Springtime Therapy from Our Family to Yours!

Springtime comes early in the South I’ve especially enjoyed the camellias this winter. They are one of the longest blooming plants we grow in our area. From fall into spring the huge and numerous blooms cover the evergreen shrubs. I’ve been cutting the blooms to bring inside all season. Camellias don’t take up much water through their stems so I float the flower in a glass container to enjoy on my kitchen sink. Spring is a favorite season of many. It brings with it that beautiful fresh springgreen color to the trees and plants, plus colorful blooms appear everywhere. North Florida residents are fortunate to have wonderful weather during most of the year and I’ve always felt lucky to be born here. The harsh winter our northern neighbors have endured is one of the worst I can remember. Be grateful that springtime comes early in the south.

INGREDIENTS

Hard boiled eggs (peeled) 1/2 cup mayonnaise Food color mustard minced chives black pepper ground paprika

Instructions

Cut the eggs in half, separate the egg whites from the yolks and place the yolks in a bowl. Just like dyeing Easter eggs place your food coloring in a cup or bowl with a teaspoon of apple cider vinegar. 5-10 drops of food coloring produces a nice pastel color. Allow them to drain on a paper towel. Mash the yolks with a fork in the bowl, once they are crumbly add the mayonnaise and mix. At this point you can add the mustard, minced chives, and black pepper to taste. With a spoon fill the eggs with the yolk mixture. Start out with a little at first, then go back and add more later to make sure your eggs all have an even amount. Garnish with a little bit of paprika and serve.

Mason Jar Lemon Meringue INGREDIENTS

1/2 pint mason jars 1 pack of graham crackers 1/3 cup sugar 4 Tablespoons of softened butter 1 – 3oz box Jell-O lemon pudding mix (Cook and serve variety, not instant) 4 egg whites 1/2 cup sugar

iNSTRUCTIONS

Crust Crumble the graham crackers in a plastic bag, then added in the sugar and softened butter. Mix it by hand and press into the bottom of the mason jar. Bake at 350º for 10 minutes. Lemon pudding and Meringue Follow the instructions on the box for the pudding. Once the pudding is complete scoop the pudding into the mason jars on top of the pie crust. For the meringue beat together 4 egg whites and 1/2 cup of sugar. Beat until peaks form. Layer on the top of the jars and place in the oven at 350º for 10 minutes. To prevent jars from breaking or cracking turn off the oven and let jars cool before removing. Once removed from the oven refrigerate for a few hours before serving.

Shelly Monroe has had a fondness for cooking since she can remember. In fact the love of cooking may be in her blood. Shelly grew up watching her grandmother, a caterer, put the care and attention into every detail of the foods that she served. This inspired a life-long

Bird nest cookies

INGREDIENTS

2 cups plus 2 tablespoons all-purpose flour ½ teaspoon baking soda ½ teaspoon salt 12 tablespoons (1 ½ sticks) unsalted butter, melted and cooled slightly 1 cup packed light brown sugar ½ cup granulated sugar 1 large egg 1 large egg yolk 2 teaspoons vanilla extract ½ cup mini chocolate chips Egg candy

Instructions

To make the cookie cups - preheat the oven to 350 degrees. Generously spray a muffin tin with nonstick cooking spray and set aside. In a medium bowl, whisk together the flour, baking soda and salt. Set aside. In the bowl of a stand mixer fitted with the paddle attachment, add the butter and both kinds of sugar. Beat on medium speed until well combined. Add in the egg, egg yolk and vanilla. Beat until combined. Add in the flour mixture and mix on low speed until just combined. Remove the bowl from the mixer and fold in the chocolate chips. Scoop about 2 tablespoons of the dough into each muffin tin. Gently press the dough into the tin, so it covers the bottom and goes up the sides a little. Bake for about 12 to 14 minutes, until golden brown. Once you remove the pans from the oven, take a small spoon and gently press down a little in the center of each cup (if needed), so the candy eggs will have a place to sit. The centers will still likely be a little gooey. Take a butter knife and gently run it around the edge of each cup (so they pop out easily later). Transfer the pans to a wire rack and allow to cool completely before removing the cookie cups. Place the candy eggs and enjoy.

Easy Grape Salad INGREDIENTS

2 lbs green seedless grapes 2lbs. red seedless grapes 8 oz. sour cream 8 oz. cream cheese, softened ½ c. white sugar 1 t. vanilla extract topping: 1 c. brown sugar, packed 1c. chopped pecans

Wash and stem grapes, set aside. Mix sour cream, cream chess, white sugar and vanilla by hand until blended. Stir grapes into mixture and pour into large serving bowl. For topping: combine brown sugar and pecans, sprinkle over top of grapes to cover completely. Chill overnight or before serving.

Nail'd it! Spring is just around the corner, and one of the best ways to celebrating the season is with a little nail art! With the changing of the season, color and design inspiration is everywhere. For years, nail art was something that only happened in beauty salons. However, if you’ve browsed through Pinterest or Instagram lately you’ve seen that everyone is trying their hand at it. Nail art can seem intimidating, but don’t worry! It can be as easy or as difficult as you want it to be. Today I’m sharing a nail look for beginners. Before we get started, make sure your hands are clean, your nails are trimmed and filed to your liking. Be sure your cuticles are moisturized. To recreate this look you will need: - 3 - 4 colors of nail polish - I used a light pink, medium pink, purple, and green - clear top coat polish - a dotting tool, toothpick, bobby pin or very small paint brush - anything you can use to make small dots on the nail - a clean makeup sponge

with Allison Hancock 1. Paint all nails a light base color. I chose a soft pink. 2. I chose to add flowers to my thumb, middle, and pinky nails. First, use your dotting tool (or toothpick or paint brush) with purple polish to make small clusters of dots on the nail. Don’t worry if it looks messy. 3. After the dots dry, add another layer of dots in medium pink to add contrast and depth. 4. Once the flowers have dried, add green leaves to the sides. Do this by dotting green polish on the nail and slightly dragging your dotting tool to create a leaf shape. 5. Moving on to the pointer and ring fingers. Paint light pink, medium pink, and purple in horizontal lines on a clean makeup sponge. Gently sponge the colors on to the nails creating an ombre effect. 6. Use a clear top coat polish on all nails to give a finished look. This nail look can be recreated using any combination of colors. Spring is the perfect time to experiment with nail colors and designs, so what are you waiting for?

Strawberry Lemonade INGREDIENTS • 6 Cups Quartered Strawberries • 3-4 Fresh Lemons (wedged or sliced) • 1 Cup Cold Water • 1 Tablespoon Sugar • 1 (6-ounce) Can Frozen Lemonade Concentrate, Undiluted • 2 Cups Sparkling Water, Chilled • 1-2 Mint Sprigs (garnish)

PREPARATION Combine 3 cups of the strawberries, 1 cup cold water and 1 tablespoon of sugar in a blender, and process until smooth. Combine strawberry mixture and frozen lemonade in a pitcher, and stir until lemonade dissolves. Add sparkling water; pour over ice into a clear glass container. Add lemon wedges, the remaining quartered strawberries and mint to garnish. You can also add a lemon wedge, a strawberry and a mint leaf to individual glasses for a fancy, spring time frill. TIPS: Take the seeds out of the lemons as you wedge/slice them. You can also use fresh lemon juice instead of the frozen lemonade. You will need about 16 - 18 ounces of juice.

PREPARATION Slice the hard boiled eggs in half, lengthwise. Remove the yolks and put them in a mixing bowl. Mash the egg yolks with a fork then add salt and pepper to taste. Add mayonnaise & mustard to the mashed egg yolks (You can add as much or as little of mayonnaise and mustard as you like. Taste the mixture to judge the flavor) stir until well combined. Mix in the jalapenos and half of the bacon crumbles. Put the mixture in a small pastry icing bag (if you have one handy, a fancy tip on the icing bag will add a little extra flair to the eggs) and fill each egg half with the mixture. Chill until ready to serve. Before serving, sprinkle the fresh chives and remaining bacon crumbles over the top of the eggs. TIPS: In lieu of using a pastry bag, a small freezer bag with a hole cut in the corner of the bag can be substituted. Just double the recipe for larger parties.

pring brings a sense of renewal, new life, a world in bloom. A time of year when Christians celebrate the life and resurrection of Jesus Christ. Whether you and your family choose to affiliate or identify with a particular church or religion spring holds a special place in many family's hearts in large part due to Easter. The symbolic representation of spring flowers and floral arrangements in bloom after the winter has long since paired with iconography of the Cross and Resurrection. The Lake City Church of God has brought this to life in beautiful arrays of sunflowers, lilies, daisies, and other colorful flowers.

“Google” Michael Garnier and you’ll find a man who constructs miniature dwellings within the branches of carefully chosen trees. Garnier, who runs an Oregon-based

tree house business called Out ‘n’ About, is also the star of the DIY Networks’ “The Treehouse Guy.” The program features construction professionals and artists working together all over the world to build

The Spirit of the Suwannee Music Park (SOSMP) is home to a treehouse built by Garnier 17 years ago, long before he was a televised sensation. While working on that initial house two decades ago he chose an oak on the banks of the river for a future project; it commenced in January 2015. "It's good to be back on the Suwannee." Garnier says, as he stares up at the oak he has been dreaming about for all these years. "It's easy to find a great tree for a treehouse in an empty field or on a farm. It's harder to find one in the forest. You look for a tree that is well balanced with branches that spread out." Garnier explains, that in the forest the trees tend to grow in a curve or hook shape as they are competing for sunlight with the rest of the fauna in the area.

This particular live oak tree which has been on the bank of the river for more than a hundred years is something special, as it has developed perfectly for a treehouse.

This tree had to undergo an immense rigorous stress test prior to construction. This was to ensure it could safely accommodate the structure. Portions of the stress test involved the tree being subjected to 32,000 lbs of water and riggings. No small feat for any tree. Live oaks are no stranger to putting up with intense pressure, however. Garnier shares that live oaks, like this one were used by the Spanish Armada in construction of their ships. The sturdy hardwood and natural curves made an excellent keel. Another fascinating aspect of this treehouse is the use of local resources. Local crews and suppliers were utilized whenever possible, and surprisingly, over half of the wood used on the treehouse is from the park itself. In past years when trees had to be removed for construction purposes,

Charles and Vicki Cornett shared that the treehouse has a special connection for them and they are extremely pleased with Garnier's work and dedication to the project. They hope to get Garnier back out working on another project sooner rather than later. "Let's not wait fifteen years this time." Charles says with a smile. After its completion the creation will be available for rent to those looking

for a unique lodging experience. When asked if Garnier had selected a tree at the park for his next project, he coyly smiles, "I have my eye on a couple, but none will be like this. the wood was saved and stored. This wood is now finding vibrant new life on the property as part of the treehouse. The entirety of the exterior's wood paneling is comprised of wood harvested from the park. The finished product, due for completion in early spring 2015 will be two stories

and top out at somewhere upwards of 300 sq ft. Complete with living area, bedroom, and bathroom, making it the magical retreat of childhood days, with all the comforts of home including hot/cold running water and electricity. The tree house will also feature special tributes to the late Jean Cornett, a pioneer of the Spirit of the Suwannee Music Park and

Check out this simple and inexpensive way to make your own sidewalk chalk. Sidewalk Chalk Recipe materials: • Tempera Paint (use primary, and mix secondary colors) • Plaster of Paris • Water • Wrapping Paper Tubes • Wax Paper • Masking Tape • Sandwich baggies (for piping bags) • Scissors Instructions: Cut the tube into 5 inch segments. Line the interiors with wax paper, tape the base to seal one end, and set aside. The following is the recipe proportions for one color: Mix 2-3 tablespoons of tempera paint with 1/2 cup of water. Stir in 3/4 cup of Plaster of Paris. Spoon the mixture into a sandwich baggy and snip the end. Squeeze the contents into the tube. Prop straight up (You can use the masking tape ring to support the tubes). Allow to dry at room temperature for at least 12 hours. Enjoy!

Spring has certainly sprung, but so have the embarrassing dust bunnies, the greenish grime on the windows, and the ever-surmounting clutter.

While the time of year for spring cleaning has arrived, so has a new notion: this cleaning we save for March, April and May could really already be done. “Spring cleaning” no longer needs to haunt us through the winter months, nor remain a daunting task that we dread. “I don’t spring clean,” says Stephanie Linton, 31, of Live Oak, founder and owner of Orderly Manners, her own professional organizing business. Linton is also a wife and mom of two young children. “I have my routines that I do every day, and there are things that I keep up daily,” she says. “I’m always picking up after our daily activities.” Before writing Linton off as Superwoman, consider how relieving it’d be to work toward getting rid of spring cleaning, when you gradually start by giving your home 15 minutes per day. “Anything more than 15 minutes is overwhelming, “ Linton says. “And anyone can do 15 minutes. Set a timer, and go and get out of there when the timer buzzes.” Setting a small, timed goal for cleaning each day is a doable place to start, Linton says. Work on tasks like sweeping the floors, making beds, cleaning up after a meal, sorting and starting a load of laundry, or emptying the dishwasher. Bigger projects, like decluttering, can be broken down into daily 15-minute increments,

she says. “It keeps you in control of your cleaning and your clutter,” Linton says. “Your home will never get to the point where it overwhelms. “It’s always ready for company,” she says. “If someone asks you randomly, “Can we come over?”, or if you need to open your house up last minute, you are more hospitable at that point. And most people are never ready for company, when you really think about it. When they are ready it’s because the maid was there that day.” Another way to use that 15 minutes is to grab a laundry basket right before bedtime, going throughout all the rooms and putting everything in your basket that doesn’t belong where it is, Linton said. Then, go back through and put the items away. “That helps me tremendously,” she says. Eventually, that 15 minutes can grow into 30 for more time-consuming tasks like dusting blinds or washing windows. Try to focus on hot spots -- places that are most prone to clutter or that get dirty consistently, like kitchens and bathrooms, Linton says. “It’s taking your 30 minutes and applying that to one area of your house that you want to focus on,” she says. “If you’re feeling extra energetic, take advantage of it.” Linton says self-discipline has to factor in. “You have to will yourself. Don’t base anything on feelings,” she says. “Base it on you know it has to get done. Sometimes I don’t feel like

brushing my teeth at night because I’m super tired, but I don’t want a cavity, so I know it needs to get done.” Linton also suggests creating a time budget with cleaning built in and making lists for daily tasks. “It’s etching out time every day and saying okay, when I have that free [time], I’m going to do this, and being really intentional with your time and saying no to the distraction that might pop up. “Those daily schedules help me stay on top of things and stay on track with things,” she says. A messy, cluttered house can cause emotional distress, but keeping a clean, decluttered environment can be relieving and calming, helping you feel prepared for the next day instead of behind. “I get overwhelmed when things are built up,” Linton says. “Even emotional junk in my life. I can hold on to emotional baggage just like I can hold on to clutter. I’m terrified to let it build up. What I’ve noticed personally, when I neglect something even by a day, I noticed that if I let it stay there, I was okay with it. I had to will myself to put it away. “I don’t want to wake up to yesterday’s mess,” she says. “I want it to be a fresh, new day to start over again, just like the Lord allows us to start fresh every day. That’s just a top discipline of mine.” So, give it a try, and by this time next year -- or even next month! -- spring cleaning will be a task of the past.

How to Encourage Kids to Clean! a rule of if you’re 1 year old, you get one toy, if you’re 2 years old, you get 2 toys, and so on. “Kids want to bring out every little thing, so it helps them not feel overwhelmed and it helps them know that they can manage their mess,” Linton says, “that they don’t need Mommy to come pick up after them.” Create a sticker chart as an incentive, and once they get so many stickers, they can choose a reward. “That’s simple and doesn’t cost a dime to do that,” Linton says. “Choose things that your kid needs to work on, things

that you’re always getting frustrated about, put that on there. It helps them to earn stars, and you can see that they really are learning and listening. It’s encouraging for both them and you as a mom. Doing it for them does not help.” Give them age-appropriate “jobs” to do that they can manage, like helping with small, safe tasks in the kitchen or feeding the family pet. “That in itself makes them feel satisfied,” Linton says. “They love having jobs to do.”

Salad: 1 package broccoli slaw ½ cup almonds (I use whole natural almonds and slice into small pieces) 1 bunch of scallions 1 package of Ramen noodles (uncooked: do not use spice packet) ½ to 1 cup natural sunflower seeds 1 red pepper chopped ½ cup red onion chopped

Dressing: 1 cup oil (I use Canola oil) ½ cup sugar 1 tsp. pepper ½ cup white vinegar 1 tsp. salt Mix dressing ingredients. Toss all salad ingredients with dressing.

INSTRUCTIONS

In a small bowl or container mix the ingredients for your dressing. Then slowly combine all the salad ingredients and add the dressing as you toss the salad.

Smart phones are the new personal pocket banker. Using a smart phone has made my financial life a lot simpler. I can check account balances, transfer money between accounts, and pay bills with my bank’s app. But it actually gets better than that. Instead of using apps just to look at transactions you can use them to send money to friends or family. Just the other day I was doing business with a web designer. She sent me an email with the amount I owed and I told her I was mailing her a check, even though

she recommended Paypal. As life goes, I deleted the email, got distracted at my desk, and never mailed the check. Two weeks later she contacted me to see what was going on, and shamefully I admitted to completely forgetting about her. Within 5 minutes she had the money in her Paypal account. Easy peasy! Here’s what you need to know: Mobile transactions are generally more secure than credit cards or checks, because your credit card or bank info doesn't change hands. Here’s how it works: You link a bank account or credit card as the payment source, then tell the app where to send the money.

Google Wallet. Google has made our lives much easier with search, emails, and scheduling. Why not sending money? They let anyone with a Google account send money to anyone with an email account. It really is that easy. However the down fall of using Wallet is getting cash out. In fact, it may just be impossible. This could be a good option only if you’re using the money for online transactions.

Venmo. This service connects to your major based bank account and debit card. It’s typically used for paying friends back for a dinner tab, splitting up the rent check, or paying a babysitter at the end of the night. The service is entirely free, and they intend to keep it that way. Venmo is replacing you handing over a $20 bill to your friend. It’s electronic and instant. And with this service you don’t have to feel bad about never carrying cash. Here’s where Venmo is different: it has built a social element into the app. You can go and see where your friends have been, and who paid who back for dinner at which restaurant. Relax though, because that feature can be turned off if you don’t want to share.

Paypal. They must be pretty good at sending money electronically, they’ve only been around for fifteen years. And actually, yes, they are good at it! Paypal will allow you to not only send money using an email address, you can also send it using a phone number. Simply go to www.paypal.com and setup your account by linking it with your bank account and credit card. You can now shop online by using Paypal instead of directly using a debit card, which is not as safe. If someone pays you through your Paypal account the money can be spent online or transferred to a bank account. Square Cash. These guys are the maker of the little white plastic swiper that allows you to use a debit card at art festivals or with small businesses that probably wouldn’t be able to process credit cards without it. Square Cash is so new it’s still in an invite-only mode. In order to try it out you must know

Apple Pay. As if we didn’t need another way for Apple to rule our life, they have come out with their electronic payment system, Pay, for iPhone 6 users. Apple has designed more of an electronic wallet by allowing you to store your debit and credit card info in Passbook (this app is already on your phone). Simply open Passbook and take a photo of your card or manually enter the card info. This will make online shopping much easier.

Easter is a fitting time to reflect on our lives and a time to count our blessings. One of the barometers of personal reflection is inner peace, loosely defined as a state of being mentally and spiritually at

peace while possessing the knowledge and understanding to stay strong in the face of discord or stress. Inner peace brings balance and harmony to our lives; with it, our resistance is strong and our heartache low. We should ask ourselves, have we evaluated our purposes in life? Are we journeying with happiness while striving to find joy in every minute, or falling into the dysfunctional routines that produce guilt and regret? When we are in the middle of trying times, it may feel as though we are on an island that no family or friends have ever, or will ever visit. However, the truth is, we are not alone; all of us experience personal difficulties. The question is, are we prepared? Someone once said, “If you are not currently experiencing a trial in your life, get on your knees and pray in thanks, for one is right around the corner.” How do we prepare for future ordeals? Understanding and

Most importantly, learn to forgive ourselves. 4. Enjoy what we do. If we are happy in what we are doing, we will like ourselves. In doing what we enjoy, a natural peace arises. 5. Monitor our hurriedness. Replace it with calmness.

Perhaps we have hit bottom and it seems impossible to claw our way back to light. Our faith is shattered. We’ve ridden waves of guilt and wonder if God is still there for us. We’re carrying many burdens. However, once we make the decision to get help, we’ve surrendered ourselves to a higher power, and physical, mental and spiritual cleansing can begin.

Happy House was founded in 1967 as a kindergarten for socio-economically disadvantaged children in the Lake City area. A group of woman in an inter-denominational prayer group saw the need, there were no outside resources and they said, “All right then. We’ll do it ourselves.”

And that they did. Hard Work Yields A Bountiful Harvest Happy House’s former Executive Director Marilyn Rossborough has been involved with the school for nearly 45 years, also serving on its board and volunteering. Two grandchildren now attend. She states, “The first 11 years of classes were held in space provided by the First Methodist and First

 s pring Baptist churches; maybe not the ideal situation, but we got our footing during that time. Sometimes having to do with less provides the opportunity to be creative and spurs you on to greater things.” Happy House advocates have proved their commitment to area families time and time again. They constructed their own facility; added three additional buildings; extended hours and ages (eight a day/five days a week, three months to 13 years); and attracted teachers and volunteers completely devoted to their tasks. From a small classroom in borrowed space to an enrollment of up to 250 with a waiting list. Not too shabby. Rossborough says, “To this day, I have never laughed or smiled more than in my years there.”

The World As A Teaching Tool Though celebrating its 50-year anniversary, the school stays young, and its methods of teaching are forward thinking. Current Happy House Executive Director Sheryl Walker speaks of the school with an enthusiasm that belies her 17-year tenure and knowledge that goes far beyond. According to her, experience and daily life often serve as tool for learning. She explains, “We use things in students’ lives to teach. For instance, our garden, planted and maintained by students, leads to colors, texture, and nutrition and food preparation, depending on the age. Cooking lends itself to socialization, measurements, reading

Parents today are so busy, some holding down more than one job. Fixing a meal together has a solid purpose. The act of cooking extends to mealtime and thus to the family.” Parents are also kept up to speed daily on what their child is learning, and offered ways to reinforce it. Walker says, “This isn’t rocket science. Standing in the shoes of students and parents allows us to see what works and what doesn’t. In that way, a whole new world opens.”

doesn't have to be perfect. With the scissors cut out, or help your child cut out the egg shape. (Always supervise your children when using sharp tools such as scissors.) Grab each pom pom with a clothespin and dip them in paint. The

pom pom will act as your paintbrush. Have your kids press the paint covered pom pom on the paper. Try different techniques for different result. Making patterns with the colors or different shapes can also be a learning opportunity.

Ingredients 1 can frozen orange juice concentrate 1 can frozen lemonade or limeade concentrate 1 ½ cups sugar 1 large can pineapple juice 1-2 bottles lemon lime soda Directions Let concentrate sit out to thaw. In a large bowl pour in concentrate and fill each container with water once, add to mix.

Add sugar and pineapple juice. Using a whisk, stir until well mixed. Carefully pour mixture in a gallon size freezer Ziploc bag. When closing, try to release any excess air. Clean off outside of bag if you made a sticky mess. Gently lie down in freezer and let freeze for at least 24 hours. Remove frozen mix from freezer 30 min to an hour before event. If mix is still too hard, run cold water over bag to help it thaw quickly. Pour slushy mix into punch bowl and add soda. Using a ladle or sharp object, break up ice chucks. Serve immediately.

Blend together mayonnaise, sour cream and pineapple juice. Pour over Apples and Pineapples - toss lightly. Serve on salad greens. Sprinkle lightly with paprika. Serves 4 to 6.

Spring Strawberry Salad Ingredients Two 3 ounce packages Compliments of Jell-O to the chef.... Two cups boiling water One 16 ounce frozen or fresh strawberries (frozen helps the salad to jell faster) One 20 ounce can crushed pineapple Two chopped bananas One half pint sour cream or large container of Cool Whip Sue Lamb Directions Dissolve Jell-O in two cups boiling water. Add strawberries, bananas, pineapple and its juice. Pour half the mixture into a medium size glass bowl (to show off the pretty salad within and draw ooohs and aaahs for you!) or pretty individual stemmed dessert dishes and refrigerate until mixture is jelled. Leave remaining mixture unrefrigerated until first mixture jells. Spread Kool Whip or sour cream over the top of the jelled mixture. Pour remaining liquid mixture over the top and refrigerate until jelled. When jelled, spread more topping over the top and sprinkle with chopped pecans or slices of fresh strawberries and a sprig of mint. This recipe is a big hit at church gatherings and perfect for a ladies only luncheon! Happy eating!

Butter Pecan Cake 1 box Butter Pecan Cake Mix by Betty Crocker® (Do not use directions on box) 1 can coconut pecan frosting 5 large eggs 2/3 cup vegetable oil 1 cup water 1 teaspoon vanilla 1 cup chopped pecans

Peanut Butter Easter Eggs 3 sticks unsalted butter 1 cup crunchy natural peanut butter 1 1/2 tablespoon light corn syrup 1 teaspoon vanilla extract 1 1/2 to 2 - 32oz bags of powdered sugar 2- 15oz bags of semi-sweet chocolate chips 1 tablespoon Crisco shortening Decorator frosting Eggs Combine the butter, peanut butter, corn syrup, and vanilla extract; mix at low speed of electric mixer until smooth and well blended. Gradually add the powdered sugar until the mixture is stiff enough to handle easily but still soft enough to stick together when you roll it into eggs. Roll into small egg shapes (the size should be enough for about two bites.)

Just off the main road, resting in the unassuming tranquility of Live Oak, sets a hidden treasure. Dare, I say a Garden of Eden. Noble’s Greenhouse, first opened in 1976 has been an area treasure ever since. Owners, Kim Carter, and her husband Chris purchased the business in 1986 and never looked back. For the past three decades they have taken their love and passion for gardening and plants and have made it their life’s mission to share it with everyone they can. “I love potted plants.” Kim smiles and says as she is trying to narrow down her answer to the question of what are her favorite plants. “I probably have thirty on my front porch. I remember years ago my grandmother had a hundred pots on her porch all

of different clippings she had gotten from friends and neighbors.” Kim went on to explain that back when her grandmother was involved in gardening, this was how you were able to get new plants. Greenhouses and nurseries didn’t exist like they do today. Neighbors and friends would share and swap clippings. It is easy to see that the love of sharing plants with friends and neighbors hasn’t fallen far from the tree. Kim, finally closing in on flowering plants as her favorite, strikes a contrast with her husband Chris, who is all about vegetables. Chris, like Kim, has great memories of plants attached to his grandparents, helping his grandfather with a vegetable garden. In fact he has been tending a vegetable garden in one form or fashion since he

was a toddler. Egg Dyeing

Basics

New to dyeing eggs or been a while? There are numerous kits and sets available in most stores this time of year, but chances are you have everything you need for egg-xeptionally colored eggs already in your kitchen.

What you need:

• Hard Boiled Eggs (for added variety use white and brown) • Water • Vinegar • Food coloring • Tongs • Newspaper or paper towels • Jar, cup, or bowl (deep enough to fully submerge an egg without the water running over)

In a jar combine 1 cup of warm water, 1 teaspoon of vinegar, and 20 drops of food coloring. (For richer colors use more food coloring) Using the tongs slowly submerge the egg completely (Don’t just drop the eggs in or you risk a bright, multi-color mess) Let the eggs rest in the water for a few minutes. 5 minutes or less: This will produce a light shade of whatever dye you have

10 minutes or less: This will produce mid range to dark color More than 10 minutes: This will give you the richest colors The longer you let the eggs stay in the dye water, the better the color will be. This holds true to mixing the colors as well. Once you have achieved the desired color, using the tongs, place the

eggs on the newspaper or paper towels to dry. (To be safe double up on the newspaper/paper towel to make sure that the dye water does not seep through to your table or counter).

Whether you’re an art scholar or can’t manage a stick figure, below is an easy to follow chart to achieve almost any color you desire using only primary colors as your base. The method below is best when dipping the eggs into multiple colors rather than mixing the dyes in your bowl. (Example: Place your egg in the red food coloing, allow it to set the recommended time, then remove. Allow to drip dry then place in the yellow food coloring. When you remove the egg you will have a vibrant orange.)

Why not? Food cost continues to rise, weeds are free, abundant, have nutritional value and may grow in our backyards. Millions of dollars are spent on herbicides and pesticides to get rid of weeds. Millions more are spent on nutritional supplements, when right in our back yards grow Dandelion. All parts of this plant are edible. The leaves and flowers are wonderful in salads. Leaves are good cooked like spinach, flowers may be fried – like fritters or used to make wine. Leaves of this plants are more nutritional than the produce you buy and high in vitamins and minerals. My favorite weed is Chickweed. The Indians called Chickweed the joint oilier. The leaves

and flowers make a lovely addition to spring salad. Cook leaves like spinach or make a tasty pesto. It is also a good source of vitamin C and minerals. Plantain common – The leaves are edible in salads, added to pesto or cooked. In some cultures this plant is known as a medicine for many things, but that is a another story. The focus here is on food sources. The leaves are rich in vitamins and minerals. Sheep sorrel is found along side of the roads, in pastures and in yards. As children we would pick this red stemmed plant and suck the sour stem. The young leaves are great added to salads, soups and sauces. This plant is rich in Vitamin C and more. Woods Sorrel(Oxalis) leaves. The flowers are pretty and good in salads. The leaves can be chopped and used in soups, sauces or added to

pesto. Fragrant woods violets. The leaves are high in vitamin C and great in salads and soups. The flowers make delightful jams and jellies. Another tasty weed, roots of the Florida Betony ( Rattlesnake weed.) Most gardeners hate this weed but the mature roots are delicious raw in salads or pickled. DON’T eat plants you can not positively identify DON’T eat plants where herbicides or pesticides are uses or where animal dropping are found or side of the road where exhaust fumes from automobiles are adsorbed by the plants. DON’T over harvest leave enough of the plants so it will continue too exist. Do wash you plants thoroughly. WEEDS, if you can’t beat them the eat them!

Quinoa Egg Bake with garlic, spinach, Chickweed, Wood sorrel leaves and Violet leaves. Ingredients: • ½ C uncooked quinoa. • 8 eggs • 1 ¼ C milk. I use whole milk but you can use nonfat. • 1 T garlic minced • ½ t salt • ½ t. ground black pepper • Splash of hot sauce to your taste. • 1 C. packed baby spinach, roughly chopped • 1 C. mixed weeds, equal parts of Chickweed, Wood sorrel leaves and Violet leaves. Make sure these are clean and dry. Chop roughly. • 1 C finely shredded parmesan cheese. Directions: Preheat oven to 350 F spray container 8X8 glass or metal baking dish with nonstick spray. I prefer glass this is a nicer presentation. Set aside. If using glass I place on a baking sheet. Put quinoa in strainer and rinse under cold water. Drain well. In a large bowl whisk together eggs, milk garlic salt, pepper hot sauce and quinoa, then stir in greens. Pour mixture into baking container. Cover tightly with foil and move dish around gently from side to side so the quinoa settles on the bottom in even layer this is the crust of the dish. Bake until well set about 45 min. but I check it at 30 M to turn dish and make sure it is baking even. Remove foil and sprinkle evenly with the cheese. Return to oven and bake uncovered until golden brown and crisp. 10 to 15 min.more check at 10 to make sure it is browning. Set aside and let cool briefly then slice and serve.

Who Is At Risk? Wisdom may come with the passing of years and unfortunately, so may shingles; more common in those over 50, the likelihood of contracting shingles increases as we age. A person with shingles may infect anyone lacking immunity to chickenpox, but generally only through contact with the open sores. And here’s the kicker. While there is no cure, prompt treatment with prescription antiviral drugs can speed healing and reduce risk of complications.

Add eggs, beating well after each one is added. In a medium bowl combine the flour and baking powder. Add the flour mix alternately with buttermilk, to the butter mixture. Pour batter evenly into 4 cake pans that have been sprayed with nonstick baking spray. Bake for 15 to 20 minutes, or until a wooden pick inserted in the center comes out clean. Raspberry Filling Ingredients One 10 ounce jar of Raspberry Jam or Jelly. (We used Dickinson’s Seedless Raspberry Preserves) 1 Stick of Butter ¼ cup of sugar One Tablespoon Cornstarch

Instructions Heat jar of Jam with sugar and cornstarch. Whisk over medium heat about 7 to 8 minutes or until very thick. Remove from heat and add butter. Cool mixture slightly. Cover and refrigerate until somewhat cooled. Cream Cheese Lime Frosting Ingredients 1 (8-ounce) Packages of Cream Cheese, room temperature 1 Sticks of butter, softened 1 1/2 Tablespoons frozen limeade concentrate, thawed 1 Tablespoons Lime Juice 1 Tablespoon Lime Zest 4 ½ Cups Confectioners’ Sugar Instructions In a large bowl, beat cream cheese, limeade, lime zest and butter together until combined. The confectioners’ sugar is to be added gradually, beating until smooth. As you layer the cake, take a wooden pick and stick holes in each layer of the cake and cover with the Raspberry Filling. The cake is four layers; so one of the layers could have the cream cheese frosting on it, if you so desire. This cake tends to slide! So place a few wooden toothpicks or wooden skewers in the cake for stabilization. Frost with the Cream Cheese Lime Frosting and enjoy! This has quickly become a FAMILY favorite!

I was blessed to be able to take my fifth trip to the Holy land leading a group of wonderful people. We experienced the Land of the Bible and followed in the steps of Jesus. There is not enough space in this article to communicate even a fraction of this life changing trip, but I will share some of the highlights that forever impacted our lives.

We began our trip in Jordan by journeying to Mount Nebo, to the very peak where God took Moses so he could view the expanse of the promise land, the land flowing with milk and honey. The breathtaking view from this windy peak took us all back thousands of years as Canaan stretched out before Moses, the land of promise for the Jewish people. From there it just grew more amazing each day. We traveled to Petra one of the wonders of the world as well as Bethany beyond Jordan the actual place where Jesus was baptized by John the Baptist. We stayed the night at the Dead Sea and went to the cave where the Dead Sea scrolls were discovered. We spent time in the Oasis of Ein Gedi where David hid out from King Saul. With stops at Jericho the oldest occupied city in the world and Bethlehem, the

actual spot where Christ was born and Gods only begotten Son was given to mankind. We spent time in Caesarea where the Apostle Paul was held in prison and Megiddo where some of histories greatest battles have been fought and where the future battle of Armageddon is predicated to be fought. We traveled to the Sea of Galilee and experienced a worship service on a boat sitting in the middle of the body of water where Jesus walked and commanded the storms to cease. In Cana at the place where Jesus performed His first miracle turning water into wine, we held a wedding ceremony as many couples renewed their vows and later were baptized in the river Jordan. We made our way to Jerusalem where we walked where Jesus walked, from the Temple mount and the teaching steps where Jesus

actually taught His disciples, to the room where they ate the Last supper. We prayed in the Garden of Gethsemane on the Rock of Agony where Jesus prayed the night of His arrest. Old Olive trees from the time of Christ are still there overlooking the spot on the Mount of Olives. We were able to pray at the Wailing Wall and worshipped in the upper room, the birthplace of the New Testament Church. But as we celebrate Easter, I remember standing in the place where Jesus was held by Pilate as the Roman guards whipped and tortured our Lord. We walked the Via Dolorosa (the way of the cross) as we followed the steps of Christ to the place of His crucifixion. The Lamb of God, slain to take away the sins of man. But I'm so glad the story didn't end there. We also journeyed to the Garden tomb where they laid His body. We received Communion to commemorate His death but we looked in the tomb and IT IS EMPTY!! JESUS HAS RISEN, HE IS ALIVE!!! Victorious over death, hell and the grave. Lets celebrate and worship the risen King, King JESUS.
