JUICING TIDBITS • Juicing is a very simple way to transport nutrients to the blood stream without too much digestive involvement. By juicing we are pre-digesting our food by cutting out the middleman, removing the cellular walls, and releasing the life-giving minerals, vitamins, and essence lacking in the general diet. Juicing is speci c to a machine that extracts the pulp from the juice, therefore a blender that leaves the pulp as part of your mixture is not appropriate for this application. We are fans of the ber that pulp from vegetables and fruit offer, however, we see juicing as a viable method of assisting in supplementation of healing and health enhancement of the body in addition to a balanced, solid food based diet. Juicing is a supplement to achieving “HEALTH in Balance” not a substitute. • Juicing verses blending? – Remember digestion starts in the mouth, therefore drinking a juice from a blender without chewing and activating necessary enzymes will inevitably create an intestinal train wreck, because the bers/pulp still present require additional work which will now shock your digestive system and contribute to an intestinal sneak attack. • We prefer and recommend using organic produce, perusing your local farms for key seasonal items are ideal whenever possible. Being conscious of selecting non-GMO (Genetically Modi ed Organisms) produce is very important. GMO products are impure and can in most cases have negative effects on digestion, immune system function, and essentially all bodily functions. 4/15/2014 1:14:20 PM

• All of your produce should be thoroughly washed to remove dirt and pesticides. If you are not sure of the source of your produce, you can add a capful of vinegar to a basin of water to create a soaking solution to get rid of residual pesticides. 4

ROCK & ROLL RESTORER a revitalizing elixir for the faint of heart JUICE & ESSENCE: Grapes are a delicious detoxi er, blood builder, and bone and joint strengthener with the ability to calm heart palpitations, reduce night sweats and edema. Grapes are bene cial to the lungs, spleen, and kidneys. They are also helpful in reducing belly fat and will reduce risk factors for cancer and cardiovascular disease as they have the highest antioxidant capacity of all fresh fruit. Blueberries have the ability to neutralize free radicals, which makes them a signi cant tool in the anti-aging tool belt. Blueberries bene t the kidneys, stomach, and liver thereby assisting with urinary tract health, vision, brain health, and constipation. Beets strengthen the heart, calm the mind, improve circulation, purify the blood, and help rejuvenate the liver. Beets also lubricate the intestines and when combined with carrots will regulate hormones for a more comfortable and even menstruation including assistance with bloating and constipation. Ginger strengthens the spleen/digestion, however, ginger is also helpful in stomach and lung conditions. Tomato is a liver balancer, circulation stimulator, red eye reducer, and stomach restorer. Tomato is a helpful agent of the cancer prevention family. Lemon is bene cial to the lung, spleen, and stomach and therefore is useful in reducing cough, phlegm, sore throat, indigestion, and extreme thirst. Use lemon to help balance low blood pressure when sodium is contraindicated. Place all of the ingredients through a juicer according to the manufacturer’s directions.

x 1½ lb. red grapes x 3 pints blueberries x 1 large red beet, peeled x 1" piece peeled fresh ginger x 5 small tomatoes x ½ lemon, peeled

• Peeling is a preference when dealing with vegetables. On occasion we will peel certain root vegetables to reduce earthy qualities (i.e., dirt!). We remove stems of hearty leafy greens such as kale or collard greens to ease the bitterness found in the end of the stems. This can also lighten the load on your juicer so it will not get clogged. • Adding protein to your juice to create a meal substitution? We prefer a green, plant-based protein supplement using organic, non-GMO brown rice, green pea, or hemp. You may nd these singularly or in combination. Green-based protein is easier for the body to assimilate and absorb. Soy may have an adverse effect where there is a history of estrogen-based cancers. Whey, stemming from the dairy family, may be harder to digest. A green-based diet in general will create a leaner, stronger muscular constitution. • Juicing can be fun! Choosing a juicer is a key element due to the fact that ease of use and clean up is an essential part of any juicing regimen. Be sure to select a juicer that ts with your lifestyle to have many years of enjoyment. • Juice & Essence is inspiring a new way of viewing food combining, selection and preparation, this is more than an educational aspect to cooking. We implement the millennia of proven traditional Chinese methods and other integrative ways of thought necessary in creating a modern gateway to “HEALTH in Balance” cuisine. You will see how seasonally and curatively food can play a part in each system and organ of the body. In the end, you will learn, as we have, the importance of nature’s holistic code . . . everything is connected! Juice & Essence, “It’s what everything in life boils down to!”
