MEATLOAF One of the signature dishes at Jimmy’s, this Meatloaf has been on the menu since the restaurant opened in 1997. What makes it special is a mixture of ground beef and buffalo, cutting back on cholesterol but keeping moisture and flavor, and a bold mixture of spices. For an extra kick, serve it with Mad Dog Ranch BBQ Sauce. INGREDIENTS: 2Tbsp Butter or neutral-flavored oil 1 Medium onion, diced 3 Scallions, minced 1 Celery stalk, minced 1 Carrot, minced 1 Green or Red Pepper, minced 1 1/4 lb Lean ground beef, preferably ground chuck 3/4 lb Lean ground buffalo, preferably ground chuck 2Tbsp Parsley, minced 1tsp Salt ¼ tsp Black Pepper ½ tsp Cumin ½ tsp Nutmeg Pinch Cayenne ½ Cup Chili sauce 2 Garlic cloves, minced 3 Large eggs, beaten ¾ Cup Plain dry bread crumbs Preheat oven to 350 degrees Fahrenheit. Heat butter or oil in a 12-inch straight sided skillet over medium-high heat. Add onion, scallion, celery, carrot & pepper to skillet and sauté until soft. Set aside and cool. In a large bowl, mix together the ground meats, parsley, salt, cayenne, pepper, cumin, nutmeg, chili sauce, garlic, eggs & bread crumbs plus the sautéed vegetables. Mix well but do not over mix. Place mixture into a loaf pan and pat firmly. Bake for 1 hour 15 minutes. Serve with Mad Dog Ranch BBQ Sauce. Yield: 4 to 6 servings.
