Keylime Tofu Pie Makes 2 pies.

1 large pkg. lime jello 2 cups boiling water 3 tablespoons lemon or lime juice 1 tsp lemon extract ½ cup sugar 1 12.3 oz package firm tofu 1 8oz container lite cool whip 2 keebler pie crusts - whatever you prefer Mix Jello with hot water. Let set in regrig until partial set ( about 45 min) Whip / beat tofu Add cool whip and blend very well. Add sugar, lemon juice and extract beat well Add jello mixture and whip until blended Pour into 2 keebler pie crust. Set in refrig until firm. Garnish with fruit, or chocolate curls.
