Ingredients

◦ 8 pieces pargiyot ◦ Salt and pepper ◦ 2 tablespoons olive oil

Glaze

◦ 2 jars lemon ginger jam by Tuscanini ◦ 2 tablespoons olive oil ◦ 1 teaspoon kosher salt ◦ 2 lemons cut into 8 slices

Preparation

1. Preheat oven to 400°F. 2. Place chicken in a large baking pan and season both sides with salt and pepper.

Drizzle with olive oil. 3. Place in oven and bake for 20 minutes. 4. Meanwhile, prepare the glaze: 5. In a small saucepan on low heat, add in the 2 jars of jam, salt and oil and slowly heat till it become runny. Add in the lemon slices and cook on low for 10 minutes. 6. After the chicken is cooked, pour the glaze over the chicken, and bake for another 20 minutes. 7. When serving, place a piece of lemon as a garnish on each piece of chicken.
