BUFFALO CHICKEN WRAP Borrowing from the ever popular Buffalo Wings, these Buffalo Chicken wraps will quickly become a stern gating favorite. Make ahead, they are great cold or you can reheat in a microwave for a warm treat.
Ingredients 12 Oz. bottle of Crystal Hot Sauce 4 Oz. stick of salted butter 1 Tsp. garlic powder 3 Tsps. extra virgin olive oil 2 Lbs. skinless boneless chicken breasts, sliced 1 Tsp. pepper 8 10-inch flour tortillas 4 Cups shredded lettuce 2 Stalks of celery, diced 12 Oz. bottle of Marie's Chunky Blue Cheese Dressing
Directions In a small sauce pan pour in the entire bottle of Crystal Hot Sauce. On low heat add the stick of butter, and garlic power. Stir over heat until the entire stick is melted. Do not boil. When the butter is completely melted remove from heat. In a large skillet over medium heat, add the olive oil and chicken strips, cook and stir until the chicken is no longer pink in the center and the juices are clear. Salt and pepper to taste. Pour the hot sauce over the cooked chicken and stir to coat all the strips. Lay out the 8 tortillas on a flat surface. Place lettuce, celery and Marie's Chunky Blue Cheese Dressing in layers. Add the coated chicken strips and fold in two ends of the tortilla on top and roll the wrap burrito-style. Serve on plates, they can get a little messy.

BEER BARREL POLKA BRATWURST This simple recipe will get the gang fired up. The brats can be prepared ahead or in the galley. For this recipe you will need a marine grill like Magma’s ChefsMate Connoisseur series gas grill.
Ingredients 6 12 Oz. bottles or cans of beer 2 Large onions, thinly sliced 1 Cup of butter 1½ Tsps. of pepper 2 Lbs. fresh bratwurst 10 Hoagie rolls
Directions Poke the bratwurst with a fork several times to avoid the bratwurst from bursting while cooking. Pour the beer into a large stock pot with the bratwurst, onions, butter and pepper. Over medium heat simmer for 15 to 20 minutes. If preparing ahead let the bratwurst and onion cool and place in a sealable container and keep refrigerated until ready to grill. Lightly oil the grate of the grill. Place the bratwurst on the pre-heated grill searing the bratwurst, turning occasionally. Cook for 10 to 20 minutes. If possible, reheat the onions in foil alongside the bratwurst. Immediately serve the bratwurst and onion on a presliced hoagie roll. Serve with stone ground mustard. Turn on the polka music and enjoy.

Ingredients 2 Cups peanut oil 10 Medium flour tortillas 1 Tbsp. salt 8 Large ripe tomatoes 1 Medium green bell pepper, diced 1 Medium red onion, diced ½ Cup fresh cilantro 1 Medium fresh jalapeùo, chopped fine 1 Medium garlic clove, minced fine 1 Tsp. ground cumin 1 Tsp. ground black pepper 1 Medium lime, juiced
Directions In a large skillet pre-heat the peanut oil to 350 – 365 degrees. Slice the tortillas into eights forming wedges. Place the individual wedges into the hot oil for 1 minute. Turn the wedges over, cook for another 30 seconds. Remove from the hot oil when golden brown. Place on paper towels and salt to taste immediately. Repeat until all the wedges are cooked. Cut the tomatoes into quarters and remove seeds. Lightly salt the tomatoes and place in a colander to drain for 30 minutes. Finely dice the drained tomato quarters and place in a large bowl. Add the diced green pepper, diced red onion, chopped Jalapeno, minced cilantro, minced garlic, ground cumin, black pepper and the juice of 1 lime. Cover the bowl and place in the refrigerator. This recipe is great to make ahead because it is best served after the ingredients have a chance to blend overnight.

Ingredients 15 Oz. box of Nabisco Nilla Wafers 1 Cup of Skippy chunky peanut butter 2 Sticks of softened salted butter 2 Cups of confectioner's sugar 12 Oz. bag of Nestle Semi-Sweet Morsels ½ Cup of Skippy creamy peanut butter
Directions In a large bowl crush the full box of Nilla Wafers. Add the cup of Skippy chunky peanut butter, softened butter, confectioner's sugar and ½ of the bag of Nestle Semi-Sweet Morsels. Stir until well blended. Press the mixture evenly into an ungreased 9x13 inch pan. Set aside. In a suitable bowl combine the other half of the Nestle Semi-Sweet Morsels and the ½ cup of Skippy creamy peanut butter and warm over simmering water or in a microwave for 1 – 2 minutes. Stir until smooth. Spread over the prepared base evenly. Refrigerate or place in a cooler for at least 1 hour before cutting into bars.
