Chef Jose Castaneda adds, ”We enjoy working with our local purveyors when looking for the ingredients to include Louisiana Soft Shell crabs, oysters, and shrimp, as well as fresh seasonal produce such as Louisiana strawberries in spring and beets and greens in winter.”
