We eat these things--and more--fresh while in season and can or freeze the excess. However with all my cooking and canning skills I sorely lack in the making of jam and jelly department. But this summer my 80-year-old mother helped fix that. Prepare as directed on pectin package. In our case it was as follows: 6 cups juice, 8 cups sugar, 1 package pectin. Bring juice to boil. Add sugar, stirring constantly. Bring to rolling boil that you cannot stir down. While stirring, add pectin. Return to rolling boil and cook while stirring continuously for however many minutes are indicated by altitude for your area. (Our area in Oklahoma requires 2 minutes.) Turn off heat. Pour into clean jars. Let sit until jelled. When jars are cool place lids on jars. (Ed. note: This, too, should be placed in a hot water bath for 5-10 minutes.) Hints: 1. To keep jelly from foaming, add 1 teaspoon margarine to juice at the beginning of the process. This really works and there is no taste of margarine or greasy film!

We made 21 pints of beautiful ruby red plum jelly that day before Momma got tired. We still have about a dozen more to make, but the juice is in the fridge, and it will keep for a few days. Four Day Pickles Cucumbers, (about 7 pounds) 1/2 cup canning salt 8 cups sugar, divided 6 cups vinegar, divided 3/4 teaspoon turmeric 2 teaspoons celery seed 2 teaspoons whole mixed pickling spice 8--1-inch pieces stick cinnamon 1/2 teaspoon fennel (if desired) 2 teaspoons vanilla (if desired) First day Morning: Wash cucumbers thoroughly; scrub with vegetable brush; stem ends may be left on if desired. Cut into slices. Drain cucumbers; place in large container and cover with boiling water. Afternoon (6-8 hours later): Drain; cover with fresh boiling water. Second day Morning: Drain; cover with fresh, boiling water.

Fourth day Morning: Drain syrup into pan; add 2 cups of the sugar and i cup of the vinegar to syrup. Heat to boiling and pour over pickles. Afternoon: Drain syrup into pan; add remaining 1 cup sugar and the vanilla to syrup; heat to boiling. Pack pickles into clean, hot pint jars and cover with boiling syrup to 1/2 inch of top of jar. Adjust jar lids. Process for 5 minutes in boiling water (start to count processing time as soon as water returns to boiling). Remove jars and completely cool. The recipe is flexible--use a variety of apples, adjust spices to suit your tastes and make a little or a lot. I took the basic recipe from a Farm Journal Cookbook in the 1970s. 20 ears corn, cut off cobs 4 green peppers 4 red peppers 2 large onions 1 large head cabbage (4-6 cups) 4 cups sugar 2 tablespoons each of the following: dry mustard, celery seed and salt 1 tablespoon turmeric 5 cups vinegar 1 cup water Chop peppers, onions and cabbage. Add all ingredients and cook for 20 minutes. Can add cornstarch cornstarch, material made by pulverizing the ground, dried residue of corn grains after preparatory soaking and the removal of the embryo and the outer covering. It is used as laundry starch, in sizing paper, in making adhesives, and in cooking.  during the last few minutes of cooking time if you'd like it thicker. I would try once or twice a year to make a dish with squash hoping that I'd find something the kids would eat. They turned up their noses every time ... until this year. A friend gave me a recipe for Squash Puppies and, intrigued, I tried it. My kids love them! In fact, there are usually very few Squash Puppies left oil the plate by the time I actually get it to the table. The recipe calls for 1 cup of mashed squash, but I just pour the water out of a quart jar of canned squash and mash it, then add as much flour and cornmeal corn·meal also corn meal  n. Mix. Add meat a little at a time and coat well. Remove and brown in vegetable oil in a large skillet. Continue process until all meat is browned. Add 1 whole slice of onion in bottom of jar, add meat, packing firmly. Finish jar with other onion slice. Seal and process in pressure cooker at 10 lbs. for 90 minutes or place in a hot water bath, put weight on jars if they are not submerged, and process for 3 hours. Add sugar. Stir in well and bring to a full rolling boil for 3 more minutes. Oven Stew 2 pounds stew meat 3 carrots, sliced 1 medium onion, chopped 4 potatoes cut up 3 ribs of celery, chopped 2 cups cabbage, chopped 1/4 cup green pepper, chopped 1 can cream of mushroom soup 1 can tomato soup 2 soup cans of water 1 tablespoon sugar 1/4 teaspoon salt 1/8 teaspoon pepper 3 tablespoons tapioca In a 4-quart Dutch oven add first 7 ingredients. Pour soups over vegetables. Sprinkle sugar, salt, pepper and tapioca over the soup. Pour water over all. Cover with a tight-fitting lid. Bake at 250[degrees] for 5 hours. Do not lift the lid during cooking time. Our small orchard has four plum trees that supply us with an abundance of tasty purple plums. Two of my favorite ways to use the plums are in a cake and in a sauce. Add egg and milk, stir just to moisten ingredients. Spread dough evenly in greased 8" square pan. Brush with melted butter. Press rows of plum halves, skin side down, on dough, letting it overlap a little. Leave some space between rows. Sprinkle with lemon juice, then crumble topping. Bake at 375[degrees] got about 45 minutes. Serve warm. Crumble topping: 3/4 cup sugar 1/4 cup flour 1/4 cup butter Mix together. Combine vinegar, sugars and seasonings. Bring to a boil, reduce heat, and add chopped plums. Cook until thick and syrupy, about 1-1/2 hours. Pour hot sauce into hot jars, leaving 1/4" head space. Freezing Blackberries When I freeze blackberries, I place them in freezer bags as soon as I bring them in the house then freeze. The small amount of sand that would normally be removed by washing allows them to freeze like marbles and makes it easier to remove the exact amount needed. Then when I take them from the freezer, I place in a colander and rinse. The results, no more leaky, mushy blackberries. 90-100 pickling cucumbers (4 inches) 1 cup canning salt 12 cups water 7 cups vinegar (5%) Enough dill heads for each jar 24 cloves of garlic Wash cucumbers, trim blossom ends. Slice, strip, or leave whole. Place in a large bowl or tub and cover with crushed ice cubes. Refrigerate re·frig·er·ate  tr.v. re·frig·er·at·ed, re·frig·er·at·ing, re·frig·er·ates 1. To cool or chill (a substance). 2. To preserve (food) by chilling.  3 to 4 hours. Drain. Combine salt, water, vinegar, garlic and heat to boiling. Pack cucumbers and dill into jars. Pour vinegar solution and 2 cloves of garlic in each jar. Adjust lids. Process 15 minutes in boiling water bath. Pickled Dilled Beans Yield 4 pints 2 lbs. fresh (tender!) green or yellow beans (I use a combination of both.) 4 heads dill 4 cloves garlic 1/4 cup canning salt 2 cups vinegar 2 cups water Wash and trim ends from beans. In each jar, place 1 dill head--and 1 garlic clove. Pack whole beans neatly into jars. Trim to fit, if necessary. Combine salt, vinegar and water. Bring to boil. Add liquid to beans. Adjust lids. Process 5 minutes in boiling water bath. (Ed. note: make sure your jars are hot before adding hot liquid, or your jars may break.) Sweet Sour Dill Chunks Yield 4 quarts
Enough medium cucumbers for 4 quart jars Enough onion slices for 4 quart jars 2 celery stalks, quartered 8 dill heads 4 cups sugar 1/2 cup salt 4 cups vinegar 2 cups water Wash cucumbers and cut into 1 inch chunks. Place in jars. To each, add 3 or 4 slices onion, 2 pieces celery, and 2 dill heads. Dissolve sugar and salt in vinegar and water. Bring to a boil. Pour over cucumbers in jars. Adjust lids and process for 15 minutes in boiling water bath. Let sit for 30 days before using. (I found this recipe in a 1958 farm magazine.) Chili Sauce Yield: about 6 pints This is similar to salsa. 1 dozen red tomatoes 3 hot peppers (your choice) 4 large onions (put through a grinder or food processor) 2 cups vinegar 2 tablespoons salt 6 green peppers, chopped 2 cups sugar Combine all ingredients except green peppers and sugar. Cook on low for 2 hours, stirring often. Add the green peppers and sugar. Cook 30 more minutes. Put in jars and process in boiling water bath 10 minutes.

Pack at once into hot sterilized jars, leaving 1/2-inch head space. Adjust lids and process in boiling water bath 25 minutes. Makes 4-1/2 quarts or 9 pints. This unusual jam is as delicious as it is attractive. I like to give it away as gifts. In a large pot combine tomato juice, lime juice, sugar, Tabasco, nutmeg and cloves. Bring to a rolling boil. Add pectin and continue to boil while stirring for 3 minutes. Skim. Ladle into hot, sterilized jars leaving 1/4-inch head space. Wipe rims and adjust caps. Process in boiling water bath 5 minutes. Makes 6 8-oz. glasses.
