idel Castro’s recent death spurred much interest and speculation in Cuba and its future. The country is at a crossroads of sorts, toying with increased tourism while keeping a foot firmly planted in its past. It’s hard to comment on this torn nation—stuck between old and new, communism and capitalism, rural and urbane—until you’ve visited yourself, and explored beyond the all-inclusive resorts most Canadians are familiar with. Still, most of us want it easy when we’re on vacation, and taking a cruise around Cuba lets you see and stroll through different cities (without navigating the nation’s still-developing infrastructure), encounter locals and soak up some of that infamous culture (page 18). Vallée des Fantômes or Valley of the Phantoms. It may be Québec’s best-kept secret, this snowbound wonderland in Parc national des Monts-Valin (sepaq. com/pq/mva) in the Saguenay-Lac-Saint-Jean region (saguenaylacsaintjean.ca). A 45-minute snowcat ride from the visitor centre brings you to the trailhead, where you then don snowshoes and hike three kilometres up 320 metres. The trail (the best snowshoeing anywhere is overhead en route, and one must agree) goes up, up, up, past warming huts, to a 360-degree view at Pic Dubuc, the highest point in the park at 984 metres. From here you can see the Mont Valin massif stretch far to the north, as well as the Piedmont Hills and Saguenay Lowlands to the south, the fjord and even the town of Saguenay on a clear, bluebird day. Up top, local guide, Robert, simply smiles and says “everyday is a new day.” It is. With one of the highest annual snowfalls anywhere in Canada, the fantastical formations of snow blanketing trees change constantly, creating new iterations of snow ghosts. Most travel photographers tend to view the big picture and overlook the details that help define a destination. Whether it’s a gondolier’s hat, bowl of gelato, or collection of carnival masks, shoot as many details as possible while trying to avoid the clichés. I shot my simple floral arrangement using a window’s circular panes as a frame and contrast for the soft bloom. A shallow depth of field (f4 and 1/125 second) helped blur or “soften” the window pane, producing less of a distraction.

enice is a rich, luminous city, where the subtle pastels of elegant 17th-century palazzi reflect in the glass-like surfaces of its famous canals. Much of the city’s ambience stems from its seamless intersection between land and sea, East and West, Renaissance and modern. My challenge here is to try and incorporate these facets into my images while avoiding too many of the “love” clichés. As I stroll the narrow less-travelled streets and canals, I come across a gondola with a gondolier’s hat on the seat. To add a bit of mystery, I compose a tight shot of the hat and chair using 1/125 second and f8 (to freeze the bobbing boat), making sure to include enough of the boat so people can relate the image to Venice. The city is built on 117 flat islands connected by 400 bridges spanning more than 150 canals, so photos ops are countless. The subtle light of late afternoon, after the gondola traffic winds down, is a good time for mood shots. The lightly rippled water, combined with a few lights and the warm glow of dusk, makes for some interesting reflection shots. I shoot mostly at 1/30 second and f11 so as not to blur the water too much and try to include the small arched bridges in my images. Unlike harsh, heavily contrasted daylight, the warm softer glow of late afternoon provides the perfect illumination to shoot the narrow streets. By this time, the wall-to wall crowds have dispersed, making the narrow cobbled streets more interesting. I try to incorporate some people and store lights while shooting from a tripod at 1/60 second and f11 for maximum depth of field and to render the people sharp. The late ambient light is also perfect for documenting the city’s famous cuisine. I use window light and a tripod for most of my food shots. The bell tower of St. Mark’s Basilica in the famous Piazza San Marco is one of the only places to get great “aerials” of the Grand Canal and cityscapes. It’s a bit of a slog climbing the stairs with all my equipment, but the late-afternoon light dancing off the lagoon makes it worthwhile. I work my way around the square, shooting as I go. I find a nice arch and use it to frame the tower I just came from. I set the exposure for the tower using 1/125 second and f11 to make sure that the people in the shadowed foreground remain sharp and to accentuate the dark frame of the arch.

As I make my way through the square to the edge of the lagoon to shoot the distant Church of San Giorgio Maggiore, I notice a giant cruise ship to my right on its way out of port. I preset my controls to 1/125 second and f8 and take a few shots of the church across the lagoon while waiting for the modern cruise ship to enter juxtapose the frame. Although Venice is appealing year round, it’s especially delightful in the cooler and less-crowded spring. And although I did incorporate some “romance” into my images I opted for subtlety. A Toronto dentist volunteers with Mercy Ships to bring dental care to the Congo

t was a heartbreaking choice. Every Monday and Thursday, up to 700 people would line up in three ragged rows: men, women and children, all baking under the Congolese sun, all hoping to be one of the lucky ones selected for free dentistry from the NGO Mercy Ships, which provides healthcare to impoverished people around the world. Medical staff would triage the long lines of individuals on the basis of facial swelling—indicating infection—or a cursory look inside the mouth to identify urgent dental problems, says Dr. Glen Rodgers of Toronto, a volunteer dentist with Mercy Ships. Those who were selected were given wristbands to wear to their appointment. Some of the poorer Congolese would sell their wristbands to someone who wasn’t chosen. This would require breaking the coveted strap to get it off. The individual who bought the strap would claim to medical workers that it had accidentally snapped. Always, however, these individuals would be turned away, says Rodgers. “We couldn’t reward the black marketing of these bands.” Still, he regretted the action. “It was a desperate situation. Some who weren’t picked were in pain,” Rodgers recalls. Rodgers and his three fellow volunteer dentists from around the globe could treat 20 patients each a day, or about 400 patients weekly, providing relief to a population affected by a severe dearth of dentists. In the Republic of the Congo where he was based, there are only about a dozen dentists for a population of five million, according to World Health Organization statistics. Rodgers, who is poised to fly to Benin, Africa for his third mission, a three-week undertaking with Mercy Ships, will be stationed once more aboard the Africa Mercy, a 152-metre-long vessel that is the world’s largest private floating hospital. (The NGO has been bringing medical care to the poor since 1978, sailing and docking at port cities in some of the world’s poorest nations.) As with previous missions, most of the dental work will be extractions, says Rodgers. The dental team doesn’t have the resources or time to undertake root canals and, most of the time, the teeth are so decayed they

are beyond saving, he says. Sometimes Rodgers would be confronted by a mouthful of “bombed-out teeth” but would only have time to extract a few, in order to keep to his tight schedule. “I’d say, ‘I can take out two or three teeth. Which are the ones that bother you the most?’ They’ll point, ‘This, this and this.’” As needy as the Congolese are when it comes to dental care, their teeth, on the whole, are generally in better condition than the Ojibway and Cree of northern Ontario where Rodgers spends up to nine months every year on locums. After selling his practice in Barrie, ON, in December 2013, Rodgers decided to structure his work “around my life, rather than my life around my work.” He chose northern Ontario as his new stomping grounds, flying into remote communities to provide dental care. Sitting at the sleek bar we watched a pair of bartenders working in symbiosis crafting cocktails from Shingo Gokan’s two-part menu: one includes feature cocktails such as the Benton’s Old Fashioned from PDT; the other, Speak Low signature cocktails. I went for the Eastern Paris, a sublime mix of Chivas 12 Year, fermented Pu-erh tea, spiced apricot brandy, China-China and orange bitters. It was well worth the nighttime wander. Later we took the staircase to get a peek inside the next-level bar, answering a question corresponding to a number on a map and then pressing a secret button to open the door to another lively drinking venue filled with patrons. No room tonight. (The third bar is even too secret for us to gain entry.) Some speakeasies are more about theatre than quality cocktails. Not Green Russell, PDT or Speak Low. All are worth the extra trip down the rabbit hole. “Even our regular clients tend to show [Green Russell] to other people, bring dates and clients. adventurous bent. Green Russell is accessed by walking through a pie shop into a dimly lit room. My visit here opened the door to otherworldly imbibing, with bartenders plucking fresh herbs from a mad-scientist’s bar-garden and where Denver’s mile-high-sky is the limit when it comes to cocktail craft. “Be adventurous. Try something new”: It’s number 4 on Green Russell’s list of rules. Is it a throwback to the 1990s-era S&M club that once dominated this space? Not likely. But it’s an invitation to shed your inhibitions by ordering a changed-up classic, like Green Russell’s Old Fashioned (see recipe below). Or hitting up the bartender for a customized drink, like the one I had, made from local Leopold Bros spirits including gin, absinthe and orange liqueur. Innovation is encouraged at Green Russell. But don’t expect role-playing, says Bonnano. He cringes at how some banal bars have co-opted (and corrupted) the meaning of the word speakeasy. “We focus on the art and history of the cocktail, but there are no costumes and no waxed moustaches and every bartender who works at Green Russell is a consummate and dedicated professional,” he says. While Green Russell has legit speakeasy origins some modern establishments have played up the enigmatic element. Like Speak Low, the Shanghai speakeasy ranked number 15 on the 2016 World’s 50 Best Bars list. One night last November I found myself, along with the editor of this magazine, standing by the Champs-Élysées Palace (it’s neither a palace nor in Paris) and wandering down dark alleys of the French Concession neighbourhood searching for a sign. And there it

hings are not always what they seem; the first appearance deceives many; the intelligence of a few perceives what has been carefully hidden.” When Phaedrus dreamed up this enigmatic phrase he was clearly not referring to cocktail bars concealed from prying eyes. But the Roman fabulist was onto something: things that are hidden (and perhaps even forbidden) seem to have enduring appeal. During Prohibition the ban on booze didn’t deter drinkers determined to whet their whistles. One Canadian account estimates that from 1923–1924 in Ontario alone physicians wrote some 810,000 prescriptions for alcohol. A coincidental outbreak of the Spanish Flu was used as a smoke screen. Enter the speakeasy (if you could find it and gain entry by whispering a secret code). Such illegal drinking dens flourished in North America, including in Denver, Colorado. Here, gold rushers once sipped spirits underground in the very same spot in Larimer Square where today’s Green Russell—a modern speakeasy—is hidden. “It was a meeting place during the Gold Rush and a genuine speakeasy called Gahan’s Soda Parlour during Prohibition,” says Bonnano Concepts’ Frank Bonnano. The chef and owner of multiple drinking and dining establishments in Denver opened Green Russell in 2007. “Green Russell is the name of the man largely responsible for kicking off the Gold Rush in this part of the country,” he says. In 2007 cocktail-focused bars were largely limited to San Francisco and New York, says Bonnano. Now they’ve become a destination for cocktail aficionados with an

Computer racing redux The affordable fix to racing through this winter…do it virtually

Progressively, these pros spend their days in multi-million dollar simulators developing car set-ups and track skills to apply to limited real-world racing hours. Consequently I’m gearing up this winter to have another go at sim racing. Once I’ve spent ~$2,500 to $3,000 for modern starter-level equipment there’s really no limit to the number of hours I can spend lapping or racing on virtual racetracks…other than those limits imposed by personal hygiene and my general preference in still being married when spring rolls around. I’ll need a gaming-friendly computer, sound system and compatible video monitor/TV. Initially I’ll have four PC game titles installed: rFactor2, Race: Injection, Assetto Corsa, and Project CARS. Hundreds of different cars and hundreds of different racetracks from the real world will be expertly rendered visually and aurally—if not dynamically. Once I master a given track and car sufficiently,

I can race the “AI” (artificial intelligence) competitors that the game developers have coded into the software. Often, the number and skill level of the AI competitors can be varied by the gamer. Up to this point, not much has changed since 2006, other than steady incremental improvements in equipment and games. What has really changed from a decade ago are the opportunities to sim race against fellow human enthusiasts. An online-gaming platform called iRacing is now the 600-pound gorilla on that block. iRacing is an organizational model of annual memberships, rather than some huge tech breakthrough. The “base” membership should keep you entertained for years, though optional upgrades to more cars and tracks are available. Still, compared to realworld racing the cost of iRacing is peanuts at $15 a month. The big iRacing upside is the 60,000 on-line subscribers around the globe. Human sim iRaces are beginning at the top of the hour, every hour, 24/7/365. Every race entered counts toward your “career path”—you don’t get to hit “reset” if things go badly for you after the green flag drops. iRacing driving etiquette is enforced with career penalties, just like the real world. You don’t get to race against the best until you have proven your prowess and sanity in the minor leagues (again, just like the real world). And finally, like the real world, there are a few professional sim racers feeding their families this way. (I’ll stick with my day job for now). All of this PC-based gaming sound like too much of a commitment for you? No problem. Let’s talk gaming consoles. Console-based sim racing is easier to access than PC-based, though not as broad in potential scope. Most middle-class families already own one (or both) of Sony’s Playstation or Microsoft’s Xbox consoles. The latest con-

t has been 10 years since this column last visited automobile racing on computers. Today that “race sim” universe is larger and more mainstream. And I suspect the progress in the next decade will be even greater than the last. I’ve always been of two minds on computer-simulated racing. First, I’m fortunate enough to drive several times per year on real-world tracks and in real-world races—and I’ve never confused that experience with simulation, even on six-figure computer rigs. beverages continues, this time Cuban coffee and rum, accompanied with a cigar. It’s called the perfect marriage. I have to agree, especially when sampled in the courtyard of the Palacio de la Artesania, amidst artists selling their wares and a quartet of singing women (because music follows wherever you are in Cuba). Later, at a paladar (El Zaguán, one of a growing number of privately owned and operated dining restaurants that have cropped up in recent years), there’s another live soundtrack during lunch, this time by two women strumming guitar in stilettos with heart-breaking aplomb. They’re gorgeous. And throughout my exploration-by-cruise skirting the island, I can’t help but stare at Cuban beauty— inner and outer. People unabashedly stare back. Some even ask for help. Sometimes money, but more often almost anything else. An old woman shows me a toonie and asks if I’ll take it back in exchange for pesos (CUC or Convertible Cuban Pesos, that is). One man asks if he can have the pen I’m writing my notes with. Another asks if I’ll buy some milk for his children in the store. When food rations are still a thing, money doesn’t mean as much. In Santiago I watch as people line up for guarapo (sugarcane juice). And I notice a woman in bright-green capris with a T-shirt hitched up to bare her midriff in the heat, showing off a lower-back tattoo. She’s utterly unselfconscious. But that’s Cuba. Everyone’s at ease in their skin. Communism has done nothing to tamp down the inherent sexiness of this place. People sit on stoops or the curb or lean against the ever-present ’50s-era cars parked in the streets. I could stroll along these streets indefinitely, taking everything in, observing locals, watching their interactions, peeking into open doorways and windows. I think of one of über-traveller Anthony Bourdain’s comments about some other far-flung destination, something akin to every door being a glance into another world. I feel that tenfold here. Every corner, stoop, curb, car is abuzz with life, and some tale to tell. Much like those dancers back in Havana’s central square, where young and old meet to simply move and groove, this island—despite, or in spite, of everything—brims with a bold, if disheveled, beauty. Everyone has a story—we all do— but Cubans have one with an especially deep and soulful rhythm, bumping and grinding with joy.

nsconced beachside, on an alabaster swath of sand 1 guarded by elegant hotels, stretching 10 km along Grand Cayman’s west coast, nuzzled by waters so clear you can see starfish on the bottom, I wonder how I’m going to fill tomorrow. Right now, entertained by a perfect sunset (one of the Caribbean’s best), I don’t feel like doing anything, though tonight it’s fine dining at Abacus at Camana Bay (camanabay.com), a modern town centre boasting boutiques and other fine dining options beside the water. Wherever I dine, I’ll be sated: many consider the Cayman Islands the Caribbean’s culinary capital. It’s also home to the annual Cayman Cookout festival with renowned host, Chef Eric Ripert (this year it’s on from January 12–17, @caymancookout).

Tomorrow’s first stop, I decide, will be a helping of history. Pedro St. James (pedrostjames.ky) 2 is both refurbished 17th-century great house and host to an interpretive centre worthy of Disney World. I’ll stroll here by the sea amid stands of banana and mahogany trees, tour the outdoor kitchen and then explore the furnished house itself. Then maybe bond with nature. Welcome to the Cayman Turtle Centre (turtle.ky)—combination wildlife sanctuary, turtle hatchery and theme park— where I’ll learn about efforts to save the sea turtle, pet these huge animals 5 and maybe even swim with them. Or maybe I’ll just cross the road and swim with the dolphins at Dolphin Discovery. Or I’ll get really close to nature—and bond with the sea. Maybe book a catamaran tour to Stingray City (stingraycitytrips.com) 3 , snorkelling with those graceful creatures—or take a

side trip to Starfish Point where I stand in water up to my waist as the stingrays wheel and soar between my legs. Then it’s time for some R and R. Make for Rum Point (rumpointclub.com) 4 . Stake out a claim in the shade near a congregation of pastel-painted picnic tables; do frosty Caybrew beers at Wreck Bar, once rated among the world’s top-50 beach bars. Go for a swim in bathtubwarm waters. After some downtime, maybe I’ll take things up a notch: the Cayman Islands are considered among the world’s best dive destinations. I’ll take a lesson in the pool at the Westin Grand Cayman (westingrandcayman. com), then out on—or in—the water. Maybe I’ll dive Babylon or Ghost Mountain. We’ll stop en route back to our hotel and be mesmerized by the beauty and might of the Caribbean at Blow Holes 5 . Banish estate-planning woes Estate planning can be simple with a trust

D

r. Bob is trying to solve an estate planning issue that has been nagging him for a while. Five years ago he brought his investments of $2 million into his second marriage with his wife, and dental assistant, Judy. Judy is 50 years old and 12 years younger than Bob. Her two teenage daughters now live with the couple. Bob has two adult children from his first marriage who live independently. When thinking about the distribution of his estate upon his death, Bob’s dilemma is that he wants the investments to go

to the children of his first marriage, while ensuring that the income earned from the investments are available to Judy during her lifetime so she can continue enjoying the financial security and the lifestyle to which she has become accustomed. If Bob arranges for his investments to be transferred to Judy upon his death, he’s concerned his own children might not see any money at all. There is a solution that would help solve Bob’s estate planning puzzle. In his Last Will and Testament he could provide for the creation of a “spousal trust.” On his death

the investments could be transferred to this trust, which would be controlled by Bob’s two children as trustees. Judy would be the sole beneficiary. She wouldn’t own the assets, but she would have use of the income earned and investment capital held in the trust during her lifetime. As trustees, Bob’s children would control the trust, but they wouldn’t have the authority to receive any trust income or capital. Only on Judy’s death would the spousal trust be dissolved and the assets and investment capital transferred to them. The spousal trust not only solves Bob’s dilemma, it provides a tax break. If the spousal trust is set up properly, all the assets held by the deceased can be transferred to the trust without triggering any taxes. The trust gives Bob the same tax break he would receive if he were simply to transfer his assets directly to his surviving spouse. The taxman gets his share when the assets in the spousal trust are transferred to Bob’s children on Judy’s death. To keep the peace at home, Bob, like most people in his situation, would likely keep the spousal trust a secret. A spousal trust is the perfect solution when you have children from different marriages. Other “testamentary” trusts, those created in your will, can address a variety of circumstances. Generally they allow for you to have a say about how your money will be spent after you’re gone. For example, parents of young children can set up a trust in their will stipulating that certain funds are to be held by a trustee for the benefit of their children until the children reach a certain age. A common provision requires the trustee to pay for education expenses and other necessaries until the child reaches the age of 25. At this point perhaps one-half of the child’s interest in the trust capital is paid out, with the remainder paid out when the child turns 30. Trusts are an indispensable tool for planning your estate. Don’t wait until the worrying starts, explore the benefits of a trust now.

t the top of the Goat’s Eye Express Chair it’s blustery and snowy. Flakes are coming down thick and fast. But there’s still enough visibility to make another run down one of Goat’s Eye Mountain’s (2,806 metres) series of black-diamond chutes into the glades far below. The run my ski buddy and I pick our way to the top of could be Goat’s Head Soup, or is it Mother-In-Law? Either name is appropriate…it’s a wild ride down into what feels a bit like the abyss. I can just see The Eagles peaks’ opposite (as high as 2,837 metres), rising over the extreme freeride zone of Delirium Dive. And all this is just 15 minutes from the town of Banff and within easy reach of two other thrill-fulfilling, world-class ski resorts. Banff National Park, the oldest in Canada (and third oldest in the world!), is also home to Mt. Norquay and Lake Louise Ski Resort. This makes me one very happy skier over the next few days. At Lake Louise, big, open bowls and more steep-and-sweet chutes and gullies keep me happily occupied. This castle-like property, set right at the edge of Lake Louise as one of the original railway hotels built at the turn of the century and visited by dignitaries and luminaries like King Edward VIII and Marilyn Monroe, is worthy of its legendary status. I discard my ski gear and warm up while gazing out my window at the winter scene outside. A network of trails crisscross the frozen surface of the lake, people mill about in the last light of day and Mt. Victoria peeks out from behind a bank of low-lying clouds. It all just makes me want to go back outside. So I do… While staying at the Chateau Lake Louise I take advantage of the Mountain Heritage Program, first established by Swiss mountaineers brought here in 1899 to guide visitors through the surrounding wilderness. travel at home embrace of winter and the great outdoors, I realize I’m a mere weekend warrior here. I notice that Peyto’s photo graces the welcome sign board as I enter Banff village later. He’s the quintessential mountain man and fitting icon for this place. Norquay in the morning, just 10 minutes away. Smaller than Lake Louise or Sunshine, the beauty of Norquay is that you can ski a run with Banff village and the valley in full view. And go up an old-school chairlift to the Cliffhouse and some relatively short, if vertigo-inducing, black-diamond runs. At the top, I’m 2,090 metres high. And feel a little high.
