Falafels, guacamole & tomato salsa
Serves 2 Preparation Time - 30 mins Cook - 6 mins ________________________________________________________________
Ingredients 200g chickpeas, rinsed and drained 1/2 small red onion, roughly chopped small clove of garlic, chopped handful of flat-leaf parsley 1/2 tsp each ground cumin and coriander 1/4 tsp harissa paste or chilli powder 1 tbsp plain flour 1 tbsp sunflower oil
Method 1. Pat the chickpeas dry with kitchen paper. Tip into a food processor along with the onion, garlic, parsley, spices, flour and a little salt. 2. Blend until fairly smooth, then shape into patties with your hands. 3. Heat the oil in a non-stick frying pan, add the burgers, then quickly fry for 3 minutes on each side until lightly golden. 4. Serve with toasted pittas, tomato salsa, guacamole and a green salad.
Ingredients - guacamole 1/2 avocado 3 tsp lime juice Couple of coriander stalks, leaves finely chopped 1/4 red chilli, deseeded and finely chopped
Method Scoop out the avocado flesh and put in a small bowl. Add the other ingredients, season and mash with the back of a fork.
Ingredients - tomato salsa 2 ripe plum tomatoes, deseeded and roughly chopped 1/4 red chilli finely chopped 1/4 small red onion, finely chopped 3 tsp lime juice Tsp of chopped parsley 1 dessert spoon extra virgin olive oil
Method Put all of the ingredients into a bowl and drizzle with extra virgin olive oil.
