Chardonnay Tasting note Bright straw yellow tinged with green. Very delicate aromas lightly reminiscent of exotic fruits, delightfully fresh and flavoursome on the palate with an enveloping structure.

Vinification The juice stays in contact with the skins for 20 hours at a low, controlled temperature; after which the must is fermented in temperature controlled stainless steel tanks.

Food matching Matches well with a wide variety of dishes. Light appetizers, fish cooked in various manners and white meats.

Chardonnay Tasting note Intense yellow with light hints of green. Very full and intensely fruity on the nose with strong primary aromas. Harmonious on the palate, inviting, fresh and lighttly bubbly with a very refreshing prickle of carbon dioxide remaining from fermentation.

Chardonnay - Sauvignon Tasting note Straw yellow with green highlights. Very rich and complex nose featuring hints of vanilla and exotic fruits such as pineapple and banana. A very rich and elegant wine with well integrated new oak. Surprisingly fresh and fruity.

Vinification The juice stays in contact with the skins for some 20 hours at a low, controlled temperature; after which the must is fermented and aged in new oak (Allier) for six months.

Fiano Tasting note Deep straw yellow in colour with a rich, elegant nose with aromas of rose water. On the palate it is open and balanced with apple and hazelnut notes.

Vinification The grapes are cooled to 12° C, destemmed and left in contact with the must for 48 hours. The free run juice is inoculated with selected yeasts and is fermented at 18° C for a week.

Food matching Excellent as an aperitif but also ideal with seafood, crustaceans and grilled fish.

Negro Amaro - Malvasia Nera Tasting note This is one of the Salento region’s famous rosé wines, which are among the world’s absolute finest. Bright coral pink in colour, rich, opulent and floral with fine fruit on the nose. On the palate it is harmonious, rich and delicious with a pleasantly bitter aftertaste.

Vinification The destemmed and crushed berries are cold macerated for some 20 hours after which a part of the juice (less than 40%) is drained off and fermented in stainless steel using cultured yeasts.

Food matching Matches well with a wide variety of dishes, especially appetizers, thick broths, egg dishes, white and red meats, fish soup and shellfish.

Negro Amaro - Cabernet Sauvignon Tasting note This wine, bright salmon pink in colour, is made using the traditional Salento technique to obtain rosé, applied to an international grape variety. Intriguing and fIowery on the nose, it is flavoursome and lightly fruity on the palate.

Vinification The juice stays in contact with the skins for few hours at a low, controlled temperature. The extraction of small parts of the juice and the fermentation take place at controlled temperature.

Food matching Very delicate dishes. Excellent with lobster and shellfish in general.

Primitivo Tasting note Deep ruby red colour with purple highlights. This marvellous wine has a very intense bouquet with notes of prunes and fruits of the forest. On the palate the wine’s considerable structure is very well balanced with excellent length.

Vinification The destemmed grapes are macerated in stainless steel tanks and after fermentation, the wine is bottled.

Negro Amaro - Malvasia Nera Tasting note This wine is a delightful ruby colour which develops hints of orange on the rim with maturity. The nose has an ethereal bouquet and distinctive aromas of cocoa and leather. On the palate, it has a pleasant enveloping structure with the typical rich and warm black fruit notes well combined with the typical French oak aromas

Vinification The must is fermented on the skins at a controlled temperature for about five days. After alcoholic and malolactic fermentation have taken place in stainless steel tanks, the wine is matured in large oak casks.

Negro Amaro - Cabernet Sauvignon Tasting note Intense red colour with violet reflections. This is a modern style of wine with generous, intense aromas of prunes, blackberry and cherry perfectly balanced with spicy undertones, underscored by an opulent structure and delicate tannins.

Vinification The grapes are allowed to macerate for a long period, with frequent pumping over. Selected yeasts are added and fermentation takes place under rigorous temperature control. The wine is then refined in small oak casks for 8 months before being released.

Negro Amaro - Montepulciano Tasting Note Bright ruby red colour with orange highlights. Very intense and fragrant nose. On the palate there is an explosion of flavours ranging from roasted coffee beans and tobacco to leather along with fine notes of balsamic and well integrated hint of new oak. Enormously satisfying, it combines warmth and austerity.

Vinification The must is macerated in contact with the skins for a protracted period of time. Fermentation is then activated with cultured yeasts at a controlled temperature. After fermentation the wine is matured in barrique to ensure the perfect integration of all aromas and flavours.

Negro Amaro - Primitivo Tasting note Intense ruby red colour. On the nose it shows red fruits and delicious vanilla and pepper spice. The wine’s fine tannins and warm palate all contribute to a generous and well balanced wine.

Vinification After destemming and crushing, selected grapes are put into stainless steel fermenters where they undergo seven days maceration. Fermentation is started using inoculated yeasts and takes place at a controlled temperature of 27° C. After a brief period in wood, the wine is bottled.

Chardonnay - Malvasia Bianca Tasting note A white passito wine, bright golden yellow in colour. Its complex and elegant structure is well balanced on the nose and palate with delightful notes of vanilla, honey spice, fig and apricot jam. A rich, feminine wine with a silky, warm and velvety texture

Vinification Once the chardonnay grapes have attained the initial stage of ripeness, half the bunches are harvested, leaving the remainder to be picked one month later after which they are left to dry and become lightly raisined along with malvasia grapes. The grapes are lightly pressed and the subsequent juice is fermented and matured in barriques for one year on its lees.

Aleatico Tasting note This wine is bright crimson in colour, developing hints of orange with maturity. The nose is pleasantly reminiscent of muscat and the medium sweet palate is broad and rich with a good backbone of acidity, a velvet texture. Delicious.

Vinification The crushed grapes are macerated at a controlled temperature. Fermentation is interrupted by repeated racking to remove the yeasts and the wine is subsequently matured in barrels.

Negro Amaro Volume 1.5 lt.

Tasting note A deep, ruby red colour with purple tints characterize this rich, spicy, vanilla flavoured wine. On the palate this first class wine is rich and full bodied with rounded velvety flavours.

Vinification The destemmed grapes are macerate in stainless steel tanks for several days. After malolactic fermentation the wine is matured in small oak barrels.

Negro Amaro - Montepulciano 1,5 lt.

Tasting Note Bright ruby red colour with orange highlights. Very intense and fragrant nose. On the palate there is an explosion of flavours ranging from roasted coffee beans and tobacco to leather along with fine notes of balsamic and well integrated hint of new oak. Enormously satisfying, it combines warmth and austerity.

Vinification The must is macerated in contact with the skins for a protracted period of time. Fermentation is then activated with cultured yeasts at a controlled temperature. After fermentation the wine is matured in barrique to ensure the perfect integration of all aromas and flavours.

Food matching Roast and grilled lamb and beef, game, braised meats, mature cheeses and other fine cuisine.

Negro Amaro - Primitivo 1,5 lt. in wooden box

Tasting note Intense ruby red colour. On the nose it shows red fruits and delicious vanilla and pepper spice. The wine’s fine tannins and warm palate all contribute to a generous and well balanced wine.

Vinification After destemming and crushing, selected grapes are put into stainless steel fermenters where they undergo seven days maceration. Fermentation is started using inoculated yeasts and takes place at a controlled temperature of 27° C. After a brief period in wood, the wine is bottled.

Food matching Excellent with roast or grilled red meat and mature cheeses.
