JALISCO: The Magic Behind Tequila Guadalajara, Jalisco´s capital, is one of the biggest and most modern cities in México; nonetheless, it still preserves its richness of culture that has been established for ages. The Millenary ‘Occident’s Pearl’.

Mexico is a country rich in culture, due to the magical towns and cities that form the cultural heritage of the nation. One of the most relevant states is Jalisco; the state is located in the Western area of the Mexican Republic and it has given a lot to México’s cultural heritage in aspects such as: politics, history and economics; which leads Jalisco to be ranked as the third most important state in Mexico.

Jalisco contributes with 6.3% of the national Grass Domestic Product (GDP)1 and, the manufacturing industry and the food and beverage industry. Jalisco is known for being the state with more traditions [in Mexico].

The tangible cultural patrimony includes: monuments such as Tequila which is a land of Agave fields and the typical beverage; furthermore, Cocula, Magdalena, Tequila and Teuchitlán have been named as World Heritage by UNESCO.

Jalisco is one of the more important cities for the foreign investment in the nation, is among the largest economies in México; is also located in fifth place amongst the best cities for the future and second place in North America’s economic potential. Jalisco is known for being the state with more traditions2, adding this to an endless list of things to appreciate from the Mexican state.

equila is Jalisco´s most productive

and important town. 3 The town of Tequila was founded in 1530. It is now, a UNESCO world heritage site and the Mexican government has added the town to its list of Pueblo Mágico program. These ‘Magical Villages’ must retain natural beauty, cultural riches, or historical relevance endemic to Mexico. The name is often related with Mexico´s famous fermented beverage called Tequila. The beverage took its name from the town where is produced. The Aztecs started producing Pulque, another kind of beverage, by fermenting the pulp of Agave. They created Tequila by giving Pulque a second distillation. The fields of the town were soon full of hectares of Agave plants. The first Tequila factory was established in 1600 by the Spanish Pedro Sánchez de Tagle, who perfected the process of Tequila. Many other factories emerged right after, leading the industries to create new flavors as a competition strategy. Nowadays there are around 700 different brands of Tequila and five types which are: Tequila Blanco, Reposado, Joven Abocado, Añejo and Extra Añejo. Here, in Jalisco, every visitor can take away a piece of Mexico, for example by tasting tequila, which has become a national drink and an icon that identifies us as Mexicans in any part of the world.

The town of Tequila has a square in its center; large and small distilleries, museums, small hotels and restaurants are placed around it. All visitors can enjoy distillery tours of some of Mexico's largest producers such as Mundo José Cuervo the most popular worldwide or smaller boutiques. There are also important festivities, one of them is “The Tequila’s Cultural Festival” is held in March. It's a three-day festivity with concerts, fireworks, galas, and of course tequila! Another one is “The Tequila’s National Fair”, which is held the last weekend of November and the festivities include cultural activities, handicrafts, music, and tequila tasting. The popularity of the drink and the history behind it has made town and the area surrounding it a World Heritage Site.


VISIT MEXICO HISTORY OF TEQUILA Tequila is liquor that is produced in a small region of western Mexico, by distilling the fermented product obtained from the heart of a plant known as blue agave burned. In this heart like a giant pineapple, is also called "mezcal". History or legend ... no one knows for sure, but in the land of Tequila that several centuries ago, Indians of Jalisco had to seek refuge in a cave as a result of a storm that fell onto agaves. Some rays fell into the heart of these plants by burning, which caused by the cooking of starches, they became a form of honey. When the storm ceased, the wind carried to the inhabitants of that place a nice aroma. One of them took a piece of burnt agave and it felt sweet try offering it to others, thus discovering the usefulness of the plant. An indigenous forgot juice for several days and come back to his hut; he discovered a new scent that enveloped the room. Then he noted that the juice out small bubbles forming a thick white foam. When tasting, has found a rich and distinct flavor. Then he separated the liquid foam for consumption. Among the Indians, the tequila was consumed only by hierarchs and priests in religious festivities and events. Actually tequila as we know it today is due to the distillation process introduced by the Spanish arrival. They decided to distill the original drink to purify it and

get something stronger, leading to so-called mezcal wine or brandy. The Spaniards encouraged the production of agave and laid the foundation for the development of the characteristic product of the area. In 1758 the mayor of New Galicia gave the first grant to manufacture distilled JosĂŠ Antonio Cuervo. Factory tequila and mezcal wine “Perseverance" would be the first to produce for export shipments in 1888. This ranch has been home to three generations of Sauzas: Don Cenobio, Eladio and Francisco Javier. The tequila industry continued to grow until the twentieth century when improved production techniques. The fields for Tequilana Weber Agave Azul increase variety and more accessible tequilas are produced to suit all tastes and palates making this drink even more popular nationally and internationally. From 1973 until 1982, steps were taken to acquire the tequila called appellation of origin for five states of the Mexican Republic. To be called tequila, the drink must be made in Mexico, in the Tequila region and contain at least 51% agave, but the purest tequilas contain 100% agave. Today is perhaps the best known and representative of that country in the world drink.

MARIACHI: The legacy of the Men with hats. Mariachi began as a regional folk style called “Son Jaliscience” in the centre west of Mexico originally played only with string instruments and musicians dressed in the white pants and shirts of peasant farmers.

Jalisco is a place full of musical expressions. The oldest of those expressions come from the Spanish rule but its legacy does not stop in the past, its legacy will go on and on until the ‘Cielito Lindo’ is no longer played, until the last of the Mexican citizens gives his last breath to the National Anthem . Mariachis are typical from Jalisco, it is a group formed by seven to twelve members that perform with instruments such as: guitars, violins and trumpets. They emerged in the XVIII; at the beginning, mariachis used to dress with cotton regular clothes but nowadays they dress with Charro suits. They usually perform rancheras, sones jarochos and corrido songs.

The most representative authors of mariachi songs are: José Alfredo Jiménez y Juan Gabriel. In 2011, Mariachis were included in the list of UNESCO of intangible Cultural Patrimony of humanity.4

Mariachi legacy will go on and on until the ‘Cielito Lindo’ is no longer played.

Mariachis have become a special symbol that identifies and represents Mexican culture all around the World.

In September a festival is organized called “The National Encounter of Mariachi and Charrería” that attracts different mariachis from around the world. There are a series of performances during the festival and an opening parade.

The bread is not baked anywhere else in the world, because of the altitude, temperature, humidity and weather of Jalisco.

Jalisco’s food also represents most of the Mexican cuisine. For its delicious ‘Torta ahogada’, following the awesome ‘Pozole estilo Jalisco’ and last but not least the spicy but very addictive ‘Birria’ Jalisco’s cuisine is legendary all around the world.

‘Tortas Ahogadas’ were firstly originated in Jalisco, also known as ‘La Perla Tapatía’; now, they are well-known all over the country and some other parts of the world.

The legendary tradition of Jalisco's gastronomy lays on the fusion of indigenous past and the European conquerors.

Jalisco owns the Guinness Record for the world’s biggest ‘Torta Ahogada’ ever.5

The traditional cuisine has its origin in ancient times, which is now cooked by housewives who have a lot of antique recipes that are full of secrets which give the unique and special flavour to the food. One of the most representative and emblematic dishes of this state are ‘Tortas Ahogadas’, which are prepared with a salty bread called ‘birote’, filled with pork meat called ‘carnitas’ and dipped with a ‘chile de árbol’ sauce, lemon and onion.
