If Bananas Foster and crème brûlée had a baby it would be this silky custard. We use real bananas at the peak of ripeness for a flavor that’s not too grassy, nor too sweet. Dave Rigo and Greg Lehman of Watershed Distillery in Columbus, Ohio, produce some fine apple brandy. Made with apples sourced within 150 miles of the distillery and aged for two years in charred oak barrels, their brandy is smooth and buttery with warm notes of vanilla. We’ve worked hard to get this right because it’s an idea most ice cream makers don’t think enough about. We build our ice creams from the ground up to melt a very specific way, releasing flavor as you enjoy them.
FLAVOR
Flavor is a combination of two things: the taste you experience on your tongue, and the countless combination of scents that hit your nose as the ice cream melts and blooms. Ice cream contains butterfat, which absorbs scent and then releases those aromas as it melts. Our job as ice cream makers is to scent the butterfat and then freeze it so the flavor stays locked until the ice cream begins to warm and relax on your tongue.

Texture is the fineness of the ice cream between your tongue and the roof of your mouth. Fineness can be disrupted with fresh ingredients because many of them either contain too much water or absorb too much water, resulting in icy or crumbly ice cream— unless you have the know-how to make it work. Texture is what we excel at—it’s why our ice creams are so smooth and creamy.
BODY
Body is the bounciness or thinness of ice cream. We strive for body that is dense and just a bit chewy (like buttercream), with a clean, thin meltdown. We serve our ice cream in a hard-frozen state so that you can eat it slowly from a cone and savor it without it melting quickly.
FINISH
How long all of this lingers on your palate is called the finish. Nothing hides in ice cream. Which is why we build our ice creams using the power of milk proteins over added stabilizers or emulsifiers, which dampen flavor. We want the clean flavor of dairy and our incredible ingredients to linger on your tongue.

Our friends Emily and Melissa Elsen are pie-baking wizards. At their Brooklyn bakery, Four & Twenty Blackbirds, the sisters turn out some of the best pies we’ve ever tasted. But it’s their signature Salty Honey Pie that Jeni can’t stop thinking about. Salty, earthy, sweet—it’s a flavor combination begging to be turned into ice cream. So we did!
