SPARKLING Jean-Francois Ganevat 'La Combe' '10 (Jura, France): Amazing boutique wine from eastern France with hints of apple, pear and cheese rind. Laherte Freres 'Les 7' NV (Chavot, Champagne, France): I worked harvest at this estate right outside of Epernay. The family grows all 7 Champagne grapes in a small 2 acre plot behind the house. This vintage reminds me of toasted brioche and red cherry jam.

WHITE Ramonet Aligote '12-Bouzeron (Burgundy, France): Rather than pay a premium for the well-known Chardonnay, try Aligote, an esoteric grape which is similar to Chardonnay but a little lighter, with flavors of white peach, lemon, lime and grilled apple. Benito Ferrara Vigna Cicogna Greco di Tufo '12 (Campania, Italy): From Southern Italy, around Naples, grown in volcanic soil, this wine has tropical notes of pineapple, quince and a ton of rocky minerality.

ORANGE WINE Orange wine, a vintage growing in popularity, is basically a white wine that is skin fermented, which lends it a golden or orange color. Ancarani Albana Santa Lusa '12-Emilia (Romagna, Italy): Orange zest, tea leaves, lemon curd.

RED Ess & See 'No 1' Grenache '11 (McLaren Vale, Australia): Sunkissed strawberries and raspberries with peppery spice and a smooth finish. Barham Mendelson Hazel Grace '08 (Russian River Valley, California): smooth, silky, ripe raspberries and vanilla, from one of the best producers of Pinot Noir in California. We are one of only a handful of restaurants to carry this new wine.

UBUNTU'S CHILDREN

ore than two decades ago, the world watched Nelson Mandela forgive the government that imprisoned him for

27 years. We waited with bated breath to see if peace would last, if South Africa would succeed. The country’s greatest legacy is what can be actualized in the wake of conflict. Ubuntu's Children: the Spirit of South Africa, a body of work by photographer Tim Hans, captures the forwardfocused mentality of those living in the townships of Port Elizabeth, South Africa. All subjects in the exhibit are born into circumstances where access to healthcare, education, employment, and social mobility is limited. Yet, they all choose to define themselves by their aspirations rather than by the countless obstacles that constrain their lives. Ubuntu Education Fund is a non-profit that works within this community to provide world-class health and educational support to orphaned and vulnerable children. Ubuntu's mission is simple, all encompassing, yet radical: to help raise township children by providing what all children deserve—everything. VINAIGRETTE • • • • •

1/2 cup cranberry chutney (recipe below) 2 T. freshly squeezed lemon juice 1 shallot, minced 1 scant cup extra virgin olive oil Salt and pepper to taste

Combine chutney, lemon juice and shallot. Whisk in olive oil in a slow, steady stream. Season to taste with salt and pepper. Makes about one pint.

CRANBERRY CHUTNEY • • • • •

1 lb. cranberries, picked over and washed 1/4 cup sugar 1 tsp. fresh ginger, grated 2 T. freshly squeezed orange juice Zest of one orange.

Combine all ingredients in a saucepan and cook over low heat, stirring often, until thick. 10-15 minutes. Set aside. For salad, combine sliced apples, shaved fennel and thinly sliced Lacinato (Tuscan) kale and dress with cranberry vinaigrette to taste.
