Butternut Squash & Carrot Soup

Serves 2

Butternut squash 1/2 Carrots 3 medium Red onion1/2 small Vegetable oil 1 tbsp Vegetable stock cube 1 Boiling water 550ml Cracked black pepper 1 pinch Himalayan rock salt 1 pinch 1. Peel and remove the seeds from the butternut squash. Peel the carrots and red onion and chop all the vegetables into small chunks. 2. In a large saucepan heat the oil, add the vegetables and season. Gently sweat the vegetables over a medium heat with the lid on for 15 minutes, stirring occasionally. Meanwhile, boil the water and dissolve the stock cube.

3. Add the stock to the pan, bring to the boil and simmer

for 10 minutes. 4. Remove from the heat and, using a blender (hand or jug), blend the soup until smooth.

Pour into a bowl and tuck in.
