We've had a hot summer here in Southern California. When it's hot out, nothing sounds better than a nice cool bowl of ice cream for dessert. Don't you agree? Recently, I needed a yummy dessert for a dinner party we were having. I searched the internet for a cool summer dessert, that was dairy and sugarfree and company good! I discovered Nice Cream! There are a couple ways to make Nice Cream and the sky's the limit when it comes to things you can add to the recipe. Because I eat a plantbased diet, I chose a simple 3 ingredient creamy mixture infused with plump, fresh blackberries in season right now. There is a certain amount of technique involved with the making of Nice Cream. The recipe itself is super easy to make. I'm sharing technique tips I've learned along the way. What you'll need-HighSpeed Blender Vitamix, Blendtec, Ninja, etc. Ice Cream Dishes Space in your freezer :) Recipe: 68 large ripe bananas 1 can Coconut Milk (not light) You will use ONLY the cream on the top of the can. Approx. 1/4-1/3 cups
3/4 cup berries of your choice reserve a few for topping the Nice Cream. I use raspberries in video. Tip: Use banana's that are only beginning to spot. You don't want overly ripe banana's or the nice cream will be too sweet and banana tasting. You don't want green banana's either or the Nice cream won't be sweet enough. The other tip is to freeze your banana's and fruit overnight. The Coconut Milk should be refrigerated for at least 4 hours too. More tips: Right before you're ready to blend, take your banana's out of the freezer and let them sit for 510 minutes. Not longer. In the video I'm posting with this recipe, I let the banana's sit out 20 minutes and the consistency of the Nice Cream was not as thick and creamy as I would have liked it to be. Instructions: After freezing banana's and fruit (and refrigerating the coconut milk) overnight, take bananas out of freezer and let "rest" 510 minutes. Add to mixer on high, keep the bananas moving with the plunger or wooden spoon. When they are completely mixed, stop mixer, add cream from coconut milk, blend 10 seconds. Stop blender. Add fruit, pulse for 510 seconds. Immediately scoop Nice cream into individual bowls. Makes 68 servings. Top with a few reserved berries. Freeze 34 hours. Remove Nice Cream from freezer for 10 minutes before serving. Healthy eating produces healthier skin and better aging! Enjoy your delicious, guilt-free dessert!
