Ingredients:
1.5 oz. Avion Silver 1 oz. Giffard Pamplemousse Liqueur (or other grapefruit liqueur) .5 oz. guava juice 2 dashes Scrappy Lime Bitters 2-3 oz. seltzer water Garnish: 1/2 salt rim and grapefruit wedge
Garnish a high ball glass with salt rim and add ice. Build drink over ice and then roll by pouring the drink back and forth from the glass to a shaker tin about six times. Add grapefruit wedge, serve and enjoy!

This modern take of the classic is not a replacement but a nod to the original amazing drink. We start with blanco tequila, just like the original. Bright, floral, and slightly spicy, it is backed by a familiar earthiness yet is always crisp and clean. The traditional grapefruit soda or juice is replaced by Pamplemousse (a French grapefruit) liqueur. Slightly sweet and full of bright citrus, this liqueur makes for an exceptionally delightful backing to the tequila. The traditional citrus tones are further heightened by lime bitters. Everything is wrapped together with the fruity and crisp guava juice, while sparkling water lightens the flavors just enough to add refreshing vibrance. The Frequent Flyer is ready to go. Taking inspiration from the original both in flavor and in name (Paloma translates to Dove – a migratory bird) the Frequent Flyer is ready to be enjoyed frequently.
SUNSET TO SUNRISE
(TEQUILA SUNRISE)
Glassware: Rocks Glass
Ingredients:
1.5 oz. Vida de le Muertos Del Maguey Mezcal .75 oz. Barrows ginger liqueur .25 oz. tart cherry juice 1 oz. Simply Light Orange Juice 1 oz. Simply Light Lemonade Garnish: Cherry
Directions: Combine ingredients over ice, shake, and strain over fresh ice into a rock glass. Garnish, serve and enjoy.
Made forever famous on the infamous Rolling Stones tour of 1972, the Tequila Sunrise is a drink that catapulted to the foreground of cocktails. A mix of tequila, orange juice and sweet grenadine, the drink is easy to make and easy to drink. Although tough to upgrade (as classics are classics for a reason), for a modern touch we can take out some of its calories and add a bit of flavorful flair that was not available in the 70’s. First, the tequila is replaced by mezcal. Earthy, lightly smokey, but full of mineral and citrus flavor, the mezcal brings a very large depth of taste to create a base foundation. To pair alongside the natural flavors of the mezcal, we have ginger liquor. The Barrow’s is a particularly strong one, noted for the ginger flavor up front, and lack of sugary claw. Traditional OJ is added, but this time it’s a calorie friendly Simply Light. Simply Light lemonade is then added for body, and the traditional super sweet and sugary grenadine is replaced by natural tart cherry juice (a powerful antioxidant). Just as a good song is never out of style, the Sunset to Sunrise, is one that can be enjoyed over and over again.

Ingredients:
1.5 oz. Olmeca Altos Reposado 1 oz. Italicus .75 oz. lime juice .25 oz. palm sugar syrup 2 dashes lavender bitters Garnish: Orange Twist
Directions: Combine ingredients over ice in a shaker tin. Shake, strain into a chilled cocktail glass, garnish, serve, and enjoy.
No tequila section of a cocktail mixlist could ever be complete without the G.O.A.T. – that is the Margarita. With an often-debated history (as many people want to claim its invention), the fact is that the Margarita is the number one ordered cocktail in America. In its purest form, the classic margarita is simple, elegant, and enlivening. A renovation of this classic is no simple task. It must be done with intention and respect. Reposado tequila starts the foundation. The light vanilla, baking spices and oak flavors create a great accompaniment to the flavors that will be added. Traditional orange liqueur is replaced by Italicus, which imbues the drink with the flavor of bergamot. Lime juice adds a citrus backbone and cuts sweetness from the drink, while the coconut palm sugar syrup brings an earthy and comforting taste. To pack just that little bit extra of a punch, lavender bitters are added. The floral quality of the bitters heightens the bright citrus of the drink. While paying respect and homage to the original, the Daisy all Day is a tipple that, like the original, can be ordered over and over again.
