Tastes so good... Coronation Chicken

A Retro Summer Supper Preparation time 1-2 hours Cooking time 30 mins to 1 hour Serves 4-8 Ingredients 1.5kg/4lb free-range chicken 4 spring onions, sliced 6 garlic cloves, peeled, left whole 1 tbsp sea salt 10 whole black or green peppercorns or a mixture For the sauce 1 tbsp vegetable oil 1 onion, chopped 1 tbsp curry powder 1 tbsp tomato purée 85ml/3fl oz red wine 150ml/¼pint water 1 bay leaf salt and freshly ground black pepper caster sugar 2 slices lemon squeeze of lemon juice 425ml/15fl oz good-quality mayonnaise

2 tbsp apricot purée (You can make your own by blending 4-5 ready-toeat dried apricots with 3 tbsp water) 3 tbsp whipped cream To serve 1 tbsp roughly chopped coriander Boiled rice Method Place the chicken into a large saucepan with a tight-fitting lid. Cover with water and add the spring onions, garlic, salt and peppercorns. bring to the boil uncovered and simmer for 30 minutes. Turn the chicken once during this time. Cover with the lid and turn off the heat. Leave for one hour. Remove the chicken, allow to cool completely, and then tear the chicken from the bones and chop into chunks. For the sauce, heat the oil in a pan over a medium heat. Add the onion and cook gently for 3-4 minutes until translucent. Add the curry powder and cook for a further two minutes, stirring well. Add the tomato purée, wine, water and bay leaf. Bring the mixture to the boil.

Season with salt and freshly ground black pepper, then add the sugar, lemon slices and lemon juice, to taste. Reduce the heat and simmer uncovered, for 5-10 minutes. Strain the sauce through a sieve and set aside to cool. Once cold fold in the mayonnaise and apricot purée, to taste. Add more lemon juice if required and then finally fold in the whipped cream. Arrange the chicken on a large platter, pour the sauce over the top, sprinkle with the coriander and serve immediately, with rice or salad.

5 ways to prevent being thrown into orbit from jet lag.

One of the downsides of long-haul travel is jet lag.Whilst there is some controversy about whether jet lag is just a state of mind or a real physiological phenomenon, it can cause disruption to many travellers.

Jet lag can present as tiredness, confusion, erratic moods, altered appetite and digestive issues. Symptoms vary from person to person and are affected by the number of time zones crossed and the direction flown (west to east is considered to be worst as time is lost).They can last for up to 5-7 days. 5 tips for managing jet lag; Keep active; Avoid the ‘travelators’ at the airport and instead power-walk your way around. On the plane, get

up and stretch as often as you can. Keeping your body active will tire yourself out enough to rest when you need to. Keep quiet – wear noise cancelling headphones or ear plugs to tune out the machinery noises and allow a restful time aboard the flight. Even if you don’t sleep easily on the plane, your body will be in a less stressed state. Try meditating, or listening to guided relaxations. Most airlines now provide calm playlists on their in-flight entertainment.

Set your clock – change your clock to the local time of your destination.This will make it easier to adapt once you reach, and will encourage you to sleep during the ‘night’ aboard the flight.

if there’s one subject that winds people up; it’s parking charges and tickets.

never know, they might agree with your reasoning and step in and ask the parking company to back down. Obviously, there are no guarantees with this approach.

That’s why I’m going to be raising awareness of your rights (and highlighting dodgy service) over the next month as we tackle parking problems head on.

Drivers should be aware that parking disputes can escalate quickly if ‘invoices’ are left unpaid and unchallenged. I’ve heard stories of private parking firms coming down quite hard on people. If a ticket isn’t dealt with you could end up being charged more and might even receive letters threatening legal action.

First up, private parking fees. These aren’t penalty charge or fixed penalty notices, (official charges from the police or council) despite what they might look like. They’re actually invoices for breaking parking rules on private land, like a supermarket or even a hospital. Even though these tickets aren’t fines, you’re still being billed for a breach of contract. What’s that, I hear you say, you never signed a contract?! Well, when you park on private land, you should see a sign that clearly sets out the rules. By parking there you agree to those rules, so if you overstay the firm can charge you for the privilege. And those charges can mount up. The biggest problem with private parking charges is the fact that people get so angry about them that they ignore the ticket, rip it up (a bad idea) or decide they’re going to appeal but forget.

It’s also worth remembering that it’s not always the driver that has to pay the fine. Private parking companies are allowed to hold the owner of the car liable for any unpaid fines. Of course, the best way of avoiding paying parking tickets is to not get them in the first place. Always pay close attention to the parking rules set out on signs in the car park. Make sure you’re looking at the right part of the information, as rules may differ depending on the time and day of the week. If you’re still unsure about anything try and find a parking attendant or other member of staff

to talk to. If you want to raise a complaint about a private parking company you could use Resolver. The system allows you to construct a complaint, keep track of any communication, and escalate your case to POPLA (Parking on Private Land Appeals). They will carry out an independent assessment based on the evidence provided by the motorist and the parking firm and decide whether to uphold the appeal. As a general rule, it can be hard to get your money back when you’ve paid, so bear that in mind if you make a complaint. But if you don’t pay, speak to the parking company asap. Ask them to hold fire on charges while you present your case, and gather some evidence. Photograph the car park and sign, explain the circumstances that lead to the problem, keep a record of all your comments and ask them to respond in writing. It can also be worth writing to the land owner to explain your situation. return of the Pawnbroker What do you think of when you see the word pawnbroker? The slums of dickens? The austerityyears of the 1930’s great depression? Think again; modern pawnbrokers are rather smart establishments, and don’t look out of place on the high street. After World War II the pawnbrokering went into something of a decline and by the Seventies it had almost died out as a trade with maybe just fifty or so in the whole of the British Isles, generally in poorer areas which boasted a high concentration of itinerant workers. Now there are over a thousand pawnbrokers in the UK and they are appearing in traditionally affluent areas. The industry is worth an estimated £100 million per year! The Australians have also followed suit with their Cash-Converters, high street buy-back chain.

Modern pawnbrokers offer a discreet and confidential service where clients can pledge anything from a piece of jewellery or a watch through to a prize car or even a house. Now it’s just as likely to be a middle class couple looking for a way to pay the mortgage or the school fees. so how does it work?

What’s caused the change?

Pawnbrokers and their like give a client money in return for an object that is held as security until the customer pays off the loan and any interest charges. There are no credit checks and, once the item is valued and a rate of interest agreed, the customer leaves with the money.

Many of us seem to have lost faith in the banking system which in turn seems to have lost faith in itself as it restricts credit. People suddenly see

If the loan is paid back within the agreed time the client can reclaim their goods. If the loan is not paid back then the pawnbroker has the

right to extend the terms or sell the goods, though many are reluctant to do this as they thrive on repeat business. Buy-back shops are slightly different. Here the client sells their item with an option to buy it back within 28 days. If they don’t reclaim it then the shop can sell the item. The Consumer Credit Act states that a pawnbroker must give their client a receipt displaying the date the redemption period ends; the amount of credit secured by the pledge, and the interest rate, plus any other charges that individual lender may apply. Some months, for many, the letterbox becomes an enemy. When it flips open it contains a bill. And the worst of those for many are credit cards - a final reckoning of the last year’s debts. If you’ve debts you can’t repay, there are two key things to do: stop borrowing more and cut the interest rate. By cutting the rate, more of your repayments clear the actual debt rather than just help add profit to the lender. The main weapon to clear credit and store cards is a balance transfer, where you get a new credit card(s) that repays debts on existing cards for you, so you owe it, but at a far lower cost, for a small fee. The good news is right now there’s white hot competition in this market. So, sort it now and stop paying more than needed. And if you won’t listen to me, listen to Marc who emailed: “took your tip on taking a balance transfer card and we’ve saved £9,400 over the next 40 months. Amazing.” How to choose the right balance transfer card deals There are a vast range of cards to choose from, ranging up to 43 months 0%. But it isn’t quite a simple as just go for the longest. 1. Go for the lowest fee in the time you’re sure you can repay. Most cards charge a one-off fee on the amount of debt transferred. So, for example, 3% is £30 per £1,000. Generally, the longer the 0% period, the bigger the fee. So, what you need to do is calculate how long you think you’ll take to clear the debt, add a few months for safety, then pick the lowest fee within the time you need. If you’re not sure, play safe and go long. For example, the longest card available at the time of writing is the www.MBNA.co.uk up to 43 mths 0%, with a 3.29% fee. The longest no-fee card is www. Halifax.co.uk up to 26 mths 0%. 2.You need a PERSONALISED best buy table. Each lender credit scores 18

Some card firms have their own or my Eligibility Calculator (www.mse.me/ BTeligibility) shows your chances for most top cards, effectively giving you a personal best buy table.

For example, with £3,000 on a typical card, repaying minimum repayments it’d take you 27 years to repay, costing £4,000 in interest. Now you may say to me “I can’t afford to pay more”. Yet in the first month the minimum repayment would be about £70, and if you fixed your repayment at that rather than letting it drop, you’d clear the debt in five years.

3. Many cards are ‘up to’s’: With these cards, only 51% of accepted applicants need get the advertised 0% length, the rest could get a shorter deal. So, in many cases, the cards that aren’t ‘up to’s’ can be better. The longest non-up to 0% deal is www. SainsburysBank.co.uk 42mth 0% for a 3.5% fee, and it also has the longest fee free deal at 25mth 0%. This is especially important when you do a eligibility comparison. If all your accepted cards are ‘up to’ cards, then the likelihood is you won’t get the full 0%. So even if there’re one or two non ‘up to’ deals there, they may be worth looking at. The 3 Balance Transfer Golden Rules Getting the right card’s only half the job. Once you get it, you need to use it the right way. a) Repay at least the set monthly min, or you can lose the 0% deal. The same can be true if you bust your credit limit. b) Always clear the card or shift again before the 0% ends, or rates jump to the representative APRs, typically 18% to 20%. c) Don’t spend or withdraw cash on them, it’s rarely at the cheap rate. Instead, shift your debt to these cards, then put it away somewhere not to be used. A final thought on this. The best way

Yet if you’ve multiple debts, order them in terms of interest rates, and throw all spare cash at repaying the one with the highest rate (as its growing fastest). Just pay minimums on the rest. Once that’s clear, focus on the next most expensive debt and so on. Are you in debt crisis? Are You Committing Emoji Abuse? More than 6 million of them are sent every day, but are you misusing your emojis? Read on… Emojis are a fun way to communicate. Millennials were the early adopters of emojis but bizarrely it’s the older generation who seem to be most guilty of emoji abuse. My mother regularly sends me texts which are strings of hearts, wine glasses and smiley faces (maybe I should worry about her love life and / or her drinking habits!) Emojis are like seasoning. Used sparingly they add flavour and a personal touch to your texts. Over use them and they become offputting very quickly. One place to avoid them is in more formal relationships, like with your boss or immediate superior. Also, bear in mind that emojis don’t always translate well across mobile platforms. So an iPhone user sending a ‘stressed’ emoji can appear to be sending a happy emoji to an android user! And take care you are using the correct emoji. My mother (notice the theme here) once sent a text notifying me that my father had hurt his back. She thought she had sent a crying ‘sad’ emoji, but in fact had sent me a ‘crying with laughter’ emoji, (which incidentally accounts for 20% of all emojis sent!). I assumed it was a comedy accident and replied accordingly, only to find out my poor dad was completely immobilised. So take care people. Ignore emoji etiquette at your peril. I Want to Ride My Bicycle… Do you remember the thrill of owning your first bike? That sense of freedom and speed? Cycling has increased in popularity again since London 2012 and rightly so – it’s an ecofriendly, sociable and healthy activity. Regular family cycling trips can provide a wealth of new experiences and a sense of adventure and bonding. It’s never too late to start: even if junior is too young for their own bike they will love to travel along with you. Please note that for most trailers and all child bike seats the child should be able to support their own head wearing a cycle helmet. For most children this is between 10-14 months but be sure to take advice from your local cycle specialist. Trailers These attach to the adult’s bike and may be single or double. They offer some protection from the elements as they can be covered. They can also take children up to 45Kg. An older child has enough space to take along their own snacks and a couple of toys. They can nap in comfort if they wish.

The disadvantage of a trailer is its proximity to the ground: it doesn’t afford much of a view. There is also a danger that, if used on the road, some drivers may not see it. Hire before you buy. Most cycle-hire outlets offer a good range. It’s a great way to find out if a trailer is for you. You can buy specialist trailers for babies too young to travel in child seats or in conventional trailers. The child is securely strapped in and the framework acts as a roll-cage in case of a toppling accident. The beauty of these specialised trailers is that they also convert into a buggy. They’re not recommended for road use though. Child bike seat These are comfortable and offer a great view as the child is raised up. Choose the seat according to the child’s weight and height rather than age as children vary so much. Carrying a child alters the centre of gravity of the bike so practice on soft ground or in a safe area before you venture out on to the roads. Trailer bikes / Tag-alongs These have one wheel, and a saddle with a curved frame which attaches to the

adult bike. The child can peddle or just hitch a ride. For an older child who wants to ride independently but who tires on long cycle rides, you can buy a connector kit to attach their bike to the adult bike. Consult your local dealer for advice. IMPORTANT No-one should travel in a conventional trailer or bike seat unless they are wearing a helmet. Bike seats (and to some extent trailers) leave children exposed to the elements. AUTO-BIOGRAPHIES New 2017 Ford Grand C-Max

Ford’s Grand C-Max is a car designed to carry up to seven people safely and comfortably. It’s got all the things that make life easier. Things such as sliding rear doors that mean the children can get in or out without bashing the doors on walls or other cars. What’s more, the Grand C-Max is roomy inside, with a smart set-up that enables the centre chair in the second row to fold beneath one of the other seats, leaving a space to walk through. I should add, the Grand C-Max Ford loaned me was the Titanium X 2.0 TDCi 150PS Powershift. Basically, I was handed the top of the range version - the one with all the bells and whistles. However, whether you get the entry level or the top level Grand C-Max, its function is the same – it’s a car that’ll hold lots of

people. Granted, the third row of seats are tucked away for most of the time in the boot floor, and even though they’re only for kids, they’re still very handy. There’s also a ‘normal’ Ford C-Max, which is a spacious five-seater - so don’t feel you must go for the ‘Grand’ version. On test, I didn’t need to use the third row all that much, so the two spare seats often remained where they were. This was no bad thing, as without the third tier of seats in operation, the boot stays big. With the seats up, the load area is only good for about three bags of shopping, but with them down, you can knock yourself out filling it up. Not literally, you understand.

Standard equipment on the Ford Grand C-Max is generous. It includes Ford's Quickclear windscreen, sports-style seats, air conditioning and DAB radio. Upgrade to the flagship Titanium X trim and you get a panoramic sunroof, bi-xenon headlights, a partial leather interior, heated front seats, dual-zone climate control, rear parking sensors, and keyless start and entry. There’s also Ford's Sync 3 infotainment system, with an easy-to-read eightinch touchscreen. But the best thing is that the Grand C-Max is a surprisingly good drive. I say ‘surprising’ because I was a man who used to dislike MPVs because of their apparent dearth of dynamism.

The 2.0 TDCi 150PS Powershift model is smooth and has lots of low down shove. It works particularly well with the six-speed automatic transmission. In fact, it doesn’t drive like a bus – it behaves just like a decent 2.0 litre turbo diesel car should do. What’s more, it holds the road well, feeling planted on motorways and through twisty sections of tarmac. It’s also got a cheeky punch to it, with the Titanium X 2.0 TDCi 150PS Powershift variant able to do 0-62mph in 10.7 seconds. It’s efficient, too, consistently doing mid to late 40s real-world mpg. So, I’ve got to say, as a dad-of-three, I’m impressed. In fact, I’m seriously considering buying the Ford Grand C-Max now I’ve lived with it for a while. I just might not be able to dig deep enough for the flagship version.

This month – Take a seat This year I decided to buy an all-weather seat for my garden. Bizarrely I didn’t actually have a permanent place to sit where I could admire my hard work.

structure. It can be as simple or elaborate as you like. Sawn tanalised timbers can be used to make a very simple frame over which you can train a vine or climber. Use galvanised screws and it should last 20 years, providing a delightful place to rest.

There is an art to choosing and placing garden seating. First decide whether you want to sit in full sun, or dappled shade. Watch the path of the sun and make a note of which particular parts of the garden are illuminated at each time of day.

Choose all-weather furniture for ease of use unless you have oodles of storage space for the winter months. Plastic is cheap but can look very tacky. There are some wonderful synthetic wicker style pieces available now though, and excellent metal furniture which requires no care at all. My favourite material is wood though mostly this does require ongoing maintenance. I did discover some rather attractive polystyrene slatted furniture on an aluminium frame which looked remarkably like the real deal. If finances allow you can buy beautiful teak wood furniture which requires very little in the way of after care.

Think about when you will sit in you garden. Will you want to eat breakfast out there? If so pop a seat and little table in a spot which catches the morning sun. If like many of us the only chance you get to sit out is during the evening then look for an area which is bathed in golden light of late afternoon. Would you like to dine out doors in the evening? Can you make room for a table, and would a patio heater be a good investment, so you can make the most of the setting. If the only area you can place a bench is in baking sun then it’s good to place some sort of overhead

Try before you buy! Yes you want your furniture to look wonderful but the most important factor is comfort. Are the seats wide enough? Is there enough back support? Does it come with pads?

Finally, to bring a touch of indoor comfort and style to an outdoor area I discovered outdoor rugs! Yes really. Made from long-lasting material, outdoor rugs can cope with rain or shine. They are made from robust, resistant, easy-care synthetic fibres, which absorb minimal moisture and which dry quickly afterwards. They don’t fade even when exposed to bright sunlight and are cleaned easily by vacuuming, with a broom, or by beating them. July is when Hydrangea blooms are at their best. A vigorous and hardy plant with numerous varieties, blooms with vibrant colours ranging from white, pink, purple and blue. Many varieties, such as the mop-head, have the unique ability to change colour, adapting to soil type and environment.The colour change is due to the soil pH - those with pink or blue flowers tend to be blue in acid soil and pink in alkaline conditions. White flowers remain white regardless of soil pH. Hydrangeas can be planted in borders or containers but wherever it is planted it will need copious watering.
