W

e’re pushy here at Richmond magazine, and over the years we’ve managed to persuade most of the best chefs in the city to contribute recipes for publication. As our collection has grown, we realized that not everyone has easy access to our archives like we do at our offices, and it was time to share our wealth with our readers. It also reminded us of places that we loved that are no longer here — Carytown’s Limani and its amazing fish, Six Burner’s creative but casual cuisine, and both the tantalizing aroma of Sammy’s Bakery and the warm and welcoming presence of the late Jamie Dickerson of Jazzbo’s Rollin’ Gumbo on North Side’s MacArthur Avenue. We have a liking for easy recipes, judging from the ones that we’ve published, and we lean toward the Middle-Eastern side of ethnic cuisine. We really, really love soup, but managed to pare this collection down to just two and a recipe for chili. We aren’t afraid of challenge, like the recipes for Christmas bacon and the crown rack of lamb, but not even these dishes are too taxing. Our spectacular duck confit on the cover? It’s just four ingredients (and the confit itself can be purchased ahead of time), plus stock and olive oil. It was almost impossible to settle on just 20 of our favorites, but we persevered, and in the following pages you’ll find some of our best recipes that we hope will help you through the holidays and beyond. —Brandon Fox

Ingredients: 8 cups of pumpkin (canned is fine) or roasted acorn squash, pulsed in a food processor 4 ribs of celery, diced fine 2 large onions, diced fine 2 tablespoons of garlic, chopped 2 boxes of Arborio rice, 1-kilo size 1 stick (1/4 pound) of butter 1 tablespoon of salt 1 teaspoon of white pepper 15 cups of chicken stock 1 tablespoon of Parmesan, finely grated

Directions: Sauté the onion, celery and garlic in the butter until soft; then add the pumpkin. Sauté the pumpkin until tender, then add the rice, 2 cups of the stock, salt and pepper, and stir to combine thoroughly. Reduce the heat to a simmer. As the rice absorbs the stock, add more stock, 2 cups at a time, stirring constantly as it is absorbed, until all of the stock is used. Sprinkle the Parmesan over top. Serve immediately. Serves 24.

Patrón Espresso Martini By Jason Tesauro August 2008 Richmond magazine contributor Jason Tesauro, co-author, along with Phineas Mollod, of The Modern Gentleman, now in its second edition, was our wine, beer and cocktail columnist. Now a freelancer, he has been Barboursville Vineyards’ chief sommelier since 2002. Ingredients: 2 ounces of Patrón XO Café 3 ounces of Bailey’s Irish Cream (or half-and-half ) Cocoa Whole coffee beans

Directions: Shake the liqueurs together with ice and strain into a cocktail glass. Dust with cocoa and garnish with whole coffee beans. Serves one.

Christmas Bacon By Walter Bundy (Lemaire) December 2007 Walter Bundy is executive chef at Lemaire, located at The Jefferson Hotel. Lemaire won the 2013 Elby for Best Fine Dining Restaurant. Ingredients: 7 to 8 pounds of fresh pork belly (available at Belmont Butchery or Tan-A Supermarket) 2 teaspoons of pink peppercorns 3 cinnamon sticks 1 teaspoon of paprika 1 teaspoon of whole cloves 1/2 teaspoon of ground allspice 1/4 teaspoon of ground nutmeg 1 pod of star anise 2 teaspoons of red pepper flakes 8 cloves of garlic, chopped 1/4 bunch of fresh marjoram, chopped 1/4 bunch of fresh thyme, chopped 4 cups of kosher salt 8 cups of brown sugar Directions: To make the curing mix, toast the pink peppercorns, cinnamon, paprika, cloves, allspice, nutmeg, star anise and red pepper flakes in a dry sauté pan over medium heat. Allow them to cool and then grind them in a spice mill. Combine with the rest of the ingredients. Place a thin layer of the curing mix, about 1/2 to 1 inch thick, on the bottom of a large container. Place the pork belly on top and coat it with the rest of the curing mix. Cover the container tightly with plastic wrap, and refrigerate for five days. Pull it out and flip the pork belly over, making sure that you reapply some of the curing mix from the bottom of the container on top of the pork belly. After another five days, pull the pork belly out of the refrigerator and rinse it with cold water. Pat dry and place it back in the refrigerator on a wire rack set over a baking sheet and let the pork belly air dry for a couple of days. Soak 1 cup of wood chips in water for an hour or two. Prepare a smoker or, if you don’t have one, a charcoal grill for indirect heat, and smoke the pork belly for 5 to 7 minutes. Allow it to cool and slice it into strips. Wrap tightly and place it in the fridge until you’re ready to fry your bacon on Christmas morning. Serves TK.

CranberryWalnut Bread

By Gerald Fortin (Lucille’s Bakery) December 2011

Pastry chef Gerald Fortin owns Lucille’s Bakery on Meadow Street, near West Broad.

Ingredients: 2 cups of cake flour 1 cup of bread flour 3 1/2 teaspoons of baking powder 1 teaspoon of salt 2 cups of powdered sugar 1 1/2 cups of dried cranberries 1 cup of English walnut pieces 1 cup of vanilla yogurt (or substitute another flavor, such as orange or apricot) 6 whole eggs 1 cup of canola oil 1 tablespoon of orange extract 3 to 4 drops of yellow or orange food coloring (optional) 3 aluminum pans, 8 by 4 inches Zest from 1 orange Directions: Preheat the oven to 350 degrees. Mix the dry ingredients and wet ingredients separately, then fold the wet ingredients into the dry mix until the batter is smooth. Coat the aluminum pans with nonstick spray, and fill them each half full with the batter. Bake the loaves until they are brown on top and a cake tester comes out clean, about 30 to 40 minutes. After 3 to 4 minutes, remove the loaves from the pans and allow them to cool to room temperature. To store the bread, wrap it in plastic and refrigerate or freeze until needed. (Note: The bread cuts well when it is still frozen.)

Apple Onion Soup

By Andy Howell (Café Rustica) September 2010 Andy Howell is a serial restaurateur: He began at Zeus Gallery, then opened Avenue 805. After the sale of that venture, he opened Café Rustica and contributed this recipe. He’s now chef and owner of Camden’s Dogtown Market.

Ingredients: 2 tablespoons of butter 2 large yellow onions, sliced 6 fresh, local apples (preferably a variety with snap, such as Granny Smith or Stayman), peeled, cored and diced 6 cups of hearty, good-quality beef stock 2 bay leaves Salt and pepper to taste

Smoked Bison Brisket Chili By J Frank (Positive Vibe Café) October 2008

Directions: Melt the butter in a 6-quart stockpot over medium heat, and add the onions. Sauté for 5 minutes until they’re translucent. Add the apples and stir for another 5 minutes. Add the beef stock and bay leaves, then bring the mixture to a boil and leave it to simmer for 20 minutes. Preheat the oven to 350 degrees. In a medium bowl, sprinkle the bread cubes with salt and toss them with the melted butter. Spread them in one layer on a baking sheet and place in the oven. Toss occasionally until the croutons are golden, about 10 minutes. Preheat the broiler. Remove the bay leaves and let the soup cool until it’s easier to handle. At this point, you can choose your own consistency. For a chunkier potage, use a stick/hand blender and pulse until you’re happy. For a velvety finish, run it through a standard blender. Reheat the soup, and add salt and pepper to taste when you’re ready to serve. You can either serve it in individual ovenproof bowls or in one large ovenproof bowl. Either way, just before it hits the table, top the soup with croutons and cheese and place under the broiler until the cheese is melted. Carefully remove. Serves 6.

Chef J Frank is a big supporter of Positive Vibe Café, which trains the disabled for work in the food industry. He developed this recipe for their menu and is currently frying up doughnuts in the shop he co-owns with Betsy Harrell Thomas, Dixie Donuts. Ingredients: 4 tablespoons of peanut oil 2 1/2 to 3 pounds of smoked bison brisket (beef can be substituted), cut into 1/2inch cubes and trimmed of excess fat 4 large yellow onions, diced 2 medium green peppers, diced 2 tablespoons of minced garlic 1 1/2 cups of beef broth 1 1/2 cups of beer 1 28-ounce can of diced tomatoes, with juice 3 tablespoons of chili powder 3 tablespoons of ground cumin 1 1/2 tablespoons of oregano 1 teaspoon of cinnamon 1/4 cup of red-wine vinegar 1 1/2 to 2 tablespoons of finely diced jalapeños 2 cups of pinto or kidney beans Salt, to taste Optional garnishes: sour cream, cilantro, shredded cheese, diced peppers, onions, jalapeños or limes

Directions: Heat the oil in a large pot until very hot. Add the onions and peppers and cook for 6 to 7 minutes; add the garlic and cook for another 2 minutes. Next, add the chili powder, cumin, oregano and cinnamon and continue to cook for 2 more minutes. Add the cubed brisket, mix well, and then stir in the broth, beer and tomatoes. Simmer for about 3 minutes; add the vinegar, jalapeños and beans. Stir well and cook for approximately an hour or until the chili thickens. Season with salt to taste. Serves 10 to 12.

Lentil Curry Soup with Braised Beef (Haleem) By Christine Wansleben (Mise en Place Cooking School) January 2010 Christine Wansleben is the chef and owner of cooking school Mise En Place in Shockoe Slip.

Ingredients: 2 pounds of beef short ribs (bone-in) 2 cups of ghee (clarified butter, available in specialty stores like Ellwood Thompson’s Local Market) 1 medium onion, sliced thin 1 cup of barley 1/2 cup of chana dal (also called split yellow gram and can be found at Tan-A Supermarket) 1/2 to 1 packet of haleem masala spice mix (a mix of red chili, turmeric, curry leaf and other Indian spices that also can be found at Tan-A Supermarket) Fresh ginger, peeled and finely julienned Cilantro, leaves only Directions: Soak the barley and chana dal in water to cover for two hours. Heat 1/2 cup of ghee in a large saucepan, add the short ribs and sear on all sides. Add the spice mixture and stir until the meat is well coated. Add three quarts of water to the pan and stir. Add the barley and chana dal to the pan. Cover and cook on low for four to six hours or until the meat is soft and tender. Stir occasionally. Remove the pan from the heat and separate the meat and bones from the soup. Discard the bones, shred the meat and set it aside. Strain the grains from the soup and pulse them in a blender, but do not overblend. Add the grains to the broth left in the pan and stir to combine. Heat the remaining ghee in a large sauté pan. Add the onions and fry until golden. Strain. Ladle the soup into bowls and top with shredded meat, fried onions, ginger and cilantro. Serves 4.

Khada Chicken Masala By Anokha Cuisine of India October 2009 Jaswinder Singh, co-owner with Charanjeet Ghotra of Anokha Cuisine of India in Short Pump, shared this recipe with us. Singh and Ghotra own two other restaurants, both named Milan Indian Cuisine, in Lynchburg and Charlottesville. Ingredients: 3 rounded tablespoons of cashew nuts or pieces 1 1/2 pounds of bone-in chicken breasts 1 tablespoon of garlic, minced 1 tablespoon of ginger, grated 1 tablespoon of ground cumin 1 teaspoon of ground fennel seeds 1/2 teaspoon of chili powder 1 fresh green chili, seeded and roughly chopped 2 tablespoons of olive oil 1 large egg 1 teaspoon of salt or to taste Directions: Pulse the cashews in a food processor until coarsely chopped. Add all of the remaining ingredients (except the chicken) and blend until smooth. Transfer the mixture to a large bowl, add the chicken, then cover and marinate in a

Sautéed Mussels in Miso-Sherry Broth By Chris Farnwalt (Havana ’59) April 2009 Chris Farnwalt headed up the kitchen at the Cuban-inspired eatery in Shockoe Bottom, Havana ’59, when he contributed this recipe. He’s now the chef at Church Hill’s Patrick Henry Grill.

refrigerator for 1 to 2 hours or overnight. Preheat the oven to 400 degrees. Line a baking sheet with foil and brush it with olive oil. Broil the chicken breasts for 10 to 15 minutes. Serve with chutney or raita, cucumber slices and raw onion rings. Serves 2.

Directions: In a sauté pan, heat the peanut oil on high until it shimmers. Add the garlic and ginger, cooking quickly until they’re fragrant but not burned, and add the sherry to deglaze the pan. Add the soy sauce and the lemon juice. Place the mussels in the pan with the carrot and pour the water around them. Gently add the tofu. Continue cooking over high heat until the mussels pop open. Remove the mussels and the tofu from the pan and place them in a bowl. Add the miso paste to the remaining liquid, and stir. Whisk in the butter to create a sauce, and pour over the mussels. Garnish with wasabi peas. Serves one as an entrée or 2 as an appetizer.

Ingredients: 1 tablespoon of peanut oil 1 teaspoon of minced garlic 1 teaspoon of grated ginger 1/4 cup of sherry 1 tablespoon of light soy sauce 3 tablespoons of freshly squeezed lemon juice 14 to 16 black Prince Edward Island mussels 1 tablespoon of finely diced carrot 1 1/2 cups of water 2 tablespoons of medium-firm tofu, finely diced and sautéed in butter 1 1/2 teaspoons of white miso paste 1 tablespoon of cold, unsalted butter 1/8 cup of wasabi peas

Grilled Salmon, “Limani Style”

Matthew Tlusty (Limani) July 2005 Matthew Tlusty owned the well-loved Limani Fish Grill in Carytown. He’s now executive chef at Hilton Garden Inn Richmond Downtown/Miller & Rhoads.

Ingredients: 2 pounds of wild salmon, cut into four portions 2 bulbs of fennel, sliced thin 1 Texas Sweet or Vidalia onion, sliced thin 1 cup of olive oil 2 teaspoons of sea salt (or 1 teaspoon of table or kosher salt) 2 ears of sweet corn, removed from the cob Fresh dill, oregano or basil — one small bunch of whichever herbs you fancy, left whole Directions: One hour before cooking, place everything except the fish into a large bowl and toss. Then put the fish on a deep platter and top it with the mixture. Let it sit for an hour in the refrigerator. Start your grill a good half-hour before cooking, letting it get really hot for about 10 minutes, then turn it down to medium and allow the temperature to adjust for 20 minutes. (If the temperature of your grill is about 350 degrees, you should be OK.) Now you’re ready to cook. Remove the salmon from the mixture, making sure it’s covered well by the oil. Place the fish on the grill and don’t touch it for at least 5 minutes; if it’s starting to burn, your grill is too hot. Remove the vegetables from the oil, place them on the grill, and close the lid. After the first 5 minutes, turn, don’t flip, the salmon. Cook with the lid down for another 5 minutes. Now flip. Once you flip it, the fish should be about halfway cooked. When is it done? Until you get a good feel for it, don’t be afraid to pierce your salmon with a knife to check that it’s not raw. Every 3 or 4 minutes, mix up your vegetables. Once the fish is cooked, place it on a clean platter and top with the cooked vegetables. (They’re done when soft to the touch.) Serves 4.

Crown Rack of Lamb with Vegetable Frittata By Paolo Randazzo (Sensi Restaurant) December 2009 Co-owner and chef Paola Randazzo closed Sensi last year. He, along with wife Rhonda, own Goochland’s Portico Restaurant & Bar, located in the old Edible Garden space out River Road. Ingredients: 6 12-ounce racks of lamb 1/3 cup of fresh rosemary, chopped Several sprigs of fresh thyme, to taste 1 package of frozen artichokes 4 shallots, thinly sliced 1/4 cup of olive oil, plus 1 tablespoon

6 slices of prosciutto or cured bacon (optional) 3 cups of cooked, diced Idaho potatoes 3 whole eggs, beaten 1/2 cup of plain breadcrumbs Coarse salt and ground pepper to taste Kitchen twine

Directions: For the lamb racks: Rub the lamb with the rosemary, and salt and pepper to taste. Heat a large sauté pan on the stove until it’s very hot. Add 1 tablespoon of the olive oil and when it’s hot, sear the lamb racks one by one on both sides until a nice golden crust appears. Remove and allow to rest. For the frittata: Place the shallots and prosciutto in a sauté pan with 2 tablespoons of the olive oil, along with the artichokes and diced potatoes. Allow the vegetables to sear, stirring occasionally, until tender. Season with salt and pepper and set aside. In a medium bowl, stir together the eggs, thyme and breadcrumbs. Fold in the vegetables. To assemble: Preheat the oven to 450 degrees. With a knife, cut the lamb racks about 1 inch from the top between each bone. Using kitchen twine, tie the racks upright so that both ends meet, bones facing upward. Place the racks in a roasting pan and fill the center of the racks with the egg and vegetable mixture. Drizzle 2 tablespoons of olive oil over the racks and sprinkle with salt and pepper to taste.

Roast for about 20 minutes for medium rare. After roasting, cut the twine, remove to a platter and allow to rest for 10 minutes. The racks can be prepared the day before and refrigerated, then brought to room temperature and roasted for 30 minutes before serving. A good, simple sauce to serve on the side is made from 1 part aged balsamic vinegar to 3 parts olive oil and seasoned with fresh chopped rosemary, thyme, a pinch of brown sugar and salt and pepper. Serves 6.

Ingredients: 3 tablespoons of olive oil 2 to 3 pounds of onions, sliced (always caramelize more than you think you’ll actually need) 1/2 teaspoon of fresh thyme and/or rosemary, chopped Salt and pepper to taste 1/2 cup to 1 cup of Gorgonzola cheese, crumbled 2 to 3 Roma tomatoes, slivered (halve them, remove the seeds and slice them lengthwise) 1/2 cup of Asiago cheese, finely grated

Directions: Heat the olive oil in a large skillet with high, straight sides and add the onions. Cover the pan and cook until the onions are translucent (15 minutes or so), stirring occasionally. Uncover the pan and turn up the heat to medium-high. Stirring frequently, cook the onions for another 20 to 30 minutes until they are deep brown. Add the herbs, salt and pepper. Remove from the heat, place in a blender

and purée the onions. Preheat the oven to 500 degrees and prepare your favorite pizza-dough recipe. Flatten the dough and place it on a pizza peel generously sprinkled with cornmeal. Smear a thick layer of the onions on the dough. Top with Gorgonzola, arrange the slivers of Roma tomatoes, and sprinkle with the grated Asiago and parsley. Slide the pizza into the oven. Set the timer for 10 minutes and start watching. It may be done at the 10-minute mark, or it may take up to another 5 minutes. Remove it from the oven when the crust is golden brown, and let it cool on a rack for 5 minutes. Makes 1 medium pizza.

Jazzbo’s Chicken and Sausage Jambalaya Jamie Dickerson (Jazzbo’s Rollin’ Gumbo) May 2010 Jamie Dickerson opened his Cajun food truck, Jazzbo’s Rollin’ Gumbo, in 2007, in the Once Upon a Vine parking lot on North Side. He died last year, after losing a battle with liver cancer. Ingredients: 1 pound of cooked andouille sausage, sliced 1 pound of boneless chicken, cut into 1-inch pieces Enough canola oil to cover the bottom of the pan 1 cup of onion, chopped 1 cup of celery, chopped 1 cup of green peppers, chopped 1 cup of parsley, chopped 1/4 cup of garlic, chopped 2 cups of uncooked rice 2 cups of canned plum tomatoes Directions: 2 cups of chicken stock Cover the bottom of a Dutch oven with canola oil. Sauté the onion, celery 1 tablespoon of blackening spice and green peppers until they’re soft. Add the chicken, parsley and garlic, 3 bay leaves and cook the mixture until the chicken is done, about 10 to 15 minutes. Then Worcestershire sauce to taste add the sausage, rice, tomatoes, chicken stock, blackening spice, bay leaves, Hot sauce to taste Worcestershire sauce and hot sauce to taste, plus salt and pepper to taste. Salt and pepper to taste Simmer until the rice is done, about 15 to 20 minutes. Serve with chopped 1 cup of scallions, chopped scallions sprinkled on top. Feeds 6 to 8.

Chef Ken Liew has been cooking up his innovative Asian cuisine since Wild Ginger opened in 2009.

Ingredients: 9 jumbo shrimp, peeled, deveined and the tails left on 1 cup of tempura flour 3/4 to 1 cup of water 1/2 gallon to 1 gallon of peanut oil, depending on size of fryer or pot For breading mix: 2 leaves from the top of a stalk of lemongrass, finely chopped 1 small Thai chili pepper, finely chopped 1/2 cup of whole oats (not instant oatmeal) 1 teaspoon of brown sugar Pinch of salt Pinch of powdered instant chicken bouillon 1 teaspoon of powdered milk Note: A deep fryer or thermometer is necessary for the preparation of this dish, as temperature is crucial for this kind of frying. If the oil is too hot, the breading burns before the shrimp is cooked; if it’s not hot enough, the batter absorbs the oil. Directions: Preheat the oil to 350 degrees. Mix breading mix ingredients together and spread out on a plate. In a small bowl, whisk together the tempura flour and water (using just enough to make a thin mixture). Dredge the shrimp in the tempura mixture until well coated. Then dredge the shrimp in the breading mix. Deep-fry the shrimp for 3 to 4 minutes until they’re cooked and the coating is crispy. Serves 2.

Apple-Cranberry Pork Tenderloin By Andrew and Valentina Wisniewski (Tastebuds American Bistro) May 2006 Andrew and Valentina Wisniewski’s Tastebuds American Bistro, a North Side favorite, started as a catering business, evolved into a takeout dinner shop and then transformed into a full-scale restaurant in 2008.

Ingredients: 1 block of extra-firm tofu 1/4 cup of olive oil (use more, if needed) 2 tablespoons of soy sauce (or more, to taste) 6 cloves of garlic, minced 3/4 teaspoon (or more, to taste) of each: cumin, curry, cayenne, ginger, salt, pepper and oregano 1/2 avocado, cubed 1/2 yellow bell pepper, diced 1/2 tomato, diced 1 tablespoon of herbed goat cheese 1 5-ounce bag (or bunch) of spinach, arugula or other leafy greens Dressing of your choice Directions: Drain the tofu, using paper towels to blot and soak up as much moisture as possible. This is perhaps the most important step, because the tofu becomes like a sponge, soaking up all the other ingredients. Cut the tofu into 1/2-inch by 1/2-inch squares. Heat the olive oil over low heat in a large sauté pan and add the garlic and cumin, keeping the lid on until the oil is just beginning to bubble. Add the other spices and let it simmer on medium heat for about 10 minutes with the lid still on, stirring to make sure each side of the tofu gets cooked a bit. Turn up the heat slightly and add the soy sauce. Toss the tofu with all the ingredients for a few more minutes until it is lightly browned. Taste it and add more spices if necessary. Mix the avocado, tomato, yellow pepper, goat cheese and greens in a bowl and top with the tofu. Add your favorite dressing (I like to use a balsamic vinaigrette.) Serves 2 or 3.

Ingredients: 1 cup of white wine (preferably a Riesling) 1 1/2 cups of apple juice 2 tablespoons of cold butter, cubed 2 pork tenderloins (10 to 12 ounces each) 1 tablespoon of ground fennel seeds 1/2 teaspoon of salt 1/4 teaspoon of pepper 1/4 cup of dried cranberries Olive oil (just enough to coat the pan)

Directions: Preheat the oven to 375 degrees. Add the apple juice and the white wine to a small saucepan, reserving 1/2 cup. Simmer the remaining liquid until it’s reduced to 1/2 cup. Rinse the tenderloins, dry them with paper towels, and season with the fennel, salt and pepper. Using a heavy-bottomed sauté pan, add the olive oil and heat over medium-high heat. When it’s hot, sear the tenderloins lightly on all sides. Add the reserved liquid and place the pan in the oven. Roast the tenderloin until the internal temperature reaches 140 degrees. Remove the pork from the oven and place on a cutting board to rest. Put the pan back on the burner over low heat and add the wine-andapple-juice reduction. Using a whisk, add the cubes of butter. When incorporated, strain, add the dried cranberries and keep warm. Slice the tenderloin into 1/2-inch medallions, pour the sauce over them and serve. Serves 4 to 6.

Directions: Heat the olive oil in a medium sauté pan over medium-high heat. Salt and pepper both sides of each chicken breast. When the oil is hot, sear the chicken for about five minutes on both sides. Add the white wine to deglaze the pan, scrape up any browned bits, and add the garlic and tarragon. Reduce the heat to medium, and let the chicken simmer until the wine has reduced to about 1/2 cup, occasionally turning the chicken, about 20 to 30 minutes. Remove the chicken from the pan. Reduce heat to low. Add the butter to the wine-and-herb mixture and stir until incorporated. Ladle the sauce over chicken breasts and serve. Serves 2.

Pão de Ló (Portuguese Sponge Cake) By Sammy Marques (Sammy’s Bakery) March 2006 After 20 years as a contractor, Sammy Marques opened Sammy’s Bakery on North Side in 2006. It closed in 2008.

Ingredients: 9 large eggs 1 pinch of salt 1 1/2 cups of sugar 1 2/3 cups of allpurpose flour 1/4 teaspoon of baking powder Powdered sugar, to garnish

Directions: Preheat the oven to 350 degrees, with the rack set just below the center. In an electric mixer, beat the eggs on high with the salt until light and fluffy. Gradually beat in the sugar. Mix on medium for about 20 minutes until the mixture is very thick. Prepare a 10-inch tube pan, greasing it with butter and lining the bottom with parchment paper. Sift together flour and baking powder in a small bowl. Turn the mixer to its lowest speed and add the flour mixture to the eggs — one large, heaping spoonful at a time.

Blend well after each addition, and scrape the sides of the bowl frequently. Carefully pour the cake batter into the prepared pan. Bake for about 40 minutes, or until the cake springs back to a light touch. Let the cake cool in pan for 10 minutes, then remove and carefully peel off the parchment paper. Let it cool completely on the rack. Dust the cake with powdered sugar before serving.

Ingredients: 1 cup of walnuts 1/2 cup of powdered sugar 4 cups of vegetable oil 8 slices of thick white bread (Texas toast or challah works best) 6 eggs 6 tablespoons of half-and-half 1 tablespoon of vanilla extract 1/2 cup of sugar 1 teaspoon of cinnamon 1 stick of butter, plus 1 tablespoon 3/4 cup of light brown sugar, packed 1 cup of heavy cream 3 ounces of bourbon 1 teaspoon of cornstarch 1/4 to 1/2 cup of water Salt and pepper, to taste Sliced strawberries and sliced banana, to garnish Whipped cream

Directions: Boil the walnuts for 10 minutes. Drain, rinse and dry on a cookie sheet. After they’ve dried, toss thoroughly with the powdered sugar to coat. Bring the vegetable oil to 350 degrees over high heat, and carefully immerse the walnuts in the hot oil. Stirring continuously, cook until the sugar has caramelized (the bubbling will stop). Carefully drain the walnuts and lay them on a cookie sheet to cool; add salt and pepper to taste. Preheat the oven to 400 degrees. Whisk together the eggs, half-and-half, vanilla, sugar and cinnamon. Immerse the bread in the egg mixture until it’s saturated. Melt one tablespoon of the butter in a large sauté pan and fry the pieces of bread over medium heat until both sides are browned. Place the pan in the oven for about 8 minutes, until the egg is cooked thoroughly. In a small saucepan, add the stick of butter, brown sugar, heavy cream and bourbon. Whisk together as the butter melts. After the butter is completely melted, add the water and cornstarch to thicken the whiskey sauce. To serve, lay the French toast on a platter covered with sliced strawberries and banana slices. Sprinkle liberally with candied walnuts, drizzle with the whiskey sauce and top with whipped cream. Serves 4.

Ingredients: 20 chestnuts, shelled Duck confit (2 duck legs, salt-cured and poached gently over low heat in duck fat. Duck confit can be purchased already prepared at Belmont Butchery and other specialty stores.) 2 ripe, astringent Hachiya persimmons 1 teaspoon of ground cardamom 1/4 cup, plus 1 teaspoon of olive oil 3 tablespoons of butter 2 cups of chicken stock 1 tablespoon of sugar Fleur de sel (sea salt) and black pepper Directions: Preheat the oven to 350 degrees. If the chestnuts are in the shell, use a paring knife to cut an “X” into the round side while the flat side is on a table (use caution). Spread the chestnuts evenly on a baking sheet, and roast them for 15 to 20 minutes. Remove them from the oven and peel them while they’re still hot. Boil the shelled nuts for 10 minutes in enough lightly salted water to cover them. (If you buy cooked chestnuts, skip the roasting and boiling steps.) Remove the chestnuts from the water and place in a new pan with the chicken stock, butter and sugar. Heat them on medium-low for 3 to 4 minutes, to thicken and reduce the liquid to a glaze. Crisp the duck legs in a pan with 1 teaspoon of olive oil, on medium heat, then pick the meat off the bones, keeping it relatively intact. Add the duck meat to the pan of glazed chestnuts. (The duck confit may be left on the bone as well, if you wish.) Remove the skin and seeds from the persimmons and purée with ground cardamom and 1/4 cup of olive oil to make a smooth sauce that’s served at room temperature. Season to taste with fleur de sel and pepper. Spoon the persimmon sauce onto a plate and top with the chestnuts and duck confit. Serves 4.
