Assignment #7: In a 1-2 page paper, analyze the link between energy and food choices. Read pages 98-109 about the links between foods for energy and exercise. I plan on passing this along to my education colleagues. What a surprise to learn that lettuce is an energy food. Explain why mesclun is so critical to a healthy diet. Mesclun is critical to a healthy diet for providing antioxidants to clean our bodies of toxins. Keeping toxins out of our bodies improves the functioning of the organs including the brain. What can chocolate and coffee do for a healthy diet and how do they keep you happy? Coffee increases memory and reflexes. Dark chocolate improves mood and increases brain processing speed. Being more cheerful and able to think through challenges quicker is a definite benefit to drinking a cup of coffee and having a couple ounces of dark chocolate. I think my wife will be happy to find this out! What nutritional bonus do we get from eating walnuts? Walnuts contain fats that protect the neurons in our brains. Additionally, they contain a variety of vitamins and elements, one of which is Vitamin E which cools the brain and prevents inflammation. Low levels of Vitamin E has been linked to depression. Walnuts are an easy food to eat, yet the benefits are quite high. The surprise of this chapter is reading that potatoes and beans are important energy foods. Explain misinformation that has been spread about each of these foods. Red and black beans contain anthocyanins that improve the communication between brain cells and improve the effects of aging. Potato skin is one of the few foods that contains iodine, which
is essential for supporting the thyroid gland, which supports mood regulation. Frying potatoes, however, causes anthoxyanins to change into a carcinogen. The misinformation is around the skin of the potato. Americans just don’t eat enough of the skin. Small potatoes are a better skin source for eating foods. Check out the Energy Boosting Foods. What can you do to consistently incorporate these foods into your diet plan? The first step to consistently incorporating these foods into my diet plan is to find a good store and farmers market so that we can find good quality foods. The second step in my diet plan is change some of my “staple” dinner foods, so that I am not reaching for the foods that are poor choices any more. We already purchase several of the energy boosting foods, however, I think we can more strategic on their preparation and the quality of the product.
