The U.S. has the highest number of prisoners in the world.

In the U.S. 38.3% of prison inmates are Black (Federal Bureau of Prisons 2022).
Previosely incarcerated indeviduals are not set up to suceed in the U.S.
There is a strong stigma around people who have been to prison.
This makes starting a career after prison near imposible.
28% of people in Buffalo are obese and 40% are overweight.
Limited access to cars constrains residents of the surounding neighborhoods access to fresh healthy food
In the U.S. “non-Hispanic Black adults (49.6%) had the highest age-adjusted prevalence of obesity (CDC, Adult obesity facts 2021)”
The Buffalo Test Kitchen will be a culinary school that teaches previously incarcerated individuals how to cook. This will give them valuable skills for their future as full members of society. The food produced by the culinary students will be served to members of the local community serving them with the healthy nutritional food they need.
