WELCOME ONBOARD CEO’S MESSAGE
We honour the women who are part of RB's growth, past and present.
Dear Guests, Welcome aboard Royal Brunei Airlines. 23 February, 2018 was a joyous occasion for the people of Brunei Darussalam as we celebrated its 34th National Day. It is my great honour to extend our heartfelt congratulations to His Majesty Sultan Haji Hassanal Bolkiah Mu’izzaddin Waddaulah, Sultan and Yang Di-Pertuan of Brunei Darussalam and the people of Brunei for their continued success as a dynamic and peaceful nation. We also celebrated the Chinese Lunar New Year in February and were delighted to bring many mainland Chinese guests on our scheduled and chartered flights into Brunei for the Lunar New Year celebration in some of the most beautiful locations Brunei has to offer. Speaking of tourism, Brunei was recently named as an emerging destination likely to overtake developed markets in this sector. A survey conducted by the global MICE, corporate and luxury travel industry experts, showed the huge tourism potential Brunei has to offer. For Brunei transit guests, we encourage you to consider a stopover and partake in an experience unlike any other in Asia. For stopover arrangements, do visit www. flyroyalbrunei.com.bn. In March, we celebrate the International Women’s Day with the rest of the world. In this issue, we honour the women who have helped develop the national airline from inception until today. Whilst aviation attracts more males, as an industry we take great pride on the success and progress of Bruneian women in our workplace, carrying out various roles and responsibilities from senior management to pilots and engineers, to name a few.

At Vietnam’s most ambitious new coastal resort, the 213-room The Anam is shepherding guests into the galleries and homes of talented local artists and recently unveiled an artist-in-residence programme. The resort’s commitment to the arts is obvious all over its grounds, where an eclectic collection of hundreds of artworks by local artists hang from its walls and bedeck its pedestals. “Our part of Vietnam is famous for its beaches, its islands, its Cham towers and its seafood,” said The Anam’s general manager Herbert Laubichler-Pichler. “It should be famous for its art, and we hope to help make that happen.” Driven by his interest to get to know the local artists personally, Laubichler-Pichler enlisted Nguy n H ng Vân, who opened Nha Trang’s first art gallery called The Rainbow Gallery, to create the Nha Trang Art Tour, providing the ultimate “insider” knowledge about the destination.

As part of this intimate seven-hour tour, H ng Vân and Laubichler-Pichler welcome art lovers into the homes and galleries of acclaimed local artists otherwise inaccessible to tourists, providing a new perspective of Vietnam and its people through their art ranging from oil paintings and metalwork to sculpture and photography. The tour wraps up with dinner at a local Vietnamese restaurant renowned for its seafood. The life story of one of the tour’s artists, Mai L c, epitomises Vietnam’s rapid transformation. Once living under the poorest conditions as a miner, he met a Norwegian couple by chance in 1995. They kept in touch and for his wedding, the couple gave him a camera, completely changing his life. Today Mai L c is a soughtafter photographer who has exhibited his striking blackand-white and colour images of Vietnam’s landscape and its people in Canada, Finland, Austria and other parts of the world. Painter Bùi Văn Quang, a member of the Vietnam Fine Arts Association, is also on the tour, showcasing authentic paintings depicting situations from the daily lives of Vietnamese through use of the country’s rich colours. Other artists involved include painters Tr n Th B o Trân and her husband L u Thành Qu , Nguy n H u Bài, Ngô Đăng Hi p and Lê Huỳnh, metalwork artist Bùi Trung Chính and sculptor Đoàn Xuân Hùng.

If you return all black and bruised from Soneva Kiri, it’s perfectly understandable. Because there will be quite a few instances where you need to pinch yourself to make sure you’re not dreaming. Presented with the rarity of Photoshopquality turquoise waters, or the incredulous treetop dining experience with its ziplining “hosts”, and the jaw-dropping expanse of the villa you will call home, consider being blackand-blue a small price to pay to store your experiences for future extraction. It’s easy to write off Soneva Kiri as yet another dreamy, luxurious resort. It is that, yet it also is not. Sure, guests will gush over the private plane transfer, the resort’s own private airport on a leased neighbouring island, the private boats at their dispense – long after the tan has faded. And there are many Insta-worthy moments the resort offers. But beyond that, the resort triumphs in elevating the everyday experience. So even a walk barefoot on the beach becomes a novelty because the resort manages to connect all the dots to make it luxurious, special and memorable. Soneva Kiri also stands out for its discreet service, seclusion, exclusivity and space. And we mean lots of space. Let’s take the villas, for instance. Calling it that in fact, is a misnomer.

Spread out to house different rooms and structures – and made of locally-sourced wood, bamboo and other natural materials – it’s akin to glamourous glamping. Many have described it as being very Crusoe-esque. We’d like to think it a natural earthy mansion and an extension of the lush green surrounds enveloping much of the resort grounds. Devoid of chandeliers and marble baths that would make it stand out like a sore thumb, the villas embrace ingenuity. There is freedom in its design and lots of breathing space. The bedroom, indoor and outdoor bath and shower, his-and-hers vanity areas, the pool lounge and pool deck are all beautifully spread out. Getting lost within your villa on the first day is not only understandable, but expected. And because there is space – naturally the resort owners thought nothing of building a water slide from some rooms direct to the pool because well, why not! This cheeky and playful nature of the resort can be seen elsewhere, too. Guests gleefully ride around the resort in their own private golf cart. You can call out to your “butler”, which Soneva Kiri warmly names Mr or Ms Friday (Robinson Crusoe, get it?), to chauffer you around. But guests are quite game to make a Mickey out of themselves with their undignified halts and stalls. We suspect the hosts get a kick out of seeing these comical misadventures, too! And then there are the chocolate room and ice-cream parlour. Adults become kids again gamely pocketing their favourite truffles or trying to choose between a tamarind sorbet and a passionfruit ice cream from the list of over 40 flavours. Once they have had their fill, it’s buggy time again to the on-water, open air cinema for homemade popcorn and a snuggle under the blankets to catch a Hollywood movie under the stars. Or, they could opt to dine at the menu-less Benz, the quirky wooden shack rising out of the mangroves in the middle of nowhere, or high above the treetops, strapped in a seatbelt with hosts ziplining in with the nibblets. Only 36 villas stand in the 150 acres of land that makes up Soneva Kiri on a quiet bay of Koh Koot, Thailand’s fourth largest island. This allows guests total privacy and intimacy even when the resort operates at full capacity. Again, indulging in the availability of space has allowed the resort to focus on another area that they take seriously: sustainability. It’s a vision that founders Sonu Shivdasani and wife Eva are committed to since they established the brand together back in 1995.

An excursion to their organic farm was a real eye opener. Instead of the gratuitous patch most resorts claim to be their contribution to sustaining the earth, Soneva Kiri grows organic vegetables, herbs and spices in its 1.5 acres of farm land. It really embraces the farm-to-table ethos and the resort is really proud to showcase this at every meal. And there’s more. Three oxidation ponds on the grounds help recycle water in the resort. In other words, dirty water– from guest villas, host quarters, kitchen, and laundry – never leaves the property and instead is treated with oxygen and microorganisms and is reused to water the farm and for general cleaning. There’s a small hut on the farm that turns used cooking oil into biodiesel for wood chipping machines. Kitchen wastes are turned into compost. Recyclable materials are sorted out in another hut and sold to recycling plants. Wood waste is turned into charcoal and used in the resort. And, the resort also bottles its own water in reusable glass bottles – cutting down the use of more than 50,000 plastic bottles a year! This backstory, complemented by the surreal setting, the intuitive service and bespoke experience, all come together beautifully to make Soneva Kiri a resort that is impossible to describe in just one word. Last year, the world’s best cheese was announced as the British Cornish Kern. It wasn’t so much the excitement of having the English going one up against their French neighbour (finally!), but the award deservingly puts the spotlight on one of UK’s greatest and treasured artisanal produce. Britain produces over 700 varieties of cheese and unbeknownst to many, 14 of those have a protected status of origin. That’s why British cheeses will be celebrated at the Big Cheese Festival at Brighton Racecourse this March. From smooth bries to vintage cheddars, the nation’s cheeses are as diverse as the regions they come from. The event will feature a plethora of the finest international cheesemakers and mongers showcasing their amazing cheeses. From Halloumi Fries to Mozzarella Sticks, Raclette or Fondue, vendors will be on hand to turn the finest fromage into melted gooey delights. For the more experienced and mature lovers of cheese, expect a selection of the UK’s finest artisan cheeses, homemade chutney combinations and an extensive offering of utensils available for sale.

Can’t make your way to Brighton? Here’s where you can try some of the tastiest cheeses and go beyond the traditional Cheddar and Stilton. Start your cheese adventure in London at The Cheese Bar in Camden. Here, visitors can try the UK’s best artisan cheeses on carefully curated cheeseboards featuring everything from the crumbly Dorset Blue Vinny to the craft cheese, Lincolnshire Poacher. Fondue evenings are also held on Thursdays from November to February. Somerset’s rich pastures make it the epicentre for foodies and home to England’s most famous cheese. The town of Cheddar was the hub of the country’s dairy industry from as early as the 12th century. Take a self-guided tour at The Cheddar Gorge Cheese Company to discover the traditional art of cheddar-making. You can also visit Cheddar Gorge and Caves, where the unique cave-aged variety of cheese is matured. If you happen to be in Gloucester during the Spring Bank Holiday, you can join the thousands who climb Cooper’s Hill in the village of Brockworth for the wacky Cheese Rolling and Wake Festival. Every year, a 3.5kg round of firm Double Gloucester is rolled down the steep hill reaching speeds of up to 112 km/h with contestants ambitiously attempting to catch it. The festival started back in the 1800s for locals, but today, the races attract participants from Canada, France, Spain and Japan. And of course, there are plenty of opportunities to try a variety of Gloucestershire cheeses.

Originally produced as a sustaining and convenient lunch for local miners, Caerphilly cheese in Caerphilly, Wales has a rich history. Today, South Caernarfon Creameries is the only remaining Welsh producer of this mild, hard, crumbly cheese. Their award-winning Cavern Cheddar is matured in the same Llechwedd Slate Caverns where the miners worked and where you can take a tour. Wales is famed for its food events including The Big Cheese festival at Caerphilly Castle where every July, over 80,000 visitors arrive to indulge in Welsh cheese and produce, and participate in the cheese-carrying relay race. Wensleydale in the north of Hawes is where you can discover the home of Yorkshire Wensleydale cheese, where the original recipe has been handmade for centuries. Today, there are numerous blends to tantalise your tastebuds. Book a class to learn how the cheese is made at Wensleydale Creamery, then explore where it all began at Jervaulx Abbey where it was crafted by French monks in the 12th century using sheep’s milk. In Northern Ireland, Mike’s Fancy Cheese in County Down was launched in 2013 as part of a crowdfunding campaign by former cheesemaking student Michael Thomson. After learning from the UK’s leading artisans, he developed Northern Ireland’s first raw milk blue cheese, Young Buck, a rich, creamy cheese that resembles the very best Stilton. Thomson was a finalist for best new cheese producer at the Great British Cheese Awards 2017. And what about that recently-crowned Cornish Kern? Well, this dark-rind, cow-milk Cornish cheese from the Southwest of England produced by Lynher Dairies wowed the judges with its “buttery caramel notes and deep savoury aroma”. One thing’s for sure, Britain is experiencing its best dairy deluge ever. Royal Brunei Airlines flies London daily via Dubai. Discover things to do in London in www.muhibah.com.bn

08 A seasoned art critic and design enthusiast once departed a sage and sound advice to an art novice: if you walk slowly, pause frequently and take your time to view a piece, anyone can pass of as someone with a nose for art. Well, at the inaugural National Gallery of Victoria’s simply-named NGV Triennial, running til 15 April, 2018 no one should feel inferior nor have the need to feign interest. Because at this large scale exhibition, not only is there international art, but design and architecture, installation, moving image and interactive works exploring new media and technology. Visitors can expect to see printing, robotics, film, painting, drawing, installation and fashion design, tapestry and sculpture. There will be something to identify with, and with more than 100 artists and designers from 32 countries taking part, it will be interesting to see how the public embraces the NGV Triennial. Highlights from the NGV Triennial will be a number of world premiere NGV-led commissions, including a major new participatory work by Yayoi Kusama (Japan), in which visitors will ‘obliterate’ a room with flowers; an installation of elaborate, Marie Antoinette-inspired haute couture gowns from Chinese couturier Guo Pei; and a project by ‘smell designer’ Sissel Tolaas (Norway), in which she recreated the scents of Melbourne. Though there is a lack grand narrative for the exhibition, the multi-disciplinary focus allows for an exhibition that induces viewers to pause, scrutinise and more importantly, stand back and enjoy the show. After all, it’s free. Presenting a snapshot of international contemporary art and design, the NGV Triennial will give voice to some of the pressing issues that are being explored by artists and designers today, including the social, cultural, scientific and physiological questions of our contemporary world. Tony Ellwood, Director, NGV, said, “We believe that the ambition, depth and diversity of the artists and designers in the inaugural NGV Triennial will ensure our audience has a truly unforgettable cultural experience. This exhibition offers an unprecedented opportunity to build the NGV’s collection of contemporary art and design, and we hope the NGV Triennial will become a critical and ongoing asset for Victoria.” As part of the NGV Triennial, twenty large-scale new artworks have been commissioned by the NGV, creating a legacy for both the NGV Collection and wider community. These major NGV commissions include architecture, design, sculpture, installation, moving image and interactive works exploring new media and technology.

09 Notable exhibition highlights commissioned by the NGV include Alexandra Kehayoglou (Argentina) who uses her family’s traditional carpet-making techniques, creating a monumental 46 sqm carpet landscape titled Santa Cruz River that documents one of Argentina’s most contested landscapes; a video by Candice Breitz (South Africa) that reveals the personal histories of six refugees, in which Hollywood actors Julianne Moore and Alec Baldwin give voice to their stories and bring the privilege of celebrity into contrast with the hardship of the refugee experience; Formafantasma (The Netherlands) presents a world-premiere collection of conceptual design objects based on commercial office furniture that interrogates the impact of sourcing precious metals for consumer products, revealing the ways in which design defines what materials will become while often failing to communicate their source or potential afterlife; and Richard Mosse (Ireland) with his three-channel video that uses a high-tech long-range military camera to capture events surrounding the crisis in Syria and subsequent flood of refugees, jointly commissioned by the NGV and London’s Barbican Art Gallery. In my years of staying in luxurious resorts, never had I had to wait for my requests to be met. But here at Spa Village Resort in Tembok, I was told that I couldn’t visit the local weaver because she was not ready for me. I chuckled bemusedly and realised just how refreshing and genuine Spa Village Resort Tembok is.
REALITY
BITES In search of authenticity in Bali, it makes a difference whether you’re a traveller or a tourist.
“Yes, sometimes we are indeed at the mercy of the community,” laughs Fauzi Abriansyah, the resort’s manager. But that’s the way they like it, he says. “Our guests know that coming to Tembok, they will get to experience the “real” Bali, long before tourism spread its wing to the island. We are not here to alter reality nor increase the attractiveness of a village for commercialisation. If we were to do that, we lose witnessing what’s authentic.” Rather, says Fauzi, the resort would like to keep local experiences as genuine as possible, which in my case meant working around the local’s schedule rather than forcing them to adhere to some ridiculous tourist itinerary. But that’s not to say guests will lack of things to see and do. Keeping things as they are “genuine” meant the resort has taken various steps into preserving the local’s traditional way of living. In-resort activities highlight many of the villager’s favourite pastimes. Sessions are offered complimentary and rotated daily at Taman Gili, a breezy and intimate pondok (hut) by the pool. The resort staff themselves often double up as “instructors” in these mini show-and-tells.

There is the boreh (scrub) making activity, where guests pound local spices and roots on their way to discover one of Balinese’s beauty rituals. They can also learn how to make one of the many variations of the jamu, a local tonic that has many body benefits. The idea resonated well with guests as they not only get to see the staff beyond the job titles, but also discover how talented and passionate the Balinese are in their traditions. “We wanted to connect guests with both the person and the experience. Almost every staff in the resort is good at something, and this was what we wanted guests to discover. They are all artisans at heart, yet not everything ends up being commercialised or boxed up as a business,” says Fauzi. But where the resort especially excels is in pairing its low-key luxury with local age-old traditions borne out of the need to keep the mind, body and soul at ease. When opening the spa resort, it was not just enough for them to upload any local treatments. Instead, they searched – and found – a local traditional healer whose wisdom and plethora of knowledge was akin to a local encyclopedia. “It was a serendipitous find,” recalled Chik Lai Ping, Spa Village Vice President, of the meeting. “We were all excited with the prospect of not just getting our therapists to learn from him and continue his work, but also to have our guests experience Balinese healing and beauty culture as unadulterated as possible.” The timing could not have been better, for unfortunately, the healer passed on soon after the resort opened but not after having trained the spa’s therapists.

One of the most important treatments the Spa Village is proud to have is the revival of the age-old and time intensive pre-wedding beauty ritual for the bride. “The Balinese has this beautiful concept among their women of honouring their bodies and to slow down and focus on their psychological, spiritual and beauty wellbeing. Taking time off to have a massage was important to them, even with no celebrations abound. But the pre-wedding ritual was something else. It was such a beautiful concept that went beyond a routine scruband-spa experience. And this philosophy was what we wanted to share with our guests at Spa Village. The wedding treatment, called Penganten Melukat, is a sublime journey just shy of two hours that celebrates the pre-wedding rituals mothers would often prepare for their daughters in the homes. It begins with mewangsul (traditional Balinese massage) to help relax and soothe the body before the ritual continues with meodak (body scrub) that amazingly turns skin soft and supple. This follows an empahan (fresh milk) application that does wondrous things to the body, both moisturising and nourishing it, before a warm soak in the tub, mersiram sekar (floral bath), encourages the body to really relax and unwind. The effects after are both physically and psychologically uplifting.

For all the resort’s focus on authenticity, it also provides guests with many other unique and memorable experiences. The incredible staff has always been the highlight of my stay, with their warm and hospitable attitude and service that goes above and beyond. Because of the boutique nature of the resort (just 31 rooms), every guest is made to feel special, as though you are the only guest that matters. It’s a quiet resort that invites you to make full use of the bale (wooden pavilion) whether for a snooze, a read, or a head, foot and shoulder massage with their experienced therapists. Most days, the black sand beach makes a stunning entry into my morning routine; the waters begging to be explored. Some evenings, with the elements aligned and weather permitting, I opt to float on their pool lounger, looking up at the clear blue skies in their signature Starlight Gazing experience. Though somehow reading this makes it sounds too New Age-y, it really is one of the most peaceful and grounded experiences I have ever had.

On my final day at the resort, the staff got word that the ingke (rattan plates) weaver finally had some free time on her hands and asked if I would like to join her as she weaves? An ingke is woven from the spine of the coconut leaflet. I was fascinated by its use in local warungs (stalls). Food is served on a brown paper or banana leaf slid on top of the ingke to cut down the washing and it made good sense to replicate its use back home. So I grabbed my camera quickly and soon was whisked to a brick-and-mortar house with chickens running around. There seated in the patio awaits my weaver, welcoming me into her home like a long lost child. She was 80. Her kids are all grown up, and so are her grandchildren. With nothing much to do in between chores, she weaves ingke.

As her hands deftly manoeuver their way through the maze of coconut spine, Fauzi explained, “Ubud is where weavers make a living. Villagers here usually do this to while the time away. She would not weave in bulk, but she’d make enough to sell to a trader who will eventually bring these to the tourists in Ubud.” Watching her, I realised that the reality of any locale is constantly shifting. I could have easily ended up a tourist, but thankfully for resorts like Spa Village Tembok that keeps reality in check, I became a traveller instead. FEATURES BEST OF BRUNEI
Fresh off the success of last year’s Brunei Gastronomy Week, the Tourism Development Department under the Ministry of Primary Resources and Tourism once again hosted Brunei Gastronomy Week 2018 with success. And similar to last year, the event was in conjunction with Brunei Darussalam’s 34th National Day celebrations, from 23 February to 11 March, 2018. Hotels and restaurants throughout Brunei, including airlines, travel agents, hospitality schools and various private sectors participated in promoting Brunei’s culinary skills and signature dishes to local foodies as well as foreign visitors to the country. At the Radisson Hotel Brunei Darussalam, a new exclusive menu was curated specifically to mark the Week, which highlighted foods wrapped in banana leaves. Banana leaves, easily found locally and in Southeast Asian countries, have historically been used to improve and add another flavour profile to foods, both sweet and savoury. Foods wrapped in banana leaves parcels can then be smoked, steamed, baked or grilled, infusing them with the subtle grassy aroma of the leaves. The parcels also seal in moisture, giving foods wrapped in the leaves a more delicate flavour and texture.
50
MUHIBAH
Bruneian cuisines that are typically wrapped in banana leaves include Pais Daging, Pais Udang and Pais Ikan. The “pais” refers to the marinade that coats the meat or seafood, usually from the blended mixture of aromatics of garlic, red onions and chilies and further flavoured with turmeric leaves. The parcels are then grilled, barbequed or steamed. Guests dining at Radisson Hotel tucked into meals of fish and beef wrapped in banana leaves. In addition, the culinary team headed by Executive Chef Devesh Debral had elevated many local dishes to give guests a new experience of Brunei cuisine. These included Turmeric Beef Kedayan-style, Chicken Ballotine Kunyit Cabbage Parcels with Buttered Arancini (rice balls) and Long Bean Fricassee, and Angus Tenderloin Rendang with Nasi Lemak Roll, Cucumber Pickle, Peanut Crumble and Sambal Belacan. Local sweets and desserts too received a sophisticated makeover. Kek Batik, a Hari Raya favourite in Brunei, made of rich tea biscuits and malt batter, received a ‘Radisson’ touch with Oreo cookies and Red Velvet mix flavoured with pandan. Badak Berendam, a less than graceful name given to the delicious glutinous rice balls filled with palm sugar bathed in a rich soup of coconut cream, had an interesting presentation. Though translated in English to mean “Soaking Rhino”, Radisson’s glutinous rice balls were elegantly filled with butterscotch syrup and finished off with a coconut emulsion mousse.

Porsche reinvigorates the concept of the puristic 911 T model from 1968 with the new 2018 911 Carrera T. 54

With less weight, a manual transmission with a shorter constant transaxle ratio, and a standard mechanical rear differential lock, performance and driving pleasure heightened, the new 2018 911 Carrera T is a cause for celebration. The 911 Carrera T (“T” stands for Touring) is also equipped with several performance-enhancing features that are not available on the standard 911 Carrera. This includes the PASM Sport Suspension with a 10 mm lower ride height, a shortened gear lever with an embossed shift pattern in red, and seat centres made of Sport-Tex material. Rear-axle steering is not available for the standard 911 Carrera but is an option for the 911 Carrera T. Based on the 370 hp 911 Carrera Coupe, the new model features unique design elements. The 911 Carrera T is equipped to be light and sporty. The rear windshield and rear side windows are made of lightweight glass, and door opener loops on the inside replace the conventional door openers. Similar to the 911 GTS models, sound insulation has been reduced. Weighing 1,425 kg, the 911 Carrera T is the lightest model in the 911 Carrera range (it’s 20 kg lighter than a comparable 911 Carrera).
As a result, there is improved weight-topower ratio and enhanced performance. The twin-turbo 3.0 flat-six engine develops 370 hp and 450 Nm of torque, the latter of which is available in a broad range between 1,750 and 5,000 rpm. Thanks to the manual transmission with a shorter constant transaxle ratio and the mechanical rear differential lock, the 911 Carrera T accelerates from zero to 100 km/h in 4.3 seconds, 0.1 second quicker than the standard 911 Carrera. The manual version reaches a top track speed of 290 km/h. When equipped with the optional PDK transmission, the 911 Carrera T reaches 100 km/h in 4.0 seconds using the standard launch control feature and has a top track speed of 290 km/h. Inside the 911 Carrera T is fitted with black 4-way electrically adjustable Sport Seats Plus with seat centres in Sport-Tex. The headrests are embroidered with a black “911” logo. When ordered with the optional Full Bucket Seats (available on a 911 Carrera model for the first time), rear seats are deleted. The GT Sport Steering wheel with leather rim, also standard, comes fitted with a switch for driving mode selection. The shortened gear lever with shift pattern embossed in red is reserved for the 911 Carrera T. The interior trim on the dashboard and doors is in black as are the door opener loops. The Carrera T Interior Package is new: With available contrasting colours in Racing Yellow, Guards Red or GT Silver, it provides additional coloured accents via the seat belts, the “911” logo on the headrests, the door opener loops, and the seat centres made of Sport-Tex. The Porsche 911 Carrera T will be available from January 2018 and can be pre-ordered now in Europe.

Beekeeper-chef Liam Nealon of Four Seasons Resort Bali at Sayan discusses what it takes to make a Queen happy as he joins local Balinese farmers to save the island’s bees and the joy of harvesting the produce for guests.
How did a chef land the dual job as beekeeper? It all started with a vision of how to produce our own commodities in Melbourne city and do our part to ensure we are using ingredients that can be grown on site. It started with herbs and vegetables and then we decided to have a go at bees as this will help our gardens and we will also get supply of free honey.
Are there similarities in skills in both jobs? Both jobs require the utmost patience. Looking after bees is the same as looking after any produce: you must care for it and give it the respect it deserves. That way you will utilise its full potential. Tell us about the collaboration with Plan Bee and how the resort installed the apiary. The hives are part of Indonesia’s first bee conservation and community enterprise programmme by Plan Bee Indonesia, a grassroots initiative launched in Bali to combat colony collapse disorder, the well-documented global threat to bees. Plan Bee had set up bee centres in remote West and North Bali, bringing together farmers and forest honey gatherers to join the fight. Through the co-operative, Plan Bee connects the farmers with new customers for their sustainablyharvested honey, engages in knowledge and skills sharing to minimise use of pesticides in farming, and installs new hives to increase the bee population. It offers the opportunity for businesses and individuals to sponsor hives and support the farmers, and has been endorsed by the Indonesian Beekeepers’ Association. Four Seasons Sayan is the exclusive hotel founding partner of the programme. What do you like about bees? And what little known facts can you share with us about them? Bees are very easy to look after when they are happy. They need minimal care as they do all the hard work themselves. The only thing is that you must provide the perfect environment for them to prosper and an environment change can be very difficult. They don't like the hot weather but they don't like the cold either, so in Bali it is always difficult trying to provide a cool environment for them. Food must be sufficient. They will fly up to 5 km to find food however, if it is too hot or too cold,
56
MUHIBAH
they won’t travel. If there is no food close by this is when they can swarm and the queen will leave the hive due to lack of food and then the rest of the bees will follow.
How is honey harvested? Honey is quite easy to harvest especially if it is not pasteurised. You need to be careful not to take too much honey at a time because the honey is also there to feed the hive. If you take everything, again they will leave the hive as the queen will not be too happy. There are many methods used to harvest the honey. In Bali we use a simple cheese cloth sat inside a strainer and slowly let the honey fall through. In other places we have used spinners that spin the honeycomb to keep the wax intact. What would you like guests to know about the bee conservation programme at the resort? First is the importance of the bees itself; learn about the threat facing bees and how they can help by joining our escorted Garden Tour. Second is that this programme is beneficial not only for the environment, but also small-scale farmers. Our guests can enjoy the honey through the specially crafted menu we have at the resort – the Tasmanian Salmon with Wild Sayan Honey as well as our signature Iced Gingerade at the Riverside Cafe, to name a few. At Sacred River Spa, the Wild Sayan Honey is used in our Swadhisthana chakra ceremony inspired by Balinese rituals for wedding, pregnancy and rites of passage. Since the project began, what are some of your professional milestones as beekeeper? I’d say becoming more used to getting stung! (Laughs). I have an allergy and I am finding the more I get stung the recovery is swifter. Maybe I’m becoming immune! Also to be able to find the queen is something that I am proud of – your eyes become so fixated that among 10,000 bees you can find a particular one each time, this is very important. Working with other great chefs and seeing the so-called fruits of our labour ending up at a guest table is also a milestone. We have certain dishes on the menu where we use our own honey and seeing the guest's reaction when they eat the dish is spectacular, but when they find out the story behind it they are even more wowed by the experience.

Hand Luggage
For your safety and comfort, you may store your hand luggage in the overhead lockers or under the seat in front of you. Liquids, Aerosols and Gels (LAG)
Various countries have implemented restrictions on the carriage of liquids, aerosols and gels in compliance with new guidelines set by the International Civil Aviation Organization (ICAO). Passengers transiting through airports and carrying any liquids, pastes and gels in containers over 100ml may be asked to dispose of the items at security checkpoints. These restrictions may affect your ability to carry duty-free purchases onboard the aircraft. Customers are advised to check with duty free personnel before making their purchases. All liquids, aerosols and gels must be carried in containers of no greater than 100ml/3.3oz capacity (approximately 100gm in weight) and placed in a transparent, resealable plastic bag. The plastic bag must be removed from carry on baggage and presented to security
personnel at the checkpoint for inspection and separate x-ray screening. Exceptions to the new regulations are medicines and dietary supplements needed during a flight, including baby food. Proof of need may be required.
Use of Electronic Equipment Electronic devices such as Citizen’s band (CB) radio, remote-controlled devices (such as radio controlled toys), and transmitting devices that emit radio frequencies are not to be used at any time during the flight. These devices may interfere with the aircraft’s electronic equipment, compromising aircraft safety and endangering the lives of passengers and crew. The following devices may be used on board, except during take-off, initial climb, approach and landing; mobile phones (which must be

WELCOME ONBOARD
ABODE OF PEACE
CAPITAL ATTRACTIONS Small in size but big in attractions, Brunei’s capital has lots to offer.
Brunei Darussalam is a country rich in culture and heritage. It is a small, peaceful, prosperous kingdom on the northern shore of the ecologically-rich island of Borneo. Come and discover Brunei, a Kingdom of Unexpected Treasures. Brunei is arguably best known today as an oil producing country. The nation became independent in 1984 and, thanks to its large reserves of oil and gas, now has one of the highest standards of living in the world. Its population of just over 408,000 is made up of two-thirds ethnic Malay, with the remainder being Chinese, Indian and other indigenous groups. The Sultanate has four districts: Brunei-Muara (which includes the capital Bandar Seri Begawan), Temburong, Tutong and Belait. ‘Darussalam’, the Arabic word for ‘Abode of Peace’ describes Brunei’s Islamic history that dates back some 1,500 years. Today, Brunei remains the world’s only Malay Islamic Monarchy with an unbroken royal lineage that has ruled the nation for the past 600 years.
