INSPIRATION
Don José Antonio de Cuervo started growing agave on this land. In 1795, he broke ground by making the world’s first tequila from the agave. Since agave breaks the earth to enter the world, the origins of Jose Cuervo® tequila can be interpreted as being groundbreaking in every sense. Our family carries this spirit from the past into the present. Our 250 years of expertise has made us the number one tequila in the world, with an enviable, world-leading portfolio of tequila.
Our LandsT & the agave What makes the brand unique
These lands were originally selected for their microclimate and location on the outskirts of the volcano of Tequila, Jalisco, whose minerals make the blue agave plant cultivated there incomparable. The water that originates from the volcanic springs gives a unique character to the process and the final tequila.
T COOKING What makes the brand unique
The 16 masonry ovens in La Rojeña can hold from 30 to 50 tons, cooking the heart of the agave for 36 to 40 hours. The refinement of the taste of tequila starts during the cooking process, changing the inulin into sugars and separating the bitter honeys of the agave. Steam is heated in boilers to 80°C–90°C for use in this process.
W GRINDING What makes the brand unique
When the agaves are cooked, they release a very particular aroma. After cooling, they are then taken to the grinding area. The agave is cut into small chunks and pressed to extract their juices.​

FERMENTATION
Once the grinding process is complete, the resulting juice is sent to the fermentation tanks where a natural yeast (saccharomyces cerevisiae) is added, consuming the sugars and transforming them into alcohol.​ After the fermentation process, the resulting liquid is known as dead must (Mosto Muerto). The aim is to produce a liquid with the maximum amount of sugars and the minimum amount of yeast.​
T DISTILATION What makes the brand unique
The first stage takes three hours, during which the dead must is put through a copper still, where steam is added until it reaches boiling point.​Rectification takes six hours and is carried out at a separate still. It’s identical in structure to the first copper pot still. Using condensation, this still separates the components of ordinary tequila, creating a drinkable product. The spirit obtained from rectification is known as white tequila.
Silver tequila (Blanco/Plata):
Tequila that is kept in white oak barrels for two to eight weeks.
Reposado: Tequila that has been in barrels for two months.
Añejo: Tequila aged in barrels for a year.
Extra-Añejo: Tequila aged for at least three years.

Aroma: Initial aromas of slow cooked
agave, reminiscent of baked sweet potato but also with dried fruit and subtle citrus notes. After allowing aeration, the aroma gives notes of green vegetables such as artichokes and herbs picked fresh from the garden.

Reserva de la Familia Platino is specially made through a unique “Esencia de Agave” process-a proprietary process created by Cuervo and known only by the distillers. Theoperation extracts agave sweetness and aromas from the piiias,or hearts, of the agave plants.

Reserva de la Familia's rich, complex taste is the result of it’s elaborate aging process in a combination of small, new American and French oak barrels, charred at different levels, which are destroyed at the end of the aging process. The Maestro Tequilero blends these extra-afiejo tequilaswhich have been in their barrels for three years-producing a complex mix of flavors, a rich bouquet and an ultra-smooth taste.
