Tomato Chili Pasta With Pine Nut Cream
Ingredients: Pasta 2x Large Cucumbers 2x Large Zucchini Sauce: 3x Tomatoes 3x Stalks Celery 12x Sundried Tomatoes 4x Dates 4x Florets Broccoli ½ Clove Garlic 1x Red Chili 2
Garnish: Romaine Lettuce Leaves Sliced Tomato 2x Avocados Pine Nut Pate (see recipe under Nut Pates and Creamy Dressings) Method: Spiralize the cucumber and zucchini into noodles. Blend the sauce ingredients. Add the noodles to bowls. Put a dollop of sauce followed by half a chopped avocado, a slice of tomato and a dollop of pine nut pate to each bowl. Arrange romaine lettuce leaves around the bowls. Serves 4

Tomato Curry Soup
Ingredients: Soup 8 x Tomatoes 2 x Red Bell Pepper 3 x Medium Stalks Celery 12 x Sundried Tomatoes 1 x Oz Cashew Nuts (optional) 8 x Dates (sweetened according to taste) 2 x Tsp Curry Powder Method: Blend all ingredients together until a smooth soup is formed. Garnish with slices of tomato and some colorful lettuce. Serves 2-4

Beetroot Salsa Salad
Ingredients: 3x Beetroot (peeled and grated) Sauce: 250g Spinach 1x Tomato 1x Avocado 2x Tsp Curry Spice 1x Clove Garlic Fresh Coriander

Garnish: Romaine Lettuce Leaves 1x Tomato (sliced) Method: Blend the sauce ingredients and stir into the peeled beetroot. Serve with romaine lettuce leaves and a slice of tomato. Serves 4 (as a starter)

Sweet Potato Curry Noodles
This wonderful recipe is courtesy of my friend Courtney. Ingredients: Pasta 1x Sweet Potato or Yam 2-3 Carrots 1x Zucchini Sauce: 2x Tbsp Almond Butter 6x Dates 2 tsp curry powder Water to reach desired consistency Method: • Spiralize or use a potato peeler to make the pasta out of the sweet potato, carrots and zucchini. • Blend the sauce ingredients and mix into pasta. Serves 4 7
Strawberry Ice Cream Shake
Ingredients: 6 x Bananas (previously peeled, broken into pieces and frozen) 250g Fresh Strawberries 4 x Medjool Dates Method: Blend the strawberries and dates into a liquid. Gradually add the frozen banana until very thick. The consistency can be as thick as ice cream if you like, or a double thick milkshake.

Nut Cheez & Avo Hand Rolls (super easy!)
Ingredients: 10x sheets untoasted seaweed 2x large avocado, cut in half, peeled and cut into strips 2x large cucumbers, cut into strips Mixed Green Leaves Nut Cheez or Pate (see Nut Pates and Creamy Dressings Section for recipe) Method: Take a scissors and cut each sheet of seaweed diagonally from corner to corner into two equal triangles until you have 20 pieces. Place the seaweed so that the triangle is pointing to the left. Add a layer of nut cheez to the seaweed below the point of the triangle. Add a a strip of avocado, two strips of cucumber and a couple of leaves. Roll the vegetables inside the seaweed and seal by dipping your finger into some water and wetting the end of the seaweed to seal. Serves 4 (makes 20 sushi rolls) 9
Chocolate Brownies
Ingredients: 500g Macadamia Nuts 18x Medjool Dates 4x Tbsp Cacao Powder Method: Place dry ingredients into food processor (NB: do not add ANY water or any other liquid)) and process on the S blade until it forms a thick mixture that sticks together well. Press into a pie tray and refrigerate until set. Cut into squares.
