Mexican restaurant opens near Penny Road Say “Hola!” to the newest restaurant in town, El Agavero, located where Penny’s Restaurant had been for 39 years. The restaurant had a soft opening on Feb. 15 and plans to have a grand opening in the future. Luis Diaz and his partner closed on the building the day after Thanksgiving. Diaz has been in the restaurant business for 16 years and the menu features his own recipes. “We picked Jamestown because it’s growing, as is High Point and Greensboro,” Diaz said. “Jamestown has a lot of history and this was a really good spot. There’s a

lot of construction being done and there aren’t a lot of Mexican restaurants around here.” “The menu features authentic Mexican food at a typical midrange cost,” Diaz said. He believes they serve better food with better ingredients than similar restaurants. “We’re in the business to make people like Mexican,” he said. Menu items include tacos, tostados, burritos, enchiladas, chalupas, chile poblano, quesadillas, tamales, fajitas, steak, seafood, chicken, appetizers and desserts. There is a child’s menu and the restaurant offers lunch specials. With just a few days of being open under their belts, the owners are still learning what their customers like and will adjust their menu

Council denies Johnson property rezoning By CAROL BROOKS FreeLANCe WrIter cab1hp@gmail.com The yearlong drama about developing the Johnson property is over … for now. On Feb. 16, the Jamestown Town Council unanimously voted to deny the rezoning request from Diamondback Investment Group for 467 acres along Guilford College and Mackay roads. Councilmember Lawrence Straughn was not available to vote. He was absent due to testing positive for Covid and was selfquarantining.` Councilmember Rebecca Rayborn made a motion to deny the rezoning petition from Agricultural to Planned Unit Development, noting it was inconsistent with the Town’s Comprehensive Plan. Councilmember John Capes seconded the motion. The decision was based on the quality of the development, which the Council believed was

not what the residents wanted. Councilmember Martha Wolfe read a five-page Statement of Inconsistency with the current Comprehensive Plan and PUD Master Plan, citing among other things: • An overall lack of consideration for the preservation and protection of the natural and cultural resources that are present within the site; • Disregard in the proposed design for the unique aspects of Jamestown’s built environment that contribute to its strong sense of place and define the character of the community; • Inadequate provision of public parks and open space to meet the recreational needs of future residents of the development and the community as a whole; • Proposed site development and architectural patterns that will create a monotonous urban landscape and detract from the longSEE jOHNSON, PAGe 2

Golf course rates to increase By CAROL BROOKS FreeLANCe WrIter cab1hp@gmail.com Although the Diamondback rezoning request was denied on Feb. 16, the decision was not the only business conducted by the Jamestown Town Council. Golfers at Jamestown Park will be interested to learn that rates will go up March 1. “We reached out to our customers and had hardly any pushback at all for the possibility of a rate increase,” said Ross Sanderlin, golf and recreation director. The current weekday rates will increase by $1 and weekend rates by $2. Cart fees will also increase $1 as will a basket of range balls. Sanderlin compared rates at Jamestown with those at the nearest competitors, Holly Ridge, Oak Hollow, Old Homeplace and Meadowlands, along with several other courses. Jamestown will remain lower than those courses. “We felt it could go higher but we don’t want to to be a shock for people coming out,” Sanderlin added. The Town Council unanimously approved the rate increase. The Council also unanimously approved non-profit contracts for the Ragsdale Y and Jamestown Youth League (JYL). The Y will receive $16,450 for a Safety around Water class and spring baseball,

soccer, volleyball and flag football. JYL will receive $8,800 for spring soccer, baseball and softball. “More people are wanting our fields than we have fields [available],” said Interim Town Manager David Treme, who was filling in for Finance Director Judy Gallman. He is working with the Y and JYL on scheduling. In his manager’s report, Treme said the Town is waiting on documents from the North Carolina Railroad so the final steps of the East Main Street (Lydia) sidewalk can be completed. The Town has interviewed six candidates for golf course superintendent. “We received some great candidates and hope to make an offer soon,” Treme said. He added that the new superintendent would work with Town staff on plans for the new golf maintenance building. The restaurant’s name contains the word “agave,” a succulent from which tequila is made. A rendering of the plant can be seen in the logo. The owners have not made a lot of changes so far to the décor seen in Penny’s. “We tried to leave some of the essence of Penny’s,” Diaz said, honoring the former restaurant. Penny’s was an institution in Jamestown, just like Sadie Mae’s, and many people already mourn

In North Carolina, Gov. Roy Cooper issued a proclamation declaring Feb. 8-12, 2021, as School Bus Driver Appreciation Week. He noted that without school buses many students would have no safe way to attend school and that there is a substantial saving in fuel compared to using only individual family cars. Bus drivers also are faced with special challenges created by weather and road conditions, student passengers and other motorists. Covid-19 shutdowns have limited the number of buses on the roads this year. Happily 100 By NORMA B. dENNIS FreeLANCe WrIter ndworddesign@gmail.com A recent chat between Lynn Johnson, a staff member at Pennybyrn Retirement Community, and Margaret O’Connor, a resident, was filled with memories, observations and laughter. O’Connor was recognized Feb. 19 for the occasion of her 100th birthday. The celebration was small in numbers due to current gathering restrictions, but her yard had been decorated and some of the residents shared a “socially distant” birthday song. “I never imagined living to be 100,” O’Connor said. “I still don’t feel like I am. “How does it feel to be 100?” she added laughing. “I am very fortunate. I can still remember things and take care of myself.” Born in New York, O’Connor spent most of her life in New Jersey. After graduating from high school, she attended a secretarial school and later worked for JC Penney for about six years. Growing up, dolls were her favorite toys and even as an adult she once had a doll sitting on her bed, dressed in her own clothes.

Margaret O’Connor, age 100, feels blessed with a happy life. “I think computers have taken over many toys from the past,” she said. “My grandchildren and six great-grandchildren are all on the computer.” Although O’Connor is not overly fond of computers, she has found many modern conveniences beneficial. She and her husband had often visited family in the area and he attended the International Furniture Market with his work. Her two sons and their families live

in this area and O’Connor now considers this her home. “I’m happy here,” she said, noting that she enjoys being near family. “When I first arrived, Sister Lucy greeted me at the door.” O’Connor recalled friends she had made at Pennybyrn, trips all had taken together and activities they shared.

“I’ve had a happy life,” she said. “I had a wonderful husband, and I have wonderful children who call me every day, sometimes several times. It is getting to be a nuisance,” she said with a chuckle, showing once more her quick wit. “My advise to others is to just enjoy life.”

continued from front tion Center, a Guilford County school for children with special needs. “Our bus drivers are one reason families can feel comfortable putting their kids on our buses.” In addition to dedicated drivers, each H-I bus has at least one or two safety assistants. They help load wheelchairs on and off the ramps to the bus and make sure the chairs are locked into position. They also assist children who sit in seats to fasten the shoulder harnesses that keep them safely secured during the ride. “The assistants can address the needs of the children while the drivers continue to complete their routes,” Rudder said. “But

both are trained to handle medical issues if one should arise. “Loving The Bus is 100 percent about recognizing our drivers and assistants.” The staff and students at Haynes-Inman have been celebrating its drivers and assistants since the school started in 2010. This year, they were treated to doughnuts and bottled juice on the morning of Feb. 16 and bags of chocolate accompanied by handcrafted valentines in the afternoon. “Typically Mike Gipp, the vocational education teacher, helps students bake and wrap homemade cookies for the drivers, but since he is not currently working in the school build-

ing we opted for the chocolate instead,” Rudder said. “We also had big visuals that all could easily see, such as signs in the windows facing the bus loading zone and balloons everywhere.” To show the drivers, assistants and passers-by how much the bus professionals are appreciated, there was a special message on the school marquee sign. Haynes-Inman was just one example of how Guilford County schools acknowledged the dedication of school bus drivers. But the underlying message to all those transporting students seems clear. “You are greatly appreciated.”

We’ve been part of each other’s lives through the good times and bad. We want to thank all of you for your friendship and support all these years. Our decision to

continued from front term value and livability of the neighborhood; • The absence of an integrated mix of housing types that are needed to ensure the long­term success of the proposed development and the community as a whole; • A general development concept, in terms of both the physical layout of the site and the composition of the land use mix, that does not meet the Town’s expectation for a Traditional Neighborhood Development (TND). “The citizens of Jamestown should be aware that we did not take the responsibility of making this decision lightly,” said Mayor Lynn Montgomery in a prepared statement. “Our staff, our Planning Board and our Council have spent hundreds of hours reviewing the latest plan and its previous versions, meeting with the developer and its representatives, listening to our citizens and reflecting on what this land and its development means for the future of Jamestown.”

Montgomery noted that how the land will develop is one of the most significant decisions the Town will make since its founding in 1816. “We are mindful of our duty to make sure it is done correctly,” she said. “How it develops will affect the character, the function, the esthetics and the identity of Jamestown for generations. We must get it right.” Montgomery hoped the Johnson family would be patient as the Town moves forward on this property. “It’s pretty clear they felt that the deal was not what Jamestown wanted,” said Interim Town Manager David Treme. Prior to the motion, Planning Director Matthew Johnson requested both the rezoning public hearing and Diamondback’s annexation petition public hearing be continued to the March 16 Council meeting and received approval from the Council. The Council declined to impart that information. The outside attorney for the Town was hired so councilmembers could have expert assistance with their decision. When contacted on Wednesday, Hodierne said, “Diamondback Investment Group remains under contract to purchase this property and continues to be excited about its future development plans.” In February 2020, Diamondback held two neighborhood meetings at GTCC to announce plans for the development to be called Castleton Village. There was some pushback from the audience. Plans originally called for an apartment complex and farmer’s market, but those ideas were later dropped in favor of 765 townhomes and

644 single-family dwellings totaling 1,409 units. Final plans called for 1,269 units with 2.72 units per acre, consisting of 521 townhouses and 714 single-family residences, along with 34 mixeduse buildings. Again, community reaction was on the negative side, citing the density was too high. Diamondback has had a request to locate a church at the edge of the property and at one time suggested ball fields could be located at the corner of Guilford College and Mackay Roads. Diamondback would construct these fields, then turn them over to the Town of Jamestown upon completion. Later plans did not include ball fields. One element of the plan was the amenity center, or clubhouse, which would be designed to mimic the old Mackay Hunting Lodge that was once in the area. The Planning Board heard the presentation from Diamondback and held discussions with the company from

August to November last year. The Board denied the rezoning request in November. Hodierne stated in January of this year that she felt the Planning Board got off track, requesting items that should not have fallen into a rezoning request, but rather got ahead of the game and focused on details first without having a framework. Diamondback also requested annexation into the Town of Jamestown. The property is currently in Jamestown’s Extra-Territorial Jurisdiction, or ETJ, meaning the town has control of the areas but they are not technically within the town limits. If annexation is approved, the addition would add about 0.5 square miles to the town’s size, which is currently 3 square miles. The town currently has about 4 square miles in the ETJ. “We expect they will withdraw the annexation petition,” said Planning Director Matthew Johnson. The town’s population

– currently 4,416 – could double in size once Castleton Village is fully developed. Diamondback said it would take 5-10 years to complete. Perhaps as a backup in case the initial plan was denied, Diamondback submitted plans to the Town for a single-family development in November. It is not known if they will pursue those plans. However, they must wait 12 months before making a formal petition. According to the current Land Development Ordinance, “When an application for a zoning amendment has been approved or denied by the Jamestown Town Council, no rezoning application of the same property shall be accepted or considered within 12 months after the date of the approval or denial.” This waiting period could be waived, however, by a three-fourths vote of the Council if it determines there have been substantial changes in conditions or circumstances. In your mind, do you see the large rectangular piece of furniture in your kitchen? Your fourthgrader might picture a multiplication chart, and your sixth-grader a list of contents at the beginning of a book. Each person’s frame of reference develops from a perception of things based on the information we know and the things familiar to us. In a typical family, it’s not unusual to find one person’s frame of reference totally opposite from another’s, which often leads to the familiar, “I don’t understand where you’re coming from!” Here is a fun word game to help the whole family

appreciate differences in perception. Give each family member a piece of paper and a pencil, and five minutes to write down all of the pictures that pop in his or her mind when a particular word is heard. Then compare lists. For example, try the word “copy” and see what comes up. Did you write that it means to duplicate on a machine? Maybe Grandmother wrote copy means to draw, trace or write the same thing over. If Dad is a newspaper writer, copy is the words or manuscript he writes. If Mom is a police officer, to copy means to understand. Or, think of the various meanings of the word “key.” In addition to figuring out “key” meanings to this game, one person might be dreaming of the warm weather in the Florida Keys this time of year,

while another who plays an instrument thinks of the musical key of a favorite song. A key to a road map helps understand its symbols, and a car key gets you on the road. Discuss factors that may have made your definitions different, such as the person’s age, work or school environment. Continue with other words. Winter squash are prominently displayed at grocery stores in the fall and winter months, but many shoppers pass them by because they don’t know how to make them. Winter squash are easy to prepare and are a healthy addition to any meal. The Cucurbitaceae family is the Latin name for gourds, pumpkins and squash. The terms Summer and Winter can be deceptive. Summer squash types are on the market all winter; Winter squash types can be found in late summer and fall, as well as winter. This terminology was never meant to confuse -- it just dates to a time when the seasons were more crucial to man’s survival than they are now. Vegetables that would keep until December became known as winter vegetables. Winter squash are picked when they are fully mature, and they have a thick, inedible skin. This thick skin provides a protective covering for the squash and allows for a long storage life. Winter squash can be stored for three months or longer in a cool, dry place, preferably in a single layer. Every part of the squash plant can be eaten, including the leaves and tender shoots, which can be cooked in omelets or made into soup. Winter squash are a good source of vitamins A and C, potassium and fiber. One-half cup of cooked winter squash has only 40 calories. Some of the most popular types of winter squash are butternut, spaghetti, acorn squash and Delicata. * Butternut squash is tan in color and has a long, bell-like shape. * Spaghetti squash is oblong or oval in shape and yellow in color. * Acorn squash is actually shaped like an acorn. It is dark green and has a ridged rind or skin. * Delicata squash is oblong, ridged, and yellow and green. The skin is soft and edible. When shopping, look for squash that are heavy for their size, free of soft spots and have a dull sheen (a shiny skin is an indicator the squash is not fully mature). Once butternut or acorn squash is cooked and cooled, it can be peeled away from the skin, cut into cubes, and used in soups, stews and casseroles along with other vegetables. Butternut or acorn squash can be used interchangeably in recipes. Spaghetti squash is the exception. Once it is cooked, use a fork to peel the flesh away from the skin. It looks just like spaghetti as it peels away. Sauce and serve spaghetti squash like regular noodles. Delicata squash is the easiest squash to prep and cook because of its soft, edible skin. It contains seeds in the center, but they can be easily removed by scraping them out with a spoon. This delicious recipe for Southwestern Stuffed Butternut Squash is a wonderful side dish or vegetarian entree on a cold winter’s day!

SOUTHWESTERN STUFFED BUTTERNUT SQUASH 2 Delicata squash 2 tablespoons vegetable oil 1 1/2 teaspoons salt 1 1/2 teaspoons ground black pepper 1 cup cooked rice 1/2 tablespoon chili powder 1/2 teaspoon ground cumin 1/4 teaspoon cayenne pepper or hot sauce 1 (15-ounce) can black or pinto beans, rinsed and drained 1 large bell pepper, seeded and chopped 4 springs cilantro, chopped 6 cherry tomatoes chopped 1/2 cup shredded Pepper Jack or Cheddar cheese 1 large avocado, peeled and sliced 4 tablespoons plain Greek yogurt or Mexican crema

1. Preheat oven to 350 F. 2. Place Delicata squash on a cutting board and use a sharp knife to cut the tips and tails off. Cut the squash in half, then scoop out the seeds and fibrous strands. 3. Drizzle the inside of the squash with oil. Use your hands to spread the oil all over the exposed interior so it is well-coated. Sprinkle the squash with 1/2 teaspoon each of the salt and pepper. 4. Place squash cut-side down on a large baking sheet. Bake 30 to 40 minutes, until squash is soft when poked with a fork. 5. While the squash is baking, prepare the quick rice. Before adding water or broth to the rice, season with the remaining salt and pepper, the chili powder, cumin and cayenne pepper or hot sauce. Mix well and proceed with the directions for preparing the rice. 6. When the rice is done, add in the beans, chopped peppers, cilantro and chopped tomatoes. Mix together and heat on low for 3 minutes, stirring once. 7. Fill each half of the squash with even amounts of the rice mixture. Top each half of the squash with shredded cheese, then put the stuffed squash back in the oven for about 5 minutes to melt the cheese. 8. Remove from oven and top with avocado slices and plain Greek yogurt or Mexican crema, if desired. Serves 4.
