INNOVATING IN A NEW, EXCITING CULINARY WORLD 4
Innovation has long been a Johnson & Wales University hallmark. From our founding by two visionary women who did not have the right to vote to our recent decision to create a College of Health & Wellness, JWU has boldly anticipated market trends and societal needs. That was true 43 years ago when we entered the arena of culinary education. Since, we’ve become a world leader in the food economy. We were the first to offer bachelor's degrees in Baking & Pastry Arts, Culinary Arts, and Culinary Nutrition. Now, we find ourselves pivoting once again, building on immense strengths to forge new pathways in the food sector. Today, our culinary students, faculty and alumni are working in fields where food intersects with science, medicine, health and wellness. We joined with Tulane University’s School of Medicine to implement a fully integrated, comprehensive joint curriculum for doctors, medical students, chefs and the community focused on the significant health role that food choices and nutrition play in preventing and managing obesity and associated diseases. We’ve teamed with the Warren Alpert Medical School of Brown University to explore the broad area of inquiry where food, nutrition, medicine and public health meet. Our Denver Campus collaborated with the University of Colorado School of Medicine to host a Culinary Medicine course that strengthens future physicians' abilities to counsel patients on health and nutrition.
Recently, JWU invested in a new venture, The Food Innovation Nexus (FIX), to develop therapeutic new products that can provide consumers with health benefits and that can help manage symptoms and disease states. On any given day at the FIX, teams of chefs, scientists, students, medical experts and others are collaborating in this exciting new arena. JWU has carved out an important and commanding position in the culinary world. I hope you enjoy the stories that follow illustrating how a bold and creative approach to a centuries-old profession can make a difference. In closing, I'm proud to dedicate this issue to Morris J.W. Gaebe ’98 Hon., JWU trustee and chancellor emeritus. “Mo,” who died recently at age 96, pioneered the university’s exponential growth. Personifying the “Greatest Generation,” he sought opportunity in risk, took chances with challenges, and created alternatives to barriers, forming the groundwork upon which generations of JWU students, faculty and staff flourish. Since its inception more than 40 years ago, Johnson & Wales University’s College of Culinary Arts has become a world leader in culinary education with innovative programs that provide students with an excellent education and a deep connection to the industry. JWU was the first culinary program in the U.S. where pastry arts could be studied as a distinct discipline, students could receive a bachelor’s degree, and the science of dietetics combined with culinary to create an entirely new job category — chef-dietitian.

JWU IS REDEDICATING ITSELF TO NEW CULINARY PROGRAMS THAT SPEAK TO 21ST-CENTURY NEEDS. “The impact of that degree program on the industry has been nothing short of amazing,” says Providence Campus College of Culinary Arts Dean Peter Lehmuller, EdD. It has opened career opportunities for students in athletic performance, personal chef services, dietetic and health-related fields as well as product research and development. After years of rapid expansion, JWU is rededicating itself to new culinary programs that speak to 21stcentury needs. Curricula are being rewritten, using technology to engage students and maximize active learning. According to Lehmuller, the content focus teaches students to cook from a global pantry of ingredients, utilizing local and sustainable products, to create food that is delicious and considers health and wellness. Moving forward, degree programs will focus on three areas: craft skills, nutrition and science.
In a recently published article, a Drexel University professor called for space in the curriculum for creativity and innovation to produce leaders and change agents as well as great cooks and chefs. JWU’s new programs will build upon already deep ties with the local food economy to produce graduates who are not only skilled technicians, but leaders with a broad, positive attitude toward the role that chefs can play in effecting social change. That includes chefs who use technology to start unconventional businesses that expand the meaning and value of a culinary degree, and chefs who use their position of influence to help solve global issues of food security, sustainability and reducing food waste. What follows are stories of some of those chefs — faculty and alumni — who are committed to a vision of Changing the Way the World Eats, and using food as an instrument of progress and social change.

SHE’S A WORLD-RENOWNED PASTRY CHEF. HE’S BEEN A LEADER IN THE ARTISANAL BREAD MOVEMENT FOR THREE DECADES. They are teachers and leaders at Johnson & Wales University, and among a growing list of certified master pastry chefs and baking doyens who share their expertise and passion with JWU students and colleagues.

This year, Lauren V. Haas, department chair of the International Institute of Baking & Pastry Arts in the College of Culinary Arts in Providence, was named one of Dessert Professional magazine’s Top 10 Pastry Chefs in America. That’s only her latest accolade. Her artistry has graced the cover of the esteemed so good.. pastry magazine, and was featured in American Cake Decorating magazine and others. Haas worked in the White House, with Albert Uster Imports, and at the Hotel du Pont. She is a Cacao Barry ambassador and a technical advisor for the Barcelona-based company 100%Chef.
She never stops seeking knowledge, especially from faculty and other administrators. “The camaraderie we have in baking and pastry across all four campuses is really special,” she says. “We have such talent, so much knowledge and incredible skills. There are times I call my friends to tell them how amazed I am to be working among these chefs who are my colleagues.”

Peter Reinhart, baking instructor and chef-onassignment for more than 12 years on the Charlotte Campus, has written 10 books on bread and baking. Three have won the esteemed James Beard Award.
In addition to teaching, Reinhart is a culinary and keynote presenter at conferences around the world that feature some of the biggest names in bread baking.
His “The Bread Baker’s Apprentice” has been honored as a Book of the Year by the James Beard Foundation and International Association of Culinary Professionals. In September, “The Bread Baker’s Apprentice, 15th Anniversary Edition” was released, and he has joined Nathan Myhrvold’s Modernist Cuisine team as assignments editor for a forthcoming, definitive book on the art and science of bread.
Working with students on campus, though, is what he most enjoys. “Our job is to help students become successful human beings in their career and in their life,” he says. “Faculty take this seriously, and it is what sets JWU apart from other schools.” Haas agrees. “Interacting with students is the most life-giving aspect of what we do,” she says. “I get my energy from talking with students and seeing what they are creating. RESHAPING THE LINK BETWEEN FOOD AND HEALTH 12
G IF A DISH DOESN’T TASTE GOOD, THERE’S LITTLE CHANCE THAT THOSE WHO MUST EAT IT ACTUALLY WILL. But thanks to the intersection of culinary expertise and science knowledge at JWU, students are learning the techniques behind making healthy, nutritious meals for some who need them most: patients and athletes. In Denver, Culinary Nutrition majors are teaching medical students from the University of Colorado about ingredients, knives and presentation, so these future physicians can recommend healthy, delicious recipes to their patients with heart disease, diabetes and other conditions.
“The program has been a win-win for all of the students,” says Assistant Professor Marlene Swanson, RD. “The medical students are gaining important cooking techniques and preparation, while the Johnson & Wales students are learning how to teach and pass on their skills and expertise — from mise en place to composting.”

In Providence, Culinary Nutrition graduates are being snapped up by organizations across industries, thanks to their unique degree that bridges two formerly separate fields of study. “The traditional dietitian does not have a deep understanding of the culinary arts,” explains Associate Professor Todd Seyfarth, RD, CSSD. “And chefs don’t get a lot of nutritional education. The degree in Culinary Nutrition at JWU fills the gap.” Students leave with a deep understanding of cuisine preferences, budget costs, nutritional knowledge and collaborative teamwork, Seyfarth continues.
IT’S THEIR ABILITY TO COMBINE SKILLS AND KNOW-HOW IN MULTIPLE AREAS. “Wherever they land, they are able to take requests from a dietitian and translate them into delicious menus of what people want to eat.” It’s their ability to combine skills and know-how in multiple areas — science, math, creativity, food trends and dining preferences — that makes students so desirable to employers. Graduates land jobs in hospital management, corporate chef work, product research and development, and education — planning menus and meals for top athletes at Division 1 schools, professional sports teams and beyond. For sports professionals, high-energy meals are much more than Powerbars and Gatorade, says Assistant Professor Jonathan Poyourow ’03, RD, LD, who specializes in performance cuisine. “In our program, students learn the science behind the food for different types of athletes and their competitive needs,” he says. “You wouldn’t serve Tom Brady the same meals you would Simone Biles, or treat a marathon runner the same as a sprinter.”
OUR GRADUATES ARE MAKING A REAL IMPACT. In one assignment, students are charged with designing meals and menus for different types of athletes. Taking energy needs, stature, portion sizes, calorie requirements and other parameters into consideration, students calculate the perfect balance of carbohydrates, fats and proteins for each competitor. “There’s a lot of math involved,” Poyourow continues, “and a lot of online and classroom prep before they start to cook. Food should not only taste good, look good and be good for you — it should also be sustainable. That mantra is heard more and more in JWU’s culinary classrooms and kitchens. Conscious cuisine is now at the top of every JWU culinary student’s mind.

What’s more, students on all campuses are taught to incorporate every ingredient completely, so very little is thrown away and easily composted. But what about the dozens of test pies, brownies and

FORGING DIFFERENT PATHWAYS TO SUCCESS
Matthew Tortora ’15 brings local — and in most cases, fresher — ingredients to restaurants, schools, hospitals and businesses with his real-time, cloud-based ordering platform, WhatsGood. With more than $1 million in seed financing, WhatsGood, which launched in April 2015, matches more than 600 chefs and other buyers with 450 local producers in 22 states to top-quality, sustainable food. Local sourcing is important to food entrepreneur Tortora on many levels, but there’s one reason that stands above the rest: time. “When I was a chef, the time it took searching for ingredients added significantly to the restaurant’s cost,” he remembers. “That figure spoke to me as an opportunity to reduce it.” He developed a simple spreadsheet to figure out which local producers (farmers, fisheries, artisans) carried which ingredients and, soon after, WhatsGood was born.
LOCAL SOURCING IS IMPORTANT TO FOOD ENTREPRENEUR TORTORA ON MANY LEVELS, BUT THERE'S ONE REASON THAT STANDS ABOVE THE REST: TIME. Local grass-fed beef, hydroponic vegetables, pastured pork and sustainable seafood are some of the items the producers offer via WhatsGood. Tortora has visited every farmer, artisan and fisherman attached to his company, and makes stops to look at the menus of restaurants and other buyers. And he is constantly sampling bites and even getting a little inspiration along the way. “At heart, I am a chef,” admits Tortora, who started his venture after 10 years of service as a naval nuclear missile technician. When he is home for a meal with his wife and children, he only wants to cook. “I have loved food my whole life, coming from an Italian family, where food was very important,” he says. “Now, it’s incredible that it’s been only a year and a half from an idea to where we are today.”

JWU alumna Lorena Garcia '00, '14 Hon. vividly recalls when her interest in cooking began. “At the age of six, I loved watching my mother cook her favorite dishes, like chupe criollo — a chicken-based soup — and her famous asado negro, a delicious braised meat that has been caramelized with panela and cooked low and slow,” she reflects.
Garcia’s résumé includes multiple restaurants and books, a cookware line, a nonprofit program to guide children and their families to healthy eating habits, and numerous television appearances from “The Chew” and “The Talk” to Nickelodeon Latin America, Bravo’s “Top Chef All-Stars,” NBC’s “Today Show” and “The Biggest Loser,” and CNN. Her recipes
“MY MOTTO IS SIMPLIFY, FOCUS, EXECUTE.” Those early memories at the stove stayed with her as she completed a law degree in her native Venezuela, and her deep passion for cooking continued to nag at her heart and soul. So she decided to shift gears and pursue a bachelor’s degree in Culinary Arts at JWU’s North Miami Campus. The rest is history. “There are so many wonderful mentors and teachers at my beloved JWU,” Garcia, now one of the country’s best known chefs, gushes. She will always remember how Chef Larry Rice, now president of the North Miami Campus, taught Dining Room Service. “I remember how classy and detailed he was, making the class even more interesting,” she says. “And Chef Lawrence LaCastra — he taught my very first class at JWU — was patient and thorough.”

appear in publications as varied as People magazine, Cosmopolitan, Kiplinger’s and Entrepreneur. JWU recently awarded her an honorary doctoral degree in Culinary Arts. For current JWU students who aspire to have an equally multifaceted career, her advice is clear. “Be a master of your craft, learn as much as you can, find a mentor you admire and ask questions,” she encourages. “My motto is simplify, focus, execute.” She credits JWU with giving her the skills and exposure she needed to make this direction in her life a success. “My education there was a huge pillar in developing who I am today and the respect I learned for the industry,” she concludes. “I love my alma mater.”
No stranger to food innovation, Johnson & Wales University recently announced its newest venture to spur therapeutic breakthroughs in healthy food and medicine: investment in The Food Innovation Nexus (FIX). The FIX collaboration leverages JWU’s long-standing expertise in culinary arts, food science, nutrition, healthcare, wellness and entrepreneurship to find and fill gaps in the food and beverage market, and provides the university with an attractive alternative revenue source. In partnership with three product development entrepreneurs, The FIX is based on two convictions: Food is a powerful medium to deliver health benefits and manage symptoms and disease states, and crossdisciplinary collaboration spurs innovation. Now, The FIX is ready to spotlight two breakthrough new programs in its growing product and venture portfolio. The first is the Modern Pod Company whose flagship product line, the Hummus Pod™, was developed with JWU students, chefs and alumni and a team of designdriven inventors dedicated to making healthy, plantbased foods and snacks. The Hummus Pod is healthy, creamy hummus encapsulated in a crispy, chewy multigrain crust. It will hit grocery store shelves this fall.
The second is a meal kit that improves the experience of patients undergoing the grueling preparation of a colonoscopy. This palatable alternative, developed through the collaboration of The FIX, ColonaryConcepts and leading gastroenterologists, helps combat the main reason why more than 10 million people forgo the procedure to detect the third most common cancer in the United States. In addition, The FIX recently launched The Angel Fund LLC, providing investment capital and strategic support to promising, early-stage ventures in the food sector.

JWU Providence student Linda Garcia ‘17 and 10 other college students from across Rhode Island have been named 2015–16 Changemaker Fellows by Social Enterprise (SE) Greenhouse and Founders League, organizations dedicated to strengthening the state’s entrepreneurial ecosystem. The fellowship program was created to “better integrate students and recent graduates into Rhode Island’s startup ecosystem… and strengthen the flow of talent that drives startup success.” In April, some 40 students and staff participated in the firstever JWU Serves: A Day of Impact at sites around Rhode Island. Students had the opportunity to network, discuss their interest in service, and learn about ways to get involved in the Providence and greater Rhode Island communities. Julius Searight ’13, chef and founder of Food4Good, delivered the morning address and shared his journey to JWU and how pivotal nonprofits and community service had been in his life. Experiential Education & Career Services in Providence hosted the 40th annual Career Expo and Summer Job Fair in March in the Wildcat Center. Nearly 1,700 students connected with more than 170 companies for internships, full-time and summer jobs. Almost 400 on-campus interviews took place. In Denver, a record 236 employers visited the campus, while in Charlotte, 513 employers visited campus, conducting more than 1,000 interviews. Charlotte students participated in 560 internships and the campus hosted its largest career fair ever with 104 employers. With veterans and dependents representing nearly 10 percent of the student body, the Denver Campus launched new initiatives and strategies to engage this critical population, including advising and career-related activities.

North Miami student Thiago Rodrigues ’19 won first place at this year’s SharkFest competition for his venture Students Store It, a service that will pick up and store students’ belongings for a summer or an entire term. Second and third place went to Providence students Erin Tucci ’18 for her mobile app Aroma that provides recipe suggestions for meals based on the ingredients already in the user’s cupboard, and Matthew Vidovich ’17 for his concept ServUS, a mobile app for restaurants where visiting customers can order food, have it delivered to their table and pay their bill. Tucci and Vidovich showcased their ventures at the Rhode Island State House on Innovation Day in April. Opportunities for Charlotte Campus students to participate in Greek life began when Alpha Kappa Alpha Sorority, Alpha Phi Alpha Fraternity and Zeta Phi Beta Sorority joined the campus community. North Miami student LaNeicia Anderson ’19 won JWU’s Iron Chef Challenge sponsored by Hampton Creek and Chartwells, landing her a trip to San Francisco to tour Hampton Creek’s Mission headquarters and develop recipes with their Michelinstarred chefs. LaNeicia competed against students from the Charlotte and Denver campuses and was selected the winner by a panel of judges including Richie Farina ’05, Hampton Creek culinary concierge chef and “Top Chef” contestant.

ACADEMIC LIFE JWU and Compass Group North America have a long history of collaboration in preparing future leaders for excellence in their careers. A new chapter of this relationship began in 2015 as six Compass Group executives selected by Compass Group leadership enrolled in the College of Online Education's MBA degree program. The group represents six major divisions of the company and collectively generates more than a half billion dollars in revenue annually. “We are looking forward to seeing positive results from this exceptional group of executives and to furthering our relationship with Compass Group by expanding the program in 2016,” says College of Online Education Dean Cindy Parker, EdD, of the pilot program. “The program also serves as the school’s first step in establishing corporate partnerships for our online programs.” All four campuses are expanding their academic portfolios. In Charlotte, applications to the state for approval of the revamped Food & Beverage Entrepreneurship degree, along with requests for new degrees in Applied Food Science, Innovation and Technology, English: Writing and Literature, and Beverage Industry Operations and Retail Management have been submitted. In Denver, new majors and programs offered for the 2015–16 academic year included Beverage Industry Operations and Retail Management, Applied Psychology, Organizational Psychology, and MBA programs in Human Resources and Nonprofit Management. North Miami added Business Studies, while new programs of study in Providence included Entrepreneurship, Human Resource Management, International Business, Finance, Operations and Supply Chain Management, Organizational Risk and Cyber Security Management, Applied Psychology, Organizational Psychology and Biology. Students are cultivating their sensory analysis skills, learning production processes and gaining first-hand knowledge of the beverage industry through labs such as Charlotte’s new Sensory Beverage Lab, which features tasting tables, a coffee/tea bar, refrigeration and wine storage. Pamela Allison, PhD, college chair, says the School of Hospitality plans to invite notable industry experts to share their knowledge with students and alumni.
The COOP, an urban outdoor classroom and irrigated garden space on the Charlotte Campus, is getting a complete overhaul. Jerry Lanuzza, dean of culinary operations in Charlotte, says, “Students can expect to learn about sustainability in an urban landscape, nutritional aspects of a more plant-centric diet, environmental science and community relationships.” Students in Providence can get free writing help from student writing coaches across a variety of majors in the new Wildcat Writing Center. Coaches can help students throughout the entire writing process, from forming ideas to polishing a final draft. Oscar Chilabato, associate professor of advertising in Providence, was named one of 22 new members of the National Advertising Review Board (NARB), the advertising industry’s only peer-review process that reviews advertising claims for truth and accuracy. NARB members are selected for their standing in the industry. Erin Wilkinson Hartung, DBA, Providence MBA department chair, has been appointed to a three-year term by the Institute of International Education for the U.S. Student Fulbright Review Committee for East Africa. The John Hazen White College of Arts & Sciences held a ribbon-cutting ceremony for its new criminal justice lab, located in the TACO Center in Providence. The new space features a re-enactment room and a lab, which contains comparison and forensic microscopes, fingerprint scanning devices, 20 work stations and more. Teaching and learning has moved from the confines of the classroom into the real world.

All three regional campuses installed new presidents this year. Larry Rice, EdD, ’90, a long-time leader at Johnson & Wales University, was inaugurated at the North Miami Campus. After Denver Campus President Robin Krakowsky ’88, ’08 EdD, announced in January that she would take on a new role for the university as dean of executive graduate programs, Vice President and Academic Dean Richard Wiscott, PhD, began his presidency in June. Robert Mock Jr., EdD, was installed as the second president of the Charlotte Campus. Charlotte was the first of JWU’s campuses to take a major step forward in creating a healthier environment for the JWU community by becoming tobacco-free. North Miami, Denver and Providence followed suit. The Denver Campus completed two significant construction projects with the renovation of Founders and Centennial halls. Both buildings opened in fall 2015. Founders Hall serves as a new student residence and houses sophomores and transfer students. Shuttered for more than 30 years, historic Centennial Hall is now the centerpiece of campus. On the national registry for historic places, the multipurpose building features a great hall for events, a café, student affairs offices and student spaces, a health and wellness clinic, faculty offices, classrooms, and administrative offices. Historic Denver, one of the nation’s premier nonprofit urban historic preservation organizations, awarded the Centennial Hall project the 2015 Community Preservation Award.

JWU athletic successes continue to shine a spotlight on the university. Providence’s second-seeded women’s volleyball team upset top-seeded Rivier University, 3-2, to claim the conference championship. That same day, the men’s soccer team made history as sophomore Teagan Drake scored in the 79th minute to give the Wildcats a 1-0 win over Albertus Magnus College and their third-straight conference championship. A year ago, the JWU men’s basketball team watched the Albertus Magnus College Falcons celebrate a GNAC championship. This year, the 14th-ranked Wildcats evened the score, defeating the Falcons — JWU’s first title since 2011 and third overall. The Wildcats advanced to the university’s first NCAA Tournament Sweet 16. Congratulations to Providence head basketball coaches Jamie Benton and Corey Boilard
for earning GNAC Coach of the Year honors. North Miami men’s golf won the Sun Conference Championship as Coach AJ Broderick was named Conference Coach of the Year and Peter French ‘16 won Conference Player of the Year honors. The Kansas Collegiate Athletic Conference (KCAC) honored the Denver Wildcats' inaugural women’s lacrosse team with the Team of Character award. Women’s basketball player Kristen Ward ’16 finished her season as an all-time leading scorer for JWU and earned an NAII All-American Mention. Men’s soccer advanced to the A.I.I. semifinals, the first in the program’s history. In Charlotte, volleyball won the Haley Jo Plummer Classic and was ranked as high as fourth in the USCAA. Men’s basketball made its second consecutive appearance in the USCAA Final Four, with sophomore Rickey Porter being named the National Player of the Year. Men’s soccer finished 9-1 in its inaugural year and was ranked as high as thirteenth in the USCAA. Charlotte student athletes posted the highest cumulative spring term GPA in their history. JWU founders Gertrude I. Johnson and Mary T. Wales were inducted into the Rhode Island Heritage Hall of Fame. Providence Campus viewbook and admissions package brochures were honored with two 2016 CASE District I Excellence bronze awards, while JWU's brand television commercial, “Experience Your Future Now,” received a silver award from the Collegiate Advertising Awards (CAA). JWU was also named the 2015 Collegiate Challenge Champion in National Grid’s “Rhode Island Energy Challenge: Find Your Four!” Campaign. The Providence Campus was awarded an EPA Food Recovery Achievement Certificate for food waste reduction.

SUPPORT FOR JWU When Janise Kyle’s nephew, Terrance Miller ’09, passed away in 2015, she established a memorial scholarship on the Charlotte Campus in his honor. This year, in her desire to “make the scholarship last,” Kyle set aside part of her estate for the university to support the scholarship, which provides aid to a hospitality student in Charlotte. In March 2015, Mavis Pearson established a scholarship in memory of her chef-instructor son, Shane H. Pearson ’97, who died in December 2014. This year, she decided to extend the scholarship with a planned gift designated for the fund. Johnson & Wales University has been selected to receive a $7,500 grant from the Institute of International Education’s (IIE) Generation Study Abroad® initiative to support new study abroad scholarships. This opportunity aims to increase the number and diversity of students who study abroad by the end of the decade. JWU is one of 14 colleges and universities selected based on its notable progress toward meeting its Generation Study Abroad commitment. Longtime JWU supporter Certified Angus Beef® brand has pledged $50,000 to establish an endowed scholarship to support culinary students on all four campuses. Vitamix, which has donated professional-grade kitchen equipment to JWU for more than a decade, has pledged to provide approximately 180 of its blenders, along with hundreds of accompanying tools, containers, accessories and Vitamix technical support to enhance the training of culinary arts students across the four campuses. JWU is one of the pilot schools identified through Vitamix’s culinary outreach program to impact the way students learn kitchen skills. Earlier this year, Kurt O. Walters ’00 established a scholarship in his name for undergraduates in business and finance. “Giving back to the university required little thought on my part,” says the president of Nisga’s Data Systems. “My student and professional life benefited from the nurturing faculty, the administrative
staff’s guidance and, most of all, from the university’s financial assistance through scholarships.” North Miami graduate Gary E. Ciuca ’04 passed away in 2011. As part of his estate, he bequeathed $50,000 to the university. North Miami Dean of Culinary Education Bruce Ozga has announced that the gift will be used to establish the Gary E. Ciuca ’04 Memorial Scholarship to support students in the culinary arts on the North Miami Campus. JWU and Southern Glazer’s Wine and Spirits LLC, the nation’s leading wine and spirits distributor, announced a firstever gift from Southern Glazer's to support scholarships for beverage management students on the North Miami Campus. To honor the memory of a father whose personal and professional legacy is closely intertwined with her own, Providence Campus School of Hospitality Professor Karen Silva, EdD, has established a fund through her estate plan in honor of her father, Edward R. Silva, JWU’s first professor emeritus and co-founder of JWU’s graduate school. “Like my father,” she says, “I’ve spent my life in teaching, and I believe that it is important to give back to the university so that future students can get an education too.” JWU Charlotte’s Center for Free Market Studies is expanding its event programming and student activities thanks to a $170,000 grant from the Charles Koch Foundation. The center, established in 2013 with a grant from the Michael and Andrea Leven Family Foundation, engages students and the larger community in the study of markets, political economy and free enterprise. The Batchelor Foundation Inc., which established an endowed scholarship five years ago, renewed its support in 2015 by establishing the annual Batchelor Scholarship Program to support North Miami Campus students.

FINANCIAL REPORT Johnson & Wales University continued to make steady progress toward its goal of providing an affordable education through sound stewardship of resources. During fiscal year 2016, spending for scholarships increased $9,050,000 to $157,694,000. Efforts to manage costs resulted in a 2% increase in functional expenses.

This annual report is dedicated to Morris J.W. Gaebe ‘98 Hon., who died Saturday, October 8, 2016 at the age of 96. Gaebe laid the groundwork for JWU as an institution. He turned a fledgling school into a university by researching data to anticipate the jobs of the future, broadening the curricula, achieving accreditation and formalizing the leadership structure. His ability to trust his instincts and take smart risks characterized his long, distinguished career — first as co-director, then as president (1969–89) and finally chancellor. His mantra — “students first” — continues to guide his successors, and all of us today.
