Each Rynes countertop has hundreds of years of history behind it. Ancient old-growth Douglas fir trees, many reaching maturity before European explorers set foot in the Americas, were cut at the turn of the 20th century for wood beam construction. As these timber structures are replaced with modern alternatives, their beams and timbers are being reharvested. It’s easy to tell old growth wood apart from the young trees cut today. The color is deeper and richer, and the annual growth rings are so tight you may count 30 or more per inch of thickness. The ancient sap has matured to create an amber colored, durable work surface that is highly resistant to the oils and acids found in foods.

The Rynes Studio isn’t the first to take advantage of the resilience of end grain Douglas fir. Machine shops at the height of the 19th century Industrial Revolution recognized the quality of this material and used it as end grain flooring because it did not damage dropped machine parts and tools—nor did dropping tools damage it. End grain springs back from hard impacts. And unlike maple edge grain wood often used for kitchen surfaces, end grain is not cut when a knife is sunk into it. The knife simply passes between the wood fibers, rather than cutting through them.

Wood surfaces are a hygenic choice that have natural antibacterial properties. Recent studies have shown that, over time, potential contaminants such as e. coli or salmonella which thrive and multipy on plastic surfaces simply do not survive on wood surfaces. The cellulose in the wood draws out moisture and kills the bacteria. Rynes countertops offer a convenient chopping and food preparation surface that is prized by professional chefs and home cooks alike. The natural wood surface will never dull or damage your knives.

Rynes countertops are handcrafted in Michigan’s North woods from reclaimed old-growth Douglas fir. The hardwood stands that once forested much of North America are depleted and oldgrowth trees are extremely rare. By using reclaimed timbers, the Rynes Studio brings a fine element of American heritage into your kitchen without diminishing our country’s forest resources.

Every piece that leaves The Rynes Studio is built by hand and bears the name of its builder and the date of construction. The dovetail joints are cut using backsaws and chisels. Our countertops are handplaned to perfection. All work surfaces are totally food safe, finished with a hot mixture of mineral oil and natural beeswax, harvested near our workshop.

After preparing food on your countertop, wipe with a soapy washcloth and dry thoroughly. Periodically treat your countertop to maintain the natural beauty of the wood. Apply a thin layer of mineral oil with a cloth. Let sit for one hour and then wipe off any excess oil. With basic care your Rynes countertop will provide your family with decades of functional beauty.
