INTRODUCTION
MORE THAN A GOLF CLUB Reading this latest edition of ‘The London’ reminds me of how much more there is to being a member of the club than just golf. The wonderful pictures of your happy families during the Easter and Mothers Day lunches really stand out, it’s great that so many of you chose to use the club on such special days. Equally the relaxed atmosphere around the introduction of the new BBQ weekends is delightful to see and reflects well the informal inclusive nature of our membership. The special affiliation with our reciprocal clubs is being used more and more now and it is pleasing to read that lots of you are having memorable experiences at partner clubs throughout the world, with new destinations being added on a regular basis.

Of course golf is the thing that binds us all together, so I would like to add my congratulations to all of you that have managed to win a trophy this year, the competition report shows just how broad a base our membership is, with winners young and old. Without a tournament this year our efforts have been focused on projects behind the scenes, such as; a new fleet of PowaKaddies, the replacement of the entire buggy fleet with the latest Club Car i3 model - complete with GPS technology, new air conditioning/heating and the replacement of our hot water system.
I would like to express my sincere thanks to everyone within the team at LGC who work tirelessly to make your time at the club a pleasurable one, as well as adding many thanks to you all for your support and friendship which makes our time at the club so enjoyable. EUROPEAN TOUR Records tumble at memorable BMW PGA Championship.
Pictures by GETTY IMAGES The 2015 BMW PGA Championship was a truly historic event, with four new records being set, including the tournament’s largest accumulative attendance. Almost 25,000 spectators were in attendance at Wentworth’s West Course on the final day to see Byeong-Hun An – affectionately known as “Ben” – crowned Asia’s first winner of The European Tour’s flagship event. Belying his tender age with an astonishingly mature display, the 23 year old South Korean set a tournament record with a 21 under par aggregate winning total. The 113,640 spectators who streamed through the gates of the Surrey venue were treated to five days of spectacular action, including five holes-in-one - another BMW PGA Championship record, an albatross, two players driving home in BMWs and a golfing master-class from the new champion.

The tournament was preceded by the BMW PGA Celebrity Pro-Am, now firmly established as the official curtain-raiser to the main event. A record 19,123 spectators attended this year to see a host of stars and celebrities from the worlds of sport, television, music and radio tee up alongside “the pros” for a fun-filled 18 holes.
Or maybe 19! One Direction’s Niall Horan made his Celebrity Pro-Am debut, teaming up with his friend and fellow Irishman Rory McIlroy, who won the BMW PGA Championship in 2014. The duo were joined by former Manchester United and England footballers Phil Neville and Paul Scholes, and whilst the illustrious quartet were unable to take home any team prizes, Horan still tweeted that the day had been “an incredible experience”. Neville and Scholes meanwhile admitted that nerves on the first tee were worse than taking a penalty shot at Wembley! Thursday saw another record attendance, with 20,956 spectators soaking up the Spring sunshine on the opening day of the £5 million tournament. And they were treated to two aces, the second of which was made by Andrew Johnston, who celebrated in exuberant fashion with a chest bump after winning a BMW M4 Coupe – the hole-in-one prize on the tenth.

On day two, McIlroy cited mental fatigue as a mitigating factor for his missed cut, but most of the other big guns navigated a safe passage through to the weekend, when the sun again shone on Wentworth. The action on Saturday will live long in the memories of anyone fortunate enough to be there, as Tommy Fleetwood started the fireworks by making only the third albatross in the history of the BMW PGA Championship on the par five fourth. Shortly afterwards, evergreen Spaniard Miguel Angel Jiménez stole the limelight back with a hole in one on the second – the tenth of his career, another European Tour record. Sunday’s final round produced two more holes-in-one: the first by South African Trevor Fisher Jnr, again on the second hole, and the second by England’s Chris Wood, who drove away with a BMW i8 after acing the 14th hole. But Wood’s smile was eclipsed by that of An, who closed with a stunning round of 65 to take the title – and with it a cheque for €833,330 – by six shots from Jiménez and Thailand’s Thongchai Jaidee. It was a suitably stunning climax to an enthralling week which An labelled “life-changing”. He added: “This tournament is like the fifth Major to me. It’s by far the biggest title I have ever won, and it gets me into a lot of events. I wasn’t expecting this. Even though I’ve been playing well all year, I never thought I would win this event. It was so nice to go into the last hole with a six-shot lead, because it meant I could relax and enjoy it. The 7,350 yards, par 72 course, originally opened in 2007, underwent extensive renovations prior to hosting the 2015 True Thailand Classic, with the rough thickened and the greens made firmer and faster to provide a true test for the cream of The European and Asian Tours. Andrew Dodt took the title by one shot from his fellow Australian Scott Hend and home favourite Thongchai Jaidee, but perhaps the real winner was Black Mountain itself, which in 2014 was named ‘the Best Course in Asia Pacific’ by Golf Monthly and, more recently, received a Diamond Award for Excellence from the International Association of Golf Tour Operators. The European Tour membership were certainly impressed, with Ryder Cup star Thomas Bjørn labelling the resort’s lightning fast greens “the most interesting I’ve seen for a long time”, whilst hugely popular Spaniard Miguel Angel Jiménez called the course “a great test”.
Those sentiments were echoed by Indian Shiv Kapur, who spoke for many when he said that Black Mountain “is a beautiful course in a beautiful setting, and we’re all very lucky to be here.” Whilst the five-star property was new to some, to many of The European Tour’s Swedish contingent it is a home from home, with the likes of Johan Edfors, Rikard Karlberg and Jaidee all escaping the harsh conditions in their homeland and relocating to Hua Hin for their winter practice. In 2014, London Golf Club celebrated 20 years of history and to maintain the best possible facilities to our members and guests, a new air conditioning and boiler system has been installed. This will allow us to keep a five-star environment throughout the year, not only to golfers using the Clubhouse but also to Weddings, and Meetings & Events attendants.
AIR CON SYSTEM As some of you may be aware, the R22 refrigerant gas has been banned so the management team decided to replace the whole system which allows us to achieve 30% saving on energy.

The selected company to provide the units was DAIKIN, the market leader on air conditioning. All units use the latest technology and are computer controlled with remote access. For the first time since the Clubhouse was built the Sir Henry Cooper Room has also been allocated with a unit offering an even more welcoming facility during the summer. For a safer transport of all units we used a 50 meters high crane which was provided by the project contractor.

NEW BOILERS FOR HOT WATER SYSTEM Due to age, we started to plan to replace our obsolete equipment with heat-on-demand boilers. These were supplied by LOCHIVAR, market leaders. Our old hot water vessels, which stored 20.000 litres at constant 60 degrees was extremely energy wasteful.

The new system is retained for central heating only and the highly efficient new pumps, allow us to save around 50% on electricity consumption. The new pumps also permit a closer and easier control of temperatures. On both projects we are looking at longevity and we expect it to be used for the next two decades.

GARDENING At London Golf Club every need is catered for and no detail is missed.
BY CHRIS FIFIELD “A quiet year this one…” Words uttered to me this spring. After replying with a polite nod and a smile to myself I got back to compiling the infinite jobs list for the gardens and landscaping this year. True, we have no major golf tournament for 2015 at least, but all that means is an opportunity to switch focus to other projects.
This type of equipment is increasingly being used by the National Trust as it enables work to be done amongst visitors with minimal disturbance. Hence, for us, they are quieter to use around the clubhouse and lighter with less vibration on your hands compared to the petrol equipment. More importantly they are making my life easier as I get dangerously close to 40!
The fruits of our labour from the extensive woodland work are becoming clear with ever more areas of the woodland floors producing impressive carpets of bluebells. The area to the left of the 9th Heritage saw a great deal of clearance work and is looking all the better for it. It is by no means finished, but the amount of work that was achieved by our team, in a relatively short space of time has made a dramatic impact.
My new recruit Sam has hit the ground running and seems to revel in the challenges of such a diverse role. One of the first tasks was to prune back all of the vibrant dogwood stems…before they bud up. It seems criminal to be hacking back some of the only late winter colour left, but it is a necessary evil to ensure fresh, young growth which then will produce a vibrant and dazzling display for next winter.
Using a wood chipper to mechanically clear the lighter branches saves time and reduces the need for bonfires. As an added bonus we have saved some of the chippings and have begun using them to cover the woodchip paths that cut through the woodland. We also contract tree surgeons in for the trickier trees as well as updating our chainsaws and equipment. This is all really paying off in terms of quality and efficiency. In addition, we have increased our range of cordless, battery powered hand tools with a pole saw, blower and long arm hedge cutter, which are all proving up to the task.
You may have noticed that we have taken out a small section of our cloud-shaped hedge along the driveway and replaced with a selection of new plants. The reason was the break up the long stretch of green with some winter colour using a relatively new species – Cornus sericea ‘Cardinal’ that has distinctive, bright, coral coloured stems and holds its colour in the winter even when left to grow tall, unlike other species.

black berries and looks good on a woodland edge. As does the common fern used, (Polypodium vulgare). Another area we have revamped is behind the 1st tees Heritage, or as you come off the 9th green and around the corner. The evergreen, Euonymous was too close to the Yew hedge and as a result the Yew was suffering from lack of light and losing its shape so we replaced it with a simple, staggered strip of Stipa gigantea grasses and more dogwoods to tie in with the surrounding planting scheme, and to remain as low maintenance as possible. Once established the effect of these golden grasses set against the rich, dark green Yew hedge will be stunning. I’m thinking of using these reliable grasses as a softer alternative to evergreen hedging elsewhere, as the effect of the seed heads dancing in the breeze or glistening in the frost at dawn, is as good as any exotic species.
We have also put in Sarcoccoca hookeriana, a fragrant evergreen with creamy white flowers in winter or spring, followed by purple

The bagdrop has been a focus of re-thinking the planting scheme. A small but crucial area near the bagstands has been planted up. More will be added with bulbs and bedding, but for now it looks a lot tidier. After much deliberation it was decided to plant Osmantus burkwoodii. This is evergreen, tough, hugely fragrant, has a neat growth habit and abundantly flowers in April / May. It’s an excellent specimen plant for key areas and can be trimmed or left to naturally feather. We underplanted with Stachys ‘Big Ears’ for its contrasting foliage and texture and Stipa tenuissima for a soft feathery edge. Behind this we have used a dry shade loving plant. A relatively newly available species, Epimedium ‘Sphynx Twinkler’, which has an exotic flower and unusual holly-like foliage. This is all an example of right plant, right place. Opposite to this area is the next phase. Currently this is adorned with a temporary display of tulips and pansies. Once these and the summer bedding have retired the whole area will be revamped. To try to knock back the invasive weed the bed needs to be cleared first and then replanted with a complimentary palette of shrubs, herbaceous perennials, bulbs, grasses and bedding, so watch out for this over the next twelve months. On the subject of summer bedding, I’ve tried to tweak the range of plants again this year and will introduce some newbies. As well as the regular Cosmos bipinnatus ‘Purity White’, look forward to ‘Seashell’ and ‘Candy Stripe’. I’m also trialling Rudbeckia lacianata ‘Goldquelle’ for its late flowering, height and unusual blooms. I hope everyone enjoyed the early display of blooms near the Spike Bar terrace this spring. The blue and white hyacinths were very showy and the daffs did their usual good job, The succession of displays from the snowdrops and crocus through to the Alliums has timed itself beautifully with one species rearing its head as another fades until the hardy perennials pick up and fill the void until autumn.

GARDENING
It was good to complete our chef’s requested herb bed this spring to provide the kitchens with fresh herbs. After removing a small amount of thyme, oregano and mint from our restaurant gardens, I did promise we would replace these in a new location. For inspiration, our two head chefs and I took an afternoon to visit Iden Croft herb garden in a sunny Staplehurst. It was early in the season, however they still had an extensive choice of culinary and medicinal herbs that we could enquire about, sniff and indeed taste before we purchased. Over the winter period I had constructed a raised sleeper bed with plenty of sub-drainage and a nutrient rich ‘veggie mix’ topsoil. I ameliorated with 6mm of horticultural grit. We sited this bed in as sunny a location as we could find and so far things are growing nicely. There is a selection of staples such as thyme (Thymus vulgare), chives (Allium schoenoprasum, sage (Salvia officinalis) and oregano (Oreganum vulgare).

We’ve added some edible Viola flowers and a good culinary lavender for the chefs to play with so don’t be alarmed if you have a garnish of flowers on your salad soon. I blame Masterchef! I tried them out on my toddler… Let’s just say it’s an acquired taste for such a young palette! Herbs will stand up to the drier conditions that we have had already this year. However, some of the trees in the clubhouse car park have been struggling in the last couple of years. The canopies of the Ash tree in particular have looked sparse and weaker than they should so last year we installed some drip feed hose along these tree lines so that we can give them a boost in drier months by connecting them up to our hose points nearby. Hopefully this and some feed should improve their health. For the extremes of climate change we have introduced three Agave americana ‘Marginata’, succulents on our function room terrace, a handsome plant that is ok down to 5 degrees (just tuck
away near the building during the winter) and requires little or no watering so great for a sunny courtyard and good at discouraging unwanted attention with its spiny edges and tips. I’m not convinced to what extent our seasons are changing due to climate change and would not profess to be any sort of expert but us gardeners are an adaptable breed and with a worldwide selection of plant species at our “green little fingertips” have the opportunity to select plants that are more likely to survive our climate, soils, availability of labour and time rather than stubbornly sticking with traditional varieties and wondering why it is such a struggle. Gardening will never, and should never, be easy but where possible it seems savvy to use plants that will hold their own in their location. Despite all the temptations try to use plants that favour the conditions you already have rather than battling to control and manipulate these conditions. Try not to battle unnecessarily with nature, it usually wins!

Finally the 2015 season is upon us, in what turned out to be a windy but lovely sunny day.
The spring trophy got off to a blustery start although the sun was shining for the majority of the day.
The first round of the Jack Nicklaus trophy saw twenty-six men take to The Heritage and battle it out.
The Heritage, always more challenging and tougher to score around, was once again showing the lower scoring compared to the International trophy. Martin Sterling was a part of the 2nd group in with a solid knock of 34pts, Martin ended up 4th through having a better back nine than Sean Scotcher who was placed 5th, but was pipped to 3rd by Stephen Middleton 34pts also.
In tough conditions it was Jason Maloney who led after round 1 with a great round of 38pts, the only man to shoot better than his handicap. Chasing Jason was Mark Maidment and Mark O’Shaughnessy who were both 4 back.
55 competitors took to the course, and it wasn’t long before Mark Wesley posted a good score of 38 points, however the International trophy has been renowned for its high scoring and Peter Ruffoni soon came in with 39 of his own points to take over as leader in the clubhouse. Not long after that Charlie Parker carded a fantastic round of 4 under his handicap of 3, including 3 birdies and 1 bogey to take over the lead with 43pts. Unfortunately for Charlie in the group directly behind him Daryl Carter was posting a great score of his own, 45pts to take victory and his first competition win at the London Golf Club.
In the middle of the pack, Mike Hart was putting together a good score of his own, ending up in 2nd place with 35pts. Coming in with a great score of 37pts was a new member Lee Baillie, to take this first Competition win and get his name up on the wall early into his London Golf Club membership.
INTERNATIONAL TROPHY
Round 2 began and it was Nick York and Mike Hart who had the best rounds, both managing great scores of 34 points in tough conditions and finish 2nd and 3rd respectively. The task set by Jason Maloney was also too tough as he managed another good round of 32pts, and went on to take the title by 3 points his maiden win as a London Club member.

Round 1 of the Captains Cup held on the International was extremely tight with only 2 shots separating the top 8. Ryan Dalton shot a super 76 gross, but was one off the leader Suchin Yooyai who also had a great round.
On Saturday the 4th of July the Chairman’s Trophy saw 38 men take to the Heritage from the white tees on a lovely summer’s day.
This year The Club Championship saw 22 competitors brave the blue tees on both the Heritage and International.
Only 5 points separated the whole of the top 10 with Neil Franklin just beating Peter Ruffoni to 4th place with a better back 9 of 19pts.
The competitors took to the International first on a weekend where the weather was boundto make the courses even tougher. It was Graham Kerr that led the way after round one with a solid round of 5 over par, 1 clear of Charlie Parker and 2 ahead of Connor McCauley and James Smith.
In round 2 the field took to the Heritage and the scoring proved much tougher this time. The leader going into this round managed a good score of 77gross that secured him 3rd spot, pipped to 2nd only on countback by Ryan Dalton who managed to better his 5th place from the same event last year. This years winner however was Connor McCauley, who started round 2 in 6th place, but played 2 consecutive steady rounds of nett 73s to take the glory.
The top 3 all shared the total of 37 points, it was Jan Pretorius that took 3rd with a back 9 of 19pts. Connor McCauley, a name that has been around the top of the leaderboard all season managed a slightly better back 9 of 21pts. But taking first place with a fantastic 22pts (1 over par gross) on the run in was Nicholas McKnight.

Round 2 on the Heritage saw only one man break 80 in difficult conditions. The halfway leader managed an 83 to finish up 4th overall. It was the chasing pack that took the top 3. Connor and Charlie both scoring 81’s to finish 3rd and 2nd respectively. But it was James Smith with a great round of 79 that saw him lift the trophy, in his maiden win at the London Golf Club.

Meet David Marshall, the man behind one of London’s most successful jewellery businesses. From manufacturing for luxury clients to opening a beautiful boutique in Mayfair, David reveals the secrets of this alluring industry to London Golf Club. London Golf Club: Tell us about life as a goldsmith when you started out in London 35 years ago… David Marshall: The workshops could be dull and dingy places, often in basement or attics around Soho – luckily for me I had a window! Back then I was working for a small jeweller called E J Shewry on the third floor of 48 Carnaby Street; they used to hang me out of the windows to clean them! Soho was a great place to work, full of creatively diverse people and old English family trades, from hat makers and furniture makers, to jewellers and dressmakers. It was a hive of talented traditional English craftsman. LGC: Soho is still very vibrant, but what happened to the more traditional trades?

DM: Unfortunately, many old English makers were driven out of London due to the recession in the 1980s. The rent prices went up so fast that family businesses couldn’t afford to remain there. I also think many of them didn’t survive because they didn’t understand the importance of apprentices to keep tradition alive. I wouldn’t be where I am today if I wasn’t taken on as an apprentice. Luckily, apprenticeships are being recognised and revived again in London. I have mentored eight apprentices through my own business, David Marshall London, and all but one has remained in the jewellery industry.
LGC: The David Marshall London boutique offers luxury jewellery from £1,500 to £350,000, and a superior bespoke service. Tell us more about this… DM: Many of our clients want unique pieces that no one else has. All bespoke David Marshall London jewellery is designed by hand in our Mayfair boutique and made in our London atelier. Our goldsmiths and stone setters are very talented. I often invite my clients to visit and see their jewellery being made, which makes the whole bespoke process much more personal. LGC: How does David Marshall London complement other luxury British brands? DM: I consider my work aligned with leading British companies creating superior products, such as Rolls Royce cars and Boss & Co. gunmakers. For me, fine jewellery should be crafted beautifully but also intelligently; for example, knowing when to use heavier, hardwearing platinum and when to use more lightweight white gold. All David Marshall London designs celebrate the diamonds and gemstones they hold, and my atelier can set more than 10,000 stones a month, some of which are just 0.5mm in size. Some of my designs have up to 7,000 stones, so you can imagine how much time and concentration goes into them. For me, this is fine jewellery. Each piece is crafted to stand the test of time. LGC: You make all of your jewellery in London. Why is this important to you? DM: It gives me an advantage over other jewellers as I can watch over the designs from start to finish and guarantee the standard is kept extremely high. My chief designer says she has never worked with someone with such high standards and sharp eye for the tiniest detail. If one detail is wrong we will remake the whole piece again.

FOUR SEASONS FAIRWAYS MEMBERS GUEST DAY On the 12th of May the Heritage course hosted the first Guest Day of the year, when members had the opportunity to welcome their guests at the Club for a day to remember. As usual, a full english breakfast was served in The Restaurant before all teams, consisting of one member and three guests, had a briefing session where our Director of Golf, Paul Stuart, presented the rules of the day.

Played in a shotgun format, players were fortified during the day with the oriental spiced gin, Opihr, one of the event sponsors. A Portuguese themed meal prepared by our Chefs was served before the prize presentation, which was another good opportunity for both members and guests to socialise and talk about their experiences on the course. For starter we had carpaccio of octopus with garlic paprika, olive oil and a salad of a black olive, lemon, tomato and crispy capers. As main, braised pork cheeks with creamed mash potato, chorizo, cabbage and peas with a madeira jus. The winning team won three nights’ accommodation in a luxury villa at Four Seasons Fairways in Quinta do Lago, Portugal, one round of golf at Vale do Lobo and one Spa treatment.

The Restaurant & Henry Cooper Rooms were beautifully decorated on Sunday 15th March to celebrate a very special occasion: Mother’s Day. Before being directed to their table by our Event Coordinator, members had the opportunity to socialise with their guests in The Long bar with their favorite drink. With regards to the Meal prepared by our Chefs, the Starter could be chosen from Spring Leek and Potato Broth with a Cheddar Crouton; Nicoise Salad of Smoked Tuna, Baby Leaves, Quail Egg, Sunblush Tomatoes, and Kalamata Olive Tapenade; Butterflied King Prawns with Chorizo Panzanella Salad and Saffron Aioli or Rillette of Confit Duck with Brioche Croutes and Peach Compote. The main dishes prepared were Rare Roast Sirloin of Beef with Yorkshire Pudding, Chateau Potatoes, Broccoli, glazed Carrots and Red Wine Jus; Pressed Belly of Pork with Mustard Mashed Potatoes, Black Pudding Croquette, Caramelised Apples and Parsnips and a Calvados Jus; Tikka spiced Monkfish with Mussels, Saffron Potatoes,

On arrival, all guests enjoyed a drink in The Long Bar with a great view of the golf course, on a very sunny Sunday. Some of the options prepared by our Chefs for Starter included Hot Smoked Salmon with Golden Beetroot, Horseradish Potato Salad and Baby Watercress, or Pressed Belly of Pork with Apple and Frissee Salad, Apple Crisp and Balsamic Reduction.
For the Dessert lovers, a hard choice had to be made between Dark Chocolate Mousse with Raspberry Sorbet and Chocolate Soil; Mango and Passion fruit Panna Cotta with Coconut Macaroons; Peanut Butter Parfait with Toasted Brioche, Caramelised Banana and Jelly or Winterdale Cheddar, Kentish Blue, Somerset Brie with Pear and Cider Chutney and Walnut Bread. One of the most waited for moments of the day was The Animals attraction. This was a great opportunity for children and parents to have a picture taken with a Rabbit or a Turtle, which was a different and fun part of the event.

Marqués de Riscal is the oldest winery in Rioja. Founded in Elciego (Álava – Spain) in 1858 by Guillermo Hurtado de Amézaga, from the outset it has been a point of reference in the winemaking business at both national and international level. By: Paul Stuart, Director of Golf Hybrid Health Check Hybrids are miracle clubs for a lot of players and should be the ‘go too’ clubs rather than trying to hit long irons. The centre of gravity in the clubhead is set back from the face so you can launch the ball high and square the club, more easily than you can with a long iron, even from the rough. But just because hybrids are user-friendly doesn’t mean you don’t have to take some care in how you swing them. Subtle adjustments in the setup and ball position will promote the best chances of success.
1. DON’T LEAN BACK

Even though hybrids are very forgiving, many players still don’t trust the combination of loft and centre of gravity to get the ball up in the air. Tilting your shoulders away from the target, trying to lift the ball in the air is not the way to go. Trying to sweep the ball with a ball position to far forward, is also a common mistake.
2. SET YOUR HAND POSITION You will notice how the shaft of the club is now vertical as I have set my hand position more forward. The ball is positioned slightly further back in my stance with my shoulders level. The lie angle – the angle of the shaft to the clubhead – is a huge factor as most hybrids are built to compensate for a slice. If you find yourself fighting a hook, stand a little closer with your hands in a higher position. For faders, the opposite can help – bend over, hands lower.

Your hybrid may look like a fairway wood but you need to play it the way you would an iron. From the correct setup described earlier, go ahead and make your backswing staying centred over the ball. Through impact, focus on a downward blow (even making a little divot). Focus on moving your right side through the ball and finishing high with all your weight on your left leg.

RECIPE Carpaccio of Octopus with Garlic Paprika Oil and a Salad of Kalamata Olive, Lemon, Tomato and Crispy Capers
“Carpaccio�: an Italian dish traditionally of raw, seasoned, wafer thin meat or fish.This version uses octopus cooked in a ham stock for full flavour and served thinly sliced with an elegant Mediterranean salad. Prepared by Lewis Duggan, Sous Chef
INGREDIENTS Serves a minimum of 8 people For the Octopus: 1 whole frozen Octopus 3 Pig Trotters 2 bulbs Garlic, halved 3 large Onions, roughly chopped 5 sticks Celery, roughly chopped 2 Leeks, roughly chopped 5 sprigs Thyme 2 Bay Leaves Parsley stalks 8 Peppercorns For the Garlic Paprika Oil: 3 Garlic Cloves, crushed 100ml Extra Virgin Olive Oil Smoked Paprika

RECIPE
INSTRUCTIONS Preparing octopus is surprisingly straight forward and as a larger cousin of the squid, most of its meat is in the tentacles. It does, however, need tenderising before cooking and freezing for a minimum 48 hours before defrosting in the fridge helps this tenderising process. For this reason you may prefer to buy frozen whole octopus from your fishmonger, which has the added advantage that it has already been cleaned for you too. Once defrosted, run the octopus under cold running water and check the suckers for any remaining dirt. You can pick this out with a toothpick. The octopus is now ready to cook.
Once cooled enough to handle, remove the octopus from the pan onto a clean chopping board. Slice through the bottom of the neck of the octopus just above the tentacles to remove them in one piece. Where the tentacles join to one another you will find the small, black “beak” of the octopus. Cut between two tentacles to separate them and remove the beak, discarding it. You can then separate each tentacle from one another by slicing between them.
When the stock is ready, bring the liquid up to the boil once more and add the octopus whole. It will rise to the surface and turn a deep pink colour fairly rapidly. Turn the heat down until the stock is just simmering and cook gently for 45 minutes, ensuring the octopus stays submerged. After the 45 minutes, pierce the thickest part of a tentacle with a knife. It should feel very soft. If there is a little resistance, carry on cooking for another 10 to 15 minutes until there is no resistance and the meat feels very tender. Remove the pan from the heat and allow the octopus to cool in the warm stock. This helps the meat to relax ensuring it stays soft.

Tip: This recipe will make a small bowlful of tapenade. Keep in an airtight jar sealed with a small layer of olive oil for up to 4 weeks. It makes a wonderful salad dressing for tomatoes and mozzarella, or alternatively brings oily fish such as sardines and tuna to life. To prepare the crispy capers you will need firstly to drain them from the brine and dry them thoroughly in a low oven for half an hour. Meanwhile, add about an inch depth of vegetable oil to a small pan and heat to 180°C. Add the dried capers to the oil and deep fry. They are done when they open out into little flowers and rise to the surface. Drain onto kitchen paper and allow them to cool and crisp.
The key to the tender meat in this recipe is the slow, gentle poaching of the octopus. First of all you will need to cook the ham stock. In a pan large enough to fit the octopus, add the pig trotters, garlic, onions, celery, leeks, thyme, bay leaves and peppercorns. Chop the stalks off a small bunch of parsley and add these too, reserving the leaves for later. Fill the pan with water and bring to the boil. Once boiling, skim off any scum that rises to the surface and then reduce to a simmer and cook for 3 hours to develop the flavours and intensify the stock.
For the kalamata olive tapenade, add the olives, sundried tomatoes, garlic and parsley with a pinch of salt and pepper to a food processor or liquidiser and blend until a smooth paste has formed. Stir in about a tablespoon of olive oil to loosen the paste and set aside.
One at a time, take each tentacle and rub off the pink skin with your fingers, leaving only the white meat and suckers attached. Season the meat with cracked pepper and lots of chopped parsley. While still warm, wrap the tentacles tightly together in clingfilm, alternating fat and thin ends so it has an even width all the way along. Chill for a minimum of 4 hours until the tentacles hold together. While the octopus is setting prepare the infused olive oil. In a small pan gently warm the extra virgin olive oil with the crushed garlic cloves and a pinch of smoked paprika for 5 minutes. Remove from the heat and allow the pan to sit for 30 minutes to infuse further before passing through a sieve to remove the garlic.
Finally you must prepare the tomato, lemon and spider endive. Quarter the tomato and remove the seeds. Dice the remaining flesh into medium sized squares and set aside. Segment the lemons, taking care to remove any pips and pith. Add these to the tomato. Then pick a few of the inner yellow leaves of the endive for garnish. You are now ready to plate the dish. Leaving the octopus in the clingfilm cut a slice roughly ½cm thick. You will find it should just hold together. Remove the clingfilm from the outside and lay in the centre of the plate. Sprinkle the top of the octopus carpaccio with sea salt, cracked pepper and sherry vinegar. Liberally spoon the infused garlic paprika oil over the top. To finish, garnish around the octopus with the olive tapenade, tomato dice, and lemon segments, adding the spider endive and a few crispy capers before serving.
