Editor’s Letter One of the best parts of dining out in New Zealand is the low-risk factor. Most of our restaurants are of a fairly high standard and so you can always feel pretty confident that you will have a good experience. That is a statement not every country in the world can say! We are lucky to have so many options, so many great chefs and operators along with incredible fresh produce from the land and sea on offer. However, dining out for some can be extremely difficult especially for the gluten intolerant and coeliacs who dine in restaurants that do not understand the seriousness of their condition. Diners can feel ostracised and that they are being seen as too demanding or difficult. This is why Coeliac New Zealand has started the ‘Dining Out Programme’ where restaurants sign up, their staff receive training and they get the all okay from the Foundation. This way, the food intolerant diner is given a full assurance they can dine in that restaurant and in turn, the restaurant can be educated on what it means to be a coeliac. In other dining news, The Parnell Waiters’ Race is set to challenge all Auckland waiters on Sunday 18th November at La Cigale. There will be over 40 restaurants running and the winning restaurant will receive a Renault for a year and the winning waiter will receive a trip overseas! So there is a lot on the line! Restaurants - make sure you put your fastest two waiters in the race!

- a delicate balance of hard work and good fun Blending wines is a key skill for any winemaker. When two gifted vintners decided to blend their abilities into one business they quickly discovered the new partnership brought out the best for everyone. Ten years later, the Hennessys and the Halls are harvesting the ripe fruits of a blended work and family life, in two stunningly beautiful and contrasting parts of the country. Digger and Debra Hennessy live on the vineyard estate in Marlborough with their three children Flynn (13), Dylan (11) and Ava (8). Digger is Australian but has worked in New Zealand for over 25 years as a winemaker, so the terroir has seeped into his blood. “I’m an Aussie blend,” he jokes. Weather is a crucial factor in viticulture. Marlborough summers tend to be dry, like Australia, but the nights are cool and the earthquakes, when they come, are higher in magnitude. “It’s a young, dynamic country,” says Digger. “I’ve learnt to expect the unexpected.”

Corey and Megan Hall live at Bethells Beach in west Auckland with an outdoor adventure playground right on their doorstep, this winemaking family doesn’t seem to waste a minute of their spare time. Everyone in the family loves to surf and walk the dogs - Pepper (13) plays netball and water polo, while her younger sister Minnie (9) plays netball and rides horses and they both swim and do surf lifesaving. Corey is a westie born and bred. He says although Kiwi culture in his childhood was dominated by beer, the early local Dalmatian winemakers had a big influence on his career choice. “They refer to me as ‘Corovic’,” he laughs. Both couples strike a near-perfect balance with their children, who are similar in ages, from seven to thirteen. “My two boys get their pocket money
from mowing between the rows of grapevines and from bud rubbing in late Spring, when we remove the shoots and buds from the lower parts of the vines,” adds Digger. “And we’re equally immersed in their worlds of sports, school plays, birthday parties, personal friendship dramas,” Deb reflects. “It’s a full-bodied life.” Megan grew up near a lake and didn’t even swim, let alone surf, when she met her future husband, who still throws on a wetsuit any chance he can get. With the waves at their doorstep, and a need to ensure the kids were safe in the water, Megan joined in and discovered that surfing was the ideal way to switch off from work. “The minute you paddle out the stress disappears. You forget all about it,” she says. While Corey and Megan had both shed

corporate careers, Corey adapted more quickly to the flexibility of self-employed life than Megan. “He’d take off surfing in the middle of the day sometimes and I’d get upset because we had so much work to do. I’ve slowly learned from Corey to work around your lifestyle, not live around work.” That was 2005. The Halls had ventured into business as Gem Wine, but the pair soon discovered that despite the balance they were achieving in life and in their wines, there was just too much to do alone. “You run out of energy,” says Megan. “It was exhausting.” Starting a partnership was an easy decision. Corey and Digger had worked together at Matua Valley Wines until Digger moved on to Mount Riley. Both winemakers knew and trusted one another. The partnership has brought benefits beyond just sharing the load. “Having a third person involved is so valuable when there’s a big decision to be made,” says Corey. “As a couple you can tend to get into stuck in polarising arguments. A third person widens the perspective.” Marlborough has over 175 vineyards and many brands have come and gone in the 10 years Harwood Hall Wines has established itself. The secret to sustaining the business has been the mix of perseverance and passion. “We have a lot of fun, especially now the business has settled into a rhythm,” says Digger. “We rarely rush to put out fires anymore because we’ve anticipated problems, but we continue to challenge and push each other in our wines, and temper each other’s excesses.”

Esquires Coffee founder brings European pizza brand to New Zealand Retail Entrepreneur Stuart Deeks founded Esquires Coffee in 2002; subsequently building it into an award winning global franchise system listed on New Zealand’s NZAX before exiting in 2015. After spending the past three years traveling the world looking for his next business opportunity Stuart is back doing what he knows best; founding the Proper Group and Proper Pizza which opens it’s first flagship store on Auckland’s O’Connell street later this week. You’ve had great business successes in the past, what drives you? I very much enjoy the challenge in introducing, growing and creating a new brand. I did this previously with Esquires which I grew from one store into a listed entity in twelve countries. I plan to replicate my experience and success with Proper Pizza. During my travels I was specifically looking for an amazing product in a high growth sector which I could wrap my franchising experience and entrepreneurial skills around. In Proper I have found the best pizza that I have ever tasted and I now look forward to building the company throughout New Zealand and then globally, engaging franchising partners who are interested at all levels. Tell us about the company? Proper is a gourmet Pizza business founded in Kosovo. My partner introduced me to the pizza at a store in Albania and when I tasted how good it was she and I both decided that there was a real opportunity to westernize the concept and scale it globally. The product sits at the very top end of the branded pizza sector. The product has a thin sesame crust giving a unique taste unlike anything available in New Zealand at the moment. It isn’t at all oily compared with other brands and provides superb Gluten-Free and Vegan options as well. Our recipes and branding are true to their European origins. However we have worked tirelessly over the last year to create a new contemporary cafe-style store environment unique in New Zealand. We will be open seven days from 7am until 1am and will have a gourmet coffee and breakfast offer to match the more traditional pizza offering available later in the day. The combo of coffee and pizza is unique in NZ and offers the opportunity to franchisees to make the most of two very profitable opportunities in both the coffee and pizza sectors in one investment.

What made you want to bring this dining experience to New Zealand and Australia? I identified a gap at the high end of the branded pizza sector and Proper’s unique offer fits that space perfectly. What’s On Your Plate? When we think about the home-life of a chef, grand images come to mind of decadent breakfast spreads, and 3-course dinners. But what do New Zealand’s top chefs when they aren’t at their restaurant? We spoke with Luis Cabrera from Besos Latinos, New Zealand’s top Latin restaurant. As Head Chef, Luis can usually be found in the kitchen, where he has cooked for locals and celebrities alike, including President Obama. What is your typical morning routine like in terms of food? As a good Mexican, I love to have a generous breakfast! This includes natural fruit juice, seasonal fruit platter with yogurt and muesli, scrambled eggs with refried beans, a couple of corn tortillas and a good aromatic coffee. Breakfast supposed to be the most important meal of the day, right? What do you like to eat on a weekend morning? I really enjoy going to farmer’s markets around Auckland and sourcing fresh local produce, organic veggies, herbs for simple, yet rich salads. This, along with artisan bread, good cheese and a glass of crisp white Kiwi wine will sure make my day is smooth and happy. What do you usually have for lunch? Pan-fried snapper salad, grilled veggies and fresh guacamole! Where do you tend to have dinner or what do you usually cook for dinner? Most of the time I have dinner at Besos Latinos, as part of my “quality control routine”. I like to either choose randomly from our current menu or try out the new dishes that will be added to our future menus. Is there a sweet item or drink you like to have before going to bed? This is particularly apparent in our dessert menu. We serve a wide variety of French desserts but use Japanese ingredients such as Green Tea, Black Sesame and Yuzu Japanese Citrus.

Tell me more about the cuisine on offer. We have an all-day tapas menu and an eightcourse degustation menu which covers both traditional and modern Japanese. We also have an in-house fish tank allowing customers to order live crayfish and paua for fresh Sashimi. How did the Christchurch earthquake impact your business? We lost everything in the earthquake. Our reputation that we had built in Christchurch was not transferred to Auckland and we had to start from the beginning. This was

In a high-tech age, they have remained a core of kitchens across the country. We sat down with Patrick Lee-Lo, who’s innovative range of cookbooks are ensuring this does not change. You have had great success with cookbooks in the past. What are some of your well-known titles? I guess it depends what you define as ‘great’. But yes I believe our Media Company - Currywurst Media has achieved great success with our books, one of our most popular editions is Cooking4Change. It features 101 Kiwi celebrities sharing their favourite recipes to help raise money for four charities that we support. This book was published two years ago and is still being sold through all good bookstores. Why cookbooks? What is it about them that people love? I guess - ‘Why not?’ I have spoken to so many people about cookbooks and the general consensus is that a cookbook is one book that people will still buy. It is also the ‘go to’ present that everyone loves. You know if you run out of gift ideas - buy a cookbook. Last year I visited ‘The Corsini Collection’ - A window on Renaissance at the Auckland Art Gallery, and on display were the lavish food menus of the Renaissance era, which with just a few ingredient tweaks, would not look out of place in a modern cookbook. Cookbooks are loved by every nationality, culture and creed. And there is always something warm and homely about seeing a kitchen with cookbooks. Tell us some more about your latest cookbook with a corporate focus. We have published two business cookbooks already with two more in the pipeline, but the latest is “What’s Cooking: Auckland Businesses Share their Favourite Recipes”. We showcase a select number of businesses - less than 70, we photo shoot each businesses’ team, write up a small profile on who they are and what they do, display their dish including ingredients and cooking method. Once printed each business gets a minimum of

60 books to give away as gifts to their existing and potential customers. It is a unique way of showcasing your business and very cost effective. Less than 0.20 cents per business to reach 15,000+ businesses. Will this be available for purchase? Our business cookbooks will not be available in bookstores - but only those businesses in the cookbook will get copies. So it’s exclusive. It’s no coincidence that a lot of business is done over food and most business network groups meet in cafes. Food is good for business. What is your favourite recipe? I love seafood and Italian food. So anything that has seafood and pasta is pretty much my favourite. The simpler the better. I love Paua and Whitebait too as a special treat when I can get it and afford it!

HQ a breath of fresh air There comes a time in every socialite’s life when you’re just sick of going to the same places, seeing the same people and putting up with the same bullshit music and average food! No matter how many times I go there, I have a great but unique experience – It’s just so special, just a spiritual (whiskey and tequila the specialties) place. Perfectly planned to offer spaces for everybody, even when its heaving, and trust me it does, it doesn’t feel overwhelming or cramped. With light pouring in from the marina and also from the exceptional light installations, HQ is just a breath of fresh air. Ok lets just go straight to the gossip – Leo Molloy, some people love him, others really love him, he’s been #1 in The Viaduct for a long time, and if you ask him he’s always got the time to talk, about how great he is. Ok so now that’s out of the way, lets get back to the main event – the food. A mixture of street food, happy food and understated high quality food, I promise the flavours don’t disappoint. A solid fuel lined fire, promises extra depth and caramelisation in flavour but the clever fusion of head Chef Jack Crosti’s Italian background and both men’s passion for simple honest cuisine, gives combinations that dance on the palate and spike taste curiosity. They have a dining menu that boasts stunning dishes like the Kingfish Ceviche or the Hanger steak that melts in your mouth plus a bar menu that has favourites like Pork Taco’s or Chilli Fried Chicken and not too leave out their wood oven pizzas such as the Sicilian Sausage (soooooo good!)

They also support and relish live music there too, offering a different line up five nights a week. From acoustic feels on Wednesdays and Thursday to full on party mode Fridays and Saturdays. On Sundays they have jazz sessions that brings the long lunching crowd and the Champagne girls out to play. It’s busy, it’s bustling, it’s noisy, really noisy, and it just feels like life is happening around you – its wonderful.

Bacteria Update Dishing Up A Clean Green New Zealand
My restaurant is opening soon and I’m silently (and not so silently) freaking out. A big concern is keeping my restaurant kitchen ‘A’ grade sanitary without using products that expose our diners to the harmful chemicals found in cleaning products. And so my search for said product began. As many know there are two types of bacteria, good bacteria and pathogenic (bad) bacteria. Pathogenic bacteria are known to produce toxins that can make you ill and in serious cases lead to disease. Our menu uses fresh, locally sourced produce, so a kitchen clean and free from any pathogenic bacteria left behind prior to cleaning and prepping our ingredients is essential. Lots of coffee and many google searches later I discovered Enzyme cleaners, which are non-toxic and biodegradable.
