whole pot o' people will be descending upon Chelsea Market this January for the second annual NY Chilifest benefiting Food Systems Network NYC. Stirred together by Jake Dickson (Dickson Farmstand Meats), Mary Cleaver (The Green Table), and Chelsea Market's own Michael Ginsberg, NY Chilifest 2012 will be the ultimate celebration of chili, beer, and all things spicy. Ticketholders will navigate their way through Chelsea Market's famed concourse sampling chilis from more than twenty of NYC’s best restaurants and chefs; they will also enjoy chili-friendly beer pairings (ID required for entrance to the beer hall). t goes without saying that The New York Times has a priceless vault of photographs chronicling just about every era of modern American life. This year, they gave five fashion designers, Diane Von Furtenberg, Prabal Gurung, Zac Posen, Michelle Smith, and Vera Wang, unprecedented access to their archive. Each chose their favorite ten photographs to offer up for sale to the public. Through January, view a selection of the chosen photos on display throughout the Chelsea Market concourse. Green Holidays

I
n a holiday season that is consumed with commercialism, it’s easy to neglect environmental consciousness. For the third year in a row, Chelsea Market helped keep NYC focused on the environment with its unique holiday installation showcasing recycled, repurposed, and rethought materials. Conceived by Chelsea Market and curated by Tora Legendre Lopez and Lisa Lozano in partnership with Thomas Beale and John Wells, CM's 2011 holiday décor featured a collaboration of various NYC artists and Chelsea neighborhood locals. Installations such as "Floating Jerry Can" by Thomas Beale and charity: water, "Snowstorm of String" by Lisa Lozano, and wintery snowball pom-poms by Tora Legendre raised awareness among market-goers. Chelsea Market even switched traditional twinkle lights for LED ones in its recognizable clock archway display. Chelsea Market thanks the artists and volunteers who worked to create the display.

Green Gumbo
"I served this delicious Green Gumbo at my tree trimming party this year. It’s delicious and great for a crowd.” ~ Mary Cleaver
½ Cup Duck fat or vegetable oil ½ Cup Flour 2 Medium onions, chopped ½ bunch Celery 2 Green bell peppers 1 T. Garlic, minced 1 cup Scallions, chopped (plus ½ cup for garnish) 1 T mixed ground pepper (white, cayenne, Aleppo) 2 Medium turnips, diced 8 cups: 3 or more of the following winter greens, chopped: Turnip, mustard, collard, spinach, kale, chard 2 T Fresh thyme leaves 2 quarts Vegetable or Chicken or broth 2 T. Worcestershire sauce 1 Bouquet garni (parsley stems, bay leaf & thyme) To taste Salt, pepper & hot sauce 4 T Chopped Italian parsley Optional: 12 – 24 Oysters cornmeal for dredging oysters 2 – 3 cups Vegetable oil 1. In a heavy-bottomed pot, heat 8 T. oil and whisk in the flour. Whisk over med/high heat until the roux is the color of peanut butter. 2. Add the onion, bell pepper, celery, turnips, scallions and garlic. Stir to coat with the roux. Cover and sweat over medium low heat for 5 minutes or until beginning to soften. 3. Add the greens, stir and cook for about 10 minutes or until wilted. Add the thyme. Stir in the vegetable broth, 2 cups at a time, bringing the mixture to a boil after each addition. Whisk in the Worcestershire sauce. 4. Bring to a boil then reduce the heat to a simmer. Add the bouquet garni and simmer gently for about an hour. Cool and refrigerate. Reheat gently when ready to serve. 5. If you are serving oysters with the gumbo heat the oil, dust the oysters in cornmeal and quickly hot fry on both sides until crispy. Drain. Plate the gumbo and place an oyster or 2 on top. Garnish with chopped parsley and scallions.
