Cajun cuisine originated from immigrants that the British deported from Canada to Louisiana in the USA. It was considered to be quite a simple and rustic cuisine, but has since evolved into more sophisticated and delicious recipes. Out of all the shrimp recipes I have cooked in the past, I must say that Cajun shrimp is not the fastest to prepare, but definitely well worth it in the end! For our Cajun shrimp we will need: 2 ½ pounds fresh shrimp - large is more expensive but really nice for this dish! 1 cup shrimp broth 3 garlic cloves 1 medium onion 2 cups okra vegetable ½ cup white wine A splash of soy sauce Juice of ½ a lemon ¼ cup Parmesan cheese finely grated ½ cup melted butter 1 fresh red pepper 1 fresh green pepper 1 fresh yellow pepper ½ teaspoon cayenne pepper 1 1/2 cup heavy cream ½ cup flour ½ milk 1 lemon sliced in quarters Parsley Salt For all my shrimp recipes I buy the shrimp fresh and unpeeled and I ask not to have the heads removed. Shrimp can be a lot more tender when cooked at home as you have complete control over it. I add a bay leaf and sea salt to the water as it boils which gives the shrimp spectacular flavor. Also, I always use the water the shrimp has been cooked in if the recipe needs broth; which it does in this case. Remove the shrimp from the boiling water when the original blue color disappears (that's when your shrimp is done) and place on the side. Peel each shrimp removing the heads first, then the legs and finally the shell that surrounds the flesh.


Pour the melted butter into a frying pan over a medium to low heat. Add the medium chopped onion and the peppers. Chop the garlic and add, stirring for a further minute or so. Add the fresh okra and fry at medium heat for 3 or 4 minutes. Add 1 cup of the already boiled water and the cream. Mix the flour with the milk and add to the mix. Keep stirring until it thickens. Next, pour in the lemon juice and whisk until smooth. Bring to a simmer and season with salt (if necessary) and cayenne pepper. Add the peeled shrimp. Your Cajun shrimp is done! Ladle the mix into large bowls sprinkling the parsley and Parmesan on top. Your guests will be impressed with this dish and will soon start priding themselves on their own shrimp recipes. That's when I smile and let them do the talk!
