WELCOME GREETINGS, The 2016–17 academic year is well underway and we are excited about all of the great happenings on our campus. First-year students are adjusting to their new home away from home, while returning students are taking full advantage of all the North Miami Campus has to offer. We continue to support our students, offering opportunities to keep them engaged and exposing them to new learning experiences. Whether they are among the group of students who traveled to New York City to learn the inner workings of the fashion industry, or the culinary arts and business students who received firsthand knowledge from entrepreneur and chef-to-the-stars Richard Ingraham, we are here to give our students the tools needed to be successful. The concept of experiential education is an important contributing factor to what makes JWU unique. These opportunities challenge the way students think, which better prepares them for the various scenarios they will encounter as they interact with others. As we enter the holiday season, I wish you all the best. During the fall term, families traveled from near and far to the North Miami Campus for Family Weekend 2016. Students had the opportunity to show their loved ones a day in their lives at JWU. From a welcome dinner with Campus President Larry Rice in the luscious Palm Court to Painting with a Twist, a kayaking excursion and more, the weekend was filled with fun and excitement. To top it off, families gained firsthand experience working alongside students in culinary arts and baking and pastry arts labs.

STUDENT GOVERNMENT ASSOCIATION INSPIRES VOLUNTEERISM More than 500,000 people in the U.S. are homeless, and more than 4,000 of them live in Miami. This staggering statistic was an eye-opening realization for a group of students at the North Miami Campus, who decided it was their duty to raise awareness of this issue. Leading the charge was the Student Government Association (SGA), who launched Homelessness Awareness Week to educate their peers on homelessness through various activities, including “A Night Without A Home: Sleep Out.”

“For the fall [term], we decided to focus on homelessness because it was a subject that we feel does not receive the attention it needs,” notes Harlena Mullings ’17, interim vice president of SGA. “SGA took it upon ourselves to educate our student body and community about homelessness, especially being that Miami has one of the largest populations of homelessness and more than 60,000 college students are reported to be homeless.” This is just one example of the impact SGA has on the North Miami Campus. The organization works to enhance the student experience through educational and philanthropic initiatives, focusing on issues ranging from homelessness

to breast cancer, heart health, dating and domestic violence, and alcohol and substance abuse. SGA also hosts Town Hall meetings each term to unite students, faculty and staff to tackle these issues and address other challenges and opportunities for the campus. “SGA strives to be the most sufficient liaison between the student body and the university’s administration,” says Harrell Taylor ’17, interim president of SGA. “Students are encouraged to utilize SGA to help assist with new campus initiatives [that create] the best collegiate experience possible.”


BRENT MUCKRIDGE ’94 LEADS NEW ENTREPRENEURSHIP PROGRAM According to the Ewing Marion Kauffman Foundation, Miami ranks No. 2 in the number of new entrepreneurs in one month. Among many factors, this was a catalyst for the launch of the Bachelor of Science in Business Administration (B.S.B.A.) degree in Entrepreneurship at the

He started his own firm, EM Finance Consulting, and has held several roles in start-ups, including chief financial officer at Wataniya Mobile in the West Bank and supervisory board member for Neostratus in Hungary. Using his knowledge, Muckridge provides students with firsthand experience through hackathons, workshops and networking events with Miami’s top entrepreneurs. Under his leadership, the new e-lab features 3-D printers, dry-erase walls to encourage brainstorming, and various opportunities for innovation and collaboration.

CAMPUS NEWS CAMPUS SAFETY & SECURITY RECOGNIZED BY CITY OF NORTH MIAMI Each September, National Campus Safety Awareness Month spotlights the importance of creating healthy and safe campus environments. As part of this initiative, the City of North Miami recognized JWU North Miami for its efforts in providing a safe environment for students, faculty, staff and campus visitors.

WILDCAT WELLNESS Wildcat Wellness is an initiative that promotes health and wellness with a focus on eight areas, including emotional, environmental, financial, intellectual, nutritional, physical, social and spiritual wellness. Students learn the importance of each aspect with various activities and events throughout the year. One of the signature programs, Wellness Week, engages students in various fitness challenges and provides them access to speak with financial experts about money management. Students also learn the importance of hydration and explore the benefits of herbal teas, coconut water and other alternatives to carbonated beverages. Wellness initiatives have also been integrated into the monthly Wildcat Wednesday, which encourages faculty, staff and students to show their spirit by wearing JWU gear on the first Wednesday of each month. Students are also encouraged to join faculty and staff on Wildcat Wednesday for a 20-minute walk to promote physical fitness and campus camaraderie. JWU Family Connection | Winter 2016

Bukata, director of Campus Safety & Security. “Our experienced team works in partnership with the City of North Miami to resolve any issues and create awareness initiatives as part of our ongoing crime prevention strategies.” Campus Safety & Security is available 24/7 and regularly patrols the campus, maintains access to campus buildings, and manages surveillance cameras and blue light phones. They also assist with the Wildcat shuttle and Safe Walk for students navigating campus after dark.


CAMPUS NEWS CHEF CHRIS WAGNER WINS BIG AT SEED PLANT-BASED BBQ THROWDOWN Not only is he a Global Master Chef, but now Chris Wagner has earned the title as winner of the Seed Plant-Based BBQ Throwdown. Chef Wagner, JWU North Miami’s director of culinary operations, joined four other top chefs in the Miami market to prepare a plant-based barbecue dish as part of this unique event that celebrates vegan cuisine. “It was an incredible experience to participate in this competition and bring home the grand prize,” he says. “Events like this help showcase the ability to recreate some of your favorite dishes using plant-based products and serves as a great learning experience for our students.” Wagner worked alongside culinary arts students to prepare a plant-based “No Pork, Pulled Pork” sandwich topped with

baby kale slaw and homemade barbecue sauce on mini Kaiser rolls. The dish was a favorite amongst the judges who rated him the overall winner, noting the flavor and flawless, professional and fast service at the team’s booth.

FASHION TRIP TO NYC Fashion merchandising and retailing students got a true taste of the industry during their trip to New York City, where they got behindthe-scenes experience at Bergdorf Goodman, Gucci and several other high-end retailers.

Vegan Italian Sausage Chef Barbara Kamp, assistant professor WHAT YOU’LL NEED 1 13.5 ounce can cannellini beans, rinsed and drained 1 cup mushroom broth, cold 1 tablespoon olive oil 2 tablespoons tamari 1½ cups vital wheat gluten 1/3 cup nutritional yeast 5 cloves fresh garlic, minced 1 tablespoon toasted fennel seed, crushed 1 teaspoon red pepper flakes 1 teaspoon sweet paprika 1 teaspoon dried oregano 1 teaspoon fresh thyme, chopped 1 tablespoon fresh parsley, chopped Salt and fresh ground black pepper, to taste Yield: 4 large sausages

METHOD OF PREPARATION 1. Set up a steamer that can hold four large sausages. Bring the water to a boil. Cut 4 pieces of aluminum foil, about 10-inch-by-10-inch square. 2. In a large bowl, mash the beans until only small pieces of bean are visible but the mash is not completely smooth. 3. Add all other ingredients in the order listed. Using a rubber spatula or hands, combine until a uniform soft dough forms 4. Place one-fourth of dough onto each of the foil squares and mold into a 5-inch log. Wrap the dough in the foil twisting the ends to tighten. It should resemble a large tootsie roll. 5. Place wrapped sausages in the steamer and steam for 40 to 60 minutes. Let cool to room temperature and refrigerate overnight. 6. Unwrap the chilled sausages and let come to room temperature. Sauté in oil over medium-high heat until brown and crispy on all sides. VARIATIONS For a Mexican style sausage: Omit the fennel seeds, red pepper flakes, paprika, oregano, thyme and parsley. Add 2 tablespoons cumin seeds toasted and crushed, 1 teaspoon chipotle powder, and 2 tablespoons fresh cilantro.

For a sweet breakfast sausage: Omit the fresh garlic, fennel seed, red pepper flakes, paprika, oregano, thyme and parsley. Add 2 tablespoons maple syrup, ½ cup apples minced and sautéed, and 1 teaspoon dried sage.
