Relief for restless legs It’s surprising how many people suffer with RLS – restless leg syndrome – the irresistible urge to move the legs – or arms in some cases – because of tingling, itchy, crawling, achy sensations beneath the skin. It’s especially annoying when you’ve just sat down to watch the tele or gone to bed, but when you’re not moving for a while is when it’s most likely to happen. Organics take a media bashing Organic food has been in the media firing line this summer, with headlines such as ‘Organic no healthier than ordinary food’, quoting an analysis study that showed similar levels of many nutrients in organic and conventional foods. Most newspapers seemed to miss the point, that organic is more about what’s NOT in the food, soil or animals, rather than vitamin content – which will also vary according to how the food is subsequently stored and cooked. There have been studies in the past that have found a higher nutritional content in some organic versus non-organic foods, and many people say they find organic veg and fruit in particular taste better, but these have been seen as side benefits. Hundreds of different pesticides are used on conventional foods. For example, a lettuce gets sprayed with 11 different chemical pesticides, and we still don’t know the cumulative effects of these pesticide residues when we and our children eat them. Organic farms don’t use chemical fertilisers and the livestock are not fed antibiotics as a matter of course, only if they are sick. So when we buy an organic item of food it’s the whole process of organic farming that we are supporting and benefiting from, and ultimately the whole planet that gains!

Organic on a budget Could nasal douching and nutrients help combat swine flu?
Although the number of people contracting swine flu has dropped sharply, the health service is said to be gearing up for a renewal of cases and on a much bigger scale as the weather gets colder. So what should we do to help reduce the risk of catching swine or any other flu? In 1918 the News of the World reported the best way to avoid catching the virus that was going around then was to ‘Wash the inside of your nose with soap and water night and morning, force yourself to sneeze night and morning, then breath deeply. Do not wear a muffler and walk home from work.’ The gist of this remains true today. The idea of washing mucus away/douching your nose to stop viral germs taking hold and breeding in the nasal passages is more common in Asia, where a small ‘neti’ pot is often used for the purpose. (A plastic squeezy bottle will work too.) It's only useful as a preventative; if you already have flu or a cold it could make matters worse and slow down mucus drainage or drive the bacteria deeper. What about ‘walking home’? Dee Atkinson, owner of Napiers the Herbalist, says exercise is helpful as a preventative, along with washing your hands frequently, but she recommends we also build up our body’s natural defences with herbs and vitamins. “For adults, vitamin C (up to 1,000mg daily), zinc and echinacea tincture can be used to support your body, even if you are eating a healthy and all organic diet.” And garlic is a great flu fighter. Dee says: “I prefer using organic raw garlic chopped up finely and taken off a teaspoon before food.” Strong medicine! More advice is available from www.napiers.net.
We might hesitate when buying organic foods in the current economic climate, but the Soil Association says we can eat organic on a budget and still get to eat greattasting, additive-free food and drink. When it comes to school lunch, most children want a quick snack to maximise play time. So how do you pack them a healthy lunch? Annabel Karmel has answers… Children are all different but by and large what they want is a quick fix – a packet of crisps and a chocolate biscuit that can be wolfed down in minutes saving maximum time for the playground. While parents want them to eat good food that will sustain them until tea time. So here are some ideas for a good lunchbox: Packed lunches can be prepared the night before to save time the next morning. You can prepare pasta salads, sandwich fillings, fruit compotes or include something from last night’s dinner like soup in a flask. However healthy food is, it won’t get eaten unless it’s tasty and appealing to your child. Simple touches can make all the difference, like cutting sandwiches into shapes using cookie cutters or threading fruit onto a straw to make a fresh fruit skewer. Try to avoid too many processed foods as these are the ones that tend to contain few nutrients and too much salt, sugar and fat. If your child likes crisps but you don’t

want him/her to fill up by eating a whole bag, put some in a small bag and tie the top or wrap some crisps in foil. Instead of crisps try offering foods like lightly salted popcorn, rice cakes or wholegrain crackers with cheese and grapes. Salads make a nice change from sandwiches; try Chicken Caesar Salad or Chicken and Potato salad using a bought potato salad and mixing in some cherry tomatoes and spring onion. Sandwiches don’t need to be boring – there are so many different types of bread available. Try giving pitta pockets with tuna, sweetcorn and mayonnaise, tortilla wraps with cooked chicken, salad cream, shredded lettuce and tomato or mini baguettes with ham and cheese. When the colder weather sets in, a wide-mouthed mini thermos flask is ideal for serving up a delicious cup of homemade or good quality bought soup like tomato soup, which is both warming and nutritious. You could also put foods like baked beans or pasta shapes with tomato sauce in a flask.

To drink, give pure fruit juice or water. Pure fruit juices contain 100% juice but a fruit juice drink can contain as little as 5% juice and as much as 5 teaspoons of sugar in one individual carton – check the ingredients before buying. Fresh fruit smoothies, fruity milkshakes and probiotic mini yoghurt drinks are good too. It's important to include fresh fruit in your child’s lunchbox – children will avoid fruit that takes a lot of effort. You can cut up wedges of mango, melon, papaya and pineapple, give clementines already peeled and covered with plastic wrap or cut kiwi fruit in half and let them scoop out the flesh with a teaspoon. Children will eat raw vegetables like sticks of carrot, sweet pepper, cucumber, etc. You can wrap these in dampened kitchen paper to prevent them drying out and maybe include a tasty dip like cream cheese and chive or hoummus. And how about adding a personal touch to your child’s lunch; tuck in a note, stickers or joke or send a special treat labelled ‘share with a friend’. Pack fun napkins, decorate lunch bags with stickers or draw a face on a banana with a marker pen.

| Ogrow nly 6-7% of babies suffer from a food allergy and many of these out of it by the age of 5. The commonest foods to cause a
food allergy are cows milk and dairy products, nuts and seeds, eggs, wheat-based products and fish, especially shellfish. If there is a history of allergy in the family, it’s best to exclusively breastfeed for the first 6 months. Babies with eczema are more likely to suffer from a food allergy.
Spanish omelettes are delicious cold and make a nice change from sandwiches and you can eat the rest for lunch or supper. Cut into wedges and place in a plastic container with a lid. You can vary the vegetables inside. Sweet pepper, red onion and potatoes are another good combination. You could also add some chopped ham. Method 110g small new potatoes 1 tbsp olive oil 1 onion, peeled and finely chopped 1 courgette diced 2 tomatoes, skinned, de-seeded and roughly chopped 4 eggs 3 tbsp freshly grated parmesan cheese Salt and freshly ground black pepper

ring a lightly salted saucepan B of water to the boil and add the new potatoes. Cook for 10-12 minutes or until tender. Drain, leave to cool and then cut into slices.

eat the oil in an 18-20cm H non-stick frying pan. Add the onion and sauté for 5 minutes. Add the diced courgette and sauté for about 5 minutes. When the courgette is cooked, add the tomatoes and cook for 2 minutes, then stir in the sliced new potatoes.

Pour the egg mixture over the vegetables and cook over a medium heat for about 4 minutes or until the eggs are set underneath. Meanwhile, preheat the grill to high. Place the frying pan under the grill (if necessary wrap the handle with foil to prevent it from burning) and cook for about 3 minutes or until golden and set. When the omelette is cold, cut into wedges.

You may not have thought of giving your baby lentils but the lentil purees in my books are some of my most popular baby recipes. Lentils are an excellent source of protein and iron and they contain Fibre. If you plan to bring your child up on a vegetarian diet then lentil purees with a little added cheese will make a good alternative to meat. Suitable from 6 months Prep 10 minutes Cooking time 34 minutes Suitable for freezing
Makes 3 portions 1 small onion, peeled and chopped 1 medium carrot (75g) 25g red pepper cored, deseeded and chopped 1 tbsp sunflower oil 2 tbsp red lentils 200 ml boiling water or unsalted vegetable stock 50g grated cheddar cheese

t’s never been easy being a parent of teenagers – but thanks to modern marketing, hours spent online and on the run, it’s harder than ever to get teens to look after their health. The consciousness of perspiration, skin eruptions and pressure to keep up with peers and media images make many teenagers insecure. By way of response, they tend to experiment with lots of products on their hair/skin/face/eyes/mouth, many of which are full of synthetic chemicals and empty promises. Teenage girls use around 16-20 different hair/skin/make-up/ hygiene products a day. That’s 20 times an average of say 7 different synthetic chemicals per product (as preservatives, colourings, fragrance and `bulking` agents). That’s 140 chemicals many teens’ young skin and hair is being exposed to, every day. Has anyone done research on the safety of the cumulative, long-term effect of this synthetic load on teens? In a word, no. There is evidence of the immediate effect of allergies and skin sensitivities; for example, synthetic perfumes found in low cost perfumes, toiletries and cosmetics (popular with teens) can trigger allergies and skin sensitivities. There are also concerns that some synthetic toiletry ingredients could be carcinogenic, according to some animal lab experiments. If you want to play it safe and help your teen use more naturally healthy skin/hair care options, how about:

METHOD: Mix all of the ingredients together and serve.
GILLIAN’S LEMON & CORIANDER HUMMOUS Makes 6 servings INGREDIENTS 410g can chickpeas, drained and rinsed, 3 tbsp light tahini, finely grated zest ½ small lemon, freshly squeezed juice 1 small lemon, 1 tsp organic vegetable bouillon (stock) powder, 3 tbsp extra virgin olive oil, 4 tbsp cold water, 3 tbsp finely chopped fresh coriander leaves. METHOD: Put all the ingredients except the coriander in a food processor and blend until smooth – you may have to remove the lid and push the mixture down a couple of times with a rubber spatula until the right consistency is formed. Remove the blade and stir in the coriander – add a little more lemon juice to taste if liked. Spoon into a bowl and serve with plenty of fresh vegetable sticks for dipping.

When your body reacts against food Allergy? Intolerance? Sensitivity? What’s going on? ore and more of us are finding we react to harmless foods. No-one quite knows why, although there are theories, such as our overeating certain foods, but even defining the problem is confusing. Is it an allergy, intolerance or sensitivity? If it’s a classic allergy, then when you eat, inhale, or sometimes only touch the allergen, the immune system produces an Immunoglobulin E (IgE) antibody. This releases chemicals such as histamine and symptoms are experienced according to where in the body the chemicals are released; into the intestines and we get cramps and diarrhoea; into the skin and we get itching and rashes. The allergy reaction can be immediate or take several hours to develop, with symptoms ranging from a mild headache to a rash, nausea, shortness of breath and even collapse. With anaphylaxis, IgE stimulated chemicals are released throughout the whole body, which can be life threatening. Although we can be allergic to any food, 9 in 10 people in Britain are allergic to cows milk, eggs, nuts, shellfish, soy or wheat. Only about 3% of the UK adult population have a classic food allergy. However, 6-8% of children do and these numbers are on the increase. The classic ‘treatment’ is to avoid the allergen as much as possible, a little easier these days with food labelling laws and special diet foods.
Food intolerance
Food intolerance is different. The body still reacts in adverse ways to a specific food but there’s no antibody involvement, so symptoms, such as migraines, joint pains, runny nose, diarrhoea and eczema, can happen hours or days later; at any time between when the food is first eaten and when it’s excreted. 28 | YOUR HEALTHY LIVING
Amazingly, one in 6 of us will at some time in our life have a food intolerance. Sometimes it will last a lifetime, as, for example, when the gut cannot tolerate the gluten in grains such as wheat, barley and rye, ie Coeliacs disease; the reduction in the ability to absorb nutrients if gluten is eaten can have serious long term health effects. Intolerance can also occur if you have a porous or ‘leaky’ gut wall, which means undigested particles of food pass straight into the bloodstream. This is often associated with candida, a yeast infection. Food intolerance can begin at any age, often starting imperceptibly, but developing into poor general health or coming on suddenly, for example after a viral infection. A major food intolerance for adults is modern durum wheat (wheat intolerant people can often eat ancient wheat varieties such as spelt and khorasan), while for children, dairy foods are often the culprit (many children can tolerate goat or sheeps milk). The symptoms of dairy intolerance include a blocked nose, frequent colds, indigestion, fatigue and earaches. This shouldn’t be confused with lactose intolerance, the lack of an enzyme necessary to digest lactose in milk and which is likely to cause a stomach upset when consumed. Food sensitivity is, strictly speaking, an overreaction to chemicals in foods. Examples are tyromine in cheese, chicken, chocolate and other foods; monosodium glutamate used a flavour enhancer in foods such as ready meals; sulphite and sodium benzoate flavour enhancers, causing reactions like migraine, urticaria, abdominal pain, vomiting and diarrhoea.
Identify the culprit
If you suspect an allergy, intolerance or sensitivity, the most important step for your health is to correctly identify the food

protein or chemical you are reacting to. GPs can organise blood/skin-prick tests to check for allergies. It’s also important to be sure you don’t have an underlying condition such as Coeliacs disease. You can also consult a qualified nutritionist for a professional diagnosis and some will offer tests to establish if the intolerance is caused by a leaky gut. Health food stores can be a useful resource for alternatives to wheat and dairy foods for example, and for supportive nutritional supplements. Store nutritional advisers might suggest improving your digestion by taking supplements such as essential fatty acids and probiotics. Some health stores offer allergy/intolerance testing, and there are companies online which supply home test kits. A good way to diagnose is an ‘elimination and challenge’ diet. Removing the likely suspects totally from the diet for 3-4 weeks and noting any changes in symptoms and mood. Keep a diary to record the foods eliminated, and any slips, as well as monitoring the symptoms and severity levels. Then reintroduce the foods one at a time in a controlled way, keeping a note of the effects. If you’ve got it right, complete elimination should give complete relief from symptoms, and reintroducing it, a reversal. If you don’t have an intuition about which foods are the problem ones, start with wheat and dairy. It’s helpful to do this under the guidance of health practitioner. The final and usually ongoing step is to avoid the problem foods! This can be challenging as changing our eating habits is a slow process for most people, but the biggest motivator has to be the carrot and stick of feeling better when you avoid the offending foods, and worse again when you don’t!
‘I was falling asleep at my desk!’ A few months ago, Trudy, 35, says she was always tired, falling asleep at her desk and overusing caffeine to keep her going. She also had a bloated abdomen, aching joints and mental fogginess. Her GP checked her for thyroid and diabetes and gave her the all clear. “This didn’t help in that I was still left with the symptoms!” Trudy says. “A friend suggested I try a local nutrition clinic and they tested me for food intolerances. It turns out I am wheat and dairy intolerant.” The nutritionist suggested an elimination diet. “It was really hard going at first. I was used to sandwiches at work every day and now I have to get up earlier to make something wheat and dairy free. But I feel a lot better.” “After about a month I accepted a meal of pasta one day when I was out and within an hour the symptoms were back. When it happened a second time I knew it wasn’t just in my mind.” In the last 3 months Trudy has started investigating wheat free breads for when the desire for a sandwich really hits. “I’ve already discovered wheat free pizza bases and I’m glad to know you can get wheat free scones too! Look for foods that have good sources of B vitamins, such as oats and brown rice, along with dark green leafy vegetables, nuts and seeds. o you remember seeing this ‘Hobbit House’, pictured above, featured on the Channel 4 series, Grand Designs? This substantial family home with its curvy, Tolkein-like wooden interiors, combines one-with-nature appeal with a featherweight carbon footprint to make it an eco dream home. Insulated with straw bales to keep in the heat and equipped with reed beds for cleaning domestic waste, its green credentials also include storage for rainwater collected from the roof to feed the washing machine and a wind turbine to make electricity. Only a few may be fortunate – or brave – enough to be able to start with such a blueprint for green living (it is for sale!) but lots of us can make the choice of adding value to their existing properties, not by building an extra bedroom or installing a new kitchen, but by making them more energy efficient and less wasteful of finite resources.

That could mean generating your own renewable electricity and heating. On the other hand, installing solar water heating panels or a wind power generator may not be the best use of the earth’s resources – not if you have an ancient boiler or your roof, walls or floors are flimsily insulated. In which case top up your insulation and apply draftproofing as a first step, and look to replace inefficient old boilers before investing in one of the more exciting new green technologies. “Otherwise you will just be wasting all the energy that you are generating,” advises Alex Randall of the original green-living organisation, the Centre for Alternative Technology (CAT).

LIFE The Energy Saving Trust is urging us to rediscover the joys of thrift with its new Wartime Spirit campaign. Don’t panic, soothes the Trust’s chief executive Philip Sellwood, a return to rationing is not on the agenda. “However if we could adopt just a few of the practices used during the war, such as recycling bath water for watering plants, then it would go a long way towards saving energy and reducing our carbon footprint,” he says. In wasting water, we are also squandering power. The Waterwise organisation says each of us in the UK uses an average of 150 litres of water per day and it has worked out that pumping, treating and heating the water in the average family’s home produces as much carbon in a year as a return flight from London to New York. By thinking twice before leaving that tap running, you will reduce not only your water use but your gas and electricity bills as well.

You can keep even more toxic chemicals out of your home by using natural paints made without producing any of the highly polluting compounds known as VOCs. “They are good for your health and good for your building,” according to Diane Moore from the company which makes the colourful Made-in-Devon Nutshell range. Another gentle green touch is bed and bath linen made with organic cotton. When you learn that 25% of the pesticides used in the world go into growing conventional cotton, you realise that buying organic textiles makes a huge environmental impact, as well as bringing a little luxury into your life. Abi Petit, of the fashion and textile company Gossypium, explains that the cotton she uses is not only produced from healthy organic plants, but her finished products are made to be cherished for a long time because they are densely threaded, rather than being treated with chemicals to give them the mere appearance of substance. “The result of all this is that they feel fabulous on your skin,” she says. “We had a postcard from a customer recently who said that she and her husband had enjoyed their best night’s sleep in 42 years of marriage with our organic cotton sheets.”

Finally, remember that every green home deserves an organic vegetable patch, however tiny. It only takes a cleverly organised 4ft x 4ft space to bring in fresh produce for the kitchen all year round, according to Dr Gareth Davies of the gardening organisation Garden Organic. And even in a flat you can cultivate a productive window box. As Gareth says: “By growing your own supply of organic produce, your food will be fresher and won’t contain any harmful pesticides or chemicals, and you’ll be helping the environment by cutting down on food miles and growing your food sustainably.”

Cleaning and laundry products are a considerable proportion of the average person’s weekly shopping bill, yet this is one area where it’s easy to save money, your health and as a by-product save the environment too – by replacing your cleaning and laundry products with natural alternatives. No one bottle of detergent or laundry liquid will make you ill, but I believe that the cumulative effect of the masses of potentially toxic synthetic chemicals and pollutants that exist in our homes probably will over time, so let’s address it now and in the process do our bit for saving the planet.
Make your own air freshener by half-filling a plant spray bottle with water, add a few drops of essential oil – lemon or eucalyptus work well and perhaps a drop of vodka to preserve – and spritz around for a natural fragrance.

For general cleaning equipment, go old style DIY with white vinegar, bicarbonate of soda, a microfibre cloth and a bit of usedup lemon (you can clean everything with that lot!).
