A MESSAGE FROM OUR CHEF I would like to personally welcome you to Fairmont Palliser. I hope you enjoy your stay with us. When writing menus, I strive to make dishes that are nourishing and comforting, with a touch of whimsy, as we all have a little kid in us. I strive to be as creative as possible without sacrificing the sustainability of the food I produce. My mandate in my kitchen is that all cooks have to respect the food we cook and the people we feed. Whenever possible, we strive to work with our local producers and artisans that are truly Canadian, and to use as many products that this vast and beautiful country has to offer. I hope this menu I created for your In Room Dining experience has something that meets your fancy. If for any reason there is something specific you are craving, please inform your In Room Dining server, and as long as we have the product in
