INSTRUCTIONS ADJUST OVEN RACK TO LOWER-MIDDLE POSITION AND HEAT OVEN TO 375 DEGREES. MIX FLOUR, SUGAR, BAKING POWDER AND SALT IN A LARGE BOWL. ADD BEER (NO SIPS!) AND STIR WITH A FORK UNTIL JUST COMBINED. TURN DOUGH ONTO A FLOURED SURFACE; KNEAD QUICKLY TO FORM A BALL. DREDGE THE TOFU SLICES IN THE FLOUR MIXTURE, COAT WELL. DIP THE FLOURED TOFU INTO THE SOY CREAM. MAKE SURE THE SLICES ARE FULLY COVERED. DREDGE THE TOFU IN THE FLOUR MIXTURE AGAIN. HEAT OIL IN A HEAVY POT APPROPRIATE FOR FRYING (LIKE A DUTCH OVEN) OR DEEP FRYER TO 360 DEGREES. SHAKE OFF THE EXCESS FLOUR AND DEEP FRY THE TOFU SLICES UNTIL GOLDEN BROWN ABOUT 2-3 MINUTES. ADJUST FRYING TIME AS NEEDED. REMOVE THE TOFU FROM THE FRYER AND PLACE THE HOT TOFU ON A WIRE RACK THAT HAS BEEN PLACED OVER SOME PAPER TOWELS. DON'T LET THE TOFU SIT ON THE PAPER TOWELS AS IT WILL BECOME SOGGY. SEASON WITH SALT AND PEPPER AS DESIRED. SERVE HOT.
