she takes the turn after passing through the cones.
Big and Small dogS Suit the distance between the cones to the size of your dog; the bigger the dog, the more space she’ll need for her turns. As she becomes confident in her turns, you can move the cones slightly closer together to make the “weave” a little tougher.
Teaching Tip Some dogs seem to steady the tissue box with a paw naturally. However, if your pet knocks the box over and finds it hard to angle, use duct tape to stick it to the surface you’ve placed it on; she’ll find it easier if all she has to do is focus on pulling out the tissue.
