And, last but not least, design something that you will really love. The next few months we’ll be living in construction—tarps, piles of tools, delays, shopping and dust, lots of dust. Our kids are excited though. The girls think that once it’s done they won’t be forced to look at any more inspiration photos (Ha! For Nikki and Yannick Fayolle, Blue Ridge Pizza Co. is a full-time passion. With its wood-fired pizza oven, the couple is able to travel around the area to parties, farmers markets, festivals, events and more to serve up their homemade pies. Similar to other area food trucks, local produce is a key component for their menu. In addition, seasonal ingredients picked from their own garden add the perfect personal, and delicious, touch to their service.
Whom do you admire? Daniel Humm. A native of Switzerland, he is a high-end chef and restaurant owner whose restaurants focus locally sourced ingredients. (His restaurants have received four stars from The New York Times, seven James Beard Foundation Awards, three Michelin Stars, and the #1 spot on the World’s 50 Best Restaurants list.)
Do you have any current projects? What are they? We are excited to share that we are in the process of building a new truck for BRPCO! That’s our main project for now, and it is big enough to take up the majority of our time, which I am sure you can imagine.
What traits do you find admirable in others? I have always respected someone who has the traits of humbleness, honesty and integrity.
What was your favorite book as a child? The Giving Tree by Shel Silverstein. It’s about a little boy who would come to a tree to eat its apples and play. As the boy grew older though, the tree gave more and more, and the two loved
Where do you love to eat out? What do you order? Monsoon is a favorite of ours. I always order the beef noodle soup! What is the best advise your parents have ever given you? My parents have encouraged me to follow my dreams and

{living well food & family} Can you share a recipe that is quick and easy to make with kids that they will love? Pizzadillas (hybrid of pizza & quesadillas!) Ingredients: Your choice of tortilla (We prefer corn, versus flour.) Homemade roasted tomato sauce Your choice of cheese Any additional fixings you might like (veggies, meats) Directions: Add your toppings to your tortilla and then warm up on skillet. Once you see the cheese start to melt, fold the tortilla (or top with another corn tort, since they’re so small), and let it turn a pretty golden brown on both sides. Once done, let it rest before cutting and serving! If you could have a super power what would it be? Teleportation would be cool!
Why is it important to teach children about healthy eating? As the world continues to evolve, I think it’s important that our children understand where their food comes from, and to experience it firsthand. With all of the organic farms growing around the nation, it is important that we bring our kids out to them to be able to experience what goes into true sustainable farming. What advise do you have for parents when eating out with kids? We are all lucky in the Charlottesville area. The majority of the restaurants locally source their produce and protein, which is amazing! It’s great for parents to have such an array of places to choose from for their kids to eat healthy meals. Beth began as a sports photographer with her work appearing in Sports Illustrated, USA Today and Pro Cycling, among other publications. Asparagus Frittata Ingredients • 12 large eggs • 3 tablespoons half and half • 1/4 teaspoon kosher salt • 1/4 teaspoon freshly ground black pepper • 3 ounces Gruyere cheese or Swiss cheese (cut into small cubes) • 1 tablesppon extra virgin olive oil • 1 shallot, finely chopped • 8 stalks of asparagus, sliced into two- inch pieces • 1/2 red bell pepper, diced • 1/4 cup fresh or frozen peas • 1/3 cup diced baked ham Directions Heat oven broiler and set oven rack to about 5–6 inches from top of broiler. Heat oil in a non-stick oven-safe skillet over medium-low heat, add asparagus and cook for two to four minutes. Stir in ham, shallots, red bell pepper and peas. Cook for two more minutes.

Whisk eggs, half and half, salt and pepper together, and then stir in the cheese. Slowly pour the egg mixture into the skillet with the ham and asparagus. Begin to cook on medium heat and use a rubber spatula to stir and scrape the bottom and sides for about three minutes. The eggs will appear very wet at this point. Let the pan sit on the heat for about 30 seconds without stirring to set the eggs. Place skillet under the broiler for three minutes until frittata looks puffy and light brown in spots. Take out of oven and let sit for another five minutes. The eggs will continue to cook. Use rubber spatula to loosen frittata and flip onto a serving plate. Slice into wedges and serve warm or at room temperature.

Historic Garden Week Virginia’s Historic Garden Week is back for another year of exploring our state’s most beautiful gardens, homes and historic landmarks. This eightday event allows visitors to view some of Virginia’s spectacular gardens during peak spring blooming season in addition to homes decorated with over 2,300 flower arrangements created by the members of the Garden Club of Virginia. With over 30 tours taking place between April 21–28, Historic Garden Week is Virginia’s oldest volunteer tourism project, and the nation’s only statewide house and garden tour. Tours in the Albemarle County area on April 21–23 will include the historic Castle Hill, Chopping Bottom Farm and the Ben-Coolyn Estate. Today, there are over 47 Garden Clubs of Virginia with over 3,300 members who help make Virginia’s Garden Week possible every year for the past 85 years. Tour guidebooks, schedules and ticket purchases are available at vagardenweek.org.
