Making the perfect sweet tea Everyone knows sweetened iced tea is the nectar of the south, delivered straight from the Gods themselves. But how do you make this refreshing concoction that is as much of a staple on a dinner table as the napkins, plates and silverware themselves? To make a perfect one-gallon pitcher of sweet tea, try using four family sized tea bags or 12 individual tea bags, (from a traditional brand like Lipton or Luzianne or Tetley’s). In a saucepan, bring about four cups of water (or enough to cover

the bags) to a boil. Let steep for five minutes (or more for stronger flavor). Add anywhere from half a cup up to one cup of sugar and stir until the sugar is dissolved. Pour

into a one-gallon pitcher and fill with water until full. Some folks like to fill the pitcher about halfway to 3/4 of the way and add ice to fill the remaining part of the pitcher. For people that find tea a little bitter, add about 1/8 teaspoon of baking soda eliminate any bitter taste.

Other things to add after brewing are lemons, ice of course, sometimes mint, or even simple syrup. For stronger tea, add a tea bag or steep longer. To adjust the sweetness, add sugar for more and subtract for less. Enjoy!

called the most important meal of the day. Ask many of the locals in Jackson County and they’ll agree this highest priority of nourishment is best delivered at The Coffee Shop. And who can argue with that? This diner has been serving meals since 1926. The Coffee Shop serves countless cups of its namesake each day, while also offering a full menu of breakfast, lunch and supper favorites, all in a traditionally southern/ homestyle way of cook-

ing. Even the overall atmosphere is nostalgically homespun and family friendly. The main entrees aren’t the only all-stars here, as their homemade pies are often referred to as among the best you’ve ever had. Owners since 1985, Phyllis and Gary Gibson always keep a friendly and courteous staff on board to deliver the best of service to this community that has supported them for 90 years. A ‘Sunny’ historic end to any meal egg yolks, lemon juice, lemon and half cup of sugar in a For years, patrons of the rind, rounded bottom enamel bowl. High Hampton Inn’s buffet have raved about a pie that has become a staple at this historic Cashiers, N.C.-based Country Club. This historic and decadent dish was Mrs. E. L. McKee’s favorite dessert. The wife of the inn’s creator had a taste bud that has stood the test of time, as the dish can still be enjoyed at High Hampton today. Below is the recipe.

Sunny Silver Pie Recipe

Ingredients: 1/3 cup cold water Grated rind of 1 lemon ½ tablespoon of gelatin 1 cup sugar 4 eggs Pinch of salt 3 tablespoons lemon juice 1 cup whipping cream Method: Set gelatin to soak in 1/3 cup cold water. Place the 4

Set bowl in a larger pan of boiling water. Keep boiling. Whip the egg mixture until it becomes quite firm and creamy. When it reaches this stage, turn the heat down and fold in the gelatin. Turn off stove. Beat the egg whites very stiff and combine with remaining ½ cup sugar. Then fold this into the yolk mixture. Pour the filing into a baked pie shell and set in the refrigerator for 2 hours. Whip cream until stiff and spread over the top of the pie just before serving. Craft breweries expanding in Sylva

The growth of

the craft brew industry reached Sylva a long time ago, but who knew that 12 years later, this small community would be home to three breweries, with more in the works? On April 24, 2004, Heinzelmannchen Brewery became Sylva’s first brewery and they’ve been satisfying thirsty customers ever since. Owned and operated by German-born brew master Dieter Kuhn & his wife Sheryl Rudd, these beers are light, refreshing German-

inspired brews with fresh hops, wholesome grains, & no preservatives. They keep between 5-10 taps of their five year-round brews and special seasonals. In 2015, they renovated the interior of the brewery, adding a new bar from the old Mad Batter location in Cullowhee, along with handmade tables. Pints are available, along with German two-liter growlers, and kegs. Fresh soft pretzels are also served with locally made mustard. In Oct. of 2013, Chip Owen and his wife Nicole Dexter opened Sylva’s Continued on Page 12

second brewery, Innovation Brewing. Innovation has become a hot spot in town, located right along Scotts Creek. This brewery has 27 taps pouring nine mainstay beers and occasionally up to 12 seasonal creations. In 2015, the one barrel brewery went from 12 two-barrel plastic fermenters to becoming a 27 serving tank, seven barrel fermenter brew house. The business also added a solar powered electrical system in 2015, cutting the brewery’s electrical

costs in half. There is a food truck for dining purposes on the premises at Innovation. To cap off an incredible year for beer in Sylva, the long-awaited Sneak E Squirrel Brewery and Tap House opened last summer. Located between Sylva and Dillsboro, this brewery has 10 beers on tap, nine mainstays and one rotating seasonal. There is a restaurant on site and growlers, pints and kegs are available. Cheers!
