avid Holder, chairman of the historical French patisserie, Laduree, speaks to us about how his career started, and the first time he tried a macaron
Holder still remembers the first time he tried a macaron, he recalls, “I remember the first time I tasted a macaron. It was in 1985, the first time I arrived in Paris. I used to go to the Ladurée on the Rue Royale. I was like ‘wow’.”
Holder’s career with Ladurée began in 1989, when he joined the Holder Group (which owns the patisserie) as an apprentice baker and pastry chef, with a stint in the US (non-pastry related) before returning to France in 1991. “I started my studies in finance, but after, I started to dream of being a good baker and a pastry man,” admits Holder. Two years later, he took over the Ladurée tea room at 16 Rue Royale in Paris – the original location where Louis Ernest Ladurée first established the brand, initially as a bakery, in 1862. It was an apt move, as it was here Holder had his first taste of what became Ladurée’s most iconic creation – the macaron.
What Parisians do “Self-care” has become one of the trendiest buzzwords among millennials. We’re not afraid to spend money on scented candles, at-home facials, matcha lattes, and quinoa. We Instagram our “true selves” with #nofilter, and post mirror pictures of our fat rolls because models and fitness bloggers made it fashionable. While all of these recent trends are promoting important and even revolutionary ideas in body-positivity and health that I myself am addicted to following every day, it’s
undeniable that the concept of this self-care is almost void in typical Parisian culture. Self-care is not in the immediate vocabulary of the average Parisian, regardless of her age or generation. Parisians do not spend fortunes on health treatments and workout classes or cook with the latest health-food craze and write lists of reasons they love themselves in “Self-Love Journals.” The way they care for themselves is simply muted, private, and not trend-driven at all.

They are choosy with friendships. 5. They have rituals that they stick to. 6. They appreciate the small things. 7. They know their beliefs and aren’t afraid to defend them.
