These moist and chewy banana oatmeal cookies are delicious and come out perfect every time! They do have some flour and brown sugar, which you can swap out for equivalent substitutes if desired.
Banana Oatmeal COOKIES
Ingredients:
• ¾ cup salted butter or margarine, softened • 1 cup brown sugar, packed • 1 egg • 1 teaspoon vanilla extract • 1 cup mashed bananas • 1 ½ cups all purpose flour • 1 teaspoon cinnamon • 1 teaspoon baking soda • 3 cups old fashioned oats • ¼ cup chocolate chips
Directions:
1. Preheat oven to 350°F.
2. Mix butter, brown sugar, egg, vanilla extract and mashed bananas until well combined.
3. Add flour, cinnamon, and baking soda and mix until combined. Add oats and chocolate chips..
4. Spoon tablespoons of dough onto a parchment paper-lined cookie sheet.
Flatten dough a bit into thick discs.
They will spread a little when baked.
5. Bake for 10-12 minutes or until edges just start to turn golden.
6. Let cool on cookie sheet for 3-4 minutes, then transfer to cooling rack to finish cooling.
