In The K tchen General Tso’s Fish

By Naomi Nachman

This is another creative idea for the Nine Days. My husband and his friends really love General Tso’s chicken, so why not adapt it for the Nine Days?

Ingredients

◦ ¼ cup all-purpose flour ◦ 3 large eggs ◦ 2 cups panko crumbs ◦ ¼ cup canola oil ◦ 1 ½ pounds boneless, flounder, cut into 1-inch cubes ◦ 2/3 cups water ◦ 1/3 cup low-sodium soy sauce ◦ ¼ cup apricot jam ◦ 3 tablespoons hoisin sauce ◦ 2 tablespoons cornstarch ◦ 1 tablespoon balsamic vinegar ◦ 2 teaspoons canola oil ◦ 4 garlic cloves, minced ◦ 1 tablespoon grated fresh ginger ◦ ¼ teaspoon red pepper flakes

Preparation

Place flour in a bowl.

Whisk egg until foamy in second shallow dish.

Place panko crumbs into third shallow dish.

Pat fish dry with paper towels. Working in batches, dredge fish in flour, dip in eggs, then coat with panko, pressing gently to adhere; place on a cookie sheet lined with parchment paper.

In a large sauté pan, working in batches, fry the fish. Drain on a paper towel and set aside.

Meanwhile, whisk the water, soy sauce, apricot jam, hoisin, cornstarch, and vinegar together in a bowl and set aside.

Heat oil in 12-inch skillet over medium heat. Add garlic, ginger, and pepper flakes and cook until fragrant, about 1 minute.

Whisk in soy sauce mixture, bring to simmer, and cook until thickened, about 2 minutes. Remove from heat, cover, and keep warm. When ready to serve, pour sauce over prepared fish.
