Coffee café and bakery opens in church by norma b. dennis freeLance Writer ndworddesign@gmail.com A passion for baking and a knowledge of business seemed the perfect combination for Jo’Vaughn Weeks to build his company, My Mini Bakes. What the entrepreneur lacked, however, was a permanent venue where he could sell his delightful treats. For the past three years, Weeks has been selling his baked goods at gas stations and small markets, but realized he needed his own site if he expected his business to grow. “I want to build a billion dollar company,” Weeks said with a smile. “I have the knowledge, but not the capital. That is when I thought about putting My Mini Bakes into my church’s coffee café.” Weeks has been attending Renaissance Road Church on Harvey Road in Jamestown for the past two years and knew the coffee café near the front entrance of the church was underutilized. Although roomy and comfortable, it was only open during church hours on Sunday mornings. Weeks felt he could use the space to build his bakery business and at the same time bring attention to the church with a coffee café that would be open to the public daily. Photo by Norma B. by carol brooks freeLance Writer cab1hp@gmail.com Since its inception in 1938, what’s now known as the Wyndham Championship has been contested on three different courses, in four different months (March, April, August, October) and in all kinds of weather. It has been so hot that plastic raincoats given to volunteers melted. It has rained. It even snowed on Easter Sunday 1940, postponing play until the following Wednesday. The tournament was not contested in 1943 and 1944 due to World War II. 2019 brings yet another date change to the tournament that began as the Greater Greensboro Open. Rather than beginning in mid-August, the event has moved up two weeks to July 30-Aug. 4 due to the PGA’s new re-arranged and condensed schedule. But it is still the final event of the regular season before the FedEx Cup playoffs, as it

Council looks at sidewalks, grant allocations by carol brooks freeLance Writer cab1hp@gmail.com

It looks like the East Main Street/ Lydia Sidewalk Project might actually happen this year. At its July 16 meeting, the Jamestown Town Council learned that the North Caroling Department of Transportation had verbally committed to funding the base bid of $1,198,415 for the project. This figure is approximately $75,000 lower than a previous bid. Supplemental bids came in at $148,218 and $87,789.50 for an overall total of $1,434,422.50 for the project. These bids include installing curb and gutter on the opposite side of the road from the new sidewalk. The Town is looking for funding for the supplemental bids. “This will give East Main Street a uniform cross section that is more in line with road features toward downtown and toward Greensboro,” said Paul Blanchard, public services director. Blanchard added that the base bid could not be approved until the supplemental agreement with NCDOT was revised. The Council will discuss the supplemental agreement at the August 20 meeting. “I do not know a start date, but we will prepare the paperwork in advance of the August meeting so we can forward it to the contractor quickly if it is awarded in August,” Blanchard said. Atlantic Contracting Company, Inc. of Greensboro was the only company submitting a bid. Blanchard and Town Manager Kenny Cole have been working on the project for months.

“I really commend you all on this,” said Councilmember Georgia Nixon, who was acting as mayor pro tem for the evening. “I don’t think anyone in the town outside of this room even understands how much work goes into it. Everybody enjoys the sidewalks.” The Council spent a good portion of the meeting deciding how to allocate Town funds to non-profits that applied for grants. The groups requested $115,500 in grant money, but several years ago, the Council set a cap of $100,000 on what would be allotted. The final grants were awarded to the Jamestown Public Library, $62,000; YMCA, $20,254; Historic Jamestown Society, $10,500; Jamestown Youth League, $5,000; Jamestown Veterans $1,172; and Jamestown Rotary, $1,074. Jamestown voters will be deciding Nov. 5 whether to stagger the mayor and Town Council terms. However, the final decision won’t go into affect until the 2021 election, not this year as previously announced. (See file for council and mayor below.) Golf Course Manager Ross Sanderlin reported that the course had a strong fourth quarter of the 2018-19 fiscal year, showing a 13 percent increase in rounds played, revenue was also up as were clubhouse rentals. Nearly 28,000 rounds were played during the fiscal year, up approximately 6 percent over the previous year. “My goal is to get to 30,000 very soon,” Sanderlin said. He gave credit to John Crowe, golf maintenance superintendent, and his staff for the great condition of the course. “When you provide a consistent

product to the customer, you get a lot of repeat business.” Sanderlin announced the Aug. 9 Honor Our Veterans Tournament, sponsored by the Jamestown Golf Association. “We’ll have quite a few veterans playing in that tournament,” he said. “Last year we had a World War II veteran play. “This was our most fun tournament.” Cole reported that the last Music in the Park event in Wrenn Miller Park was the biggest one yet. He also noted that he has requested an easement from Flowers Bakery for a welcome to Jamestown sign on West Main Street. In other business, the Council set a public hearing at the Aug. 20 meeting for a discussion on a proposed text amendment to the Land Development Ordinance regarding the definition of “Limited Agriculture,” or the keeping of pigs within town limits. Councilmember Martha Wolfe was appointed as the Jamestown representative to the 2020 Census/ Guilford County Complete Count Committee. The matter of the property donation from High Point is still up in the air as the item was removed from the tentative agenda. After approximately 45 minutes of the public session, the Town Council went into closed session to consider the qualifications, competence, performance, character, fitness, conditions of appointment, or conditions of initial employment of an individual public officer or employee or prospective public officer or employee.

Five file for council, two for mayor Staggered terms will not happen this year

by carol brooks freeLance Writer cab1hp@gmail.com The Jamestown Town Council will look a little different after the Nov. 5 election as three of the four current members (John Capes, Rebecca Rayborn and Martha Wolfe) have announced their intention to retain their seats. Adding to the list is former councilmember Lawrence Straughn and newcomer Dave Cohen. who also have thrown his hat into the ring. Robert Frederick, who ran for mayor in 2017, again will oppose current Mayor Lynn Montgomery. Frederick lost in the primary that year to Montgomery and then-Mayor Keith Volz. Last Friday was the final day candidates could file for municipal elections in Guilford County. One person missing from the race is current Councilmember Georgia Nixon. “I am not [running],” Nixon said. “I really enjoyed the last 12 years and

am proud of all that I had a small hand in accomplishing.” Earlier this year, the Jamestown Town Council began serious discussions regarding extending the terms from two to four years for mayor and Council. The Council favored the longer term, citing several reasons, including continuity of leadership. On May 21, the Town Council unanimously approved an ordinance amending the town charter regarding staggering terms for council members. This vote would have gone into effect June 22 except a petition was received, signed by 356 people opposing the change. The Guilford County Board of Elections determined that 324 of those were registered voters. Only 298 signatures were required. At a called meeting July 5, the Council unanimously voted to amend the town charter to reflect the staggered terms and to place the charter amendment on the ballot at the Nov. 5 general election, with the

outcome affecting that election. However, that decision was changed at the July 16 Council meeting when Town Attorney Beth Koonce declared the outcome of the vote could not go into affect until the 2021 election, not this year. This is in compliance with General Statutes 160A-109 and Article 27 of chapter 163A. If voters approve the measure, it means, as of the 2021 election, the Mayor will be elected to a four-year term and the two candidates for Council receiving the highest number of votes will be elected to four-year terms. Those receiving the next highest number of votes will serve two-year terms. These two-year councilmembers would be up for reelection in 2021 and could run for a four-year term. Thus, a maximum of half of the Council would be elected every two years. Besides the petition opposing the change, there has been little opposition to staggering terms voiced by Jamestown citizens during Council meetings.

Delphina Mendenhall

by linda Willard JameStoWn friendS meetinG About 1811 — 1881

Delphina Eliza Gardner Mendenhall was born in the Cane Creek area of Alamance County, North Carolina. The names of her parents are not known. Delphia married George Cameron Mendenhall of Jamestown, North Carolina on May 14,1832 (fifth month, 14th, 1832). Delphina and George were married after the death of his first wife, Elizabeth Webb Dunn Mendenahll. George was a member of Deep River Friends Meeting. Elizabeth Dunn Mendenhall was not a Quaker. This marriage led to George C. Mendenhall being turned out of meeting (removed from membership) for marrying out of unity. Delphina was probably a birthright Quaker (her parents were members of a Quaker meeting at the time of her birth). and attended services at Deep River Friends Meeting in High Point, North Carolina. Delphina was a relative of Judith Gardner Mendenhall, the mother of George C. Mendenhall. Delphina was said to have had a “broad and through” education. After their marriage, George and Delphina started collecting the best literature written in the English language. Delphina assisted George with his extensive legal practice and also assisted with work on the plantation. Despite being married to one of the largest slave holders in the state of North Carolina, Delphina was absolutely opposed to slavery. George had inherited most of the slaves from his first wife.

Laura Delphina Worth

JANUARY 13, 1869 — JANUARY 16, 1945

Laura Delphina Worth, one of eight children of Daniel and Eunice Hendley Worth, was born in Alamance County, North Carolina. Worth attended New Garden Boarding School, present-day Guilford College, in Greensboro, North Carolina. Worth graduated from Guilford College in 1892. She later studied at the Boston Normal School of Gymnastics. She later returned to Guilford College as the first director of physical education for women. The first gymnasium at Guilford College was built due to the influence of Worth and her efforts to obtain a gymnasium. In 1898, Worth attended Woman’s Medical College in Baltimore, Maryland.

During the Civil War, she contributed money to Quaker men who were imprisoned for refusing to fight. Delphina is reputed to have had a correspondence with President Abraham Lincoln. The correspondence may have been about the issue of slavery. George C. Mendenhall is known to have been transporting his slaves to Ohio and freedom. In his will he emancipated the remaining slaves. The job of transporting the remaining slaves to freedom fell to Delphina. Delphina is reputed to have had a great deal of success in getting her remaining slaves to freedom. This effort left her in a great deal of financial difficulty by the time the Civil War was over and all slaves were free. After the Civil War, Delphina continued to serve as Clerk of the North Carolina Yearly Meeting. At one time, she was the head of the women’s meeting that discussed such things as the advisability of a proposed marriage, female membership, and at times family issues. Delphina Eliza Gardner Mendenhall died on December 4, 1881 (12th month, 4th day, 1881) at the age of 70. She is buried in the cemetery at Deep River Friends Meeting in High Point, North Carolina.

She later took nurses training classes at Presbyterian hospital in Charlotte, North Carolina. Worth became one of the first nurses in Guilford County, North Carolina to pass the North Carolina State Board examinations. Worth was the college nurse and matron at Guilford College from 1905 until 1928. Worth was also very active in the work of the North Carolina Society of Friends (Quakers). Worth served as statistical secretary and custodian of records for many years. Worth was recognized as an authority on North Carolina Quaker genealogy. After 1928, Worth devoted a great deal of time to genealogical research, collecting and gathering data and repairing the minutes and records of the North Carolina Society of Friends. Worth spent three years doing detailed research and transcription for the preface to Volume 1 of the Encyclopedia of American Quaker Genealogy. Worth compiled data for part of the works of William Wade Hinshaw’s Encyclopedia of American Quaker Genealogy. Worth was also an active member of the North Carolina Society of Mayflower Descendants. Worth died at her home on January 16, 1945 and is buried in the New Garden Friends Cemetery in Greensboro, North Carolina.

From The Front hamiversary continued from front and High Point each had fundraisers for the organization, Jamestown should too,” Swaim explained. From that suggestion the Jamestown Pig Pickin’ was born and has been going strong ever since. It is one of four fundraisers that support the work of Family Service of the Piedmont, including two oyster roasts and a “Hairball.” More than 500 people attended last year’s Pig Pickin’, which raised net proceeds of $89,000 to support programs of Family Service of the Piedmont. The private nonprofit agency provides quality support services, advocacy and education for children and adults dealing with domestic violence, child abuse, mental health and financial stability. Its goal is building safe and healthy families. “Last year, Family Service touched the lives of 18,250 local children and adults,” Swaim said. Since 2010, the annual Pig Pickin’ has grown in popularity and success. The cost to attend is $65 and includes all food, beverages and entertainment. Technology Concepts & Design, Inc. (TCDI) is this year’s presenting sponsor. Other sponsors at the Platinum, Gold, Silver and Bronze levels

help make the event a fundraising success. Also important are hosts, who pay a little more for their tickets, but in turn receive a sign for their yard and their names listed on the invitations. “Currently we have 143 hosts and 111 sponsors,” Swaim said. Hamlet, the Pig Pickin’s mascot, will make a cameo appearance at the Jamestown post office from July 18 - Aug.17 to promote the event.” Before the Pig Pickin’ begins for the evening, sponsors at Silver and above levels are treated to a Wine Soiree. “My husband Don and I also hosted a sponsor appreciation cocktail party at our home for donors at the Silver and above levels,” Swaim said. “It was very successful and I think is something that will continue. One of the clients of Family Service spoke to the group. It was neat to have a person there who had benefitted from Family Service and see how different her life is now. “It is good to be reminded where the money we raise is going.” People are encouraged to purchase Pig Pickin’ tickets prior to the event. After his 2007 rookie year win, he has won nine times on the PGA Tour and took home the FedEx Cup in 2012. With last year’s victory, he moved to the top of the Wyndham Championship career money list with $2,879,369 in tournament winnings in his 11 appearances here. There’s one more thing for which Snedeker holds a distinction. He shot a course record 59 in the first round in 2018, joining only nine other PGA Tour players to do so. “It was great to win here last year, but I wasn’t playing great,” Snedeker said at the July 9 media day. “I caught a week where everything went right. I hit it great and made some putts, but it wasn’t a consistent year for me. I was too up and down. This year, I’ve played a lot better. I just haven’t had that week when I put four rounds together. “I love old school Donald Ross golf courses, so this one is right up my alley. I have great memories here. I have great history here. I love being here and the golf course suits me perfectly.” He joked that even though he shot a course record that first round last year, his pro-am round on

He has teamed with Raquel Cooper, whose expertise is cake decorating and specialty cakes, to provide desserts for weddings, meetings and parties. “I want to be different from other companies – to stand out,” Weeks said. “You can only get certain items from my company.” My Mini Bakes and Coffee Café held a successful grand opening July 12. Weeks noted he has already built a fan base through social media and word of mouth and is working to let more people know they can get good coffee, yummy desserts and excellent service at his location in Renaissance Road Church, 5114 Harvey Road, Jamestown. He took over the leadership in 2011 and during his tenure, GTCC has grown in many ways, including opening three new campuses and expanding the main Jamestown campus. Construction and major renovation projects total over $100 million. In 2018 Parker received the Phi Theta Kappa national Shirley B. Gordon Award of Distinction and the 2018 Distinguished College President Award from the Carolina’s Region of Phi Theta Kappa Student Honor Society. “I’ve had a tremendous career,” Parker said. “I’ve worked for an educational system I believe is crucial to North Carolina’s economic future, and for three colleges that provide so much benefit to their communities.” “The time I’ve spent at

I already know how to bake and I have been trained to make good coffee.” Weeks is not new to the food industry. His mother owns a catering business in New York City at which Weeks worked prior to moving to the Jamestown area. When he moved here, he began working as a manager at Bojangles. “I did not look at Bojangles as a job, but viewed it as a business school,” Weeks said. “I handled all aspects of the restaurant from inventory to customer relations to managing a team to budgeting. I also built relationships with those above me and learned from them. I felt I could eventually take my knowledge and apply it to my own business.” My Mini Bakes started as a way for his wife to work from home where she could also be a fulltime mom. GTCC has been particularly rewarding. I can’t say enough about the support I’ve received from our Board of Trustees, the local community, and our staff and students. I hope I’ve contributed, in a small way, to GTCC’s success.” Parker previously worked at Vance-Granville Community College and Lenoir Community College. GTCC held public forums April 10 and 11 to learn what the community wants in a president. GTCC has also announced that George Ragsdale has been named chair of the GTCC Board of Trustees for 2019-20. Dr. Treana Bowling was named vice chair and Matthew Soule, secretary. Ragsdale is also on the Presidential Selection Committee.

Wednesday was so bad that he expected to miss the cut Friday afternoon. But he pulled himself together. “Wyndham is one of my biggest sponsors, so they expect me to win,” he said. “I can’t let everybody down.” And that 59 Snedeker shot last year? He joked then that he expected to see a plaque erected at the course noting his accomplishment and brought it up again at the media day after not seeing a plaque. There’s still time for one to be created, he said. This year’s Executive Women’s Day on the Tuesday of tournament week will feature retired LPGA sensation Annika Sorenstam, who also shot 59 during a round. The event is a forum that brings together local business leaders from the Triad area for a day of corporate dialogue, networking and professional development. There is a chance a lot more of the top names will choose to play the tournament this year than in previous years. The winner will receive $1,116,000 but there’s a bigger incentive this year. Wyndham Rewards Top 10 is a new program established by the PGA, offering a $10 million bonus for the top 10 golfers in the FedEx Cup standings following the Wyndham Championship, which is the final

regular event of the season. The first place player in the Top 10 will receive a $2 million bonus, second $1.5 million, third $1 million, etc., down to the 10th player who receives $500,000. “We now have a major incentive for golfers to think a lot about the end of the year, making the Wyndham Championship that much more relevant,” said Mark Brazil, Wyndham tournament director. “I truly believe it’ll be good the first year, better the second and even better the third. “The players are excited that there’s a regular season bonus. This is the second biggest prize on the tour.” The local advantage of both Wyndham Rewards Top 10 and the FedEx Cup race means more players will want to play at Sedgefield to increase their chances of moving up in the points for a chance to play in the FedEx Cup playoffs and earn a bonus with Wyndham Rewards – and a bigger payoff. In addition to the date change for the Wyndham, there are only three FedEx Cup playoff events instead of four, so that puts a bigger premium on being highly ranked coming out of the Wyndham to do well in the playoffs. This year, the FedEx Cup has boosted the prize amount to the winner to $15 million, instead of $10 million.

WANT TO GO? The Wyndham Championship will be contested July 30-Aug. 4 at Sedgefield Country Club. The BB&T Pro-Am is Monday, practice rounds and First Tee Junior Clinic are Tuesday, another pro-am Wednesday, and first round play begins Thursday. Two “good any day” Wyndham Championship tickets can be purchased for the price of one at Piedmont Triad Harris Teeter locations through Aug. 4, while supplies last. A Harris Teeter VIC card is required to get the two-for-one deal. The $60 tickets available at Harris Teeter are good for tournament admission on any day of tournament week. Children ages 15 and under are admitted free with a paying adult. Parking is again available in four lots: Premier Parking at Four Seasons, 410 Four Seasons Town Centre, Greensboro; Public Parking North at the Greensboro Coliseum, 1921 W Gate City Blvd., Greensboro; Public Parking South at GTCC’s Jamestown Campus, 601 E. Main St.; and VIP Parking at American Furniture Warehouse, 3900 W. Gate City Blvd, Greensboro. Handicap parking is at American Furniture Warehouse. Uber and Lyft drivers will deliver and pick-up near the main tournament entrance.

Middle-class Joe cashes in by rich loWry The American middle class just got a lot richer. Joe Biden, who invariably and tiresomely refers to himself as “Middle-Class Joe,” made $15 million the first two years after the end of the Obama administration. According to one estimate, it takes an annual income of $420,000 to be in the top 1% of earners. Biden made 26 times that in 2017. He used to be remarkable among top politicians for not being very wealthy, but even in the old days of straitened circumstances, he and his wife were making about $400,000 a year, enough to make the top 1% in Delaware. This doesn’t discredit any particular Democratic policy proposal, but it shows that in inveighing against the 1%, many top Democrats are attacking a group they are happy to be part of. The Bidens bought a $2.7 million vacation house on the beach, a luxury far out of the reach of the vast majority of Americans. If Biden has felt any guilt, he has yet to show it. We shouldn’t begrudge Biden, or anyone else, getting what the market is willing to pay him, and spending it on things he enjoys. But what’s true of Biden is as true of other denizens of the 1%, a category that includes people across all sorts of industries and professions. What distinguishes the buck-raking of a politician like Biden is that he is simply cashing in on his fame, rather than adding any true value the way an entrepreneur does, or providing important services like a doctor or an accountant.

Writing books (often with the help of a ghostwriter) and showing up and giving speeches is perhaps the easiest money in America, and it is uniquely the path to wealth of politicians. This road is so paved with gold that even Sandinista-friendly avowed socialists can make a bounty, as Bernie Sanders has without apology, indeed with a prickly defensiveness. “I didn’t know that it was a crime to write a good book, which turned out to be a bestseller,” he huffed at a community meeting. It’s also not a crime to use tax loopholes to keep from paying more than necessary to the IRS, as Biden can attest. The Wall Street Journal reports that the former vice president, a longtime critic of tax loopholes exploited by the rich, himself used a loophole that Democrats have long tried to eliminate to save about half a million on his tax bill. Biden is by no means the lead scourge of the wealthy in the Democratic field. He’s been outflanked on this issue by Sanders and Elizabeth Warren, who herself made nearly a million dollars last year. At a recent fundraiser, he said that rich people shouldn’t be demonized. Of course, Biden was talking to a room of fellow rich people. On CNN the other night, he was back as usual to calling himself Middle-Class Joe. It’s probably too much to ask him to give up that shopworn self-image. Still, he and many of his colleagues would be truer to how they live their own lives if they began to more fully embrace and promote the idea of their fellow Americans getting rich. Shazam (PG-13) — A die-hard foster kid (Asher Angel) who doesn’t rely on anyone is a searching for his mom, but what he gets is the full force of a wizard’s last-ditch effort to find a hero. After being roped into saying the wizard’s name, Billy Batson’s body transforms from a 14-year-old street rat to a strapping (and zapping) grown man powerhouse named Shazam, played infectiously on point by Zachari Levi. He enlists his foster brother to hilariously test the limit of his powers, and it’s all fun and games until a bad guy (Mark Strong) shows up with a problem only Shazam can solve. This is a superhero story that we desperately needed, about choosing your destiny even when it’s hard, and how opening your heart and letting yourself care for others makes you infinitely stronger for it.

Healthy Living Summertime Soup

By Angela shelf medearis kitchen diva One of my favorite year-round lunch or light dinner menus is a half of a club sandwich and a bowl of vegetable soup. When people think of summer recipes, they seldom think of soup. While soups are a perfect dish in the winter, they’re easily a seasonal recipe with the right ingredients. And, if you think about it, we eat hot meals all the time in the summer, so why not a summer vegetable soup? A well-balanced soup is the perfect way to highlight all the sweet, crisp flavors of freshly picked summer vegetables. Soups also are easy to prepare, grow more flavorful over several days and are simple to heat and serve. I love using both fresh corn and the corn cob in my summer soups. Using both the corn kernels and the cob is a great way to quickly and deeply infuse the broth with flavor and create a spoonful of summer with each bite. Corn on the cob is an essential part of a summer meal and provides many health benefits year-round. The average serving of corn on the cob has about a quarter of your daily requirement for thiamin, which helps maintain memory, as well as betacryptoxanthin, which aids in lung health. Corn also is high in folic acid, which is needed for women who are taking oral contraceptives. It is a good source of fiber and thiamine, and contains fair amounts of vitamin C, magnesium, niacin and potassium. One serving size or one ear of corn has about 83 calories. Here are some buying tips for selecting corn without removing the husk: * Look for small, brown holes in the husk, toward the top. Those are wormholes, and indicate that the corn may be damaged; * Feel the kernels through the husk. You want to make sure they’re plump and plentiful; if you can feel holes where kernels should be, then choose another ear. * Look for corn tassels sticking out of the top of the husk. They should be brown and sticky to the touch. If they’re dry or

black, then it’s an old ear of corn. * Check the color of the husk. If it’s a bright green and tightly wrapped against the cob, then the corn is fresh. (In some cases, it will even feel slightly damp.) My recipe for Summertime Vegetable Soup is the perfect showcase for fresh corn and summer vegetables. Soup in the summertime? Yes, please! SUMMERTIME VEGETABLE SOUP Use your choice of summer vegetables in this soup, just maintain the suggested quantity. Be sure to add the vegetables according to their texture. Firmer veggies take longer to cook and should go in the pot first. For extra richness and flavor, keep the corn cob after removing the kernels and add it to the soup broth while it simmers. Remove the cob and discard before serving. Add softer veggies or delicate greens like Swiss chard leaves or spinach last. You can use the Swiss chard stems for added nutrients. Just saute the chopped stems with the celery and onions. 2 tablespoons olive oil 3 carrots, diced 2 ribs of celery, diced 1 medium onion, diced 1 large clove of garlic, minced 1 teaspoon salt 1 teaspoon ground black pepper 2 tablespoons Italian or poultry seasoning, divided use Corn cob 4 cups of fresh tomatoes, diced 2 1/2 cups chicken broth 2 cups water 1/2 teaspoon sugar, stevia or honey 1/8 teaspoon ground cloves or cinnamon 1/8 teaspoon cayenne pepper 1 cup of fresh sweet corn, cut off the cob 2 cups fresh green beans, ends removed and cut into bite-size pieces 1 cup peas (shelled sugar snap peas or other summer varieties) 1 large zucchini, chopped 1 cup Swiss chard (stems removed) or spinach, chopped

1. Heat olive oil in a large soup pot. Add carrots, celery, onion and garlic, salt, pepper, and 1 tablespoon of the Italian or poultry seasoning. Saute until vegetables begin to become tender, about 3 minutes. 2. Add the corn cob, diced tomatoes, chicken broth, water, the remaining Italian or poultry seasoning, sugar, stevia or honey, ground cloves or cinnamon, and cayenne pepper. Stir well and simmer over low heat about 20 minutes, stirring occasionally. 3. Add the corn, green beans, peas, zucchini and Swiss chard or spinach. Bring soup back to a simmer and continue cooking about 10 minutes, or until all the vegetables are tender — be careful not to overcook them.

4. When soup is finished cooking, add additional salt and pepper, as needed to your taste. Remove and discard the corn cob before serving. Serve immediately. Serves 6 to 8. 5. Cool leftovers and refrigerate in an air-tight container for 3 days, or freeze in an airtight container for up to 3 months.
